INTRO: Im Lila, PASTRY CHEF/OWNER OF BRULEE BAKERY and my mission is to bring the highest level French Pastry to everyone (regardless of gluten sensitivity-I went to the French Culinary Institute and Became a pastry chef to pursue my lifelong fascination with baking

-Probably started the day that my grandmother bought me my first Easy Bake Oven

-was heartbreaking to learn that the backbone of my art, passion and business (essentially gluten and wheat flour centric)Was the cause of my chronic health problems.

-In 2014, about 2 years after starting my business, I was diagnosed w/ Celiac Disease

-I had to then make the difficult decision to go entirely gluten free, while still maintaining my vision and identity of being a locally sourced, organic and GMO free business. {CHANGE SLIDE}

I had to re-construct my recipes, using new methods and ingredients, while still preserving my standards of taste and excellence in the process{CHANGE SLIDE}2

To date, our customer base has included regional markets, cafes, farmers markets, and Drexel University

Weve been courted by major food chains, food brokers and distributors who want to carry our line

-But a few last pieces are needed to bring our products up to spec to approach a national market.
