At sbe, we have a
reputation for being pioneers
in the hospitality industry. Today,
sbe has 80 properties currently
operating or in development and we
produce over 3,000 events annually. As
I ref lect on our humble beginnings, I f ind
myself in awe of what we have achieved in
such a short time.

JOSÉ ANDRÉSJosé Andrés is an internationally acclaimed chef, author, educator,
and television personality. He is the President of ThinkFoodGroup,
the Culinary Director of SLS Hotels, a Culinary Partner at SLS Hotel
& Residences Brickell, and Founder and Chairman of the non-profit
World Central Kitchen.
Andrés has been named to Time’s 100 Most Influential list and was
awarded the James Beard Foundation’s top prize of Outstanding
Chef. He is the host and executive producer of ‘Made in Spain’
on public television, cookbook author and champion of Spanish
cuisine in America. His nearly 20 award-winning restaurants
concepts can be found in Washington, DC, Miami, Las Vegas, Los
Angeles and Puerto Rico, and include minibar by José Andrés,
Zaytinya, Jaleo, é by José Andrés at the Cosmopolitan of Las
Vegas, and The Bazaar by José Andrés at SLS Hotel
Beverly Hills and SLS South Beach and Mi Casa
at the Ritz-Carlton Reserve at Dorado Beach
in Puerto Rico.
He has taught at Harvard and George
Washington University and is Dean of
Spanish Studies at the International
Culinary Center.

DANNY ELMALEH Elmaleh is the Executive Chef of
sbe’s restaurant portfolio, including
his crit ically acclaimed signature
restaurant Cleo. He draws from
diverse cultures to create r ichly
textured shareable plates, which
encourage a warm, social dining
experience.
Elmaleh’s interest in cross-cultural
cuisine was f irst inspired by his
exper ience growing up w i th a
Moroccan father and Japanese
mother.
H e t r a ine d a t t he p res t ig iou s
Cul inar y Inst i tute of America in
New York and began his career at
Jean Moulin in Japan. He went on
to work in the kitchens of Ristorante
Giannino in Milan and Melisse and
Lemon Moon in Los Angeles.
In 2006, Elmaleh opened his own
res t au r an t , C e la d o n , an d was
dubbed a R is ing Star Chef by
StarChefs.com the following year.
At Celadon, he met Katsuya Uechi
and their relationship led him to his
current role at sbe.

collaboration with sbe, has become
a touchstone for hip dining in

Katsuya was named one of the Best
New Restaurants of 2007 by Travel
+ Leisure Magazine and heralded
as “one of the most exci t ing
restaurants to open in Los Angeles
in years” by Food & Wine Magazine
the same year. The restaurant will
soon expand from California, Miami
and the Middle East to Las Vegas at
the SLS Las Vegas.
Chef Uechi br ings over three
decades of culinary and restaurant-
operation expertise to his role at
sbe. In addition to Katsuya, Uechi
currently operates Katsu-ya, Izaka-
ya and Kiwami restaurant concepts.
MICHAEL SCHWARTZ M ichae l Schwar t z i s known in
Miami and beyond for his delicious,
straightforward fare made with fresh,
thoughtfully sourced ingredients.
He is the Head Chef at Restaurant
Michael Schwartz, a Culinary Partner
at SLS Hotel & Residences Brickell,
and the Food and Beverage Director
of The Raleigh Hotel.
Schwar tz won the James Beard
Award for Bes t Chef : South in
2010, and is recognized throughout
the cu l inar y communi t y for h is
c o m m i t m e n t t o r e s p o n s i b l e ,
seasonal food sourcing. In addition
to his role at The Raleigh, Schwartz
is the Executive Chef of Michael’s
