1 lb. of parsnips. Washed and dicedinto 1 inch cubes1 lb. of yellow potatoes, washed anddiced into 1 inch cubes. 2 Tbsp. of unsalted butter1/2 tsp. of black pepper2-4 cloves of garlic, peeled4 quarts of water1/2 cup of milk of choiceSalt, to taste
Optional:Chives, washed and chopped forgarnish.
Place 4 quarts of water in a large pot andplace on stove.Place potatoes, parsnips and garliccloves into pot of water. Set to mediumhigh heat and bring to a boil.When pot starts to boil, reduce heat tomedium and cook 20-30 minutes untilpotatoes and parsnips are tender.Drain potatoes and parsnips. Put intoheat safe bowl.In a small saucepan, warm milk andbutter just until butter melts.Add warm milk and butter mixture andmash. (These are rustic, and will not becompletely smooth). Add salt and pepper to taste.Garnish with chives and enjoy!
