We listen to our guests and attempt to build our list around those wants coupled with our needs (as wine geeks) to offer exposure to unique regions, winemakers, and styles. Proximity to the many diverse wine regions within our state lines compels us to show those wines from our backyard in prime focus. These proud local example, however, are not shown in a vacuum and instead are listed alongside our favs from all over the globe. We’re an uncomplicated bunch; yet wine, whilst just fermented grape juice, can be a tormentingly complicated subject.

Pét-Nat is a term thats been hitting the headlines as of late, and while we are not the ‘in’ crowd, it seems to be what
the cool kids are drinking. Simply put it’s short for pétillant-naturel, also known as ‘méthode ancestrale’. Well what
does that mean? The wine is bottled before primary fermentation has finished, making these bubbles delicate,
frivoulous, fun and easy drinking.

Attractiveness is the word here; racy acidity and pronounced minerality are
features of this underrated vineyard. Accessible early and with potential to
age, this site really does give the best of both worlds.
The orientation means longer sun exposure. The Badstube typically pro-
duces floral, delicate and mineral driven wines. They are full, lush and tend
to give lots of desirable fruit characters.

Son of Zinfandel, fruit sourced from 4 vineyards, some with extreme
elevation and some right on the coast. Aged in Solvenian and old French
oak. It has a dark brooding complexity fronted by a vibrant elegance.

WHAT IS A JURA?
Less of a what and more of a where, the Jura is France’s smallest wine region, under half the size of Margaret River it’s
tucked just below Alsace. Named for the Jurasic soils on which the vineyards lie on, it comes complete with its own
grapes and styles of wine, truly one of the most unique wine appellations in the world.
DOMAINE ROLET- Established in 1942 by Désiré Rolet, it is now one of the largest estates in the Jura, making interesting, approachable and delicious examples.

white wine from Pinot Noir.
Remove the juice from the fermentation vessel earlier than you would with red, effectively staining the white juice with just some of the dark grape skins. Yummy easy drinking and
looks pretty.

The Loire is one of the largest and most diverse wine regions in France, producing virtually
every type of wine – still & sparkling, dry & sweet, red, white, and rosé.
Whilst the leading white grapes of the Loire - Chenin Blanc & Sauvignon Blanc - are the world’s
benchmarks, the Loire’s reds are less famous than its neighbours in Bordeaux or Burgundy.
They are, however some of our faves. The Loire produces red wines with the same qualities we
like to see in our fruit; vibrant, crunchy and flavoursome.

I come from the Gironde in Southwest France. I only discovered who my parents were in
1996, but I always knew Merlot was my half-sibling. I am known by many names including
Lafite (Russia), Burdeos Tinto (Spain), or simply Bordeaux (Switzerland). I am the world’s best
travelled grape variety, am concentrated, tannic and enjoy long walks on the beach whilst the
sun is setting.

When speaking about wine, a variety is a type of vine or a type of grape.
For example, Pinot Noir is a grape variety. Many people will use the word varietal when they really mean variety. Varietal is a descriptive term. The
word is increasingly misused in place of variety. Varietal glassware and varietal labelling are describing the object.
E.g. Pinot Noir is a grape variety that should be served in varietal glassware.
