Boil 2.5 cups of milk and add sugar to it.Take 1/4 cup of milk and mix custard powder without lumps. Add this custard mixture to the boiled milk.Mix well in medium flame for few minutes till it thickens like dosa batter.Keep stirring else u will get a burnt layer at the bottom and it spoils the entire recipe. Switch off the flame and add vanilla essence.Refrigerate it for 2 hours. Just before serving,chop all the fruits and nuts into small pieces. Mix them with the chilled custard.Serve immediately. Adjust the quantity of custard powder as per the thickness u need. I always like the custard little thinner.Its ur personal choice of making it. Adjust sugar as per ur taste buds. MethodFor the sandwich masala1. Dry roast the cumin seeds on a tava (griddle) for a few seconds, while stirring continuously and keep aside to cool.2. Combine all the ingredients including the roasted cumin seeds and blend in a mixer to a fine powder.3. Store in an air-tight container and use as required.How to proceed1. Trim off the edges of each slice of bread, apply 1 tsp of butter and tsp of chutney on it and keep aside.2. Place a slice of bread, with the buttered side facing upwards, on a clean flat surface.3. Arrange a few cucumber slices (approx. 8 to 10) and sprinkle tsp of sandwich masala evenly over it.4. Arrange 2 onion slices, 4 to 5 potato slices and sprinkle tsp of sandwich masala evenly over it.5. Arrange 2 beetroot slices, 6 to 7 tomato slices and sprinkle tsp of sandwich masala evenly over it.6. Place another slice of bread, with the buttered side facing downwards and press it lightly.7. Cut into 6 equal pieces, place them on a plate and apply tsp of butter evenly over it.8. Serve immediately with tomato ketchup and green chutney.9. Repeat with the remaining ingredients to make 3 more plates.
