• The preservation of coffee can make a hugeimpact on the taste, once open be sure to keepthe pack tightly closed and do not leave coffee beansin the grinder for long periods of time.• Every now and then, before dosing the blend from the grinder, flow water intothe empty filter, pretending to make a coffee, in order to keep the outlet pipesfree and clean.• Never keep the dosser of the grinder over half full with ground coffee. Grinding the coffee in smaller quantities and more often results in a better finalresult! • Keep the cups heating, not boiling hot on the cup warmer on the top of themachine• Press the pump button in no less than 20 seconds and no more than 30 toobtain between 25 and 35ml of espresso coffee with an intense long lastingcompact ‘crema’ • Remember to fully clean the machine every day using the supplied cleaningproducts

Every year thefamily of Nathan

Layton do a charity eventafter his death in South Africa. Hewent over there to work in one ofthe National Parks and was bittenby a Black Mamba snake and died.This year Manager Gary Raynerdecided to have a pub footballteam which comprised of DeputyManager Jamie Watson, Nathan'sDad Rob and some of theother regulars.

Gary says… “Asyou can see fromthe photos it was alovely day. Wedidn't winunfortunately buttaking part washumbling enough. The refereewas one of our regulars and hedecided to wear a gorilla onesiefor the day as the money raisedwas going to the National Parkwhere Nathan worked. My wife,Karen, as a joke, said she wouldsponsor him £100 if he wore amankini. Geo got a mankini andthe challenge was on to raise moremoney by sponsoring him to wearit. In total £1170 has been raised andwill be going to rhino conservationat the Park. Nathan's mum, Ann,has already contacted the NationalPark and they are very grateful forall the donations people havemade for this great cause.Everyone came back to The CockInn after where we had a discoand once it was dark the family litlanterns and let them go - very

The winners of our Christmas sales incentive,Orchid top 10 performers, went on an

amazing trip to Vegas to celebrate their rewardfor those great sales from last December!

What happens in Vegas, stays in Vegas ......so the old saying goes.Well, sorry folks, but I’ve got to let the side down.I went,I saw,I’m gonna tell.Thursday June 13th - a three day trip for the winners of lastyear’s “Viva Las Vegas” Christmas incentive.We were welcomed by Rufus in the bar at Gatwick withchampagne and that set the mood for the remainder of the trip.24 of us clambered aboard our Virgin plane for our 10 hour flightand boy, was it worth every hour on that plane when we finallyarrived in the desert that is now more neon than sand. Las Vegas(which literally means “the fields” )is a city in the desert. Thescale of the place is overwhelming. Under brilliant azure blueskies and 100 degree heat we checked into the MGM Grand Hotel- all 5000 rooms and 10 pools.Three nights entertainment Vegas style awaited us...On the first night, fighting off extreme jet lag but bedazzled bythe lights and 130 TV screens we ate superb sliders (mini burgers)and ribs at the Sporting House Bar and Grill, at the New York,New York Hotel and yes, it was 2am UK time! We listened withamazement as Craig Tribus, Operations Director for the company,let us in on how they run the place and some hardy guests evenventured into their kitchen!

We all took advantage of the free time throughout the day, usefulfor those in the party who as the song Viva Las Vegas says:“Turning day into night time, turning night into day time, if yousee it once, you'll never be the sameagain”

5am Vegas time and still drinking beer?? You know who you are! The following night we carried on the Orchid tradition of dining atRuths’ Chris Steakhouse whilst in the US of A. The service standardshere were superb and we were made to feel so welcome. The staffare very passionate about their food and looking after theircustomers - just like in ‘O’ land. The room actually fell silent whenthe steaks arrived - the smell was so delicious. There are no clocks in Vegas! Just as well as one of our partycouples discovered after an hour or two on the casino floor turnedinto, hmmm, maybe 7 or 8 hours. Yes, stand up Jayne and Milesfrom the Woodpecker in Waterlooville. Our last night was a Vegas dinner show experience - Tony n Tina’sWedding. Where else do you get invited to an Italian-Americanwedding and have the bride’s gay brother serenade you, thepregnant bridesmaid crying into her salad next to you on the table,the Catholic priest surreptiously swigging at the whiskey bottle andthe ex-stripper picking a fight with her new husband’s first wife?And all the while there’s a smiling guy from the UK happilyintroducing himself to the wedding party and really getting into thespirit of things. Yes, the man who can source anything - even 26orchid buttonholes for us all to wear at the “wedding” - DavidCampbell!

One of the highlights for me was the Duelling Piano Bar. Twoclassically trained virtuoso pianists, facing each other at grandpianos, accompanied by Julie from the Nutwell Lodge in Exeterdancing with sheer joy along with 20 “Orchid” guests singing alongand playing air guitar. Class!

We had Vegas Virgins on the trip, USA First-timers and SeasonedTravellers but we all found something to do or see that was unique.Gondola rides, rollercoasters, mega-buffets, pool parties, Deal orNo Deal slot machines, shooting ranges, the Hoover Dam, discountdesigner shopping - the list is endless.However, we came away with a sense of a wonderful experience -no, not just for the sights, but the chance to enjoy it all together,make new friends and, as you have to in Vegas, PAAAARTAAAY!

Look who’s famous…A stunning beer garden has got the pub some local pressfrom the Crawley Observer, being voted the No.1 place tobe this summer in the neighbourhood! A few weeks later…they did it again! They had a photo call with them topresent St. Catherine’s Hospice with the £1000 they raised!Visions & decisions! Managers Tania & Mark have shot the Frogshole Farm upthe dashboard with a clear vision and thorough strategysince they took over in October 2012. It all came down tothe importance of the image of the pub and they went backto basics ensuring that the food was good, the service wassmiley and the customers were happy! Now, the pubmaintains its image of a comforting local yet the excellentfood and service make it the place worth travelling to. Theyhave reached customers from different towns by word ofmouth advertising and by simply making sure everycustomer leaves happy with only good things to say aboutthe pub.

Their Head Chef Peter joined the teamin November 2012, brining 20 yearsexperience including winning aRosette and awarded Best BusinessLunch in Sussex. Peter has transformed the FrogsholeFarm kitchen and our customerstell us the food is amazing! Proof'sin the pudding - food sales were21% like-for-like growth in May!

A bit of a History lesson…Located in the Kentish country side, this hidden charm is abeautiful pub…The pub’s name used to be the Sir Geoffrey Amherst, as itwas his hunting lodge where he would like to relax frombeing a Field Marshall for the British army. He became asoldier at 14 and saw fame for his part in the ‘seven year war’in the North America Campaign. He was the first to approvebiological warfare after becoming Governor of Virginia,spreading smallpox amongst the Native Americans bydistributing blankets to them during the Pontiac Uprising.

Decisions & Hard WorkIt was the easiest decision we, (Steve and I) had made. We were running ourown nightclub in Peterborough when we were offered train tickets to visitEastbourne and ‘check out’ The Buccaneer. We spent, literally, 20 minslooking round and started walking back to the train station, when I noticedSteve on the phone saying that we would love to run the pub!Steve and I had been partners for 20 yrs, our lease, in Peterborough had sixmonths to run, so for the first time we were parted for what seemed likeyears instead of months. Six months after Steve moved in I followed with thedogs and furniture. We are firm believers that if you don’t want to godownstairs, to the bar, in the mornings, you are wasting your time. A ‘shine’ was agreed fordownstairs and we were off. Of course, like all new things we had some ‘cleaning’ to do withstaff, customer service and what we were going to offer in the way of entertainment.

Show BizThe Buccaneer is situated, close to the beach with only one other pub forcompetition. Its main customer base is from the 3 theatres and a museum. Thismeans that we are lucky enough to have different customers every day andevening. These can range from opera lovers to comedy night fans, to Gilbert andSullivan singers. Many names from stage, screen and TV have visited the bar,from the West End and Broadway to Hollywood and TV. It never fails to amuse mewhen customers arrive to find such people as ‘The Monkees’ singing on karaoke,or Stephanie Powers pulling pints behind the bar. Hilarity ensued when the 3stars of ‘Birds of a Feather’ almost took over while the staff stood back. We tiedin with a lot of musicians; this led to our ‘BIG BAND’ night launch with 26musicians at the top of the bar slamming out swing, and a monthly Sunday jazzsession. We now hold ‘cast parties’, where Rock & Roll bingo is always good tokeep the tills ringing. I won’t mention the nuns from ‘Sister Act’, what happensin the Buccaneer – stays in the Buccaneer, Rufus would agree I am sure!!!

Charity WorkWe have always been dog lovers and keep a supply of dog treatsfor our canine visitors. We try to stay with one charity, ‘CaninePartners’, I am proud to announce that over 4 years we havehelped raise £26k and intend to continue raising for them. The castof Evita were so taken when they saw these dogs being trained inthe bar that they raised £850 on their closing night!

The Orchid FactorWe never get bored, we are very lucky to say that we are more than happy where we are. We have gone from strengthto strength, our Assistant Manager even won a Halo award for customer service, Trip Advisor have granted us acertificate and, after 4 years we are now seeing holiday makers returning to us every year, not only for tennis,Airborne or the Bonfire society, but because they like the place as much as we do.

WHAT’S HOT IN SOCIAL MEDIA –

orchidbook#facebook Yes people, the time has come… Facebook hasintroduced hashtags!

When you click on a hashtag anywhere onFacebook — on your newsfeed, on a Facebookpage, on a friend’s profile, etc. — a lightboxwill appear featuring the people and pageswho have used the same hashtag in reversechronological order.

Emphasis willbe placed onpeople andpages the useris alreadyconnected to,but they willalso be able

to see mentionsfrom people and pages outside their

network. This means that you’ll have anotheropportunity to get found by a wider audiencewho hasn’t already “liked” your page, which isgreat news!

Use hashtags like a tagging system oncontent you share on your Facebook page.Simply type the #hashtag anywhere in your

Facebook update.

#toptips • create hashtags for events. if you’repromoting an event, create a uniquehashtag, and encourage your Facebookfans to use the hashtag when referring tothe event.

• Hashtags are broken by punctuationand spaces. say you want to hashtag ‘world’s toppubs’. write it like this: #worldstoppubs and not like this: #world’s top pubs.

• Keep hashtags short and simple. #longhashtagscanbereallyhardtoreadandunderstand so make sure that yours are short...quickly recognised, and likely to besearched.

• Don’t use hashtags that aren’trelevant. if you’re just tacking a hashtag to the endof your post, and it has nothing to dowith your post, that’s spamming.

• Create unique hashtags. if you’re creating a completely newhashtag, do some searches first to makesure it doesn’t already exist.

Another successful socialmedia workshop was held on the 18th June in London!

A few things we covered in the workshopwere… how to market your pub effectivelyusing your Facebook page, coming up withquality content and status updates, we sharedideas on what makes the perfect Facebookpage and we discussed how Twitter comes intothe equation when marketing your pub online.

OMG!Ingredients • 50g butter• 2 tsp cocoa powder, to dust • 50g good quality bitter chocolate (minimum 70%cocoa solids), in pieces • 1 egg • 1 egg yolk • 60g caster sugar • 2 tbsp Tia Maria liqueur• 50g plain flour, sifted• Chocolate powder to garnish

Method:Preheat oven to 140°C/Gas 3. Grease two large ramekins (about 9cm in

diameter), and dust generously with cocoa, shaking out any excess.

Melt the chocolate and butter together and stir until smooth. Allow to cool

for 10 minutes. Whisk the whole egg, egg yolk and sugar together until

pale and thick, and incorporate the chocolate mixture. Fold in the liqueur,

and the flour. Divide the chocolate mixture between the ramekins and bake

for 30 minutes. Turn the chocolate fondants out on to warmed plates. To

serve dust with chocolate powder.

Arctic SummerIngredients • 25ml apricot Brandy• 25ml Beefeater Gin• 12.5ml Grenadine• 1 bottle of bitter lemon

Method:Add the ingredients together apartfrom the bitter lemon andgrenadine, serve in a highball glasswith ice, add bitter lemon then thegrenadine, top with slice of lemon.
