    1/2 pound ground pork

    6 tablespoons flour

    1 tablespoon annatto powder

    1/2 teaspoon black pepper ground

    1 shrimp flavor cube

    2 tablespoon fish sauce

    3 cups broth (pork)

    2 tablespoon cooking oil

    Toppings:

    3 tablespoon fried garlic

    2 hard boiled and sliced eggs

    1 cup pork, boiled and sliced thinly

    1/2 cup smoked fish flakes

    1/2 cup pork crackling (pounded)

    1/2 cup boiled shrimps

    1/4 finely chopped scallions

    2 pieces sliced lemon

    Palabok is a delicious noodle dish with a variety of ingredients such as boiled pork,tinapa flakes, crushed crispy pork crackling, fried garlic and scallions topped with

    shrimp sauce. The Palabok recipe is very easy to make and the ingredients are readily

    available.

    Instructions:

    Step 1 In a small bowl, soak rice for 15 minutes. Drain water and set aside.

    Step 2 Prepare the sauce. Heat oil in a saucepan and saute ground until cooked. Mix

    annatto powder in broth and add to the saucepan. Add shrimp cubes and simmer for

    about 3 minutes. Add flour while continually stirring. Add black pepper and fish sauce

    and simmer the sauce until it becomes thick.Step 3 In a pot, boil enough water and submerge the noodles using a strainer for 1

    minute. Remove and drain the water. Place noodles in a plate.

    Step 4 pour sauce on the noodles. Top with the rest of the ingredients for toppings.

    Serve with lemon slices.

    This Palabok recipe serves 6. Cooking time is about 20-30 minutes.

    Simple Palabok

    Palabok is a popular snack item in the Philippines, one of my favorites :D.If I have ample time I will share m recipe for

    this without using the ready-mix sauce.

    Ingredients:

    200 grams bihon (boiled and drained)

    2 hard boiled eggs

    2 cans smoked tuna

    1 onion

    3 cloves garlic

    1/2 cup mince spring onion

    1 big packet Mama Sita's palabok mix (follow the instruction in the package)

    1. Saute the garlic and onion then add the smoked fish, let simmer.

    2. Add the dissolved Mama Sita's Palabok Mix then simmer until the sauce thickens, turn off the heat and set aside.

    3. In a serving platter arrange all the ingredients then serve.

    Pancit Palabokis a noodle dish with shrimp sauce and topped with several ingredients such as cooked shrimp, boiled

    pork, crushed chicharon, tinapa flakes, fried tofu, scallions, and fried garlic. A very tasty treat that is sure to relieve your

    hunger.

    There are other noodle dishes that are similar to this. Pancit Luglog andPancit Malabon are the ones that come close to

    the taste and appearance (the only difference would be the noodle and some ingredients as well as some preparation steps).

    Pancit Palabok Recipe

    Ingredients

    1 pack (1 lb) rice noodles (bihon)

    Sauce:

    2 tbsp cooking oil

    1/2 lb ground pork

    1 tbsp anatto powder

    3 cups pork broth

    1 piece shrimp cube 6 tablespoons all-purpose flour

    2 tbsp fish sauce

    1/2 tsp ground black pepper

    Toppings:

    1 cup boiled pork, thinly sliced and cut into small pieces

    2 pieces fried firm tofu (tokwa), cubed

    cup tinapa flakes (smoked fish)

    cup chicharon (pounded)

    2 hard boiled eggs,sliced

    cup cooked shrimps (boiled or steamed)

    1/4 cup green onion or scallions, finely chopped

    3 tbsp fried garlic

    2 pieces lemon, sliced (or 6 to 8 pieces calamansi)

    Cooking Procedure

    1. Soak the rice noodles in water for about 15 minutes. Drain and set aside.

    2. Cook the sauce by heating a saucepan. Pour-in the cooking oil.

    3. When the oil is hot enough, put-in the ground pork and cook for about 5 to 7 minutes

    4. Dilute the annato powder in pork broth then pour the mixture in the saucepan. Bring to a

    boil (If you are using anatto seeds, soak them first in 3 tbsp water to bring-out the color)

    5. Add the shrimp cube and stir and simmer for 3 minutes

    6. Add the flour gradually while stirring.

    7. Add the fish sauce and ground black pepper then simmer until sauce becomes thick. Set

    aside.8. Meanwhile, boil enough water in a pot.

    9. Place the soaked noodles in a strainer (use metal or bamboo strainer) then submerge the

    strainer in the boiling water for about a minute or until the noodles are cooked. (make sure

    that the noodles are still firm)

    10. Remove the strainer from the pot and drain the liquid from the noodles.

    11. Place the noodles in the serving plate.

    12. Pour the sauce on top of the noodles then arrange the toppings over the sauce.

    13. Serve with a slice of lemon or calamansi. Share and enjoy!
