Our sourdough breads and pizzas

STORYTELLING: Our breads and pizzas from the menu are prepared with a ancient technique which uses a culture of lactobacillus naturally contained in flours instead of using the most common technique with the commercial yeasts. The flour is left to ferment

Naturally every day with water in order to grow the lactobacillus naturally contained in it and use them as a natural leaven.

This technique is the very first technique ever used for preparing bread and it was putted aside later with the discovery of the commercial yeast much faster, Stronger and convenient for industrial purposes.

“sour” because of the classic flavor the dough takes due to his long fermentation (a total of about 30 hours) sourdough leavening is a very natural technique much healthier and easy to digest compared to the loafs made by using industrial yeasts. That’s one of the motivation why, this preparation can be sponsored as part of our eat well program

STORYTELLING: Pizza sarda comes from the inspiration of very classic and loved ingredients

From my island: Artichokes and bottarga salad is a traditional feast. Bottarga, the sardinia golden caviar: the local fisherman used to catch the gray mullets and cure eggs under salt for several times with different steps, a very old procedure that gives the ingredient very fishy and authentic flavor and very high price: we call it sardinian caviar the pizza is served without tomato sauce which would cover the flavor of the delicates ingredients such as the asparagus and the bottarga and topped with cherry tomatoes and rocket salad

“Sardinian Culurgiones” THB 400 traditional pasta stuffed with purple potato, green peas and cuttlefish stew, seared artichokes, sardinia grey mullet cured bottarga

STORYTELLING: Culurgiones is the favourite traditional sardinian pasta for excellence. Not much people knows the traditional recipes and the particular technique used for the closing of this pasta: i personally learned from my grandmother “nonna cesarina” which is now 96 years old. In italian is called “a spiga” which is the wheat ear shape. This dish is an example of tradition which is going to die with the years and, here in thailand i would like to take the chance to keep it alive showcasing the local ingredients.

In my version we keep the traditional flavors, but as it’s served with seafood we color the pasta with squid ink and use purple potato for the filling, in order to give extra color to the dish.

“Il coniglio nel tortello” THB 420 Tarragon striped pasta stuffed with wild rabbit ragout, smoked eggplant, celery, pear, kalamata olives, pine nuts, rabbit consommé

STORYTELLING: Tortello is a stuffed pasta traditionally stuffed with pork ham or veal and always served with beef or chicken broth.

In my version, i created a pasta, which is striped with terrangon leaves and stuffed with a white rabbit ragout ( coniglio means rabbit, il coniglio nel tortello means the rabbit in the tortello ) and served with a rabbit consommé, asparagus, pears, kalamata olives and morels.

STORYTELLING: Carre d’agnello is the italian for lamb rack.

Sardinia is one island where tradition are signed mostly from the numerous shepherds around the island but also from the garden products. The 2 very classic italian combinations: lamb mint and peas and strawberry blue cheese risotto.

In my version, it is served in textures of peas: one pea foam, pea powder, pea puree and a pea and pancetta stew.
