RICE UPPIT Boil 3 / 4 cup water in a pan. Add a fistful of Papdi Lilva (Avarekal – in freezer, usually in one of the door racks, or ask Dad) Add only a pinch of salt. Cover and let it boil for about 7-8 minutes. Add 2 teaspoons coconut oil. Add 2 teaspoons olive oil. Add 3 1 / 2 cups water and bring to boil. Reduce flame to low on the stove. Slowly stir in 1 1 / 2 rice uppit mix. Keep the pan covered and on low heat until all water is absorbed. RAVE UPPIT Cook frozen green peas or Avarekai (optional) Alternatively, heat a teaspoon of oil in the pan and add chopped onions and saute until light brown. Add chopped tomatoes and cook until soft. (Both of the above are optional.) Boil 2 3 / 4 cups water in the small pan. Add 1 teaspoon coconut oil. Add 1 teaspoon olive oil. Turn down flame on stove. Slowly stir in 1 cup uppit mix. Cover pan and leave on low heat until all water is absorbed. HULI AVALAKKI Pour ½ cup Huli Avalakki mix in a vessel. Add enough water to cover the mix (about 2 / 10 ths - 3 / 10 ths of an inch above the mix). Set it aside for about 15 minutes till the mix hardens. Mix well with a spoon (volume increases). If mixture is still hard, add a little more water and set it aside till it is absorbed. HULI Cook 1 cup toor dhal in the pressure cooker with 2 1 / 2 cups water. Vegetables can be cooked separately or in the pressure cooker in a separate container, without a lid, when cooking rice and toor dhal. Add toor dhal and cooked vegetables in a vessel. (Add the following a little at a time according to taste.) Add 3 teaspoons Huli Pudi. Add about ½ teaspoon pink sea salt. Add about ½ teaspoon tamarind paste. Sprinkle some turmeric.
