Dragi gosti, ljubitelji dobre hrane, kolege kuhari, veliko mi je zadovoljstvo što vam mogu predstaviti vodič naše udruge Jeunes Restaurateurs (JRE) Hrvatska koja je dio europske obitelji chefova JRE-a, aktivne u 16 zemalja.Sve nas koji se predstavljamo u ovom vodiču povezu-je predani rad, snažna volja i bezuvjetna ljubav prema ovom poslu. Povezuje nas i htijenje da u našim restorani-ma, svatko na svoj način - za vas koji cijenite dobru hra-nu, kvalitetne regionalne namirnice, profesionalnu uslugu i birana vina - stvori doživljaje koje ćete pamtiti i vraćati nam se, nadahnuti tim iskustvima.Dolaskom u naše restorane ulazite u naše kuće jer ovaj posao radimo s velikom ljubavlju i ulažemo u njega ono najvrednije što kao ljudi i profesionalci posjedujemo.Ponosna sam što vas kao predsjednica ove obitelji čiji je moto Never-ending passion, mogu pozdraviti i isto-vremeno zahvaliti svim kolegama na predanom trudu. Dear guests, dear good food lovers, dear fellow chefs, it is my great pleasure to present the guide of our as-sociation Jeunes Restaurateurs (JRE) Croatia, which is part of the European family of JRE chefs, spread across 16 countries.All of us who present ourselves in this guide connect hard work, strong will and deep passion for cuisine. We are joined by the desire to create experiences in our restaurants and to inspire, each in his own way. Our

efforts are directed towards everyone who appreciates good food, local produce of superior quality, professional service and selected wines, in order to evoke feelings that our guests will remember.When you come to our restaurants, you actually enter our houses because we do this job with great love and passion, investing the most valuable things that we as people and professionals possess.I am proud that as President of this family whose motto is Never-ending passion, I can welcome and also thank all my colleagues for their dedicated work that never ceases to amaze. Udruga Jeunes Restaurateurs (JRE) nije definirana samo sloganom Never-ending passion. Manifest JRE-a čine još tri važna aspekta koji objedinjuju naše djelovanje: strast prema kuharskom umijeću, poštivanje porijekla namirnice i briga za održivi razvoj te timski rad s ciljem pružanja nezaboravnih trenutaka gostima.

JRE Hrvatska ponosni je član međunarodne obitelji koja djeluje u 16 zemalja i okuplja više od 350 restorana. Čla-novi te velike obitelji zajedno imaju više od 180 Micheli-novih zvjezdica i 4000 Gault Millau bodova. JRE restora-ne godišnje posjeti 5 milijuna ljudi, o kojima se brine više od 6000 djelatnika.

15JRE Malvazija Kozlovic JRE Chiavalon ekstra djevicansko maslinovo ulje

Povezivanjem dviju strasti - strasti prema gastronomiji i strasti prema vinu - chefovi JRE Hrvatska i vinari Gianfranco & Antonella Kozlović kreirali su ekskluzivnu i limitiranu liniju JRE Malvazije Kozlović koja je dostupna samo u JRE restoranima i vinariji.

Vino je buteljirano pod posebnom etiketom, a svaka je boca numerirana i ručno potpisana. Suradnja JRE-a i vinarije Kozlović simbolično je obilježena sadnjom loze u najboljem vinogradu, na poziciji Santa Lucia. Ondje je svaki restoran zasadio 50 loza autohtone malvazije istarske, bijele sorte vinove loze koja je prvu berbu imala 2018. godine.

Istra je prema stručnim autorima vodiča Flos Olei, međunarodnog kataloga koji se smatra ‘Biblijom ekstra djevičanskih maslinovih ulja’, odnijela titulu najbolje svjetske regije, a ulja braće Chiavalon u ovom se vodiču za 2020. godinu diče s čak 95 bodova. Zajedno s braćom Chiavalon, chefovi JRE Hrvatska kreirali su JRE Chiavalon ekstra djevičansko maslinovo ulje koje se može naći samo u JRE restoranima i u kušaonici obitelji Chiavalon.

Joining two passions, one for gastronomy and the other for the winemaking, JRE chefs and winemakers Gianfranco & Antonella Kozlović have created a limited and exclusive wine - JRE Malvazija Kozlović, an indigenous Croatian white variety, available solely in JRE restaurants and winery.

Having a specially created label and each bottle be-ing numerated and hand-signed by a winemaker, JRE Malvazija indeed tells a story. As a symbol of this coop-eration, chefs have planted 50 vines each at the most valuable Kozlović plot - single vineyard Santa Lucia. First harvest of JRE vineyard took place in 2018.

According to the Flos Olei guide, which is considered to be an ‘olive oils Bible’, Istria has won the title of the top region in the world, when it comes to extra virgin olive oil. In the Flos Olei guide for 2020, Chiavalon brothers – who with JRE Croatia created a special JRE Chiavalon extra virgin olive oil – won the great score of 95 points. JRE Chiavalon extra virgin olive oil is available in JRE restau-rants and Chiavalon tasting room exclusively.

Boba, the name of our restaurant, is a family nickname. It stands for a dedication to our origins and family story. It connects us to the island we call our home. Therefore, our cuisine is inspired by ingredients from our surroundings, both sea and the island itself. Chef Vjeko Bašić is in con-stant quest for fresh seafood that reflects the change of seasons and respect for our suppliers. Restaurant’s garden is a crown of gratitude for fragrances and aromas we use in our dishes.

Boba, ime našeg restorana, obiteljski je nadimak koji svjedoči o posvećenosti korijenima i obitelj-skoj priči. Povezuje nas s otokom koji zovemo svojim domom. Stoga je naša kuhinja inspirira-na namirnicama iz našeg okruženja, morskog i otočnog. Chef Vjeko Bašić u stalnoj je potrazi za svježim darovima mora, a ta se potraga odražava u promjenama sezonskog jelovnika i poštovanju prema dobavljačima. Cuisine of the Boškinac Restaurant is the result of the long experience in exploring island’s col-ours, scents and ingredients. We are using local produce exclusively, all flavours are reinterpreta-tion of local gastro standards and island heritage. Presentation and cooking methods, in the inter-pretation of chef Marko Turković, are following the modern cuisine while on the palate you may expect an explosion of tastes and aromas of the island of Pag.

Restoran, odnosno kuhinja restorana Boškinac plod je našeg dugogodišnjeg iskustva u upozna-vanju Paga i palete boja, mirisa i okusa kojima smo okruženi. Radimo samo s lokalnim namir-nicama, a svi su okusi reinterpretacija lokalnih gastro standarda koji su svoju preinaku doživjeli u tehničkom smislu, kroz moderne kulinarske metode, ali ne i u organoleptičkom karakteru. Respect of ingredients and their quality, as well as harmony and purity of taste are the basic feature of our modernly interpreted Mediterranean cuisine. Lunch menu is made up of simpler dishes and changes every few weeks. Dinner menu is slightly more complex and includes an offer of personalized tasting menus carefully created and prepared by chef Vedran Petranović.

Thus, Foša Restaurant is blending Dalmatian cuisine with the culinary traditions of other Mediterranean countries.

Marina Gaši & Davor Buršic

Family run restaurant overlooking the marina of Novigrad is an ideal destination for seafood lovers. The motto of the restaurant and its chef Marina Gaši is: The sea and fishermen dictate our menu, sincerity and love season all our dishes. Since indeed it is so that here you eat what is being given by the sea that particular day, Marina serves only four, six or eight course tasting menus. Desserts are not included in the tasting menu. Wines are on Davor Buršić, Marina`s husband and sommelier.

Obiteljski restoran s pogledom na novigradsku marinu idealno je odredište za ljubitelje morske hrane. Moto restorana i njegova chefa Marine Gaši glasi: More i ribari diktiraju naš meni, a iskre-nost i ljubav začinjavaju svaki naš tanjur. Budući da se kuha ono što nam toga dana podari more, u Marini se nude isključivo degustacijski meniji od četiri, šest ili osam sljedova.
