Transcript of one’s that recalls the bar’s previous life as a reading ... · Bette Davis WHITE NV £19Laurent...
How long does it take, that subtle change from a bar to the
bar and finally to my bar? In our experience, it can be very
little time at all. Of course, important things have to be in
place. The relaxed murmur of activity that never intrudes into
one’s thoughts. The atmosphere of warmth and discretion
that recalls the bar’s previous life as a reading room. The
impression that this Mayfair retreat is a bastion of Britishness
which exhibits its eccentricities with pride. The sense of
being steeped in the stories of patrons past and present, in
whose illustrious company you now reside.
At the Coburg Bar everything feels gloriously right.
But as any bon viveur knows, the soul of a bar is in its drinks.
Why they pass muster? Thankfully our staff are in possession
of knowledge and skills as deep and comfortable as the
chairs in which you relax. While being expertly guided
through your tastes and desires towards something perfectly
personal and bespoke, even the most exacting connoisseur
will experience the seductive sense that discoveries are
here to be made. Everything is indeed in its rightful place,
including you. It is no longer simply a bar; it is your bar.
So now nothing needs to be done, because it is time to
linger and enjoy. Will you be staying for another?

GONZALEZ BYASS VINTAGE SHERRY
This exclusive list of rare, limited-release vintage Palo Cortado and
Oloroso sherries originates from the Gonzalez Byass bodegas in
Jerez, and was selected by Gonzalez Byass Master Wine Blender
Antonio Flores Pedregosa by request of our Coburg Bar Manager.
Traditionally sherry is a blend of wine from different harvests aged
in the Solera system. However, each year Gonzalez Byass retains
a small number of specially selected sherry butts and ages them
as individual vintages, in casks of American oak. For the first time,
in recent history, Gonzalez Byass has bottled six vintages at once
- some re-releases and others introduced for the first time - to
create this unique list for The Coburg Bar

rebellious colonial Americans which declared it a sovereign state
and called themselves “citizens.” They still do today.
Cognac, dark rum, peach brandy, sugar, lemon juice
1830s SHERRY COBBLER £18
The Cobbler is an old form of mixed drink that dates from at
least the 1830s, and interestingly enough, is often cited for
heralding in the paper straw which wasn’t patented until 1888.
Prior to that straw were just that, “straw”, usually rye or even
hollow pasta
Amontillado & Fino sherry, orange & lemon peels, sugar, orange
& lemon juice
1850s BRANDY CRUSTA £18
The invention of the Brandy Crusta is accredited to a Joseph
Santini in New Orleans during the 1840’s or 1850’s.
It was one of the early attempts to work out the ways that
spirits, citrus and sweeteners could combine to a delicious end.
It stands in that middle ground between the original cocktail and
the sour, a sort of “proto-sour.”
Cognac, maraschino, Cointreau, lemon juice, Angostura bitters
1880s TUXEDO £18
The origins of the gentleman’s black tie dinner dress dates from
1860s when Henry Pool & Co. of London’s Savile Row made a
short smoking jacket for the Prince of Wales (later Edward VII) as
an informal alternative to white tie dress.
The origins of the drinks are more obscure and it is what Jerry
Thomas might have called a “fancy martini”.
Old Tom gin, dry vermouth, maraschino, orange bitters, served
in an absinthe-rinsed glass
1890s MORNING GLORY FIZZ £18
A tale of neglect and abuse, rehabilitation and redemption, a
soothing brunch beverage to shake the morning cobwebs.
First appeared in the book by the second most famous
bartender of the 1800s (after Jerry “The Professor” Thomas),
Harry Johnson, in his ‘Bartender’s manual’
Whisky, lemon juice, sugar, absinthe, egg white, soda
WIDOW’S KISS £18
“As the scene opens, you are up in your grandmother’s attic
opening the dusty steamer trunk she brought from Europe in
1914. You reverently turn back layer upon layer of old lace and
brocade … unveiling a packet of old love letters tied in silk
ribbon. Ancient dried rose petals flutter down from between the
envelopes.
This is what the Widow’s Kiss is like. Sweet, complex and darkly
golden, thought-provoking and introspective” Calvados,
Benedictine, Chartreause, orange bitters
1910s PENDENNIS CLUB £18
Named after the historic gentleman’s club established in 1881 in
Louisville, Kentucky, which is also often – wrongly – referred to
as the birthplace of the Old Fashioned.
A social club with a long history that is still going strong today,
just like this fabulous drink!
Gin, apricot liqueur, lime juice, Peychaud bitters
1920s BLOOD & SAND £18
The recipe officially appears for the first time in the ‘Savoy
Cocktail Book’ although it is thought to be created for the
premiere of the same named 1922 Rudolph Valentino’s
bullfighter movie.
Scotch whisky, sweet vermouth, cherry liqueur, fresh orange
juice
1930s TOREADOR £18
This twist on a Margarita was first published by J.W.Tarling in his
1937’s ‘Café Royal Cocktail Book’ 16 years before the first
written reference to a Margarita.
Interesting enough, he also listed another drink called Picador
which is identical to the later Margarita.
Tequila, apricot liqueur, lime juice , served in a cacao-rimmed
glass
20
th CENTURY £18
Credited to C. A. Tuck this cocktail was named in honour of the
Twentieth Centry Limited train that ran between New York and
Chicago from 1902 until 1967. It was often called the "most
famous train in the world," making the trip in twenty hours
(which in the 30's was cut to sixteen) - four hours faster than any
previous attempt.
Gin, Americano Cocchi, crème de cacao, lemon juice
DEATH IN THE AFTERNOON £19
In 1932 Ernest Hemingway published a book about the customs
of Spanish bullfighting; he called it “Death in the Afternoon” and
gave the same name to the cocktail he invented for the 1935
‘So Red the Nose, or Breath in the Afternoon’, a collection
cocktails recipes by famous authors.
Absinthe, champagne
1940s AIR MAIL £19
As to the precise origins of this drink we cannot say. It simply
turns up, as if by spontaneous generation, in the 1949 Esquire’s
‘Handbook for Hosts’ named after when, way back, airmail was
the last word in getting something from point A to point B. And
in fact, this one will do just that to you, but quicker.
Dark rum, honey water, lemon juice, orange juice, champagne
1940s BEE’S KNEES £18
The Roaring Twenties, the Jazz Age, is the era that saw the birth
of this drink. The addition of ingredients such as citrus and
honey were often used to cover the less than ideal
smell and taste of bathtub gin during what F. Scott Fitzgerald
would later describe as ‘The greatest, gaudiest spree in history’.
First time printed on David Embury 1948 ‘The Fine Art of Mixing
Drinks’.
Gin, fresh lemon juice, honey water
1970s PAINKILLER £18
Created at the six-seat Soggy Dollar Bar at White Bay (there was
no dock in the 70s, so the usual way in was to swim and, of
course, your dollars would get wet) on the island of Jost Van
Dyke in the British Virgin Islands.
Dark rum, fresh pineapple, orange juice, coconut cream, nutmeg
1980s RUSSIAN SPRING PUNCH £19
Fabricated from the volcanic mind of Dick Bradsell, sometimes
during the 1980s, for the house warming of Peter Kent and
Hamish Bowles. As Dick himself remembered the party: “It was
lethal, that thing. We had people falling down the stairs and
dancing around in wild abandon”.
Vodka, crème de cassis, raspberry liqueur, lemon juice, fresh
berries, champagne
1990s JASMINE COCKTAIL £18
Invented at the Townhouse Bar in Emeryville, California, by Paul
Harrington and promoted by its inclusion in his 1998 book
‘Cocktail: The Drinks Bible for the 21st Century’ which instantly
turned it into a modern classic.
Gin, Campari, Cointreau, lemon juice
1990s PALOMA £18
One of the most refreshing cocktails, combining the savoury
and zesty ingredients indicative of Mexican cuisine: La Paloma

HINE VINTAGES
1914 HINE VINTAGE £1500
Jarnac matured
An exceptional year! Known as the “Ladies Vintage”. Aged in
casks until 1958, when it reached its peak maturity, this
particular parcel was then stored in glass demijohns to be
bottled in 1987.
Subtle perfumes of flower and undergrowth give this a rich and
aromatic bouquet. Its roundness and plenitude are remarkable.
1975 HINE VINTAGE £110
Jarnac matured
This very powerful Vintage is dominated by tannins and spices.
On the palate, the volume and persistence confirm the first
impressions on the nose. A very masculine cognac
LOUIS XIII DE RÉMY MARTIN COLLECTION
LOUIS XIII £240
A truly stunning Cognac, blended from around 1,200 different eaux-de-vie aged from
40 to more than 100 years old coming from the Grande Champagne appellation, the
most prestigious region in Cognac.
Fig, prune, pastry dough, honey and maple scents. Offers long and intensely woody
flavours, but also dried apricot and vanilla. Finishes elegantly, warm, smooth and
more oaky than fruity succulent.
LOUIS XIII BLACK PEARL £1300
This is a single 100 year tiercon, released by the Hériard Dubreuil’s family Private
Reserve.
Aromas of vanilla, cream, spiced flowers, and fruit precede a palate that blends
flavours of passion fruit, ginger, nutmeg, and sandalwood
LOUIS XIII RARE CASK (CASK 42.6) £1600
Aged for over 100 years in a single Limousin tierçon, Rare Cask is the ultimate
expression of Louis XIII Grande Champagne Cognac. What sets a Rare Cask apart is
the quite astonishing richness and intensity of its flavours.
The nose opens with intensity: a bouquet of wild mushrooms, lifted autumn
underwood notes, followed in turn by a sparkling display of full, spicy tones. The
palate is marked by dense notes of mushroom and bold tones of candied fruit,
gingerbread, wax, nuts and fresh mint. You can almost taste the stone walls of the
cellars.
The length is rendered as nectar, with a presence and density in the mouth that
seems to know no limit.
