wereabsolutebeginners–allweknewwasthatwewantedtomakebeautifuldessertsusingnothingbutnaturalingredients.TheonlyrulewehadwasthatrawcakebyTheHardihoodhadtobeabundantandflavoursomeandneverblandorboring.Throughalotoftrial,errorandspiltnutmilk,wegottogripsfirstwiththebasicsandthenwiththecomplexitiesofrawdessert-making.Sincethen,TheHardihoodhasbecomeknownforitscrisp,minimal,

luxuriousaesthetic.Herewewanttosharewithyouhowwecreatedourproducts,ourjourney,andthetipsandtechniquesthatwe’vepickedupalongtheway.Forgeteverythingyouthoughtyouknewaboutmakingcakeswithoutbutter,eggsandflour–we’reheretogiverawagoodname!Herewe’llshareourcollectionofrecipesforrawcheesecake,chocolateindulgences,icecreams,puddingpots,breakfastbowls,smoothies,tonicsandsuperfoodblends.Likealotofthingsinlifeourmostbrilliantbreakthroughshavebeen

bornfromtheashesofdisaster.We’vehadalotoffun,though,andwetrynottotakecake-makingtooseriously.It’sthislight-heartednessthatwewanttopassontoyou.Don’tbeafraidoffailure.You’reworkingwithdelicious,wholesomeingredients;howeveritlooksintheend,wepromiseit’lltastegreat.Relaxandenjoyit–everythingtastesbetterwhenservedwithasmile.OurStoryWe’vebeenfriendsfornearlyadecade,duringmostofwhichwelivedtogetherinanEastLondonwarehouse,backwhenrentwascheap.Wemetatafancydinnerpartythatwe’dbothbeenpersuadedtogotoanditwasn’tlongbeforewerealizedthatweweretheonlyonesatthetablegigglingateachother’sjokes.WetookthelongbusridehometoHackneytogetherandhaven’tstoppedlaughingsince.Wedidn’tknow,atfirst,thatweweredestinedforalifeofrawcake.

BeforedreamingupTheHardihoodweworkedinfashionandinlifestylejournalism.Likeanyself-respectingcitydwellers,wewerepassionateaboutLondon’sdiversefoodscene;we’dtrysomewhereneweveryweek

anddelightinsharingourfindings.GettingtoknowLondonthroughitsbest-loveddiningspots,welookedforinnovativemenus,freshfoodandgoodvibes.SoonwebegantonoticeariseinLA-inspiredcold-pressjuicebarsand

Sydney-stylecaféswithafocusonwellness,andasourcuriositypromptedustotravelaroundLondonforatasteofthegoodlife,ourintriguegrewwitheachfeel-goodfoodspotthatwevisited.Themorefar-outthedish,themoreinspiredwewere;nutmilk,matchalattes,chiaseeds,rawcacao–itwasallnewtousandwelovedit.Wediscoveredayurveda,healingfoods,holistichealthandrawcuisine,sampledmedicinalmushrooms,fermentedvegetables,powderedrootsanddrankcharcoalinfusions.Wefeltliketheworldwasontosomething;peoplewerebeginningtolookatfoodinadifferentway,rejoicingingettingtheirfive-a-dayinsteadofbeingburdenedbyit.Accompaniedbyournewyear’sresolutiontogiveuprefinedsugar,thisfeltlikeanawakening.Webecameimmersedintheideaofwellnessandwonderedwhyourlocalneighbourhooddidn’thavemoretooffer.Growingtiredofthetrekacrosstown,wedecidedtoexperimentwithourowncreationsinstead.Weboughtafoodprocessor,ashed-loadofdates,nutsandcoconutoilandgottowork.Lookingbacknow,welaughatourfirstattemptstomasterraw

desserts–ourtrialsmostlyincludedchuckingeverythingintoablenderandhopingforthebest.Thereweresoggycheesecakes,droopybrowniesandcrumblyflapjacks,butmiraculously,weweren’tdeterred.Welovedthisnewapproachtobakingandwereasexcitedaboutthejourneyaswewereaboutthedestination.Intheearlydaysweformulatedcreationsfromourkitchensathome,

asalthoughwenolongerlivedtogetherourhouseswereafive-minutewalkaway.We’dspendallofoursparetimetryingoutnewrecipes,sourcingingredientsandreadingupontechniques.Weboughtthebooksandbecamefriendlywithourlocalgreengrocerssothatthey’dletuspurchaseinbulk.Wetestedeverythingwemadeonourmalefriendsaswellasfemale,becauseweknewthatwhenitcametocaketheywouldn’treallycarethatsomethingwasgoodforthem,weknewthey’djustgiveittousstraight.Wewereadamantthatourcakeswouldalwaysbeabsurdlydelicious,notjusta‘free-from’alternative.Becauseourcreationsaresovisualwedocumentedthewholething

onInstagramfromthestart;welearnedhowtostylethecakesandbecameenthralledwithkitchenware,ceramics,teatowels–younameit.Webuiltuparepertoireofrecipesthatwewereproudofandbegantoreceiveorders,firstfromourfriends,thenfrompeoplewho’dheardaboutusthroughwordofmouthoronline.Astheweekswentbywe’dmakeanincreasingnumberofcakes,gettingmoreadventurouswitheachorder.Inthewinterof2015wewereinvitedtosellcakesatParisFashion

Week.Weweredelightedandagreedimmediately,thinkingwe’dfigureoutthelogisticslater.IntheendwetooktheEurostarwithsevensuitcasesandthehelpofDaisy’shusband.WehadouringredientsdeliveredtoadepotontheoutskirtsofParisandusedAirbnbtotransformsomeone’skitchenintoaproductionunit.Itwasprobablyoneofourmostbrilliantlyridiculousadventurestodate,toppedonlybyreturningthefollowingyearbycaranddoingthesamethingalloveragain.Introducingtheinternationalfashioncrowdtorawcakewastransformationalandwe’veworkedhandinhandwiththefashionindustryeversince.Weoutgrewourhomekitchensprettyquicklyandsoonbeganlooking

forsomethingmorefunctional.Ouronlyprerequisiteswerethatthespacewouldhavegoodnaturallightandplentyofroomforfridges,butasidefromthatwewerehappytohaveanyspacethatwecouldcallourown.Asithappens,wegotlucky,reallylucky,andwemovedintoastudiointhecentreoftheareawehadsetouttotransform.Wehaveaskylight,exposedbeamsandagardenandwedefinitelyknowhowgoodwe’vegotit.Signingtheleaseonourownstudiokitchenwaspivotal.Wewereable

todedicateallofourtimetoourpassion,fillingthecupboardswithallsortsofsuperfoods,herbsandtinctures.Wehiredourfirstemployeeandbecameatinyteamofthree,learningalittlebitmoreeachdayaboutcreatingbeautifuldessertsusingnatural,rawingredients.WhyRaw?Itwasthroughourcommitmenttofindawaytomakedeliciousdessertsthatwerefreefromrefinedsugarandprocessedingredientsthatwediscoveredrawcuisine,aplant-basedstyleofpreparingfoodinwhichcomponentsaren’theatedaboveacertaintemperature.Theexacttemperatureisdisputed,withsomesaying40°Candotherssaying49°C.Wesettleforaround42°C.

Weloverawdessertsbecausetheingredientsweusearenaturallyfreefromrefinedsugar,gluten,dairyandsoy,andareworldsawayfromprocessed‘free-from’foods,whichareoftenloadedwithsubstitutestoreplacewhicheverfoodgroupthey’retryingtoavoid(andaren’tnecessarilyhealthier).Welovepushingthelimitsofraw,natural,superfoodingredientstocreatethebestpossibleconfectionery,ineveryway.Andthere’snodenyingthatwefeelgreatonit.First,though,wewanttobeclear.Neitherofuseatsanentirelyraw

diet.Londonisoftenchillyandwewakeupcravingahotbowlofporridgeorsoup.Really,it’saboutlisteningtoyourbodyanddoingwhatfeelsbestforitbasedontheinformationthatyouhave.Thecravingsweusedtohaveforpick‘n’mixandBen&Jerry’snowfeelmorelikecravingsforrawSnickersbarsorourSaltedCaramelCrunchBars.Asourconsciousnessaroundfoodshifted,sodidourcravings.It’sallpartofalearningprocessandajourneythatistobeenjoyed.TheHardihoodPhilosophyTheHardihoodphilosophyissimple;webelievethatpeopleshouldhavecompletefreedomofchoicewhenitcomestowhatthey’reputtingintotheirbodiesandshouldn’thavetocompromiseonflavourordecadenceindoingso.We’refoodiesatheart,andbecauseofthisourRawCakecreationswillalwaysbeeverybitasdeliciousasthedessertsyougrewupwith,onlywiththeaddedbenefitofnutritiousingredients.Thislifestyleismostdefinitelynotaboutgoingwithout;it’saboutembracingwhatmakesyourbodyfeelgood,whatmakesyouhappyandthenumerouswaysyoucanhaveyourcakeandeatit.Sharingourjourneywithyoufeelslikeanaturalgettingtogetherwith

friends.Wedon’twanttokeepourdiscoveriestoourselves,wewanttogetoutthereandsharethegoodvibes!Weliveinaworldwhereit’seasiertomeaningfullyconnecttotheinternetthaneachother–nowmorethaneverweneedtomakeaconsciousefforttotreatpeoplerightinrealtimeandeatrealfoodwhilewe’reatit.ModernAlchemyLikemostpeople,wegrewuptryingtobelieveinmagic:TheCraft,HocusPocus,TheWorstWitch,Charmed...Ofcourse,therationalbrainknewitallalong,buttherewasstillapartofusthatcriedwhenwerealizedwewouldneverreceivealetterofacceptancefromHogwarts.Thenextfewyearswerespentmainlyforgettingaboutenchantmentand

learninghowtobecomegrown-ups.BelievinginFlowerFairiesandcastingspellsovergarden-foragedpotionsofpinecones,pebblesandvacantsnailshellsfadedlikedistantmemories.Itwasn’tuntillaterthatwerediscoveredalchemy–intheformofhealingherbs,elixirsandtonics.We’velearnedtobalanceourbodies’needsbysupplementingourdietswithherbsandsuperfoodsthataddflavour,colour,depthandhealingtoourmeals.It’sfascinating.Byusingnaturalingredientsandancientwisdom,wesupportthe

chemistryofthehumanbodywhilehavingfunandcreatingbeautifulfood.Thesedaysit’seasytogrababagofspirulinaormacafromyourlocalsupermarket,andforthemoreunusualingredientsweusuallyheadtoahealthfoodshoportheinternet.Trustus,though,thehuntfortheobscureisallpartoftheenjoyment;wewerelikekidsinacandyshopwhenwegottorunwildinLAforaweek,buyingupallofthepowders,pillsandpastilleswe’dheardofandthosewe’dnotheardof!GettingStartedIfthisisyourfirstforayintotheworldofraw,don’tbenervous–wewereyounotsolongago.Oneofthegreatthingsaboutrawbakingisitssimplicity.Unliketraditionalbaking,it’snotanexactscience,soitleavesplentyofroomforcreativityandconstructivefailure.Wefindworkingwithwholesomenaturalingredientsrewardingbecausethey’resopure.Youknowexactlywhatyou’regoingtogetoutofarecipebecauseyouknowexactlywhatyouputintoit.Workingwithfoodsthatonlyhavethenameofoneingredientlistedonthebackofthepackagingisliberating.FeelFreetoExperimentTherearemanywaystoexpandontherecipesinthisbookandtherearemanywaystosimplifythem.Whenwefirstbeganreadingrawrecipebookswewerebewilderedbyhowcomplicatedtheywereandthelengthoftheingredientlists.Webegantoexcelatimprovizationandweurgeyoutoimprovize,too.Ifyou’reabouttostartpreparingyourdessertandsuddenlyrealizeyoudon’thaveenoughofsomethinginstock,experimentbysubstitutingitwithsomethingsimilar.Thesamecanbesaidforsuperfoodpowders–ifyoudon’thaveaspecificingredientinyourcupboardalreadyoryou’rewaitingforittoarriveafterorderingitonline(thishappenstousallthetime),don’tbeafraidtousesomethingelse.Therearenoruleshereand,whoknows,youmightfindavariationthatworksbetterforyouthisway.

Youcansimplifythisevenmorebymakingyourowningredientsifyouhavethetime.There’ssomethingverysatisfyingaboutseeingtheingredientsinoneformoneminuteandthenminuteslaterthey’resettinginthefridge,unaltered,onlypresenteddifferently.BacktotheFutureEatingasorganicallyaspossibleallowsustoreturntoourrootsandtohowourgreatgrandparentsate.Itisalsoagreatwaytoconnecttonatureifyouarelivinginabusycity.Ofcourse,eatinghome-grownororganicproduceisnotonlygoodforourbodiesbutalsofortheenvironment.Minimizingpesticides,syntheticfertilizers,hormonesandantibioticsmeansthattheproduceisfresherandlesstoxic.Organicfarmingmethodsreducesoilandwatercontamination,helppreservelocalwildlife,encouragebiodiversityandaregenerallymoresustainable.InspirationandInfluenceTravelisthesourceofinspirationthatwetapintorepeatedlywhenwearecomingupwithideasforTheHardihood.ItwasuponreturningfromrespectivetripstoJapanandIbizathatTheHardihoodwasinitiallyfounded,andwerevisitourmentalscrap-booksregularly.IbizaLeahhasfamilyinIbizaandovertheyearshasspentmanyjoyfulsummersfrolickingintheruralbeautyoftheisland.RisingwiththesunbecameatraditionforusinIbizaandwhenweexploredtheislandtogetherwe’ddrivedowndust-coveredtrackstoadifferentcoveeachmorning,capturingthelightoncamerabeforedippingintotheoceanandswimminginwhicheverdirectionthetidetookus.Oncewe’dhadenoughwe’dclamberontotherocksandsoakupthemorningrays,onlyhalfwatchingasthesunturnedoursoggyfootprintstoghosts.

rosehips,freshblueberries,gooseberries,blackberries,lemonbalmandsteviainterweavethecitywithnatureseamlessly.Eveningmealsareputtogetherusingtheday’sfindsandarerelishedwithfriendsandfamily.TheDanishword‘Hygge’describesthisheart-warmingenergy,andalthoughthereisn’tadirecttranslationweseeitsimplyastheDanishritualofenjoyinglife’ssimplepleasures.Timespentwithlovedonesissavoured,andcreatingabeautifulenvironmentinwhichtosharemomentsisanimportantpartofthis.

storeybuildingsandtheviewswerestretchingwayoutintothehorizon.PalmtreestoweredoverSilverLakeasthesunroseoverthecity.Weweresurroundedbyspaceandoureyesrevelledinrememberinghowtousethefullrangeoftheirvisionaswelookedintothedistance.Urbancactiandsucculentsgrewfreelyinthestreetsandpunctuatedourstrolltoayogaclassthatmorning.Themismatchedhousesandvillasexistedwithoutcorrelation,anendlessspectrumofcoloursandshades.Thelightbrokethroughthebranchesofbotanicalplants,castingourgiddyshadowsintheCalifornianlight.WeventuredtoourlocalMoonJuicewherewemetJeremy,ourdear

friendandseasonedLAtourguide,beforedrivingtop-downinhisMustangtovisitafoodshowinAnaheimaspalmtreesilhouettesdustedthesky.EvenbeforewevisitedtheRoseBowlFleaMarket,HouseofIntuitionandCaféGratitude,weknewthatweweremadly,truly,deeply
