Foraged & Found Edibles are layered with roasted

red peppers, onions, provolone and mozzarella

on a garlic and olive oil base finished with fresh

thyme. Available through most of October.

Pear PrimoThe fresh flavors of sweet Washington pears

and salty Gorgonzola swell with the addition of

walnuts, mushrooms and red onions. We layer it

all with a blend of mozzarella and Fontina atop an

olive oil base. Available through most of December.

Chanterelle Prosciutto Foraged & Found Edibles plucks golden chan-

terelles straight from the forest floor so that we

may bring you this treasured pizza. Savor these

choice mushrooms with La Quercia prosciutto

and mozzarella on a garlic and olive oil base.

Seasonal Pies

2bar SpiritsNo offense to the big-name distillers, but the 2bar boys prefer

to pull themselves up by their own bootstraps. “Or, strap…” says

2bar Distiller Chris Lehmann. The Texas natives are still in the

building process after all. Founder Nathan Kaiser and his crew

bring a heap of southern charm to the barebones distillery on

the outskirts of SODO. Drop in for a taste from 2-6 p.m. any day

of the week.

Known For: Moonshine

Project V Distillery& Sausage CompanyWith a great sense of humor, patience and pride, Mo Heck distills

some of the finest spirits around. Producing just five gallons at

a time, Woodinville’s Project V Distillery & Sausage Company is

about as small batch as it gets. “I know it’s ready when it tastes

right,” says Mo. “It tastes like heart and value and wheat.” She

sources wheat from her family’s fields, donates spent grain to a

neighboring pig farm, and sells the pork yields at her distillery.

Because, everything is better with bacon, right?

Known For: Chai-infused vodka that makes a stellar White Russian.

Letterpress DistillerySkip Tognetti, Letterpress Distilling creator, infuses his spirits with

childhood memories of summers in Italy. His relationship with

spirits began at age five, watching Roman townspeople trickle

into his grandfather’s liquor store for wine, limoncello, grappa and

amaretto. “For me, sharing these things was always about family

and community more than anything,” he says. Now he carries on the

tradition with his own shop in SODO. While he makes a top-notch,

twice-distilled vodka, one sip of Letterpress Limoncello will brighten

the gloomiest day. Be on the lookout for his amaro release.

Known For: Limoncello made with Washington blackberry honey and

lemon zest.

Pizza Pairing: The Original with The Boulevardier (equal parts

whiskey, sweet vermouth and Campari)

Sound Spirits DistilleryDistilling is truly a labor of love for Steven Stone. He spends his

days working full-time for Boeing and his evenings crafting small

batch booze. Perched on the edge of Elliott Bay, Steven and his

team masterfully concoct vodka, gin and liqueurs. But, it’s their

Scandinavian aquavit that has the nearby Nordic crowd captivated.

Known For: It’s Seattle’s first distillery since Prohibition.

Meats for their savory shiitake and sage pork

GET A TASTE WITHLOCAL CRAFT TOURSWashington’s burgeoning craft distillery community is swiftly rivaling that of any other state, making it difficult to decide which distilleries to check out first. Enter, Local Craft Tours. Much more than a booze cruise, the tour offers a unique perspective on Seattle’s spirits scene while spotlighting the best distilleries around.

Local Craft Tours founders Tara Fuller and Craig Krueger met

while bartending in California. But, they weren’t just slinging

drinks; they were creating cocktails using the finest spirits

they could find from local craft distilleries. After moving to

Seattle in 2006, they continued to network with local distillers

through their company Shake Bartenders.

One weekend while touring the Sonoma wine country, they

had an aha moment. “We were like, ‘We need to start a

distillery tour with all the things that are going on in Seattle!’”

Tara explains. “So we came home and I think we got our

business license that next week.” And lo, Seattle’s “speakeasy

on wheels” was born.

Tara and Craig pick up tour groups in a lux Mercedes Sprinter

five days a week, typically stopping for private tours at three

craft distilleries. One of their most popular stops is Fremont

Mischief. Full of whim and eccentricities, this distillery lures a

crowd with its oak-aged John Jacob rye whiskey, elaborate

architecture, and lively story telling.

In addition to their standard distillery tour, Local Craft Tours

can tailor stops around a preferred spirit or focus on the best

craft cocktail bars. Tara and Craig plan to offer a whiskey-

focused tour around November when many distilleries finish

aging their whiskeys.

“A unique thing about these tours is not necessarily learning

about how whiskey or vodka is made, but hearing the stories

behind all of the distilleries. For all of these distillers, it’s a

passion,” says Tara.

Between stops, the duo imparts some of their spirits industry

wisdom as they hand out craft cocktails and snacks to the

group. Local Craft Tours partners with popular eateries like

Uli’s Sausage, Yellow Leaf Cupcakes and Madison Park

Conservatory for their food, ensuring the entire business is

as grassroots as their name suggests. They round out the trip

with cocktail-centric parting gifts and recipe cards.

Salumi Primo Aging Salumi’s finocchiona salami can take up to

three months, but it’s one that’s worth the wait. A

blend of ricotta, mozzarella and Fontina cheeses

with Mama Lil’s goat horn peppers, roasted fennel,

olive oil and fresh parsley highlight the spices in

this prized pork. Look for it in March.

Remember the first time you enjoyed Pagliacci pizza? For many it was

grabbing a slice at University, Broadway or Queen Anne - quick, convenient,

and oh so good.

A question we hear over and over at our other locations is, “Why don’t

you serve slices here?” We’ve been listening. Main Street in Old Bellevue

and Madison both opened with slice bars. Over the last year, we made

room for slices at our Kenmore, Lake City Way, and Bridle Trails locations.

Now two more locations offer pizza-by-the-slice in addition to whole

pies: Bellevue Square and Stone Way.

After a brief remodel of our Bellevue Square location this September,

guests are now greeted with a slice bar and counter service. The change

offers shoppers, moviegoers, business people, and out-of-towners a

quick dining option, but we still toss whole pies for those looking to

enjoy a meal at a more leisurely pace.

On a more grandiose scale, we expanded our Stone Way location. What

was once our spot with the least square footage has morphed into a

spacious delivery kitchen with dining room and slice bar. While still

delivering to Wallingford, Fremont and Green Lake, it now provides an

opportunity to dine out or grab a slice on the go.

These changes bring us back to our roots of pizza-by-the-slice. Going

forward, don’t be surprised if you see more slice bars appearing in our

other dining rooms.
