February 2015 PRESIDENT’S MESSAGE
The month of February is synonymous with matters of weather, history and the heart. Heart health is emphasized by the American Heart Association during the month.
February 2 is Groundhog Day when the groundhog may or may not see his shadow which supposedly predicts whether we will have six more weeks of winter or not. February is also known as Black History month, remembering the role of black people, who over the course of our history changed America. The celebration of President’s Day originally honored George Washington and Abraham Lincoln, but now honors the office of the President.
The most special day during the month continues to be Valentine’s Day, a day which began as a liturgical celebration of a saint named Valentinus many centuries ago. It evolved into a day to celebrate romantic love with the presentation of greeting cards, flowers, candy, special dinners and other gifts. Remember to treat your loved ones as a special part of your life and enjoy them every day.

Let us welcome Debra Crawford and her husband, Curtis at 1510 Rarity Bay Parkway. Debra’s home state is Texas. Debra and Curtis moved here from Calgary, Canada! She is a
retired business teacher. They lived for 28 years in the Houston area. She says she is looking forward to exploring possible hobbies. Betty Blankenship and her husband George are currently renting 605 Sandpiper Drive while they "lot shop." Betty’s home state is Louisiana, but moved here from Austin, Texas. She loves outdoor activities, gardening, interior decorating (florals and tablescapes, especially), and travel. She also enjoys various crafts. Jean Thomas and her husband Craig are currently living on Heron Court while their house on Breakers Drive is being built. They are originally from Indiana. They have two adult boys, one of whom just got married. She likes to cook, redecorate, horseback ride, and do anything in the water.

DUES, DUES, DUES
Still $25.00 If paid by February 15 deadline. After the deadline, an additional $5.00 fee will be added and designated for charitable purposes due to the amount of work involved to remove and reinstate a member. The website does not have an easy way to do this. Once deleted (which occurs once a member does not pay their dues by February 15) all the information for that person has to be manually reinstalled in the program. It would be greatly appreciated if everyone paid their membership fee by February 15 - either at monthly meetings or via mail to our Treasurer, Pat Murphy, 120 Towhee Drive.

Loudon Lunch and Sweetwater Valley Farm Tour

Lunch at Annabelle's Emporium and Café - A unique shop of antiques, consignments, jewelry, furniture and more.
Then off to tour the Sweetwater Valley Farm – there you will learn about the “Udder story” and be able to shop for a variety of cheeses and other local food items.

Wine Pairing Dinner at Citico
RBWC has reserved WindRiver’s Citico’s Restaurant for a very unique and exclusive wine pairing dinner on Sunday, March 22. Glenn Irwin will lead this evening’s event by sharing
his extensive wine expertise on wines from Argentina and Chile. These wines are perfectly paired with a gourmet dinner prepared by Citico’s Restaurant Executive Chef Robert Allen.
The price for the dinner and selected wines is $55.00 per person, plus tax and gratuity, bringing the total fixed cost to $80.00 per person. Citico is offering two seatings, limited to 40 guests per seating, first seating at 5:15 – 7:15 PM and second seating at 7:15 – 9:15 PM. Guests will gather first in Citico’s Lounge for Cash Bar cocktails for the first half hour, followed by the Saludos - first wine and appetizer course. Guests will then adjourn upstairs to the dining room to enjoy the remaining Primero, Segundo, Terciera and Final courses and accompanying wines, detailed as follows.

What happens in Vegas...all started with The Rat Pack. This spirited show recreates one of the famous “Summit at the Sands” nights when a swingin’, ring-a-ding group known as “The Rat Pack” was creating hipster legend with a no-holds-barred nightclub act starring Vegas’ four favorite sons: Frank Sinatra, Sammy Davis, Jr., Dean Martin and Joey Bishop. Produced by Dick Feeney, THE RAT PACK IS BACK features a hot, live 12- piece orchestra that sends audiences straight back to the coolest time in history. See why The Las Vegas Sun writes, “This is as close as anyone has come to capturing the feeling of the real thing,” and the Chicago Tribune raves, “Classic comic material. Early bird sign-ups for the Wine Pairing Dinner are now being accepted via email or you may sign up at the February 3rd RBWC meeting. To reserve your spot, act now and email Leslie Phillips at [email protected] and specify which of the two seatings you prefer. Your email reservation will be confirmed only after your payment is received at the event sign-up at the February 3rd RBWC Meeting. If this event does not sell out, there will be signups at the March 3rd RBWC Meeting, and after which time both seatings are still not sold out, this event will be opened up to the Rarity Bay community at large.
The deadline to cancel your reservation and receive your payment back will be March 3 at the RBWC Meeting. After March 3, no payments may be returned.
This event will be a treat for all who come.

CHRISTMAS DAY DINNER 2014 For those residents who choose not to travel over the holidays, the annual Christmas Day Dinner has special meaning. It brings
together our growing Rarity Bay family, providing friendship and camaraderie that would be otherwise missed on Christmas
Day. It is always a joy to meet all the sons, daughters, grandchildren, special friends and new residents. This year no fewer than sixty-three folks shared in our annual dinner. Turkey,
ham, delicious dressing, silky mashed potatoes, home made gravy and home grown sweet potatoes were just a portion of the
amazing food that graced our tables. A huge Thank You to all the committee members and all those
extra hands that helped during the actual event. Without all those extra hands, this event could not take place. Of special
mention and Thank You are Janie and Arlen Bee for once again preparing and serving their holiday punch. It provided a warm
welcome to all who attended.
COMMUNITY NEWS
LADIES BRIDGE GROUP
Wednesday afternoon Ladies Bridge Group is
BACK. We will meet the 2nd
and 4th Wednesdays of each month from 1:00 to 4:00 PM at the CAC. We intend to have two plus tables.
We will have a sign up for hostess duties. The hostess sends out reminders, signs up those playing for that day in groups of four, sets up the room,
brings the bag with cards and score sheets and provides a light snack. Everyone brings their own beverage and contributes $2.00 to the kitty. The top point counts are awarded the money at the end of the afternoon.
It is a truly gracious group with players of all levels helping those who are just getting their bridge game together after not playing for some time or those at an intermediate level.
Beginners are welcome. We have ladies who have volunteered to get you started and shepherd you into the group. This is a social group who enjoy the game of bridge and the fellowship of those playing.

Topics include cooking for two, heart healthy meals, diabetic meals, what labels tell me, make ahead meals, choosing healthy items when eating out and changing old loved recipes into healthy meals.The menu was changed to omit the potato salad and slaw and they are now demonstrating a salsa and tortilla along with the sandwich and cake. The UT people are also bringing their cookbook and it will sell for $35. Seminar, including lunch and handouts is free.

RARITY BAY HIKING CLUB 2015 NEWSLETTER
This year, the RBHC is going to explore new areas - Chattanooga, Norris Dam and Frozen Head State Park to name a few. The Wild Flower Hike will be in April. Cary and Nancy McHugh have again offered their property for our October Fall Color Hike.
Since there was some money left from Dick William’s reign, it was used to update the medical kit. However, since there are still several items needed and since no dues are collected, there will be a box out on hike days if you would like to make a one-time donation. If enough is collected, along with the medical supplies, I would like to purchase walkie-talkies for the leader and sweeper to make communication easier and quicker in case of an emergency.
All hikers whether experienced or new have come across poorly marked trail intersections and headed off in the wrong direction. During my preview hike, I will have probably done just that and made notations for the correct trail; therefore, I will hike toward the front of the group in case there are direction questions. This means on hike day, I will be asking for a volunteer to be the sweeper.
Finally, if you have any hikes or areas to recommend, please let me know. Let me know if you would like to do a particular hike again or if there is one that you do not wish to do again. Remember…no hike in January; but hopefully we will be able to begin anew in February.
