In 2013 the infant formula market is still growing

rapidly with the development of markets like Asia,

particularly China with a growth rate close to 20%

p.y, Eastern Europe, and in a lesser extend Middle

East and Latin America. The development of the

market is linked with the economic growth of those

countries and its corollary the growing number of

working women.

Three main general trends are driving new product

development: product convenience, reinforcement

of the immune system and adapting the formula to

the risk of obesity.

To reach these objectives infant formula

manufacturers have today access to more

sophisticated ingredients. Despite the slowing down

process of the regulation which is becoming more

stringent in many countries, there is room for

ingredient manufacturers to develop new

ingredients. This trend is also reinforced by the

opportunity represented by the gap between

formula and mother’s milk.

New directions of research are followed among

which:

Reinforce the immune system

Several paths are followed to reinforce the immune

system. Directly with the use of protein fractions or

micro nutrients which increase immunity or

indirectly through actions that improve the body’s

function such as digestion.

Reinforce brain and eye development

There is today a general recognition of the

importance of DHA in visual and neural

development as there is a diminished absorption of

long chain fatty acids in pre-term infants who are

not able to stretch their fatty acid chains. The

recommended ω6/ω3 ratio being between 5:1 and

15:1.

Research into these ingredients has become

intensified during the last decade and it is now

recognized that pre-term infants require a dietary

source of LcPUFAS which addition has become

generalized in their formula.

The need for infant formulae enriched with DHA and

ArA for non-breast-fed infants has been recognized

by various official bodies including FAO/WHO who

recommend that all infant formulae should contain

DHA and ArA. A secondary benefit of LCPufas

supplementation is to lower blood pressure in later

childhood.

Innovative Lipids in Infant Formula

Infant formulas are complex matrices designed to

provide the infant with nutrition as close as possible

to human milk. Advances in lipid technology are

important to formula manufacture as dietary lipids

are the predominant energy source for infants and

play an important role in infant growth and

development. The continued characterization of lipids

and lipid interactions in human milk, accompanied by

technological developments in lipid science, may

affect future design of infant formula and/or

knowledge of the infant feeding experience. Recent

lipid technologies include human fat analogues and

other complex lipid matrices.

High beta-palmitate oils

Commercially available fats have been developed to

target the amount of palmitic acid in the sn-2

position to make the triacylglycerol molecules more

like human milk. These lipids are typically referred to

as “high beta-palmitate”. These structured lipids are

obtained from plant-based oils (such as palm,

soybean or high oleic safflower oil) and are

enzymatically interesterified so that a high

percentage (60–70%) of the palmitic acid is in the

sn-2 position on the triacylglycerol molecule. Palmitic

acid in the sn-2 position on the triacylglycerol

molecule has been shown in infant and animal

models to increase fat and calcium absorption.

Human milk fat analogue

Structured lipids are enzymatically interesterified by

using common oils such as soy, coconut and

safflower, or other materials such as amaranth,

hazelnut or fish oils that may be beneficial for use in

infant formula. For example, a human milk fat

analogue containing DHA and ARA at the sn-1 and

sn-3 positions, respectively, as well as palmitic acid

at the sn-2 position, has been produced.

Complex lipid matrices

Developing fats with physical properties closer to

human milk fat globules is a newer concept to

increase the potential for infant formula to produce

nutritional and physiological benefits similar to the

human-milk fed infant. One such complex matrix,

Nuturism, has been developed. Limited animal work

has shown that early feeding of a formula containing

the more human milk-like lipid matrix (Nuturism)

affects body composition, specifically fat

accumulation, in mice subsequently challenged with a

moderate western style diet.

Commercialised Structured Lipids

Betapol from Lipid Nutrition is arevolutionary triglyceride that iscomparable with the structure oftriglycerides found in human breast milk.Unlike common triglycerides found inmost infant formulas, Betapol is more likehuman milk fat and has most (40-70%) ofits palmitic acid attached to the sn-2position, with the sn-1 and sn-3 positionsbeing occupied by unsaturated fatty acidssuch as oleic acid, ARA, DHA and EPA.Studies have shown that Betapol can playa beneficial role in factors such as lipidabsorption, energy availability, calciumabsorption and stool softness.

InFat is clinically-proven fat ingredient(beta palmitate structured lipids) for infantformula with high percentage of palmiticacid in its sn-2 position. InFat™ wasdeveloped by Enzymotec and ismanufactured and marketed by AdvancedLipids, a joint venture of Enzymotec andAAK.

αααα-lactalbumin

Infant formulae, which are derived from bovine milk or whey,can be supplemented with pure α-lactalbumin to more closelymatch mother’s milk in protein composition.

α-lactalbumin is a main source of tryptophan (5g/100g) and agood source of branched chained amino acids. It bringscystein which is not synthetized by newborns and premature.The major users of α-lactalbumin are Asiatic producersespecially Japanese for their starter and follow-on formulae.There are very few users of this protein in Europe. Star,subsidiary of Danone in Italy, adds alfa-lactalbumin in pre-term and starter formula to obtain an amino acids replicationcloser to mothers’ milk.

Maltodextrin

Maize is the main source because its phosphorus content is

lower than that of potatoes. Potatoes are the secondary

source. Wheat cannot be used as the source must be gluten-

free. The grade of maltodextrin used is DE 35 or DE 40.

Starch

Potatoes are the main source because it is cheap and its

viscosity is higher than of maize. As a result, the use of

starch is reduced in the formulation.

• Fat supply

Different fat blends can be used, but essentially a canola, corn,

sunflower (with high oleic acid), palm, coconut blend and GMO

free. Medium Chain Triglycerides are found in predigested

products. MCT are used in formulae along with partly hydrolysed

proteins. Polyunsaturated Fatty Acids (PUFA) are used in pre-

term formulae. The source of this ingredient is egg lipids, fish oil

and DHA, ARA (single cell triglycerids), the cheapest being the

fish oils.

• Protein supply

Standard formula

The use of an 80/20 Casein/ Whey protein ratio for starter and

2nd age formula is very popular in the UK and in the

Netherlands. The choice of the ingredient used to supply

proteins to infant formulae will depend on two main factors,

the price and the carbohydrate used in the formula. (…)

Pre-term formulae

It's containing DHA use as the protein supply WPC60 or up to

83% of concentration for some products.

Formula with hydrolysed milk proteins

The Company manufactures its own protein hydrolysates

because it is cheaper and it also facilitates the increase of

its own experience in this field. The company also buys

small quantities of protein hydrolysates from external

suppliers, but this ingredient is then more expensive and

can exhibit off-taste.

Soy formula

The protein used is soy isolate. The use of soy concentrates

is not permitted in the EU. Several protein fractions such as

alpha-lactalbumin, lactoferrin and caseino-

glycomacropeptide (CGMP) are under investigation in

research programs ‘X’ and ‘X’.

Lactose

Lactose is the most commonly used carbohydrate for two

reasons: it is a cheap ingredient and it is naturally found in

breast milk.
