Red Velvet Cake Napoleons For the cake: 2 1/2 cups cake flour 1 1/2 cups sugar 1 teaspoon baking soda 1 tablespoon cocoa powder 1 teaspoon salt 2 eggs 1 1/2 cups vegetable oil 1 cup buttermilk 2 tablespoons (1 oz.) red food coloring 1 teaspoon vanilla extract 1 teaspoon white distilled vinegar For the frosting: 12 ounces cream cheese, softened 8 ounces butter (2 sticks), softened 1 1/2 teaspoons vanilla extract 3 cups confectioners’ sugar squirt of fresh lemon juice For the cake: Preheat oven to 350 degrees. Grease and line a jelly roll pan with parchment paper. Sift together flour, sugar, baking soda, cocoa, and salt into a medium bowl. Beat eggs, oil, buttermilk, food coloring, vanilla, and vinegar in a large bowl with an electric mixer until well combined. Add dry ingredients and beat until smooth, about 2 minutes. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the middle comes out clean. Let cool completely. When the cake is cooled, flip it onto a large surface and peel the parchment paper off. Using a heart-shaped cookie cutter, cut out hearts and set aside. Using a serrated knife, slice each heart in half. Set aside while you make the frosting. For the frosting: Beat cream cheese, butter, vanilla and lemon juice together in a large bowl with an electric mixer until combined. Add sugar and beat until frosting is light and fluffy, 3-5 minutes(you’ll end up with some left over). To assemble: Place a small amount of frosting on one of the hearts, place another heart on top, pressing down slightly, then more frosting; finally place one last heart on top and a dollop of frosting (that’s 3 hearts total). Top with sprinkles, if desired. Repeat with the remaining hearts.

Five Steps to a Healthy Heart
It’s all coming up hearts this February, but not just in prepara on for Cupid’s arrival. In efforts to raise awareness about the im-portance of heart health, February has been designated Na onal Heart Health Month. Heart disease remains a paramount concern, and leading reason of death, for people aged 65 years and older, according to the U.S. Centers for Diseases Control and Preven on (CDC). It affects 37 percent of men and 26 percent of women 65 and older.
In a na onal effort to prevent 1 million heart a acks and strokes in the United States by 2017, the CDC is encouraging Americans to make blood pressure control their goal. Adults of any age should know their blood pressure, and if it is high focus on controlling their blood pressure through diet, exercise, and in some cases, medica on. We aim to encourage our staff, families and residents to focus on their own heart health this month with these five easy steps to a healthy heart: 1. Visit your doctor – Ge ng your blood pres-
sure tested and learning what your blood pressure should be is a great first step to a healthy heart.
2. Stop Harmful Behaviors—Unhealthy ea ng habits and smoking are two of the biggest contributors to heart disease. If you struggle
with either of these behaviors, take steps to reduce or quit.
3. Increase Physical Ac vity— To improve overall cardiovascular health the American Heart Associa on recommends at least 150 minutes per week of moderate exercise. That is about thirty minutes of aerobic ac v-ity at least five days a week. Not sure you can give it that much? Something is be er than nothing! Try one of our many exercise classes that we offer throughout the week, you can find them in our ac vity calendar.
4. Improve Diet— A healthful diet of nutrient dense fruits and vegetables will go a long way in improving heart health. Maintaining a healthy weight is essen al to heart health. Avoid foods high in sugar and sodium and increase amounts of vegetables and fruits to easily improve your diet.
5. Get Good Quality Sleep‐‐ Not ge ng enough sleep or ge ng too much sleep may put you at risk for heart disease according to researchers at the Center for Cohort Studies at Kangbuk Samsung Hospital. Make efforts to get at least six hours of good quality sleep to help reduce your risks.
