    Michael BarthText BoxGrease Interceptor, Special Conditions: Typically, a commercial kitchen of this nature would require a full, exterior, gravity grease interceptor installed in accordance with UPC 1014.3, with a capacity of approximately 750 gallons. It is recognized that the installation of a 750 gallon gravity grease interceptor would take considerably more space than what is available. As such, as an alternate method in accordance with IBC Section 104.11, the installation of a hydromechanical grease interceptor, as described by the applicant in the approved plans, is approved for use for this project provided the following conditions are made a part of the approval:1. In accordance with UPC 1014.1.2, All grease interceptors shall be maintained in efficient operating condition by periodic removal of the accumulated grease and latent material. No such collected grease shall be introduced into any drainage piping or public or private sewer. If the Authority Having Jurisdiction determines that a grease interceptor is not being properly cleaned or maintained, the Authority Having Jurisdiction shall have the authority to mandate the installation of additional equipment or devices and to mandate a maintenance program. As the hydromechanical grease interceptor is being approved as an alternate to a full gravity grease interceptor, the Town of Ruston will mandate a maintenance program as follows:a. During the first year of operation, the hydromechanical grease interceptor shall be cleaned at least once a month by a licensed professional pumping contractor and/or service company. Monthly cleaning reports shall be provided to the City of Ruston that identify the approximate volume of grease accumulations removed as compared to the volume and capacity of the grease interceptor.b. After the first year of operation, based on the accumulations of grease as reported by the service company, the regularity of reports, and the observed conditions, the service interval may be adjusted to be more or less frequent if supported by a recommendation by the licensed service company that has regularly performed the service over the course of the previous year.2. In order to protect the City's sewer system from damage due to accumulation of fats, oils and greases, the City of Ruston is granted authorization to gain access to, open, or otherwise inspect the grease interceptor during normal business hours, without any prior notification to ensure that the interceptor is operational, contains all necessary components, and is operating in full accordance with the manufacturer's design intent.3. Failure to maintain the grease interceptor in accordance with these conditions, or operating it without all of its necessary components will constitute a violation of the Uniform Plumbing Code as adopted by the City of Ruston and will be subject to enforcement under RMC 12.40. In accordance with RMC 12.40.080, civil violation penalties may include a penalty amount up to $500.00 per day that the violation exists, or criminal penalties as a misdemeanor could result in fines up to $5,000.00 and/or imprisonment for a period of up to one year or both.4. The hydromechanical grease interceptor shall be provided with a non-removable and non-adjustible factory installed, built-in flow control device that limits the flow to an amount not to exceed the maximum flow capacity of the interceptor.
