Editors Note: The following transcript is from the 41st Great Pepper’s Meeting address by CASI President Kris Hudspeth: Wow, it’s so good to see each and every one of you. It has been far too long since we have been able to get out and be with each other.

Thank you for being here this weekend and making the trip to Gonzales.

2020 has been a year that we will remember for the rest of our lives, and thankfully this year is close to being over. If I had been warned that 2020 would drastically affect the CASI organization, shut down 3/4 of our yearly events, and cause the cancellation of TICC, I would have laughed it off and said that will never happen. Before I go any further, I need to thank the 10 people sitting up here at the front of this room. Never in the history of CASI has a Board of Directors had to face these challenges. You have answered the call by making tough, responsible decisions that have positioned us for the 2020-2021 chili year.

Coming out of another successful TICC, we were looking forward to another fun and exciting year. At the January Board meeting, we started the long process of planning for the 54th TICC, setting budgets for our year, and discussing what challenges we might be facing. Admittedly, none of us had World Wide Pandemic on our BINGO cards. When February came around, we were all feeling good, especially with the great results to the membership promotion that we ran for National Chili Day. Then came March…

Y’all, I cant speak for the rest of the Board, but two weeks into March started the most stressful time of my life on this Board. No sleep, constant worrying, irritable, short tempered, you name it, I had it. Keith and I have developed a very close relationship during our time on the Board, but we have spent more time communicating with each

other since March than we do with Michael or Shelley. Not all of these conversations were pretty, and a lot of times it was one of us venting to the other, and trying to keep up the other one’s spirits.

There was no playbook, no precedence, no history, no nothing, and very little chance to be proactive. We were in the blind, and trying to figure out what to do, what was best, and how do we remain composed and do what is best for the organization. I felt the weight of every ounce of this great and storied organization sitting squarely on my shoulders, with one thought on my mind everyday; don’t F this up! Don’t fail this organization, don’t let it fall, position it to survive this year and start 2021 in a position of strength. Growing up at the knee of CASI Pioneers, the Grandson of two TICC Champions, and the son of a Past Executive Director, I could feel the pressure, every damn day.

The biggest piece of advice that I would carry into each day and each decision, was given to me by Ted Fichtl at the GPM in Virginia, When you make a decision, it is always better to be WISE, than it is to be RIGHT. Every single conference call, email, discussion, and vote was agonized over. Did we make the wise decision, are we doing what is best for CASI, are we doing right by the members and the Great Peppers? The short term answer, is YES. Your Board of Directors did a phenomenal job of handling this situation as it continued to unfold, with the information that we had at the time. As far as the long term answer on how we have positioned CASI for the future, that will be for time to tell. We have weathered this storm together, and given future leaders of CASI a precedence that they can look back to, in the event we ever have to navigate these waters again.

For me personally, losing TICC was the piece that hurt the most. I was holding on to the hope that things would rebound and we would all get to meet at the Ranch, and celebrate the return to normal. When Brewster County made the decision to not issue permits, it hurt DEEP. I hurt because I absolutely love the grandeur, pageantry, and tradition of the week we are on the Ranch, but I

more so hurt for our members that have made the pilgrimage to the Ranch for so many consecutive years, and the community that has so badly been affected financially. However, I understand the perspective that Judge Cano and the Commissioners Court have. This community is very isolated with limited medical resources. They have also had a higher concentration, per capita of the virus than other areas. They do not need us coming in, in large numbers from larger cities and potentially causing a larger uptick in numbers. We do not need to make a bad situation worse. Keep in mind that any activity that happens at the CASI Ranch on “our week” will be judged by the community. Like my mother drilled into my head, your actions and decisions have consequences. Those consequence can be positive or negative, be sure you are willing

to accept those consequences, no matter which one it is!

Last year in Arlington, I challenged each Great Pepper to fight for this organization, and push to Keep CASI Great. During this pandemic, I have seen a great push to be creative and thinking outside of the box to make sure that CASI is able to continue making a positive difference in the lives of others. This is what makes CASI unique, and our membership so special. You have not stopped fighting to be a light in this world. We will continue to face challenges as an organization. As long as we continue to have members willing to keep persevering and fighting when faced with adversity, CASI will continue to make a positive difference in peoples lives through every pot of chili cooked. The recent announcement from CASI, to temporarily adjust the “Qualification on Points” structure resulting from the effects of Covid-19 brings some exciting news with it. Your TallyMaster and IT Team have been busy behind the scenes to easily deploy the qualification of cooks and show teams meeting the new 6-4-3 point requirement.

This process of retroactively qualifying those from cookoffs held in the 2019-2020 chili year was completed for the June issue. Please join me in congratulating all those who are now qualified for TICC 2020.

charities. CASI’s National Scholarship Program has given over $560,000 in scholarships to high school students.

Looking at the decline in the projected number of cooks, due to the uncertainty of the upcoming chili year, projected limited opportunities for cookoffs and the fact that TICC was canceled, it will help with cooks’ qualifications for the 2021 TICC.

Cooking chili in the age of CO-VID-19 has been a challenge. It has required us to be creative and resourceful. Not really a bad thing. We have developed some alternate judging methods that continue to be refined. To date though, I have not heard of any method that is better or quicker than our normal judging process. So make no mis-take, until we can safely have un-masked judges sitting shoulder to shoulder, we will continue to refine and improve our alternate methods.

It seems that the larger cookoffs have been the biggest victims of the pull-back on cooking. The smaller cookoffs can exist without public, but the larger events need that revenue, and a very large area for judging.

A novel idea for a drive-thru peoples choice judging was sug-gested to me. It would require the right logistics to carry off, but is intriguing.

The lack of activity has required the Senior Referee’s office to be creative as well, both in what to babble about, and how to improve our processes. A few years ago, there was an initiative to complete-ly automate the cookoff registration to submission of results process. The project was scuttled, but the idea remains. Because I can; I have come up with a step in that direction. Because there is some

specialized software and logistics involved, it is not for everyone, but some people might want to give it a try.

What it is? The three CASI forms that are submitted to the Tally-Master exist as fillable form PDF files. The forms sent to the coo-koff promoter are not fillable. The fillable forms are available on the CASI website, or you could ask the Events Coordinator to send them to you. However, they are still three individual files. I thought it would be convenient to have them all in one file. The problem, I found, is that when you combine the forms in one file, the form field names are unique throughout the file, so information entered on one line appears on all lines that have that field name. That may not be where you want it.

How does it work? It all starts with the entrants list. The file that has been developed has two en-trants list pages (32 cooks max), the showmanship entrants list, and the results sheet page. The entrants are entered onto the entrants list, and are numbered 1-32. I have a page three and four that can be added to the file. The next step is completing the show entrants list. The form field names on that page all end in, “zero.” The team name and captain must be entered onto the list, then the address, city/state/zip, and head cook lines are filled in by changing the form field name number to match the entrants list filed name. The team number can be entered on the file or on the printed form. The results sheet page works the same way. All the field names end with, “zero” so the form is filled in by renaming the fields.

How is it applied? This is where it get specialized. To edit the form filed names, one must have the Adobe Acrobat software program; it is not free like Adobe Reader.

You also need a venue where a computer and printer are available. Plus, some planning and organiza-tion are involved. I have used this twice for cookoffs that had 18 and 21 cooks, and was very fortunate in that I knew who was going to be there the day before the cookoff. I was able to have the entrants list made up beforehand. We use and entry form type of registration, so if I got an unexpected cook, I would simply add their name to the entrants list prior to cup distribu-tion. From the completed entrants

list, the show entrants list is made and numbers assigned. During the awards, someone could be com-pleting the results list, however I have found it easier just to record the names manually and complete the results the next day.

When you create a cookoff and you don’t request a box of Trails, cup tickets, or a rule book, you will not receive a packet of forms by regular mail. Your forms will be included in your approval email as a .pdf file. Please print out the forms, and fill in your cookoff date and the cookoff number shown on the approval email.

When submitting cookoff info for me to put into the system, please use the form online or in the Terlingua Trails so all information needed will be

covered. Often email addresses, zip codes and counties are left off. If you are do-ing the input yourself and have a problem, please contact me instead of trying to submit again, especially if you get an error message. Thank you for your support!
