Spaghetti Cutter — Cuts pastasheets into spaghetti.
Cleaning Brush —Use to brush away dried
dough after use.
NOTE: Never wash orimmerse attachments in water
or other liquid. Never wash indishwasher.
NOTE: These attachments aredesigned to be used with pastadough only. Do not cut or roll anyother material or food with this unit.
NOTE: When using the machine, do not wear ties, scarves or longnecklaces; gather long hair with a clasp.
3. Select Pasta Sheet Roller or Cutterattachment. Insert attachmentshaft housing (C) into attachmenthub (D), making certain that powershaft fits into square hub socket.Rotate attachment back and forthif necessary. When attachment is inproper position, the pin on theattachment housing will fit into thenotch on thehub rim.
4. Tightenattachment knob (A) untilunit iscompletely secured to mixer. Pleaserefer to General Instructions in yourStand Mixer Instructions andRecipe book.
To Attach: Remove “Do not immersein water” label, prior to use.
Before Attaching Accessory, Turn OFFand Unplug Unit.

Tips for Perfect Pasta• Good pasta dough is firm and
leathery to touch, but also pliable.It should never stick to your fingersor crumble and fall apart. Manyfactors, such as humidity, brand offlour used, and size of eggs, mayaffect dough consistency. To testfor correct dough consistency,pinch a small amount of doughtogether after mixing with the flatbeater. If the dough stays togetherwithout sticking to your fingers, itshould work well. It may benecessary to add a small amountof flour or water to reach correctdough consistency.
• Divide sheets of rolled pasta intohalves or thirds before cutting intotagliatelle or spaghetti, as theycan become quite long anddifficult to manage.
• Some hand separation may benecessary when cutting wheat orspinach dough with the tagliatelleor spaghetti cutter. The smallpieces of wheat bran and spinachare difficult to cut.
• Pastas can be either dried or frozenfor future use. To dry, lay strands ofpasta in a single layer on a towelor drying rack, and completely airdry. Store dried pasta in an airtightcontainer. To freeze, let pasta air-dry for one hour before freezing inan airtight container. It is notnecessary to separate strands ofpasta before freezing, just dustwith flour and form into “nests.”

4. Moveadjustmentknob to setting2. Feed doughthrough rollersto furtherflatten. Change to setting 3 andfeed dough through rollers again.**Continue to increase roller settinguntil desired dough thickness isreached. See “Suggested RollerSettings” to determine the correctthickness for each type of pasta.
5. To maketagliatelle orspaghetti,exchange PastaRoller Sheetfor cutterattachment. Feed flattened sheetsof dough through cutter. Cut pastacan be used immediately or frozenor dried for later use. See “Tips forPerfect Pasta” for information onfreezing and drying.
NOTE: After you finish using yourPasta Sheet Roller and Cutterattachments, replace hub cover andtighten attachment knob.
* This second kneading process willimprove the elasticity of the doughand increase your success before thecutting process.
** Again lightly dusting the pastawith flour with each flattening willassist greatly in the pasta handling.

Using Your Pasta Sheet Roller and Cutters

To Use:
1. Prepare pasta dough (see “Tips for Perfect Pasta.”) Cut dough intopieces about 3⁄8 inch (1 cm) thick.Flatten each piece slightly.
2. Set adjustment knob on Pasta SheetRoller at 1 bypulling the knobstraight out andturning to setting1. Release knob,making certainpin on rollerhousing engages opening on theback of the knob, allowing theknob to fit flush to the rollerhousing.
3. Turn mixer toSpeed 2 or 4.Feed flattenedpiece of doughinto rollers toknead. Folddough in halfand roll again.Repeat foldingand kneadingprocess severaltimes, or until dough is smoothand pliable.* Lightly dust pastawith flour while rolling and cuttingto aid in drying and separation.Knead and fold each piece ofdough in the same manner.

Care and CleaningTo clean Pasta Sheet Roller and Cutterattachments, let parts air dry for onehour and then remove any drieddough using the Cleaning Brush. Ifdried dough cannot be removed, tryhand-tapping the attachment. Atoothpick can be used if necessary.Never use a knife or other sharpobject to remove excess dough. Polishwith a soft, dry cloth and storeattachment pieces in a dry place atroom temperature.
NOTE: Never wash or immerseattachments in water or other liquid.Never wash in dishwasher.
NOTE: Do not run a dishtowel or anyother cloth through the rollers to cleanthem while machine is operating. Donot insert objects such as knives,screwdrivers, etc., to clean the unit.
MaintenanceClean properly after use as describedabove. We recommend using a lightmineral oil to lubricate the gearsperiodically. Add a drop of mineral oilto each of the far corners of therollers and/or cutters to lubricate thegears (4 locations). This can be doneannually or after 50 uses.

Basic Egg Pasta4 large eggs
(7⁄8 cup [205 ml] eggs)1 tablespoon (15 ml)
water 31⁄2 cups (440 g) sifted
all-purpose flour1⁄2 teaspoon (2 ml) salt
Place eggs, water, flour, and salt in mixer bowl.Attach bowl and flat beater. Turn to Speed 2 andmix 30 seconds.
Exchange flat beater for dough hook. Turn toSpeed 2 and knead 2 minutes. Remove dough frombowl and hand knead for 1 to 2 minutes. Let it restfor 20 minutes. Divide dough into 4 pieces beforeprocessing with Pasta Sheet Roller attachment.
Follow cooking instructions, page 10.
Yield: 11⁄4 pounds (625 g) dough.
Semolina Egg Pasta4 large eggs
(7⁄8 cup [205 ml] eggs)2 tablespoons (30 ml)
water1 tablespoon (15 ml) oil
31⁄3 cups (420 g)semolina flour
1⁄2 teaspoon (2 ml) salt
Place eggs, water, oil, flour, and salt in mixer bowl.Attach bowl and flat beater. Turn to Speed 2 andmix 30 seconds.
Exchange flat beater for dough hook. Turn to Speed2 and knead 2 minutes. Remove dough from bowland hand-knead for 1 to 2 minutes. Divide doughinto eight pieces before processing with Pasta SheetRoller attachment.
Follow cooking instructions, page 10.
Yield: 11⁄4 pounds (625 g) dough.

Place whole wheat flour, bread flour, eggs, water,and salt in mixer bowl. Attach bowl and flat beater.Turn to Speed 2 and mix 30 seconds.
Exchange flat beater for dough hook. Turn to Speed2 and knead 2 minutes. Remove dough from bowland hand knead for 1 to 2 minutes. Divide doughinto eight pieces before processing with Pasta SheetRoller attachment.

Spinach Pasta1 package (10oz.
[286g]) frozenchopped spinach,thawed
1 tablespoon (15 ml)water
4 large eggs(7⁄8 cup [205 ml] eggs)
4 cups (500 g) siftedall-purpose flour
Place spinach in a towel and wring out all wateruntil spinach feels very dry. Finely chop spinachusing a food grinder attachment, food processor or blender.
Place chopped spinach, water, eggs, and flour inmixer bowl. Attach bowl and flat beater. Turn toSpeed 2 and mix 30 seconds.
Exchange flat beater for dough hook. Turn to Speed 2 and knead 2 minutes. Remove dough frombowl and hand knead for 1 to 2 minutes. Dividedough into eight pieces before processing withPasta Sheet Roller attachment.
Follow cooking instructions, See below.
Yield: 11⁄2 pounds (750 g) dough.
To Cook PastaAdd 2 teaspoons salt and 1 tablespoon oil(optional) to 6 quarts (5.8 l) boiling water. Graduallyadd pasta and continue to cook at a boil until pastais “al dente” or slightly firm to the bite. Pasta floats to the top of the water while cooking, so stiroccasionally to keep it cooking evenly. Drain in acolander.
Dry pasta – 7 minutes
