Ingredients2 cups self raising flour1 cup sugar3 apples peeled, cored and diced (1cm)125 grams butter1 egg
MethodPreheat oven to 180 degrees. Grease slice tin. Toss apples with self raising flour and sugar in a medium bowl.
Melt butter in a small pan, cool slightly. Stir in egg. Pour butter and egg into apple mixture and mix until well combined. Press into tin.Bake for 35-40 mins.

Simple Apple Slice
Ingredients2 carrots chopped1 zucchini chopped1 onion peeled and chopped5 mushrooms2 cloves garlic peeled and chopped2 tablespoons olive oil400 grams mince beef, or a mixture of beef and pork450 grams can plum tomatoes1 cup beef stock2 tablespoons Gourmet Garden Italian Herbs
MethodFinely chop or grate carrots, zucchini, mushrooms and onion. Crush garlic.Heat the oil in pot and stir until the mince browned.Add the vegetables, can tomatoes, stock and seasoning.Simmer for 15 minutes. Serve with cooked pasta and sprinkled with Parmesan cheese.

Ingredients1 kg pumpkin peeled and chopped 2 small onions peeled and chopped 1 litre vegetable stock 1/2 cup cream
MethodPlace the pumpkin, onion and stock in the slow cooker.Cook on LOW for 4 to 6 hours, until pumpkin is soft and cooked through.
Cool for 10 minutes.Using a stick blender, blend until nice and smooth.Stir in the cream.Season to taste and serve.Optional: Sautéing the pumpkin and onion first in a little extra virgin olive oil creates a slightly richer flavour.
