1 TEST, WARRANTY AND LIABILITY

PLEASE READ THESE INSTRUCTIONS BEFORE ATTEMPTING TO INSTALL AND OPERATE YOURMACHINE.

THIS MANUAL PROVIDES ALL INFORMATION REQUIRED TO INSTALL, OPERATE AND MAINTAINMACHINE UNDER SAFE CONDITIONS. FAILURE TO COMPLY WITH THE SAFETY MEASURESSET OUT IN THIS HANDBOOK MAY RESULT IN SERIOUS DAMAGE TO THE MACHINE AS WELLAS FORFEIT ANY MANUFACTURER'S GUARANTEE.

1.1 Teechnical documentationTest

The whole machine is sent to the customer and prepared to be installed after having passed all the tests and inspections laiddown by the manufacturer in compliance with the regulations in force.

Warranty

TELME warrants sold machines for a time of 12 months from delivery date. During the time of warranty, TELME will replace,free ex-factory, all parts damaged for evident defects of manufacturing or for a bad quality of the materials. Replaced partsstill belong to TELME and will have to be returned to the head office free of charge. Labour and eventual travelling expenseswill be at purchasers charge. Freon gas filling is excluded from the warranty. The warranty declines if the machine is usednot in conformity with the sales instructions; it they are damaged willingly or unintentionally; if the machine is modified,repaired or disassembled by not authorized staff. The warranty also declines if the connections, power an water, for thefeeding of the machine (at purchasers charge) are uncorrect. Suspension of payment, agreed in the sales proposal andaccepted by TELME will cause the suspension of warranty.

Additional warranty

TELME warrants sold machines according to above mentioned conditions for a time of 12 months from delivery date. Inorder to acquire the right of having the additional warranty of 1 year, so that the warranty is extended to a total time of 24months, the buyer has to cut out, fill in, sign and send back, by registered letter, to TELME, within 15 days from date ofinstallation, the warranty card which is enclosed in the manual “OPERATING INSTRUCTIONS”. If TELME doesn’t receivethe warranty card, the additional warranty time will not be acknowledged.

Responsibility

TELME is free from every responsibility and obligation for any further accident to people and goods that could verify forand/or during the use, for reasons or/in dependence on supplied machines, during eventual testing and even if accident isdue to defects of manufacturing or materials. Any further claims of reimbursement must be considered excluded.Productscannot be used for intent different to that indicated.

1.2 Environmental conditionsThe machine working environmental conditions must follow the indications reported below:Temperature +2°C ÷ +35°C (35.6°F ÷ 95°F)Humidity 10% ÷ 95% (not condensed)

THE MACHINE MUST BE PLACED IN A PLACE SHELTERED FROM RAIN.

Environmental conditions differing from the ones speci?ed herein may cause serious damages to the machine, in particularto the electrical equipment and the refrigeration system.

PLACING THE MACHINE IN PLACES DIFFERENT FROM THE ONES DESCRIBED HEREINCANCELS AND VOIDS THE WARRANTY.

The storage of machine when not working allows temperature to range between +2°C (+35,6°F) and +60°C (140°F), itbeing understood all the other precautions.

IT IS STRICTLY FORBIDDEN TO USE THE MACHINE IN PRESENCE OF EXPLOSIVEATMOSPHERE OR FIRE HAZARD.

1.3 Intervention request – technical assistanceEvery intervention request to the Customer Technical Service must be submitted via fax or email to the retailer where themachine was purchased. The sell/assistance net of the manufacturer can be consulted on the internet site www.telme.it.

In the intervention request or technical assistance the following shall be specified:

1. type of machine, serial number and year of installation;

2. defects noticed;

3. retailer where the machine was purchased;

4. fiscal document bearing witness to the date of purchase by the user.

1.4 How to order spare partsTo request spare parts, please contact your local main dealer or consult the updated list of the authorized service centersthrough TELME official website.

1. Press “TELME DEALERS” (A) key from the main website page.

2. The system displays the page where the updated list of dealers can be found and consulted.

1.5 MarkingAll identification data of the machine are engraved on its rating plate placed on the back of the machine. Such data shallhave to appear always on every document exchanged between the user and the manufacturer, e.g. upon every assistancerequest or when requesting spare parts, etc…

The following ID plate is placed on the machines.

The technical data plate and CE marking must not be removed. It is located on the back part of the device and identifies:

- the name and address of the manufacturer [F];

- the machine code [CODE], the designation of the model [MOD] and the relative series number [S/N];

- the type and quantity of freezing gas contained [GAS];

- the year of construction [ANNO];

- the values of voltage and frequency [V], and the power [Hz] and current [Ph] consumption;

- the CE marking [9];

- dismantle symbol [G];

2 SAFETY

THE RULES LISTED BELOW MUST BE CAREFULLY READ TO BECOME AN ESSENTIALPART OF THE DAILY PRACTICE OF USING AND MAINTAINING THE MACHINERY, SOTHAT ANY ACCIDENT TO THE PEOPLE AND/OR DAMAGES TO THINGS SHALL BEAVOIDED.

2.1 General safety notes1. Do not try to start the machine until its operation has been clearly understood.

2. Should any doubt arise, even after having carefully and thoroughly read this manual, contact Technical Service.

3. Make sure that the whole staff using the machine is informed of all the instructions regarding safety.

4. Before starting the machine, the operator shall check the presence of any visible defects on the safety devices and machine. In this case, immediately notify every apparent breakdown to the manufacturer or to the nearest Customer Service Centre.

5. Daily check the correct operation of all the switches and safety devices.

6. Safety devices shall never be removed or made ineffective.

7. During the operations of maintenance, adjustment or repair it might be necessary to bypass some safety devices from the service. This operation must be carried out by authorized personnel only.

8. It is imperative that all the plates and signs placed on the machine be promptly replaced, should they be damaged.

9. The operator must know the function and position of the STOP and START buttons.

10. Replace the broken parts with original spare parts, guaranteed by the manufacturer.

11. Never try anything too risky!

12. All interventions on live parts shall be carried out by authorized personnel only, who shall work only with the machine unplugged.

13. Do not make any junctions in the electrical connections of electrical circuits.

14. Do not wear clothing, jewellery, accessories that may get caught in moving parts.

15. Keep the area surrounding the machine constantly free of any obstructions.

16. Always wear light gloves and caps and hair nets.

17. Pay utmost attention to all the caution, warning and hazards signs placed on the machine.

18. Enforce safety rules and make workers abide by them. Should any doubt arise, read this manual again before starting to work.

19. The machine shall be solely used for the purposes associated with its design and according to what was contractually laid down by the manufacturer.

20. It is strictly forbidden to open the protection panelling: the machine does not contain components that the user can handle.

21. Do not lean against the machine while it is running.

22. Do not sit down on and/or lean against the machine components.

23. It is forbidden to apply any further device to the machine.

24. Clean the machine components, panels and controls, with soft cloths soaked in a food-grade solution.

25. Any use of solvent - such as alcohol or petrol or diluents - is forbidden for cleaning all the surfaces.

26. Do not start the machine nor the equipment, after drinking or while using drugs or psychotropic substances.

27. Disabled people are forbidden to operate this machinery.

28. Anyone under 18 years is strictly forbidden to operate this machinery.

The misuse of the machine may pose a hazard for the personnel working with it and damage themachine.

For any problem which might arise during the machine service life and which was not included in this technical manual,please contact our Customer Technical Service to solve the problem as soon as possible.

2.2 Definition of safety terms

The following terms shall be used thorough this manual in relation to safety:

Dangerous zone every zone inside and/or in the proximity of the machine where the presence of a personposes a risk for the safety and health of the person.

Persona esposta: whoever finds themselves in a dangerous zone both completely and partially.

Operatore: person in charge of installing, operating, adjusting, servicing, cleaning, repairing,transporting parts of the machine, and all other activities required for its running.

Safety devices component speci?cally designed by the manufacturer and put on the market separatelyfrom the machine to perform safety functions. Safety component is that device whosefailure impairs the safety of exposed people.

2.3 Safety symbols and labelsThe following signs are applied to the machine: prohibition signs, indication signs and warning signs.

This symbol indicates the electrocution risk.

When this sign is present, the operator shall move closer to the machineonly when disconnected from power supply. In this case always weardielectric gloves.

This symbol indicates there is a risk of burning.

In case this sign is present, the operator shall get close to the machineonly when all hot parts have cooled down. Before coming in contact,make sure the surface has cooled down; in any case, always wearthermal gloves.

2.4 Correct use of the machineSoftgel was designed and manufactured to produce Ice cream and Frozen yogurt. This process takes place inside thecylinder where the product is continuously blended.

IT IS STRICTLY FORBIDDEN TO USE THE MACHINE FOR OTHER PURPOSES WITHOUT THEPROPER AUTHORIZATION BY TELME S.p.A., WHICH SHALL NOT BE HELD LIABLE FOR ANYDIRECT OR INDIRECT DAMAGE THAT MAY RESULT FROM AN IMPROPER USE OF THE MACHINE.

2.5 Operator’s position (Workstation)The machine requires one operator in charge of loading the mix for Ice cream and Yogurt, starting the processing andunloading the processed product. The operator shall stand in front of the machine.

4 MOVING AND UNPACKING

Keep machine in an upright position AT ALL TIMES to obtain optimal working conditions, bothduring transport and installation and use. Keep to instructions on the box.

Note: it is advisable to have all moving, unpacking and installation op-erations carried out by our Assistance Service or by authorizedpersonnel supplied with suitable tools.

USE SUITABLE LIFTING EQUIPMENT TO LIFT MACHINE. IT ISDANGEROUS TO ATTEMPT TO LIFT MACHINE BY HAND.

Net and gross weight specifications are quoted on the packaging and in the documentssupplied.

4.1 Moving machine in its packagingThe packaging is designed to provide maximum protection from knocks and externalagents.

Therefore it is advisable to carry the packed machine as close as possible to the sitewhere it will be installed.

To move the packaged machine use a lift-fork truck or a bench trolley, and insert forksin the openings in the base.

4.2 Unpacking

- WOOD PACKING: unnail the top panel, then separate the lateral panels.

- CARDBOARD PACKING; cut the strips and remove the cardboard from the top;

After having opened the packing, make sure the device isn’t damaged. In case of doubt, do not use it, and call the Seller.

THE OPENING OF THE LATERAL PANEL IS ONLY ALLOWED TO THE ASSISTANCE SERVICE OR TOQUALIFIED TECHNICIANS AND MUST BE MADE BEFORE CONNECTING IT. MAKE SURE NOT TO DAM-AGE THE INTERNAL PARTS OF THE DEVICE.

- Remove both the lateral panels unscrewing the relevant fixing screws [A];

- Find and unscrew the bolts [B] which fix the device’s frame at the packing’s basement;

The outlet of the supply cable is placed on the device’s lower side. During the lifting make sure not todamage it.

- Lift the device from the basement, possibly working on the lower side, near the wheels, and however, only on theframe’s carrying parts. Remove the basement, and lean the device on the floor avoiding bumps;

DO NOT insert objects, ropes or brackets for the lifting THROUGH the device, since these could damagethe inside parts.

- Re-close the lateral panels;

- Replace or move the packing, which is produced with entirely recyclable materials ( ).

5 INSTALLING

INSTALLATION MUST BE CARRIED OUT EXCLUSIVELY BY CERTIFIED AND AUTHORIZED TECH-NICIANS, AND ACCORDING TO THE NORMS CURRENTLY IN FORCE AND FOLLOWING THE IN-STRUCTIONS BELOW.

5.1 Placing your machinePlace machine on a flat surface.

Place machine away from sources of heath, avoiding direct exposure to sunlight andallowing air to circulate around it.

Place machine so that the side collection box [23] can be easily pulled out to beemptied on a regular basis.

Machines supplied with an AIR CONDENSING system need at least 50 cm room in front of thecondenser grill to allow the refrigerator to correctly function. The machine's detailed dimensionsare included in the Technical handbook (Par. Technical Data).

5.2 Assembling

ASSEMBLE ALL PARTS BEFORE PLUGGING MACHINE IN.

Some components of the machine need assembling. You will find them in the package or inside the back-up tub.

— Cones holders:

• Fix top [6] and bottom [9] brackets onto left side panel with fixing knobs [7]. The top bracket [6] is the one with thebiggest holes;

• place cones holder valves [8] in the bottom bracket holes [9];

• put cones holders [5] through top bracket holes and fit them in the valves [8].

— Drip tray:• Fix drip tray holder [12] onto the front panel with fixing knobs [14];

• place front drip tray cup [13] in drip tray holder.

— Tap handle:• Remove handle cross pin [30] ;

• hook handle [16] fork to piston pin [31];

• insert cross pin [30]. You may need to slightly adjust handle.

5.3 Connecting to power

THE POWER INPUT REQUIRED BY THE MACHINE IS HIGH AND, THEREFORE, PARTICULARLYDANGEROUS. THE MACHINE MUST BE CONNECTED TO AN ELECTRIC CIRCUIT WHICH COMPLIESWITH THE NORMS CURRENTLY IN FORCE AND IMPLEMENTED BY CERTIFIED AND QUALIFIEDPERSONNEL. ALL SOCKETS MUST BE RELAYED BY ONE OR MORE DIFFERENTIAL CIRCUITBREAKERS AND EARTHED.

The manufacturer shall not be responsible for any damages caused by a faulty electrical supply or earthing plant.

Note: If your machine requires THREE-PHASE power supply: it is STRONGLY recommended to installTHREE-PHASE MAGNETO-THERMAL SWITCHES designed to cut off power to ALL phases, evenwhen overload is on one phase only. Fuses, or other magneto-thermal switches, only cut off singleoverloaded phases.

If current is cut off from ONE of the THREE phases, the machine may SEEM operating, however,the motors will shortly be IRREPARABLY DAMAGED.

THE CIRCUIT MUST FEATURE THE FOLLOWING CHARACTER-ISTICS:

— end with an approved type socket (three poles for monophasic input 1N and 5 polesfor three-phase input 3N – 3F). The socket's poles must be marked (R phase or R-S-T + neutral + earth); the earth pole must be well recognizable;

A WRONG CONNECTION ON EARTH POLE CAN CAUSE SERI-OUS DANGER.

— the socket must be designed to prevent the plug from being inserted incorrectly;

— there must be a MAIN SWITCH to cut COMPLETELY off power from the socket,this can be either included in the socket or within easy reach TO BE USED whenaccess to moving parts is required.

Check that the VOLTAGE and FREQUENCY written on the Technical Data plateMATCHES the circuit voltage and frequency.

A plug (three poles for monophasic input 1N and 5 poles for three-phase input 3N–3F)must be fitted on the power supply cable's end.

The machine's power supply cable features coloured, labelled wires; these must beconnected to the plug terminals as from chart below.

5.4 Connecting to water supply system(water condensing machines)

If your machine is supplied with a water condensing system, supply and waste pipes must be set up.

Pipe unions are placed on the machine's rear panel, they are labelled [A] and marked:

IN: fresh water INLET

OUT: waste water OUTLET

Use linen-rubber pipes suitable to bear 15 bar pressure, placing a valve or faucet [B] BEFORE inlet pipe; use a 3/4 rubberholder [C] tightly fixed with a band [D] to connect pipes to the machine's unions.

Follow these precautions:

— Do not reverse tubes and avoid tight bends and bottlenecks.

— The machine has been built to use WELL or AQUEDUCT water, at a MAXIMUM temperature of + 25…+28°C.Don’t put hotter water (i.e. TOWER TANK water) in your machine if it hasn’t got the SPECIAL system to useit (supplied only if asked): in this case, in the Technical Handbook, Par. Technical Data, it is indicated the rightwater temperature to use your machine.

— Unsuitable pipes and joints may cause leaks and cause damage to your workroom and, in case of major leaksand splashes, to your machine. You can easily find household appliances' pipes (i.e. washing machines') onthe market, which have all the requirements, including rubber holders, as well as being economical.

— If the local water is hard and contains impurities, have a suitable water softener system or a filter fitted at thetop of the inlet pipe.

— Unless otherwise specified in the Technical Handbook, inlet water pressure must be 1.5 to 6 Bar (optimalpressure: 3 Bar). If water pressure and quantity are inadequate, the machine will have CONDENSING PROB-LEMS and will stop. If water pressure is higher, it is necessary to fit a pressure limiting device, appropriatelyadjusted, above the delivery pipe, otherwise machine will be DAMAGED or anyway it will stop working.

IMPORTANT: When room temperature is below 0°C, remove any water from machine in order toavoid freezing inside the condenser or pipes and causing SERIOUS DAMAGES. Please call theauthorized Assistance Service.

5.5 Checking rotation

At the end of the installation and whenever the socket needs being replaced, check the beaterdirection of rotation.

SWITCH MACHINE OFF OR CUT OFF POWER AND CHECK THAT GREEN INDICATOR POWER IS NOT ON!

— unscrew fixing knobs [19] to remove tap [15];

— remove beaterS [21] from cylinders;

— plug machine in and switch socket on;

— only POWER indicator must come on the control panel;

— press ON-OFF . The display will come on;

— press WASH and check that the beater socket [33] at the bottom of the cylin-der CORRECTLY rotate CLOCKWISE (if necessary, use a torch). Press WASH again to stop rotation;

— press ON-OFF to turn machine off;

— in case of a correct rotation (CLOCKWISE), your machine is ready to beused: place beaters [21] in the cylinders, replace tap [15] and tighten fixingknobs [19];

IMPORTANT: Progressively, EVENLY tighten knobs [19] cross-wise to seal tap. Do not EXCESSIVELY force knobs. Failure todo so may result in leaks and damages.

— in case of COUNTERCLOCKWISE rotation (INCORRECT), the machine stopsautomatically after about two seconds and the Display shows “HIC”. Thethree-phase connection is wrong and it must be changed as follows:

TURN THE SOCKET'S MAIN SWITCH TO “0” AND UNPLUG.

— open plug and reverse TWO out of THREE wires connected to PHASES (R-S, R-T or S-T);

— close plug, turn machine on and repeat test.

6 HOW TO OPERATE YOUR MACHINE

ALWAYS FOLLOW SAFETY MEASURES (REF. CHAPTER 1).

6.1 Controls and indicatorsAll controls and indicators for the use of the device are grouped in asingle control panel placed on the front panel. Its functioning islow-voltage electronically managed.

In this manual, the buttons and indicators are identified with the relati-ve symbol, and/or with an imprint ([K…] for pushbuttons, [Z…] forindicators).

The functioning of every command is described hereby: to obtain thebest results, an acknowledgment is suggested.

ON-OFF pushbutton and POWER indicatorBy pressing the pushbutton the machine turns on and off. When power is on, the light is always on.

SET UP/ RESET pushbuttonBy pressing the pushbutton, The display shows the machine's three operative modes. For more details, seePar. 7.3 - Programming.

Pressing the button after the display appeared 2 small squares, it restore its function after the intervention of protectioncircuits.

ADJUSTMENT pushbuttonsThese pushbuttons are enabled only after pressing SET UP. They increase or decrease set values. For more details ontheir use, see Par. 7.3 - Programming

LEFT PUMP pushbutton (to wash left pump or fill left cylinder)

— By pressing the button when machine is not operating (NO ice cream is being made or refrigerated) LEFT force pumpis manually started or stopped. This operation is required to:

• fill LEFT cylinder with mixture when empty;

• wash and sanitise LEFT pump.

A flashing “O” on the left digit on the display shows that the pump is operating.

RIGHT PUMP pushbutton (to wash right pump or fill right cylinder)

— By pressing the button when machine is not operating (NO ice cream is being made or refrigerated) RIGHT forcepump is manually started or stopped. This operation is required to:

• fill RIGHT cylinder with mixture when empty;

• wash and sanitise RIGHT pump.

A flashing “O” on the right digit on the display shows that the pump is operating.

PRODUCTION pushbutton and indicatorIf you press the button, the respective indicator light will turn on, the machine will prepare the ice-cream in the cylinder andwill keep it ready to be served at the programmed substanciality. During the ice-cream preparation, the degree of substancialitywill appear on the display.

PRESERVATION pushbutton and indicatorThis function aims at preserving both the mixture and the ice-cream during the night. The setting THICKNESS ICE-CREAMwill appear on the display during the night as well.

WASH pushbutton and indicatorWhen you press the WASH button, the beater will work, whereas the refrigerating sistem won’t, so that water doesn’tfreeze. The respective indicator light will turn on and PUL will appear on the display.

DisplayThe display turns on only when machine is on.

A) During the ice-cream freeze (PRODUCTION ) and during the distribution (PRO-DUCTION ), the number indicating the ICE CREAM CONSISTENCY SETTINGin the cylinder for preservation will appear.

B) During the PRESERVATION the number indicating the ICE CREAMCONSISTENCY SETTING in the cylinder for preservation will appear.

C) Pressing the "+" pushbutton, the temperature of the mixture in tubs, will appear onthe display.

Note: During Setting up, the display shows several values. For detailedinformation, see Par. 6.3 - Programming

6.2 Preparing production

To avoid damages, do not operate machine in dry conditions.

The beaters’ packing gland must be positioned correctly onto the beaters' shaft, otherwise themachine internal components will get dirty with mixture or ice-cream.

Check that side collection box [23] is in place to prevent water, mixture or ice-cream from leakinginside the machine.

— check that tap fixing knobs [19] are firmly fastened;

— check that tap handles [16] are in an UPRIGHT position by pushing them upwards;

— in case of machines supplied with water condensing, check that water condensing faucet is open;

— check that POWER is on. If not, check plug and socket switch;

— press ON-OFF ;

— before undertaking production, the machine must be thoroughly washed and sanitized (see Chapter 7);

— pour mixture in tubs making sure NOT to completely cover carburettors [3];

— wait a few minutes for mixture to drip down in the cylinders. You can facilitate mixture to fill the cylinders by BRIEFLYspinning beaters (ONLY press BEATING ). During this phase, tubs levels decrease slightly (approx. 2 cm); do NOTattempt to speed up the mixture flow by removing carburettors;

— replenish cones holders with cones or wafers.

6.3 Programming

The device is programmed with optimal average values during the final factory inspection phase.Do not alter the programme unless it is absolutely necessary.

Note: The device memorises the last programming operation performed and automatically exits theProgramming mode after 7 or 8 seconds.

P1: Reserve mix TUB TEMPERATURE

• press button P and the “P1” message will start flashing on the display;

• press button P again and the PROGRAMMED TUB TEMPERATURE (°C) message will appear on the display. Ifthis needs to be adjusted, press the + or buttons. The factory setting is +5°C. The adjustment range is from +1to +30°C, but we suggest this is limited to between +5°C and +6°C.

P2: ICE CREAM CONSISTENCY (PRODUCTION)

• press button P and the “P2” message will start flashing on the display;

• press button P again and a number indicating the ICE CREAM CONSISTENCY SETTING will appear on thedisplay. The factory setting is 5. If this needs to be adjusted, press the + or buttons. The adjustment range isbetween 0 and 10 (lower numbers = thinner consistency, higher numbers = thicker consistency), but we suggestthat a practical range of 6 to 7 is adopted.

P3: CONSERVING ICE CREAM IN THE CYLINDER "OVER NIGHT" • press button P and the “P3” message will start flashing on the display;

• press button P again and a number indicating the EXTENDED ICE CREAM CONSERVATION in the cylindersetting will appear on the display. The factory setting is 5. If this needs to be adjusted, press the + or buttons(lower numbers = lower conservation, higher numbers = higher conservation). The adjustment range is between0 and 10, but we suggest that a practical range of 4 to 6 is adopted.

— To save new settings and terminate a programming operation, press button P again (or wait for a few seconds).

6.4 Production— Press the PRODUCTION pushbutton. The beater and the refrigerating system

of the cylinder will come into operation.Display shows ice-cream THICKNESS,which is going to increase;

— wait for the ice-cream to reach set THICKNESS. The beaters and the refrigeratorwill stop. Now the ice-cream is ready to be served.

Note: Before serving the ice-cream, it is recommended to check itsquality by pressing the tap handle and collecting a little of it. Pleaseput a container under the tap because of the potential splashes ofthe ice-cream.

— Position an ice-cream cone or cup under the tap handle, then press it. Afterserving the ice-cream, BRING the tap handle to its rest position.

After serving the ice-cream bring the tap handle EXACTLY toits rest position. Otherwise the beater and the refrigeratingsystem will not stop automatically and the machine will blockfor freezing.

Note: Also when the handle is up, the cylinders refrigerating system and the beater will work until the ice-cream thickness the programmed substantiality again.

In order to get the most out of your machine:

— check regularly mixture level in the tubs;

Promptly replenish tubs with mixture, if necessary. Failure to do this will cause the formation ofice and subsequent blockage of the beater inside the cylinder.

— In case you wish to do several distribution of ice-cream, please check the ice-cream substantiality on the display. Waitsome seconds between the ice-cream distributions or alternate the ice-cream flavours.

— empty regularly side collection box [23]. If it becomes full, water will overflow through its hole;

It is not unusual to find traces of mixture in the side collection tray. However, if they INCREASE inquantity, replace beaters' packing gland gasket AS SOON AS POSSIBLE (Ref. Par. 8.3 - Partsdisassembling). Failure to do so, would cause mixture to leak inside machine and DAMAGE it.

Use PRESERVATION mode overnight (ref. Par. 7.5) to preserve mixture and ice-cream inside machine.

FATS IN THE ICE-CREAM MIXTURE ARE IDEAL GROUND FOR THE BREEDING OF BACTERIA.WHEN NOT IN USE, WE RECOMMEND TO DISASSEMBLE, WASH AND SANITIZE ALL MA-CHINE PARTS WHICH COME INTO CONTACT WITH THE PRODUCT AND DISCARD ANY REMAIN-ING MIXTURE.

6.5 Preservation (overnight)

IT IS REQUIRED TO REMOVE ALL REMAINING MIXTURE AND ICE CREAM FROM MACHINE BYTHE INGREDIENTS’ USE-BY DATE AND TO DISASSEMBLE, WASH AND SANITISE THOR-OUGHLY ANY PARTS WHICH IS IN DIRECT CONTACT WITH THE PRODUCT (REF. CHAPTER 7).THIS IS ALSO REQUIRED WHEN USING ONLY PRESERVATION MODE.

• This allows stopping the reproductive cycle of bacteria, which must, AT ALL TIMES, be lower than the limitsrequired by the law.

• Only the FIRST ingredients’ use-by date is to be taken into account after sanitation even if fresh ingredients weresuccessively added to the original mixture.

1. SHUTTING DOWN operations:

• press PRESERVATION pushbutton;

• check that release handles and tubs' lid are FIRMLY CLOSED. If an indicator light appears on the display next tothe right hand side digit, the handle is not completely closed.

Note: the preservation temperature allows to maintain almost liquid ice-cream in the cylinder, because themachine stirs it without damaging it.

2. OPENING UP operations:

IN CASE THE PRESERVATION TEMPERATURE IS TOO HIGH, OR AN ALARM CODE APPEARS,THE MIXTURE IN THE MACHINE HAS NOT BEEN CORRECTLY PRESERVED. THE MIXTUREMUST BE DISCARDED, ALL MACHINE PARTS WHICH COME INTO CONTACT WITH THE MIXTUREMUST BE DISASSEMBLED, WASHED AND SANITIZED (REF. CHAPTER 7) BEFORE MACHINECAN BE USED AGAIN.

• press PRODUCTION pushbutton;

• before serving, wait for ice-cream to reach required thickness.

7 WASHING AND SANITATION

7.1 Rinse - preliminary wash— RINSE ONLY removes most mixture and ice cream residuals from the machine and is used when a fresh mixture of a

different colour or flavour is to be poured in the machine.

— PRE-WASH with detergent washes the pumps inside in preparation for sanitation.

PROCEED AS FOLLOW:

— Press PRODUCTION or PRESERVATION to stop machine. Relevant indicator light will come off;

— wait for cylinders to defrost;

— place a container under the tap, pull handles down and release as much as possible mixture. Press BEATING for afew, brief periods to operate beaters;

Do not operate beaters for prolonged periods as lack of lubrication would cause damage toeither the beaters or cylinders.

— fill tubs with clean, warm water (MAX. 30°C), MUST CERTAINLY NOT BE ANY HOTTER!;

DO NOT press PRODUCTION or PRESERVATION as this would freeze water in the cylin-ders.

— press BEATING , then LEFT PUMP MP1 and RIGHT PUMP MP2. Open levers to discharge water (when all of thewater is out press BEATING to stop the beaters and the pumps). Rinse only is now complete;

— release pressure in cylinders by SLOWLY opening central lever;

— open ALL THREE levers and discharge all water from the cylinders.

7.2 Washing the pumpsTo wash the pumps, repeat the operation with a solution of warm water and a suitable amount of detergent that is COMPATIBLEWITH THE FOODSTUFFS USED. Before draining out the detergent solution, wash the sides of the tub. Then rinse withwater only until the water discharged from the taps is completely clear;

THE PUMPS SHOULD NOT BE DISASSEMBLED AS THEY NEED TO BE WASHED UNDERPRESSURE WITH DETERGENT AND SANITISING SOLUTIONS.

THE TEMPERATURE OF THE WATER USED FOR WASHING AND SANITISING SHOULDNEVER EXCEED 30°C AND MUST CERTAINLY NOT BE ANY HOTTER! OTHERWISE THEPOLYMER COMPOSITE COMPONENTS MAY BE DAMAGED.

7.3 Parts disassemblingTo make washing and sanitation easy, all parts coming into contact with the product can be effortlessly and quicklydisassembled by the operator.

— Carry out preliminary washing operations (ref. Par. 8.1) for easy access to all parts.

• Turn regulator [60] counterclockwise;

• remove air valve [61] from the regulator’s body;

• push air regulation pad [62] out of the regulator’s body to remove it. The pad’s central hole is gauged: do NOTforce it out by inserting any object through the hole, as to prevent any damage.

IT IS FORBIDDEN TO CARRY OUT ANY OF THE FOLLOWING OPERATIONS WHILE MACHINE ISPOWERED.

— Disassemble tap:

• unscrew fixing knobs [19];

• carefully remove tap, holding handle with one hand, and the lower part with the other;

If the tap is stuck, do not pull it, but gently release it.

• remove large gaskets [36].

Do not insert sharp objects in their seatings to remove gaskets (O-rings) to avoid damagingparts and causing mixture or ice-cream leaks.

— Disassemble tap's parts:

press the handle completely (so that itwill be easy to remove the piston);

• emove the transverse spindle [30] andthen the handle [16];

• remove the piston [35] and the breatherpiston [45] from the tap body [15];

• remove gaskets [37] from piston [35];

— Disassemble beaters:

• Remove beaters [21] from cylin-ders [20];

• unthread the spring-guides [39], [39B]and the springs [40];

• remove the gaskets [41] and [42] fromthe spring-guides [39];

— Remove and clean cones holderregularly:

• pull out tubes [5] from valves [8] fromthe top;

• loosen knobs [7] and remove brack-ets [6] and [9].

7.4 Washing of the partsYou must thoroughly wash and sanitize all parts which come into contact with the product to comply with the current normsin force:

DO NOT CARRY OUT THE FOLLOWING OPERATIONS WHEN MACHINE IS POWERED.

— Wash separately all those parts disassembled according to instructions in Par. 7.3. Use warm water and foodcompatible detergent, then rinse with fresh water.

Note: To ensure a long life for your machine, do not use too hot water, solvents, abrasive detergents or hardsponges, particularly on plastic parts.

• Remove side drip tray [23], wash it and replace it.

• Use the big tube-brush [29] to clean the pistons seats [44].

• Use the small tube-brush provided [28] to clean ice-cream exit holes [43].

• Check for solidified mixture residuals inside the air regulator [60], the valve [61] and the pad’s [62] hole.

Failure to clean the regulator will lead to wasting mixture and producing poor quality ice creamas well as other related problems.

— Thoroughly wash machine's fixed parts with water and detergent:

• clean top and inside spare mixture tub;

• clean inside cylinders;

• clean front panel and its features;

• clean side and rear panels.

DO NOT ALLOW WATER OR ANY LIQUID INSIDE MACHINE.

— Wipe dry.

7.5 Disassembling and washing tubes and by-pass valve periodically

Note: There are many small parts to be disassembled. It is recommended to keep them grouped in order tobe able to recognise them when reassembling the pumps.

— Follow these instructions to disassemble any parts pump (i.e. right pump):

• remove fixing rod [63];

• remove delivery pipe [64] from pump’s body and from the bottom of the tub;

• remove suction pipe [65] from pump’s body;

• unscrew cap [70] (i.e. using a coin), remove spring [71] and ball [72];

Note: The cap [70], spring [71] and ball [72] make up a safety valve (by-pass valve) which controls pressurein the cylinders in case of a malfunction in the manostat.

Do NOT pull spring [71] out of shape as it is gauged.

DO NOT CARRY OUT THE FOLLOWING OPERATIONS WHEN MACHINE IS POWERED.

— Wash separately all those parts disassembled use warm water and food compatible detergent, then rinse withfresh water.

7.6 Re-assembling of the parts— Re-assemble beater:

• reassemble the gaskets [41] and [42]on the spring-guide [39];

• Reassemble the spring [40] and thespring-guide [39], [39B] on the beatershaft [21], by pressing it completelyon the blades. The inside gasket [41]is likely to do strenght to the springrunner slip on the shaft.

The gaskets [41] and [42] are important components and are subjected to continuous movement.When worn they may TEAR. Check that all gaskets are INTACT before assembling them anddon't hesitate to replace them if necessary.

LUBRICATE each gaskets (even those in good conditions to be re-utilized) and their seatingswhen re-assembling. Use FOOD COMPATIBLE lubricant, e.g. vaseline.

Assemble the spring and the beaters’ packing gland EXACTLY like in the previous picture. Anincorrect assemblage would SERIOUSLY DAMAGE the machine.

• insert beaters [21] in the cylinders [20], turning them until shaft fits in its seating in the cylinder bottom (the beaterswill protrude out of the cylinder edge by 1 cm pushed by the springs).

— Re-assemble tap:

• put gaskets [37] and [48] back on pis-tons [35] (only the central piston hasan oblique gasket [48]);

• iInsert the pistons [35] in the tap body[15] by carefully positioning thehandles hole.

• position the handles [16] so that the fork hooks the pistons spindle [31];

• Insert the transverse spindle [30] (slightly move the handle if necessary).

— Mount tap back on machine:

• place large gasket [36];

• place tap and tighten knobs [19] oncrosswise.

IMPORTANT: Progressively, EVENLY tighten knobs [19] crosswise to seal tap. Do not EXCES-SIVELY force knobs. Failure to do so may result in leaks and damages.

— Reassemble air regulator and replace on the lid of both pump [3]:

• place air regulator’s pad [62] (BLACK color = diameter 0,7 mm) inside theregulator’s body [60];

Note: The different colour pads found (RED color = diameter 0,9 mm),in the spare parts kit are DIFFERENT from the fitted ones, there-fore are to be used only in case of problems with the standardones.

• place air valve [61] in the regulator;

• turn regulator [60] clockwise to fix it on the pump’s [3] lid.

7.7 Reassembling the tubes and by-pass valve

Before proceeding check that all gaskets are in perfect conditions and replace with new ones ifnecessary.

Gaskets tend to wear out in the long run, or they stick and get damaged when removed. Do not hesitate to replace them, asthe damage you will suffer from a leak during OPERATION (and the subsequent delay) will definitely be more expensivethan the cost of replacing a set of original gaskets at this point.

— Lubricate ALL gaskets with food compatible fat (i.e. Vaseline). Put back those gaskets removed for washingand the new ones.

Reassemble the tubes and by-pass valve:

7.8 SanitationSanitation is similar to rinsing, however, it must be carried out with a solution of warm water and food-machine disinfectant,and the carburettors must fitted in the tubs.

THE TEMPERATURE OF THE WATER USED FOR WASHING AND SANITISING SHOULDNEVER EXCEED 30°C AND MUST CERTAINLY NOT BE ANY HOTTER! OTHERWISE THEPOLYMER COMPOSITE COMPONENTS MAY BE DAMAGED.

Follow the disinfectant's instructions for its use. If required, rinse with water only.

Following sanitation, close lids and do not touch or wipe neither with paper towels nor clothsany of the parts which will come into contact with the product.

Before operating machine, open ALL THREE handles and spin BRIEFLY beaters (only press WASH ) to ensure that allthe water has been discharged.

8 MAINTENANCE

8.1 Standard maintenance (operator)When the machine is used according to instructions, washed regularly and thoroughly and gaskets are regularly lubri-cated, it will required only a basic maintenance.

How often you will be required to carry out the following operations depends on the machine's conditions and its use.

— When producing ice-cream:• regularly empty side collection box and check any significant traces of mixture;• verify that the machine keeps the tub temperature and the ice-cream substantiality correctly.• listen for any unusual noise;• keep machine's outside panels and surroundings clean. Dust, paper or any small objects can enter the machine

through the air grills or rest on the air condenser, causing malfunctions or damages.— When disassembling and washing:

• check machine's parts for wear and tear;• replace torn, worn or expanded gaskets (in the latter case, they tend to pop out);• replace gaskets at least once a year. We recommend to have spare ones ready: to order, please refer to “Spare

Parts” in the Technical handbook;

Use exclusively original spare parts, made of FOOD COMPATIBLE RUBBER. The spare part kitsupplied include a complete set of gaskets, made to Manufacturer's specifications.

• check power supply cable for damages;

• in the case of a machine with air condensing, clean LARGE condenser outside with a VACUUM CLEANER.

Avoid PUSHING the dirt on the condenser inside the machine. It is a SUCTION type condenser,therefore dirt accumulates on the outer side and must be removed away from it.

All inside parts, which the operator must NOT touch, must be checked by Assistance Service.

8.2 Yearly maintenanceCall service Assistance on a regular basis, at least once a year, (according to the conditions in which machine operates) tohave a complete check carried out.

YEARLY MAINTENANCE MUST BE CARRIED OUT EXCLUSIVELY BY THE AUTHORIZED AS-SISTANCE SERVICE SUPPLIED WITH PROPER EQUIPMENT. ANY MAINTENANCE OPERATIONSWHICH EXCLUSIVELY REQUIRE ASSISTANCE SERVICE INTERVENTION CAN BE DANGEROUSIF CARRIED OUT BY INEXPERIENCED PERSONS. DO NOT ATTEMPT TO PERFORM ANY OFTHESE OPERATIONS.

9 PERIODS OF INACTIVITY— If you expect to use your machine following a prolonged period of inactivity, proceed as follow:

• wash machine thoroughly (see Chapter 7);

• cut off power by the socket's main switch and unplug;

• WATER condensing machines: close water faucet and release pressure inside inlet pipe by loosening a rubberholder. Remove both inlet and outlet pipes and let all water out. Before you use them again, check for damages,worn patches and tears and, if necessary, replace rubber holders' gaskets;

IMPORTANT: When room temperature is below 0°C, remove any water from machine in order toavoid freezing inside the condenser or pipes and causing SERIOUS DAMAGES. Please call theauthorized Assistance Service.

• in case of the machine being stored in a different place, put all documentation, including this manual, together andplace it inside one of the tubs.

— If you want to disconnect machine definitively, proceed as follow:

• unplug it and cut power supply cable;

• do not dispose of machine freezing gas and oil in the environment;

• dispose and/or recycle according to local provisions.

10 MALFUNCTIONS

IF YOU EXPERIENCE A MALFUNCTION DIFFERENT FROM ANY OF THOSE DESCRIBED HERE,PLEASE DIRECTLY CALL THE AUTHORIZED ASSISTANCE SERVICE.

Machine does not work or stops…… and POWER indicator light DOES NOT COME ON.

Cause: Machine is not correctly plugged in wall socket

Cause: THREE-PHASE input machine: there is no power in one of the phases. Have an electrician check fusesand/or wiring.

WARNING: THE OTHER PHASES COULD BE POWERED.

Cause: there is no power coming to the circuit or plug. Check that knife switches, switches and breakers abovethe system and socket are closed. If they are not, before closing, make sure nobody is working on wiringor circuit.

Cause: One of the circuit safety fuses is blown. Eliminate the cause for the overload and replace fuses.

Cause: Plug is damaged. Call a qualified technician to replace it.

Cause: Power supply cable is damaged. Unplug machine and call Assistance Service.

Machine circuit breakers repeatedly trip or fuses blow.Cause: The circuit capacity is not sufficient to feed machine.

The breakers' or fuses' electrical characteristics are not as required.

Cause: THREE-PHASE input machines: there is no power in one of the phases. Have an electrician check fusesand/or wiring.

WARNING: THE OTHER PHASES COULD BE POWERED.

The machine's motors could get DAMAGED if working with a non-powered phase.

The tubs temperature never falls under the programmed value.Cause: the machine is exposed to a source of heath or direct sunlight. Move machine.

Obstacles in front of the opening of the air-condenser are not positioned at the right distance. Check theminimum distance in the Technical Handbook and change the obstacles position according to it.

Room temperature is too high and condensing is not sufficient.

The air-condenser of the refrigerating system is dirty. Call Assistance Service.

The condenser cooling fan is broken. Call Assistance Service.

Cause: refrigerator's compressor auxiliary relay started due to overuse (REPEATED STARTS TO BE AVOIDED,excessive pressure, overheating). Turn machine off, wait a few minutes and try again. In case theproblem persists, call Assistance Service.

Cause: failure in the refrigerating system or in some control circuits. Call Assistance Service

00 alarm code:

Cause: following an excessive strenght of the beater, the machine is on the alert to avoid damage to the engine orto the mechanic components.

1. The cause is either:

• the cylinders could have been emptied because the mixture in the tubs ran off. There is a layer of ice onthe cylinders walls that block the beaters. In this case, refill the tubs with mixture.

• similarly, the cylinders could have been emptied because the mixture doesn’t flow inside it. Verify thatthe carburettors holes are not blocked.

• following the programming of too high values for the used kind of mixture, the ice-cream in the cylindersdoesn’t present the right degree of temperature.

2. wait some minutes until the cylinder defrosts and press the RESTORE button ;

3. press PRODUCTION . Display must NOT show the 2 small square symbol;

4. read on the display the ice-cream temperature and verify that the beaters stops when the programmedtemperature is reached. Continue using the machine.

Unusual noise.Noise comes mainly from cylinders or each time beaters rotate.

Cause: Drive belts are slow or excessively worn. Call Assistance Service.

Cause: A layer of ice has formed between the beaters and the cylinders. Mixture is not the right type or is toolittle.

The beaters and/or the cylinders are damaged or excessively worn. Call Assistance Service.

Cause: A sudden temperature change has put beaters and cylinder under mechanical stress. Stop machine andwait for a few minutes.

The beater and/or compressor motors vibrate excessively and/or do not work properly.

Cause: THREE-PHASE input machine: there is no power in one of the phases. Have an electrician check fusesand/or wiring.

WARNING: THE OTHER PHASES COULD BE POWERED.

The machine's motors could get DAMAGED if working with a non-powered phase.

The noise persists even when beaters are not working, or does NOT come from the cylinders.

GENERAL SALES CONDITIONS VALID FROM 1 ST/FEBRUARY/2010

1 DELIVERY: Ex Works Codogno (Lo), Italy.2 CONSIGNMENT: TELME does its best that consignment is carried out within established

time. Penalties or indemnity of damages, at purchasers favour, for the delayedconsignment are in any case excluded. Goods are intended as delivered when they arehanded to the trasporter. Shipment expenses are at purchasers charge. When there areno precise and written arrangements from the purchaser, the shipment will be carried outwith the most suitable means for TELME. Goods are shipped at the purchasers chargeand risk, also in case that shipment is carried out by TELME. When receiving the goodscheck if they are in good condition. If necessary, i.e. goods are damaged, mark deliverynote with your proper reserves. Inform TELME S.p.A. within 48 hours about damage.

3 CLAIMS: Eventual claims must be made no later than 7 days from receipt of the goods.4 RESERVED OWNERSHIP AGREEMENT: In case of selling with extended or deferred

payment, the parties agree that the goods are intended as sold with reserved ownershipagreement.

5 PAYMENTS: Eventual delays of payment authorize TELME to suspend or canceloutstanding orders. In case of delay of payment the interest will be at purchasers charge.

6 INSTALLATION and SERVICE: Installation is at the buyer, as well as the costs of aftersale service carried out by the distributor.

7 WARRANTY: TELME warrants sold machines for a time of 12 months from delivery date.During the time of warranty, TELME will replace, free ex-factory, all parts damaged forevident defects of manufacturing or for a bad quality of the materials. Replaced parts stillbelong to TELME and will have to be returned to the head office free of charge. Labourand eventual travelling expenses will be at purchasers charge. Freon gas filling is excludedfrom the warranty. The warranty declines if the machine is used not in conformity with thesales instructions; it they are damaged willingly or unintentionally; if the machine ismodified, repaired or disassembled by not authorized staff. The warranty also declines ifthe connections, power an water, for the feeding of the machine (at purchasers charge)are uncorrect. Suspension of payment, agreed in the sales proposal and accepted byTELME will cause the suspension of warranty.ADDITIONAL WARRANTY: TELME warrants sold machines according to abovementioned conditions for a time of 12 months from delivery date. In order to acquire theright of having the additional warranty of 1 year, so that the warranty is extended to a totaltime of 24 months, the buyer has to cut out, fill in, sign and send back, by registeredletter, to TELME, within 15 days from date of installation, the warranty card which isenclosed in the manual “OPERATING INSTRUCTIONS”. If TELME doesnt receive thewarranty card, the additional warranty time will not be acknowledged.

8 RESPONSIBILITY: TELME is free from every responsibility and obligation for anyfurther accident to people and goods that could verify for and/or during the use, forreasons or/in dependence on supplied machines, during eventual testing and even ifaccident is due to defects of manufacturing or materials. Any further claims ofreimbursement must be considered excluded. Products cannot be used for intent differentto that indicated.

9 THECNICAL FEATURES: Even it they are illustrated with accurate indication, they are notbinding for TELME. As well production and performance data are only indicative andsupplied in ambient temperature.

10 COMPETANT COURT: Notwithstanding the Civil Code Procedure, contracting partiesagree that, if any dispute could arise the only Court of Lodi (Italy), according to thepresent agreement, will be competent.
