For the second instalment of The Rum Shack’s cocktails we’ve

kept it short. Too much of a good thing and all that.

This time around we’re offering up 6 original rum cocktails using

different styles from the far corners of the Caribbean (as well as

Scotland’s first and only rum) alongside a couple of other tipples

for those of you who aren’t enticed by our kill-devil options.

As ever, we also have 4 simple serves available for you to work

your way through along with our cocktail of the month and our

large selection of beers, wine and all ting fine.

We hope we have managed to provide something for all of you

but please do not hesitate to ask at the bar for recommendations,

alternatives or clarification on anything you are not sure of.

Every vessel that transits the Panama canal must pay a toll based on it’s size

and cargo volume. Tolls for the largest ships can run up to about $450,000

however the smallest toll ever paid was 36 cents, plunked down in 1928 by

American adventurer Richard Halliburton, who swam the 77 kilometre long

canal. Today, some $1.8 billion in tolls are collected annually.

Venezuela is home to the Capybara, the biggest rodent in the world.

They can weigh up to 80kg and look like the love-child of a hippo and a

guinea pig (ouch). In addition to having webbed fingers and toes, they

can also hold their breath for several minutes underwater if they are

hiding from predators.

Rodents are usually pretty quiet creatures but these guys have been heard

clicking, squeaking, grunting, purring and even barking!

Definitely not the most famous Bob to hail from the small Caribbean island

of Jamaica, Keith ‘Bob Andy’ Anderson has certainly made his mark on

Jamaican music and contributed to it’s worldwide acclaim.

Emerging as a solo artist in 1966, he subsequently founded the legendary

vocal group The Paragons and was one of Studio One’s leading lights both

writing for himself and contributing to others’ work. Bob gained international

recognition in 1970 with his cover of Nina Simone’s ‘Young, Gifted and

Black’ alongside Marcia Griffiths who would later go on to be one of Bob

Marley’s I-Threes.

Bob performed at anti-apartheid concerts in the late ‘80s, campaigned for

higher standards within Jamaican music, toured the world a few times over

and inspired a new generation of reggae artists.

In 2006 Bob received Jamaica’s Order of Distinction for his contributions to

the development of reggae music.

Hats off to you auld yin.

Eddie Grant was born in Plaisance, Guyana, in 1948. Despite being

renowned for asking Joanna to give him hope during the dark years of

Apartheid, not wanting to dance or rocking down to Electric Avenue, we

particularly like the fact that his middle name is Montague!

Ruben Dario (Felix Ruben Garcia Sarmiento) was an influential Nicaraguan

poet, journalist and diplomat. Dario modernised and breathed new life into

poetry in Spanish on both sides of the Atlantic through his experiments

with rhythm, metre and imagery. Dario developed a highly original poetic

style that founded a tradition and began a new movement in Nicaraguan

literature called Modernismo.

He literally wrote himself into the history books!

James Clerk Maxwell was a Scottish scientist in the field of mathematical

physics. He formulated the classical formulation of electromagnetic

radiation which brought electricity, magnetism and light together as

manifestations of the same phenomenon for the first time. His work

in this field led to the prediction of the existence of radio waves.

Maxwell also contributed greatly to the field of optics and colour vision,

creating the foundation for colour photography.

His contribution to physics are considered by many to be of the same

magnitude as both Sir Isaac Newton and Albert Einstein and Einstein

himself described his work as ‘the most profound and the most fruitful

that physics has seen since the time of Newton.’

Sweetener with a high fructose content

commercially produced from several species

of agave, including Agave tequilana (blue agave),

the base ingredient of tequila.

Bitter, orange French aperitif.

An aperitif wine, a blend of two aromatic grape

varietels, herbs, fruits and spice.

Apricot liqueur made by steeping French apricots

in neutral sugar beet spirit.

Fig liqueur made by macerating fresh figs in

neutral sugar beet spirit.

Peach liqueur made from ripe French white

peaches macerated in neutral sugar beet spirit.

Spiced sweet syrup, used a lot in Caribbean

and tropical drinks.

Clear, relatively dry liqueur made from crushing

Marasca cherries, including the crushed pit which

gives it a subtle, bitter almond flavour.

Meaning ‘scented’ in Spanish, this is a dark

and nutty sherry.

The clear, perfumed by-product of the

distillation of fresh bitter-orange blossoms

for their essential oils.

Sweet syrup made from almonds, sugar and

either rose water or orange flower water.
