    for many amongst you, to say welcomeback to Porto Bay Hotels & Resorts.Times have been such that a great cap-acity for innovation and adaptation tomarket demands have been necessary.Methods of communication have be-come faster and faster, social networksnow play an important role in passingon our messages in an interactive wayand, above all, in developing our re-lationships.We are delighted that our differentforms of communication have been sowell received amongst many guestswho return to our hotels whether in thesame, or different, destinations.The fact is that Prestige Club loyaltycards now stand at almost 120 thousandin Portugal and 17 thousand in Brazil.Through the satisfaction questionnaireswe periodically ask our guests to com-plete we have been able to ascertainthat, apart from repeat guests, around

    20% of our clients choose a Porto Bayhotel on the recommendation of some-one who has already stayed with us. This gure makes us especially proudand, therefore, we have taken the ini-tiative of implementing some measures

    that aim to bring our hotels even closerto our guests.

    Bearing in mind this proliferation of dif-ferent experiences we have expandedinto different geographical areas of theworld. With its origins in Madeira, atourist destination with a strong tradi-tions, it was here that the Porto BayGroup consolidated its portfolio with5 hotels before expanding into the Al-garve and Brazil as from 2007.     When trying to dene Madeira as a tourist destination it is important to

    remember that the island has always lived from the combination of three

    key factors : nature, history and geographical location. It was above all

    the position of this small spit of land in the immensity of the ocean that

    ensured its role in the course of world history from the XVth century on-

    wards. These were the rst islands discovered by the Portuguese, the rst

    to be colonised, the testing ground for agricultural products, administra-

    tive models, habits and customs that spread throughout the world from

    this point. Ships travelling to and from Europe passed by the island, bring-

    ing people from all backgrounds who, inevitably, left their mark. Thanks to

    these ships people from Madeira emigrated all over the planet, returning

    with new habits and enriching life on the island. On account of the happy

    coincidence of its exceptional geographical location, Madeira lay on the

    maritime routes around the world. Madeira continues to be an importantstopping point for shipping and this has made it what it is today. This

    cultural miscellany made its mark and, over 600 years, has conferred a

    certain cosmopolitan quality on the island and its people. In addition to

    this, the cultural and social evolution of the island has progressed hand in

    hand with nature, blessed as it is with a temperate climate and a unique

    forest, which is its principal distinguishing feature. The island also enjoys a

    long-standing tradition of tourism, which has existed in an organised formfor two centuries. However, the island has always attracted visitors espe-

    cially on account of its exoticism so close to Europe and its breathtaking

    landscapes, which are accessible without having to travel to remote points

    of the planet. But again it was its proximity to Europe and its climate that

    destined Madeira to become the place recommended by doctors for cur-

    ing the sick, especially those suffering from tuberculosis. One of the most

    notable gures of this period was Empress Sissi of the Austro-Hungarian

    Empire. For all these reasons Funchal is an Atlantic city, not only because

    it is the oldest European colony amongst the Atlantic islands but, above

    all, because it is a melting pot of our world : it is European but at the same

    time exotic, it has touches of colonial heritage and is rich in historical

    legacy as can be seen in the diversity of physical types that can be found

    here. The concept of an Atlantic city and culture is still being developed by

    academics but it is no doubt felt by all who visit the island. Madeira is a

    kind of half way house that connects the old world to the new, a symbio-

    sis that, over the centuries, the island and its inhabitants have been able

    to absorb. It embodies tradition and modernity, history and nature and,

    above all, is a unique case of diversity.

    In addition to the sun, beach and golf - theAlgarves trademarks - there is a lot more todo here throughout the whole year. Albufeiraalso has culture and tradition. Since the midXIXth century its history has been forged bythe shing trade and by the blows of naturaldisasters such as the 1755 earthquake whichdestroyed Lisbon and whose tsunami alsodestroyed this city and its Mother Church.

    Built at the end of the XVIIIth

    century, thecurrent church is one of the places worthvisiting. Neoclassical in style, it consists of anave, four side chapels, a christening chapel,two pulpits and two lateral halls. Above themain door and the triumphal arch one cansee the cross of the Order of Aviz, an organ-isation that combined religious and militaryvocations in the Portugal of the Middle Agesand to whose knights the castle and defenceof the city was handed after the Portugueseconquered the Moors in 1250. The castle nolonger dominates the citys landscape - now

    there are just a few remains that insist onresisting human progress.However, the Moorish presence continuesto be associated to Albufeiras history. Evenbefore Portugal came into existence the Al-garve was a Moorish kingdom and this placewas known by its Arab name Al-buherawhich means castle of the sea.The Clock Tower is considered the citysemblem. The echoes of its bell, protectedand adorned with an iron crown since theXIXth century, preserves the citys iden-tity. Its relationship with the sea is another

    dominant characteristic. This can be felt inthe shing boats, beaches or even in thetones of the rock escarpments dotted alongthe coast.Further inland Albufeiras colours change;the landscape is covered in fruit trees, inparticular g, almond and orange trees. Thepresence of the latter is as old as the historyof the Algarve.Due to its location more or less in the midd-le of the Algarve coast, Albufeira is an ex-cellent point of departure to explore theAlgarve where there is lots to do. A good

    example is Ria Formosa, a reference pointin southern Portugals landscape. This isa marsh area where fresh and sea watersmerge around small banks of sand coveredwith vegetation that provide a natural para-dise for water animals and birds.There are many ways of enjoying Ria For-mosa, a nature reserve subject to strictenvironmental conservation rules. Photo-graphy, water sports, simple contemplationor, highly recommended, a boat trip withbiologist guides who can explain the envi-ronmental importance of the tidal inlets na-

    ture. Several companies offer these kinds ofservices but ideally it is best not to do thiswith a boat load of tourists but rather in atypical Algarve shing boat with only a fewpassengers, a skipper with a good know-ledge of Ria Formosa and a biologist.

Antes mesmo de existirPortugal, o Algarve era um reino muulmanoe esta localidade tinha o nome rabe de Al-buhera, que quer dizer castelo do mar.A Torre do Relgio considerada o ex-libris. Oeco do seu sino, desde o sculo XIX protegidoe adornado com uma coroa de ferro, preservaa identidade da cidade. A relao com o mar outro ponto dominante. Nota-se nos barcos de

    Another attraction close to Albufeira is theParque Temtico Zoomarine (Marine Zoo).It is built around the theme of The Life ofthe Oceans and occupies more than 8 hec-tares full of attractions including an aquar-ium that reproduces around 20 marine eco-systems, a show with dolphins and a cinemapromoting environmental messages. The

    educational component is very important,attracting both children and parents. Thereis a single admission ticket that entitles theholder to enjoy all the attractions and takea turn around the world of marine diversity.Perhaps the most unexpected aspect of thisalternative tour is realising that the Algarveis a destination where one can view andpurchase high quality art. The reason forthis is that over the last decades the speciallight and temperate climate have attracteda growing number of international and Por-tuguese artists with a wide range of talents.

    As a result numerous galleries and art shopshave sprung up, exhibiting and selling a di-verse selection of works of art. And it is notalways necessary to spend a fortune to getthe best. The Algarve has many excellentmunicipal galleries that exhibit the work ofresident painters and sculptors from abroadwho organise individual and group exhibi-tions on a regular basis.But for buying art, the situation is differ-ent. In this case - and even if you are not abuyer - it is worth visiting the Centro Cul-tural So Loureno, which has made a very

    important contribution to the Algarvescultural life since it was established in 1981by the now deceased Volker Huber and hiswife, Marie.Nowadays it is considered one of the coun-trys best private galleries. Now managedby Marie, it is located on a picturesqueconverted quinta (farm) next to the verybeautiful So Loureno Chapel on the out-skirts of Almancil, close to the EN 125 exit.With the passing of time it has acquired anoutstanding reputation for showing contem-porary art by internationally renowned art-

    ists as well as by burgeoning talents.Well-established names that offer a rela-tively secure investment include the Germanpainter A.R. Penck, the famous painter, writ-er and Nobel Prize winner, Gunther Grass,the Portuguese sculptors Joo Cutileiro andJos de Guimares, the Portuguese painter,Manuel Baptista, the internationally re-nowned Spanish painter Antoni Tapies andthe English sculptor Jeff Lowe.Covering 4,500 m2 the centre is very at-tractive. It includes six galleries, patios andample verandas and a very well cared for

    sculpture garden. Since it was founded SoLoureno has hosted hundreds of exhibi-tions, classical music concerts and poetryreadings.

    There are two words that can describeNew Year in Madeira and Rio de Janeiro:black and white! These two destinationsshare the privilege of organising two of

    the biggest New Year celebrations in theworld - both with reworks and lots ofpeople gathered round a bay. Every-thing else is different especially as inMadeira, in the northern hemisphere, itis winter and in Rio de Janeiro, Decem-ber marks the beginning of summer.But the choice of black and white todescribe these two events is not bychance. In Madeira New Years Eve isa gala night with a long-standing tradi-

    tion that goes back to 1920. Planting in the Vila PortoMare gardens began in 1988 upon the construct-ion of the Eden Mar hotel. Efforts were redoubledas from 2003 when the Vila Porto Mare resortconcept took shape. Initially conceived with aview to making the sunbathing area more pleas-

    ant, they quickly became an attraction, capableof positioning the outlet as a Botanical Hotel.Work was rst undertaken by Estufa landscapegardeners under the guidance of Rui Vieira, therst General Director of the Funchal BotanicalGardens, in the area next to the Eden Mar ho-tel. 2003 saw the beginning of the second phasewhen the area was expanded by the Englishlandscape architect, Gerald Luckhurst, to becomethe gardens surrounding the resorts other ho-tels, Porto Mare and The Residence.

    More recently, in 2008, the identication andclassication of the existing plants began underthe guidance of Raimundo Quintal, a geologistand expert in Madeiras ora. It is he who guidesus through the three levels of the gardens lledwith ower-beds where the bio-diversity of thewhole planet is represented. The idea was tomake the garden lived in by the guests.     makes these gardens so interesting. After twoyears of work all the plants were identied withlabels that inform visitors of their names andorigins. During this period ora endemic to Ma-deira was also introduced. The idea was to pro-mote the concept of a Botanical Hotel. However,contrary to tradition in which botanical hotelsare located next to botanical gardens, these gar-dens were built as part of the hotel.

    Apart from training the gardening team, anotheraspect of the project that has been undertaken isthe development of best environmental practicessomething that is closely followed by guestswho participate actively in the life of the gar-dens whether by using the containers placed inthe garden to make compost or by using some ofthe vegetables and herbs which have been intro-duced into the gardens in the meantime.Containers where organic waste can be deposit-ed are located all over the gardens. The waste

    remains there until it has turned into compostwhich is used to fertilise the earth. Levada (wa-ter channel) water is used for irrigation in prefer-ence to mains water.Apart from being environmentally friendly, allthese measures reduce the maintenance costs ofa garden that Raimundo Quintal hopes will app-eal to all generations. Grandpa can sit in theshade reading a book, Dad can help in the gard-en and the kids have space to play.

    boas prticas ambientais, um aspecto que ali-s seguido pelos hspedes que colaboramactivamente na vida do jardim, quer utilizandoos recipientes colocados no jardim onde se fazcompostagem, quer usando alguns dos vegetaise ervas aromticas que entretanto foram sendointroduzidas em diferentes cantos do jardim.Por todo o jardim esto espalhados recipientesonde os resduos orgnicos so depositados e alicam at formar um composto que serve parafertilizar as terras. A rega feita com gua deuma levada e no da rede pblica.Todas estas medidas, alm de serem amigas doambiente, reduzem os custos de manuteno deum jardim que Raimundo Quintal entende quedeve ser geracional. O av pode estar sombraa ler um livro, o pai pode ajudar no jardim e acriana tem espao para brincar.

    Parte da nossa conversa faz-se mesa,bebendo um ch que uma infusode ervas ali cultivadas. O jardim dasplantas aromticas e medicinais umadas divises temticas. Foi criado emFevereiro de 2009 e tem j mais de30 espcies. A aposta vem sendo se-guida com outros espaos temticos :um deles para as plantas endmicas daMadeira e outro para as plantas sucu-lentas, como os cactos, que pela suaresistncia, foram plantados nas zonasmais junto ao mar.O resort utiliza os produtos do jardimna sua gastronomia. auto-sucienteem banana e, alm das ervas arom-ticas, utiliza abbora, couve, pepinos,melancias, uvas, maracujs . .. Alis, daqui que o Chefe Alcino Marquese a sua equipa colhem os coentros, asegurelha, o baslico, alecrim . .. paraconfeccionar os vrios pratos, entreos quais o salmo fumado com ervas

    We chat, sitting at a table and drink-ing a herbal infusion made with plantsgrown in the gardens. The herb andmedicinal plant garden is one of thethemed areas. It was created in 2009and already has over 30 species. Thisidea has given rise to other themed ar-eas : one assembles plants endemic toMadeira and another succulents such ascacti, which, on account of their hardi-ness, have been planted nearer the sea.

    The resort uses produce from the gard-ens in its kitchens. It is self-sufcient inbananas and, apart from herbs, pump-kins, cabbage, cucumbers, watermelon,grapes are also produced for consump-tion.     DEFUMAR150gr de raspas de madeira seca

    que no seja resinosa(preferncia laranjeira ou limoeiro)

    1 frigideira anti-aderente1 forno

    INGREDIENTS1kg of whole salmon lets without bonesMARINADE

    500g course sea salt200g muscovado sugar

    0.5dl olive oil0.5dl sambuca molinari5g black pepper corns

    1g ground cloves20g dill leaves or dried dill

    bay leaf nely choppedZest of half an orange

    Zest of half a lemonFOR THE SMOKING

    150g sawdust from dried, non-resinous wood(preferably from an orange or lemon tree)

    1 non-stick frying pan1 oven

    Coloque os letes de salmo em cima de uma grelha com a pelepara baixo. Junte todos os ingredientes da marinada mexendo demodo a car bem misturado. Cubra o salmo com a marinada.Ponha a grelha em cima de um tabuleiro para que alguns lquidospossam escorrer e deixe a marinar tapados, durante 24 horas.

    Aps esse perodo, retire a marinada e passe rapidamente porgua fria. Coloque novamente o salmo em cima da grelha eponha dentro do forno.Coloque as raspas da madeira numa frigideira e aquea-a em lumebrando tapada at comear a deitar fumo (a madeira no devequeimar). Destape a frigideira e coloque dentro do forno e espere10 minutos. Repetir esta operao mais 2 vezes usando sempre amesma frigideira e a mesma madeira, para que o fumo aromatizeo salmo com sabor de fumado.No nal desta operao, arrefea o salmo no frigorco durante30 minutos. Pincele com azeite e guarde no frigorco bem embru-lhado em pelcula aderente.Tenha sempre ateno o forno tem de estar frio e a grelha ondeest o salmo car um pouco acima do meio do forno e no en-

    costada frigideira com as raspas da madeira.

    Place the salmon lets on top of a grill with the skin side facingdown. Combine all the marinade ingredients and mixed thorough-ly. Cover the salmon with the marinade. Place the grill on top ofa tray so that any liquids can drain away. Cover the salmon andleave to marinade for 24 hours. At the end of this period, removethe marinade and rinse the salmon quickly in cold water. Put thesalmon back on the grill and place in the (cold) oven.Place the sawdust in the frying pan and heat, covered, over alow ame until it begins to smoke (the sawdust should not burn).Uncover the frying pan and place inside the oven. Wait 10 minutes.Repeat this procedure 2 more times using the same pan and saw-dust so that the salmon takes on the smoked avour.Once you have done this, chill the salmon in the fridge for 30minutes. Brush with a little olive oil and keep in the fridge, well

    wrapped in cling-lm.Always ensure that the oven is cold. The grill bearing the salmonshould be placed just above the middle of the oven, well awayfrom the frying pan with the sawdust.
