MICE, Melbourne International Coffee Expo, is an
annually-held melting pot for growers, manufacturers, roasters, suppliers, café owners and baristas to all come together under one roof, talk coffee, show off their wares and connect though their mutual love of coffee. It typically acts as a launch pad for new and innovative espresso technology and 2019 was no different. With the extraction of a perfectly brewed coffee continuing to evolve more like a science than an art, it comes as no surprise to see the use of automation increasing. Highlighted this year was the rise of the stand-alone milk steamer. Technology has advanced rapidly in this area, enabling perfectly heated and stretched micro-foam milk to be made at the push of a button. Minimal milk wastage, reduced time training staff, better work flow for baristas and consistent milk every time are some of the reasons for cafes taking advantage of this technology. Check out WPM milk steamers. Continuing on the milk theme, this year saw the explosion of non-dairy milk alternatives. Just when you thought you had your options covered, with soy, coconut and almond milk, you might need to look further afeild. Oat milk is soon to be a staple option but keep a look out for other alternatives, as substitutes are developing fast. Other cool stuff included Aremde’s Nexus One. (pictured below)
Designed in Australia, this ‘less machine, more experience’ weight-based espresso machine really encapsulated the WOW factor! Trends in the Melbourne café scene included different blends/origins for white and black coffees, minimalist espresso supplier branding, custom menus, sustainable packaging and of course impeccable latte art and bottomless filter coffee. One final note, coinciding with MICE 2020 will be the World Barista Championships – the perfect excuse to make the trip over. See you there. Tell us a little about your business… Robert Harris is arguably New Zealand’s longest-established coffee brand, dating back to the early 1950s. With a national cafe chain of over 40 outlets, Robert Harris have commenced a national upgrade program to position the brand as the best looking cafe chain in the country.
Why did you choose this location for your business? We love a main highway position as it captures both locals and visitors alike. As we cater to such a broad demographic, the site we managed to secure for our Washdyke customers is perfect.
What changes/trends have you noticed within the industry over the past year? Increased wages and other costs mean that cafes need to be very aware of their bottom line. We find that consumers are looking for more fresh and healthy options, alongside quality and considerate service, and so we need to be more efficient than ever to keep up with demand.
Why did you choose Aitkens to support you in this venture? Having worked with Aitkens for many years we find them to be a company we can trust. Their staff are supportive and easy to work with.

What is a key item in your kitchen that you couldn’t live without? The Starline pass-through dishwasher gets a hammering from the moment we open until closing time.
What is the most popular dish on your menu? Customers love our fresh salads. The current favourite is the raw broccoli and bacon salad – it flies out the door.
What’s the most OTT coffee order you’ve had? It would have to be the order of 20 large takeaway coffees for a local business team. We had to form a production line so we could get them all out as quickly (and hot!) as possible. The customers loved it. What is the most recent item you have purchased through Aitkens? Zuma tapas dish in Charcoal. Aitkens have been a one stop shop for us as far as BOH equipment and small wares go. Robert Harris have been using Aitkens as a supplier since the rebranding of our network started around three years ago.
Why did you purchase this item & what is its purpose? We use the tapas dish for one of our best sellers – Three cheese mac & cheese topped with panko crumbs and crispy bacon. That being said, a lot of the pieces we buy from Aitkens have multiple uses.
Are you happy with the quality of the product? The Zuma crockery range is very well wearing – and with the large array of shapes and sizes available it really suits out ever-changing menu. Our support networks at Aitkens have been able to piece together a product package that fits in with the look and feel of our Robert Harris cafés .
How do you find the ordering system and service of Aitkens? This is so important and one of the strengths that sets Aitkens apart. It is easy to order and we are really happy with the fast turnaround times. Can you pinpoint a difficulty particular to your business you are working to overcome? Like most, I’m sure, keeping costs under control. Quality food, quality service and beautiful surrounds all come at a cost. We try to balance all of these with the consumer’s hip-pocket in mind.
What is your favourite dish/drink on the current menu? It would have to be the house-made fritters served with smoked salmon, scrambled free range eggs and peach & mango chutney. We change the flavours of the fritters depending on seasonal availability. The current broccoli and carrot fritters are a hit!

Having recently celebrated its first birthday, we took the time to talk to the man that made it all happen – Seth Hamilton.

Why did you choose the location of this venue? Having spent many hours both working and socialising on “the strip” as a young buck, the opportunity to be a part of Christchurch’s new phase of hospitality was a no brainer. Combining with business partners Clive and Josie, we shared the same vision and desire to bring our concept to “the terrace.”
What is your target audience? Beer lovers, food lovers and just people who love to have a social yarn and an enjoyable experience in a nice comfortable, warm environment.
How long has The Craft Embassy been trading? We recently celebrated our first birthday. We were one of the first new venues to open on the terrace. It has been a great ride so far!!
What is the most recent item you have purchased through Aitkens? We recently purchased a Wedderburn Vac Pac machine, much to the chef’s delight! It’s a great machine, giving us a lot more options for our ever growing menu.

What is your favourite item on the menu? For me it would be the aged beef fillet daikon with miso, onion puree, onion rings and cress, with shiitake mushroom jus, which is showcased on our new menu. In saying that I’ve been known to frequent the good old southern fried chicken burger or even the raw beetroot salad! I’m torn….does that answer your question!?
Has Aitkens been with you right from the beginning? How have you found the service from your rep? Yes! Aitkens has been with us from day dot, they were involved in the setup phase and the relationship has continued throughout our first year. Richard has been a dream to work with, he is always available when required. It’s a great partnership we have going.

BLUEBERRY, RICOTTA & LEMON PANCAKES INGREDIENTS
1¼ cups MILKLAB® Macadamia 1½ cups all-purpose flour 3 tsp baking powder Pinch of salt 1 tbsp sugar 1 cup low-fat ricotta 1 tsp vanilla extract 2 tsp grated lemon zest 1 egg ¼ cup blueberries ⅓ cup maple syrup
DIRECTIONS
1. Sift flour, baking powder, salt and sugar in a large bowl. 2. Make a well in the centre and pour in MILKLAB® Macadamia, egg and vanilla, and stir to combine. 3. Stir through ricotta and lemon zest. 4. Heat a non-stick pan on medium-high heat, and spoon ½ cup pancake mixture. 5. Flip and cook until done. Top with blueberries and maple syrup.
