Bringing the Mundo Maya together – theInternational Costa Maya Festival is here! Already off to a great start, the Costa Maya festivities bring in much excite-ment as people anticipate opening night. Scheduled to officially begin tonight,Thursday, August 4th, 2008, Costa Maya brings together the Mundo Maya coun-tries. However, one of the biggest highlights of the festive weekend is the Reinade la Costa Maya pageant which has grown by leaps and bounds to becomeinternationally recognized. The delegates arrive in the country and are immedi-ately sucked into a whirlwind of fun activities. The girls’ arrival on the island,hypes up the mood as people realize that the day to crown a new queen getscloser. With Noche San Pedrana, dinners, bikini photo shoots, the eight beautieshave acquainted themselves with the island and its friendly people. As peoplewait for gala night at the Old Football Field, their choice for favorite contestantis a difficult task. To make it easier, The San Pedro Sun presents the eightcontestants with a brief biography.

Belize *Belize will be well represented byIris Jessie Medina at this year’s MissCosta Maya International 2008 pageant.This 25-year-old, 5 foot 7 inch beautycompeted in the official Miss Belize 2007Pageant held in September 2007 and al-though she was a late entry, Jessie provedherself to be highly competitive and com-petent to garner the 1st runner up posi-tion. Jessie was originally born in El Sal-vador, grew up in Guatemala and cameto Belize at age 13 and became aBelizean. She speaks English and Span-ish fluently, works at the Corozal FreeZone as the assistant Manager of theCorozal Free Zone Development Com-pany. Her dream is to own and managea chain of fine restaurants in key tourismareas of Belize that specializes in Latinand Belizean cuisines. While we lounged in thecomfy sitting area we enjoyed good conversation and sipped theMojitos that exploded with mint and melon flavor, the perfect cooland refreshing beginning. Carlos introduces us to the changes theyhave recently made to their menu, explaining that they added inter-national cuisine in order to better serve their guests and use the fulltalents of their chefs who are internationally trained. One new itemeven allows guests to try a variety of Indian dishes as a “mini buf-fet”. For $75BZ per person, the Maharaja Feast is based on howmany guests participate. For example a party of two receives theirchoice of two appetizers and any three main courses (lobster cost isadditional). The Lob-ster Thermidor is an amazing treat of succulent lobster taillightly spiced with white wine and toasted with home madehollandaise sauce, served with garlic mashed potatoes and asteamed and sautéed vegetables. The flavors melt in your mouthand the combination of lobster and hollandaise is a match madein heaven. We also sample the Coconut Jumbo Shrimp whichis lightly battered and fried and served with a perfectly sweetmango and pineapple sauce along with coconut rice.
