the largest event this month has to be the Canadian National Exhibition (The CNE); actually, it’s probably the largest event of

the entire summer. It doesn’t start officially until later in the month but there are a few fun events that run through all of August 2012.

CNE CasINOMon. July 30, 2012 – Mon. September 3, 2012If you love to play cards or roulette but hate having to drive hours out of the city to enjoy these devilish pleasures, here’s your opportunity to head down to the Better Living Centre and get your fill with this very popular event. CNE HORsECaPaDEsTuesday July 31st – Thursday August 16th, 2012Make sure you take the kids or any horse lover to the Horse Place at Exhibition place for this one of a kind event. HorseCapades is a great introduction to horses for everyone. It’s a completely free event. There are interactive horse programs that allow visitors to discover how a horse thinks, acts and reacts. You can take the beginning steps to becoming a horse whisperer. Other programs include the experience of what it’s like to ride a horse, pet and feed a horse, meet a mare and foal (mother and baby horse), learn about grooming and shoeing, and learn about the life of a race horse. There will also be games, contests and prizes to be won. As part of HorseCapades you can also watch the professional horse competition. Yee-Haw!

CaNaDIaN NatIONaL ExHIBItIONFri. August 17th – Mon. September 3rd, 2012The start of the CNE marks the beginning of the end of summer fun for the kids. The CNE is the largest annual community event in the GTA and takes place over 18 days ending after Labour Day weekend. There is a variety of events including Bandshell concerts, celebrity chef demonstrations, an aerial acrobatics and ice skating show, a dog show, a working farm and of the course the ever so popular three day air show. Of course I can’t forget to mention fan favourites such as the midway rides and games, the unique food fair, as well as the international food and shopping. The CNE takes place throughout the beautiful lakefront property

suMMERWORKs tHEatRE FEstIVaLThursday August 9th – Sunday August 19th, 2012I’ve never attended this festival in the past so I thought I’d ask a theatre friend of mine about it

and she couldn’t hold back her excitement when discussing it. She told me it’s her favourite summer festival and it’s something she looks forward to each year. SummerWorks is now Ontario’s premier festival full of exciting and captivating professional theatre. It’s the largest juried festival in Canada which features largely new Canadian plays. My theatre friend also informed me that it’s an integral part of the Toronto theatre community. The show times are all over the map, as are the venues. How did you get started in the television business?I received a masters degree in journalism from University of Western Ontario in 2001 and was placed as an intern at CTV. I worked as a reporter at CBC and Toronto1 before finally landing at Citytv’s Breakfast Television in 2005. Three years in I was given the opportunity of a lifetime; to audition to host Cityline. The rest is history!

As host of Cityline, Canada’s longest running lifestyle show, Tracy is known for her contagious smile, easy laugh and love of fashion, fitness and all things shoe-related. This multi-tasking, modern day mom is host of the longest running and most successful daytime show for women in Canadian history, currently in its 28th year! On the Go sat down with Tracy recently to chat about her journey into the spotlight and what inspires her in fashion and décor.

What is the most rewarding/ challenging aspect of the job?The most rewarding part of this gig is hanging out with Cityline’s enthusiastic audience every weekday. I seriously love the women and men who come and visit us every day. They’re full of spirit, happy to be here and ready to party. And by now everyone knows, I like a good party. Trying to balance all of the responsibilities that come with the job can be a challenge with two young kids. And this is where I brag shamelessly about my thoughtful, supportive husband. Lio is the reason why I can host evening events, do photo shoots and attend company obligations. He makes it easy for me and for that I’m truly thankful.

What is your favourite piece of furniture/décor piece currently in your home?I’m in love with our chestnut brown sofa. It has a curved back

and can fit all four of us (me, husband and two kids) either sitting up or lying down. It’s so comfy and spit-up / juice resistant. It’s the best!

Is there a certain design style that you have seen on the show recently that you really love? I’m a real sucker for the combi-nation of comfy contemporary spaces that are put together on the show. I love seeing a mix of tradition (nail head, high back chairs, rich colours) with contem-porary design (graphic wallpaper, clean lines). Rooms that nail that combination never seem to go out of style.

1. Why do so? Determining why you wish to go back to school should be one of your first priorities. Is it because you want a new career or do you want to increase your skills in your current field? Establishing this will help create a specific long term goal that can be kept in mind and looked back to should you have any doubts.2. What are the costs? Researching and planning the financial costs of school is critical. If personal savings are not enough, financial aid in the form of grants, bursaries, student and private loans, or tuition funding programs from your current employer are available. Also do not forget to factor in additional costs, such as transportation, parking or day care, as they add up as well. 3. Do you have the time? Time is an important consideration, as most adults currently have a job and/or family that take up most of their schedules. Establishing time that can be put aside in order to incorporate classes and course work is important. Online classes and night classes can help with the time constraints you might have.4. What program is right for you? There are many programs at many schools that can advance your education, so picking the right one to advance yourself in a given industry can be tricky. Educational opportunities vary at each institution so make sure you look into the program outlines, their length and outcomes to ensure that you choose one that fits your situation based on the above questions. Going back to school may seem like a difficult process, but if you have the time and opportunity to do so, it is a smart move. Older air conditioners — both central and room — use 30–70% more

electricity than newer energy-efficient models, driving up peak demand and costing you more. Also, older units can corrode or rust, leading refrigerants to leak and cause environmental damage and pollution.

Bigger isn’T always BeTTerWindow and portable units are good for cooling small spaces. They cost a lot less than central AC, which cools the entire home. The size of the air conditioning unit you need depends on your home. Some HVAC contractors over-estimate their clients’ need to make sure their client has “plenty of cooling capacity.” Or sometimes they just want to sell whatever unit they have. The fact is, bigger is not bet-ter. An AC unit that’s too big is expensive, inefficient and will turn on and off more often. An undersized one won’t be able to

cool your home enough. So how do you choose the right one? When you decide to replace your air conditioner, make sure your HVAC contractor performs a load calculation to determine the proper unit size. It’s important they take into account total home air volume — not just square footage. The calculation also needs to consider local climate conditions, and conditions unique to the house — such as the number of south-facing windows. Are they checking ducts? Is enough cool air getting to every room? Is enough warm air getting back to the air conditioner? Are the ducts as air tight as possible? This might involve sealing ducts. If they go through the attic, they should be insulated.

in something called SEER — Seasonal Energy Efficiency Rating. The higher the number, the more energy efficient the unit is. Old units might have a SEER of 5. You want to go as high as you can — 16 or 18 is great.

savE EnERgyAir conditioners are one of the biggest consumers of energy in your home. Make sure it’s the most energy-efficient it can be. Even an efficient air conditioner will perform as badly as an inef-ficient one if it isn’t installed properly.

• Keep your blinds closed to avoid your AC from working harder.

• Close your windows and doors when the AC is on.

• Do laundry and run dishwash-ers — which create heat — in the evening when it’s cooler.

• Make sure the condensing unit of your central AC is in the shade.

• Keep the outdoor condensing unit clear of leaves and debris.

Make sure there is enough space around the outdoor unit to avoid airflow restriction through the coils. Keep landscaping away from the AC unit.

• Try to place the condenser in a place that won’t disturb you or your neighbours — they can be noisy.

• Use a programmable thermo-stat and set it to turn on your AC before you come home, so you’re saving energy while you’re at work during the day.

It’s both frustrating and disheartening to hear of dogs being left in cars on hot days, which causes them severe distress and even death. You would think that common sense would prevail when it comes to such an obvious no-no, but apparently not, because there have been a number

of reported incidences of dogs being left in hot cars around the GTA. So we must all work together to get the word out. You can never leave your pet in the car while you run an errand, shop or visit. Not even for a couple of minutes!

here are soMe tips on hoW to Keep yoUr doGs cool in the sUMMer:• Provide plenty of fresh water to keep them hydrated.• If your dog needs to be outdoors during the daytime, make sure it has a shady spot to rest in. Backyard kiddie pools are inexpensive and a joy for dogs, why not fill one up and let them splash around in it? (Supervised, of course.)• Walk your dog earlier in the morn-ing or in the evening. Keep your walks short and remember that dogs will keep going and going, and while they may seem happy and fine, they may not be. Learn the signs of heat exhaustion in dogs. And finally, be careful when walking your dog on hot pavement — it can burn their paws.• Cool water rubbed onto areas of your dog’s body helps to provide some relief, but there’s no better way than a good old swim in the lake to keep them cool all day. Vacation is a time to relax and enjoy yourself. You work hard all year, you

deserve to have a good time. The problem that most people have is that they indulge way too much and become a bit gluttonous. A good rule to follow is every day allow yourself one indulgence. This could be a dessert with dinner, pancakes with butter in the morning, or an afternoon pizza. Whatever it is that will satisfy you, choose one thing a day and stay on track for all other meals.

Before you leave for vacation mentally prepare yourself for exercise. Schedule the time you will be training and it will most likely get done. Most resorts and vacation spots have many activities that require exercise; choose one and have some fun with a loved one. If all else fails, bring a jump rope and running

shoes, take half an hour to get some cardio in. You won’t feel guilty if you still exercise and your vacation will be more enjoyable.

If you do find yourself in a diet tailspin, acknowledge it and get out. If one day on vacation you lose all control, start back over on your healthy regimen the next day. If you allow your diet tailspin to get out of control you will come back home with a weight gain. One day won’t kill you, but a week of it will make a big difference.

Life gets hectic and a vacation is much needed. Use the time to reboot, energize and relax. Follow these simple tips to stay healthy and avoid guilt. Happy travels to you all!

inGredientS1 small fennel bulb, trimmed of tops

and thinly sliced, about 2 cups¼ small green cabbage, thinly sliced

(about 2 cups)1 stalk celery, thinly sliced

(about ¾ cup)½ cup thinly sliced red onion1 green onion, thinly sliced1 green apple, thinly sliced and cut

into thin strips1 orange2 Tbsp Mastro Extra Virgin

Olive Oil2 Tbsp apple cider vinegar

inGredientS24 spears fresh asparagus,

(about 1½ lbs) Drizzle Mastro Extra Virgin Olive Oil (about 2–3 tsp) Drizzle Mastro Balsamic Vinegar (about 2–3 tsp) 2 cloves garlic, mincedFreshly ground black pepper to taste24 slices San Daniele Prosciutto

(approx. two 125 g packs)12 6-inch bamboo skewers, soaked in

cold water for 1 hour

directionS1. Trim the ends off of the asparagus spears. Place in a large bowl or pan and cover with cold water. Let

directionS1. In a large bowl combine the fennel, cabbage, celery, red onion, green onion and green apple. Set aside.2. Zest and juice the orange. You want about ½ cup of freshly squeezed

orange juice and about 1 tsp of zest. Add to fennel coleslaw mixture.3. Add olive oil, apple cider vinegar, tarragon, parsley, lemon juice, sugar and black pepper. Season to taste with kosher salt. Mix well and place in refrigerator for 1 hour. Mix at least once while chilling to allow the full flavours of the salad to combine.4. Remove from refrigerator and serve with grilled garlic bread and Mastro Cucina Italiana Italian Ribs.

stand for 1 hour. This will allow the asparagus to absorb a little moisture and stay crisp and moist when grilling2. Drain asparagus and drizzle with a little olive oil and balsamic vinegar. Add minced garlic and season to taste with freshly ground black pepper. Gently mix to evenly coat the asparagus.3. Lay a slice of prosciutto vertically (short end at the bottom) on a flat work surface. Place one seasoned asparagus spear across the middle of the pro-sciutto at the bottom end and roll up the asparagus tightly in the prosciutto. Repeat with remaining asparagus. 4. Line up four prosciutto-wrapped

asparagus spears. Skewer the four spears together with two skewers across. This will make it easier to grill the asparagus. Repeat until you have six skewers of four. 5. Preheat grill to medium high 450°–550° F.6. Cook asparagus until tender and prosciutto crisps, about 3–5 minutes per side.7. Remove from grill, drizzle with a little extra olive oil and balsamic vinegar and serve immediately with Mastro Cucina Italiana Italian Style Ribs.

Tip: for this recipe, use asparagus spears with a stalk that is about ½” thick.

Steak, trimmed, about ¾-inch (2 cm) thick

sauce:½ cup (125 mL) sodium-reduced beef

or chicken broth2 Tbsp (30 mL) EACH lemon juice,

hoisin sauce and packed brown sugar

1 Tbsp (15 mL) cornstarchstir-Fry:1 Tbsp (15 mL) vegetable oil1 EACH red, green and yellow sweet

peppers, seeded and thinly sliced2 cups (500 mL)broccoli florets

inGredientS4  lb (2 kg) Beef Oven or

Rotisserie Roast2  cups (500 mL) barbecue sauceChunky Chow-Chow Relish (recipe follows)

directionS1. Pierce roast all over with fork. Place in large sealable freezer bag with barbecue sauce; refrigerate for 8 to 12 hours. Discard marinade after use. (If using Premium Rotisserie/Oven Roasts marinate only for 1 to 2 hours or simply rub all over with some of the sauce).2. Place drip pan under grill; add ½ inch (1 cm) water to pan. Preheat barbecue to medium-

Let stand for 5 to 10 minutes.2. Sauce: Meanwhile combine broth, lemon juice, hoisin, brown sugar and cornstarch in small bowl; set aside. Remove beef from marinade and pat strips dry with paper towel (reserving marinade).3. Stir-Fry: Heat half the oil in 12-inch

high (400°F/200°C). To Cook with Rotisserie: Insert spit rod lengthwise through centre of roast; secure with holding forks and place over drip pan. To Cook without Rotisserie: Place roast on grill over drip pan that is moved to one side; turn heat under just the roast.3. Insert meat thermometer into middle of roast, avoiding spit rod (if using). Cook at constant heat in closed barbecue until thermometer reads 140°F (60°C) for medium-rare, about 40 to 50 minutes per kg (20 to 25 minutes per lb). Transfer to cutting board; cover with foil and let stand for up to 30 minutes. Carve into thin slices to serve.

Serves 4 • Preparation Time: 20 min. • Marinating Time: 5 min. • Cook Time: 10 min.

chunky chow-chow reliSh Cook 2 cups (500 mL) EACH cauliflower florets and coarsely chopped carrots in pot of boiling salted water until tender, about 4 minutes. Drain well; place in bowl. Stir in 1 sweet green pepper (coarsely chopped), ½ cup (125 mL) EACH chopped red onion and barbecue sauce, 2 Tbsp (30 mL) EACH vinegar and minced fresh parsley and 1 tsp (5 mL) prepared hot mustard. Cover and refrigerate for up to 1 week. Makes 4 cups (1 L).

Yields 16 Servings • Cooking Time: 8 Hours

(30 cm) non-stick pan over medium-high heat until sizzling. Scatter half the beef strips into pan; cook for 1 to 2 minutes or until browned but still pink inside. Return beef to bowl with marinade; set aside. Repeat with remaining beef.4. Heat remaining oil in pan over medium high heat. Add peppers and broccoli; stir-fry for 2 minutes. Add a splash of water; cover and cook until tender-crisp, about 2 minutes. Push veggies to side of pan to clear the centre; add ginger root and garlic to clearing and cook until just fragrant, 15 to 20 seconds. Add sauce, meat and reserved marinade; toss together and heat through until bubbling and sauce thickens slightly. Serve topped with almonds (if desired).

jalapeño pepper 1 Tbsp (15 mL) fresh cilantro,

chopped½ tsp (2 mL) ground cumin 2 Tbsp (25 mL) fresh lime juice Salt and pepper to taste

Chops: 4 boneless Ontario Pork chops

(1 in / 2.5 cm thick) 3 Tbsp (50 mL) lime or lemon

juice 1 Tbsp (15 mL) vegetable oil1 tsp (mL) ground cumin ½ tsp ground black pepper¼ tsp (1 mL) cayenne

inGredientS1 lb (500 g) Ontario Pork cubes

(loin, leg or shoulder) 6 Tbsp (75 mL) maple syrup 3 Tbsp (50 mL) each olive oil

and balsamic vinegar 2 shallots, thinly sliced3 cloves garlic, minced4 bay leaves, in small pieces 1 Tsp (5 mL) each dried sage

and ground black pepperSalt, to taste 1 zucchini, cut into 8 chunks 1 red pepper, cut in chunks 8 fresh pineapple chunks

directionS Salsa: Mix together first six ingredients. Let sit 20-30 minutes before serving with pork chops. Can be made the previous day if refrigerated. Chops: Place in a single layer in shallow glass dish. Stir together lime or lemon juice, oil, cumin, cayenne and black pepper. Pour over chops; cover and marinate 30 minutes at room temperature or up to 6 hours in refrigerator. Reserving marinade, place chops on grill over medium heat. Cook about 5-6 minutes per side*, brushing often with marinade. *If chops are thinner, reduce cooking time.

directionS Place Pork cubes in a large plastic bag or in sealable container. Combine ¼ cup (50 mL) maple syrup, 2 Tbsp (25 mL) each olive oil and balsamic vinegar, plus shallots, garlic, bay leaves, sage, pepper and salt; mix well and pour over cubes. Close bag or container and marinate in the refrigerator, turning cubes occasionally, a minimum of 6 hours to a maximum of 24 hours. Drain cubes, discarding marinade.

Yield: Serves 4 • Cooking Time: 10 to 12 minutes • Preparation Time: 30 minutes  

Thread cubes on metal or on wooden skewers which have been pre-soaked in water for 1 hour alternating with zucchini, red pepper and pineapple chunks. Preheat barbecue on high; reduce temperature to medium. Place kebabs on grill; close barbecue cover and grill 10 to 12 minutes, turning often and basting with a mixture of 2 Tbsp (25 mL) maple syrup, and 1 tablespoon (15 mL) each olive oil and balsamic vinegar.

Yield: serves 4 • Cooking Time: 10 min • Preparation Time: 20 min

If you’re a fan of chocolate fondue, you are sure to love this classy peach conserve. With a hint ofchocolate liqueur, this softer set jam makes a wonderful topping for ice cream and crêpes…it tastes justlike chocolate fondue!

4 cups (1000 ml) finely chopped or crushed peaches, about 3 lb (1.5 kg)5 -1/2 cups (1375 ml) granulated sugar 4 tbsp lemon juice1 pouch (85 ml) BERNARDIN® Liquid Pectin1/3 cup (75 ml) chocolate liqueur

Peach Fondue

• Place 7 clean 250 ml mason jars on a rack in a boiling water canner; cover jars with water and heat to asimmer (180°F/82°C). Set screw bands aside. Heat SNAP LID® sealing discs in hot water, not boiling(180°F/82°C). Keep jars and sealing discs hot until ready to use.

• Blanch, peel, pit and finely chop or crush peaches, one layer at a time. Measure 4 cups (1000 ml).• In a large, deep stainless steel saucepan, combine prepared peaches, lemon juice, all of the sugar and 1/2

tsp (2 ml) butter or margarine (to reduce foaming). Over high heat, bring mixture to a full rolling boil thatcannot be stirred down. Add chocolate liqueur and liquid pectin, squeezing entire contents from pectinpouch. Return to boil; boil hard 1 minute, stirring constantly. Remove from heat and skim off foam.

• Quickly ladle hot jam into a hot jar to within 1/4 inch (0.5 cm) of top rim (headspace). Using nonmetallicutensil, remove air bubbles and adjust headspace, if required, by adding more jam. Wipe jar rim removingany food residue. Centre hot sealing disc on clean jar rim. Screw band down until resistance is met, thenincrease to fingertip tight. Return filled jar to rack in canner. Repeat for remaining jam.

Peach Fondue

• Place 7 clean 250 ml mason jars on a rack in a boiling water canner; cover jars with water and heat to asimmer (180°F/82°C). Set screw bands aside. Heat SNAP LID® sealing discs in hot water, not boiling(180°F/82°C). Keep jars and sealing discs hot until ready to use.

• Blanch, peel, pit and finely chop or crush peaches, one layer at a time. Measure 4 cups (1000 ml).• In a large, deep stainless steel saucepan, combine prepared peaches, lemon juice, all of the sugar and 1/2

tsp (2 ml) butter or margarine (to reduce foaming). Over high heat, bring mixture to a full rolling boil thatcannot be stirred down. Add chocolate liqueur and liquid pectin, squeezing entire contents from pectinpouch. Return to boil; boil hard 1 minute, stirring constantly. Remove from heat and skim off foam.

• Quickly ladle hot jam into a hot jar to within 1/4 inch (0.5 cm) of top rim (headspace). Using nonmetallicutensil, remove air bubbles and adjust headspace, if required, by adding more jam. Wipe jar rim removingany food residue. Centre hot sealing disc on clean jar rim. Screw band down until resistance is met, thenincrease to fingertip tight. Return filled jar to rack in canner. Repeat for remaining jam.

tequila is a spirit made from the blue agave plant, primarily in the area surrounding the city of tequila, 65 kilometres northwest of Guadalajara, and in the highlands (Los altos) of the western Mexican state of Jalisco.

diFFerent tyPes oF tequila:Blanco (White) / Plata (Silver) Clear, unaged tequila that is normally bottled right after being distilled. Most platas pass directly to the bottling plant, however, some producers allow the tequila to settle and finish for a few weeks in the tanks before bottling.

Joven (Young) / oro (Gold)These tequilas are often called suave, joven, gold, or abocado, implying youth and smoothness. They can be made from 100% agave but are normally made with 51% mixed tequila. The blending of silver tequila with aged or extra-aged tequila is considered gold or joven tequila.

extra añejo (Extra Aged)Extra Añejo tequila has been aged for a period of at least three years, without specifying the aging time in the label, in direct contact with the wood of oak (holm or holm oak) or Encino oak containers with a maximum capacity of 600 liters. Its commercial alcohol content must be adjusted by dilution water.

reposado (Rested)Reposado or “rested” mandates that the tequila remain in wood for a period of two months but no longer than 12 months. This is a requirement of the Mexican government. Each distillery has its own preference for the type of barrel used in aging; some of the most common are made from french oak or white oak. The type of barrel used and the resins and tannins exuded have a dramatic impact on the finished product and produce the subtle nuances that distinguish one tequila from another.

añejo (Aged)Añejo, which means “vintage”, can only appear on bottles that contain tequila aged in oak barrels having a maximum capacity of 600 liters, in a minimum of one year. A year of resting in a cool bodega produces a smoother and more sophisticated taste. American whiskey barrels, french oak casks, or cognac barrels, are commonly used to age this tequila. Añejos are typically aged between 1 and 3 years. They are darker in color, more complex in flavor, and smoother than reposado tequilas.
