Let’s go to the market!To buy the ingredients.

INGREDIENTS:• 500 gr ground almonds.• 400 sugar.• 250 gr of sweet potato or

baked potato.• Zest of one lemon.• 3 Eggs.

To decorate: * Pine nuts. * or almonds.

How to make “Panellets”:

• Mash the potatoes and mix with sugar, lemon zest and almonds.

• Separate the egg yolks from the whites and set aside. Add the yolks to the mixture of potato and almond. Stir well to mix.

• Divide the mass in to small balls using your hands. Once you have this cover a plate in the almonds , pine nuts, etc, and roll the balls over them so that the balls are covered.

• Line a baking tray with ovenproof paper. Distribute the Panellets evenly over the paper.

• Pre-heat oven to 170 degrees.• Paint the Panelletes with the egg white and put them into

the oven. Normally they are cooked after 10 minutes. It depends of the kind of oven you use.

• When they are golden brown remove them from the oven.

day of ”All Saints”(a religious celebration).
