New Romney Have yourself a merry little Christmas... The year is definitely ending, and the very last party came on the night of the 15 th of December... In order to celebrate Christmas all together, a little cooking team prepared a very nice pre- Christmas Dinner, staring in particular Villy, Mari, Filipa and other volunteers such as Marghe, Edita or Therese... Please note I only wrote girls names... Lazy boys... Once upon a time, in a very busy kitchen of some hotel in some place into Kent, a girly team were working really hard doing the cooking... This is a story about huge turkey, salmon, chestnut, chocolate and cream. This is a story of hours of simmering, of baking, and of a hard battle with a certain turkey and a certain fill-in... Well, to sum-up, thank you to all the girls that prepare a delicious dinner for our last party together, you did so great and it was indeed an enchantment! Boys put on their best shirt and costume (with the notable exception of Boaz...) and girls their nicest dresses and tops, in order to take a last and very nice group picture, gathered all together in the living room of Foreshore for the last time of our lives... So many great memories from this place! But the first step was obviously the dinner... Champagne popped up to mark the beginning of the meal, for the best pleasure of the last Frenchies between us... Toasts with salmon, tomatoes pies and quiche lorraine, salads and prosciutto, that was only for the starters. But the long-awaited moment finally arrived with the presentation of the turkey, undoubtedly the star of the night. Desserts also, with Filipa’s cream cake, a chestnut and chocolate “bûche”, Villy’s Christmas cookies and brigadeiros... Food profusion so. But not only. Kerstin finally discovered her favourite drink, thanks to Mari and Marghe, and to Martini’s spumante... Food and alcohol, music and dance, to summarize celebration!!! Well, to sum-up, thank you to all the girls that prepare a delicious dinner for our last party together, you did so great and it was indeed an enchantment!

Elegance and charm were surrounding Foreshore with an aura of glamour on this particular evening, as Kerstin was rather clear one the dress code: dressed-up! Boys put on their best shirt and costume (with the notable exception of Boaz...) and girls their nicest dresses and tops, in order to take a last and very nice group picture, gathered all together in the living room of Foreshore for the last time of our lives... So many great memories from this place!

What are your main hobbies/interests in life?

I’ve got the usual hobbies of a (Swiss) girl as for example snowboarding and skiing as well as going out, meeting friends and so on. Besides this I’m in the management of our home town football club. So in Flums you often see me on the football field. Before I left for England I just took over my own junior football team. This 6 little boys were a lot of fun but also very exhausting! Furthermore I’ll participate next year in our local carnival club. They make special music and when you see some crazy pictures of me in Facebook in February 2012 with a lot of colour in my face, don’t think I got insane, it’s just the usual way to dress up and to paint the face.

Where are you from and what makes your country and city worth visiting?

As I said before I’m Swiss. And of course we have got really good cheese and chocolate but I assume you

know that already or at least since you have met me..;) We have got some big cities as Bern, Zuerich, Geneva or Basel with nice shopping opportunities and a few sights. But if you ever want to come to Switzerland, then check out my place. I will prepare a delicious fondue for you, later we will visit my local to have one, two or three of a special home-made slug. In the case you get up the following morning I will proudly show you my ski resort. After a long skiing day we will show up in my favourite winter cottage restaurant to have another traditional Swiss dinner with loads of cheese and afterwards an unforgettable après-ski party.

What are you studying and what are your future plans?

I study business in the university of Saint Gallen, where I just finished my forth semester. After my intern ship adventure I will start the final year. Afterwards I would love to find a job in a tourism or event management related sector. Fortunately I life in a part of Switzerland where the tourism is really important with many interesting companies. So I hope it’s not going to be too difficult to find my perfect job match.

Tell me something we didn't know about you?

In order to deliver a really interesting interview I think I have to come up with some nasty old stories.. So let’s go back to my childhood. I used to be am altar girl for more than 5 years, I also played piano and sang in a choir. Sorry, it looks like I disappointed you, I do not have so many dirty stuff to tell since I was one of this boring, well behaved girls. Another interesting fact about me? I broke my nose once since someone crashed into me in the ski slope. Still too boring, so there is the last, hopefully interesting story: It was my birthday and since I was that happy to turn 20 I decided

to have a girls party with three of my best friends in my favourite club. It became late and I became drunk and so I started to dance on a pole in my micro mini dress. The bad thing about the whole story is that I was well known in this place and I’m still too ashamed to return even when it’s now more than a year ago... I’m so sad about this happening since it was such a nice club!

Which qualities are you looking for in people around you?

Actually I’m not looking for special qualities. I meet persons, talk with them and then it makes ‘click’ and I love them. It does not even need to have a special reason or a quality. Except of one: I like punctual persons, but I think NR is the wrong place to find this kind of people! ;)

What did this internship bring to you?

The best thing about this internship is the people I have met here. When I tell my friends at home about England I’m only talking about is Marghe, Iida, Mari, Vanessa, Villy and so on. I think this intern ship made me aware of cultural differences. There is for example a conversation with Villy which I will never forget. I was angry because everybody was late as usual and so I was talking about disrespect and so on and her answer was: “You know, Kerstin, in Greece, there it’s impolite to be on time!!” I think I got more tolerant and patient in the meantime. Another important thing I learnt is to appreciate my life at home. I have met so many people and they told me about their lives in other countries. And all this new experiences lead to the conclusion that I won’t complain so much any more about minimum wages, late trains or minus degrees, because now I know Rob from England where the buses are always late and Iida from Finland where -20 degrees is a normal average winter temperature.

Our dear Khaled left us unexpectedly and far too early on the 30th

of November, but we hope to see him again (Come on, London’s not so far away!), and rendez-vous at the last big Thank You Party! (That was not a question...)

By the way, have fun in London and do not forget us!

Julien Seng

Another French guy leaving us on the 10th of December (it’s a habit!), you will miss seeing you strolling around in Foreshore, with your dressing gown, a cigarette in one hand and a beer in the other.

Have fun in France, say hello to Sophie from all of us, and take care!

Matthieu Evain

On the 16th of December, the craziest person I have ever met (that is a compliment... or not) will leave us, and we will miss him so much!

New Romney will be far too quiet without you around Matt, no more “prout prout” on Iida’s facebook status, no more “Chaud patate!” and no more “Good morning!!” all day long... Anyway, take care, you bastard!

My only French girl colleague! You will probably miss as much as I will her beautiful smile, her cooking times (by the way it was a pleasure to cook with you dear...) and her complains about the profusion of food...

Switzerland represents! It’s also time for our sweet but so efficient Event Manager to return to her beloved Swiss mountains, but we will miss her a lot! You were my knight, and the surprise maker round here, a kind of magician for all of us...

What are your main hobbies/interests in life?

Actually, my main interest in life is life in general. I like trying different things and gaining more knowledge and experience. I’m really interested in foreign languages and art, even though I’m not an artistic person. I’m also very interested in psychology and I always search for the relation among people’s motives, feelings and actions, both in personal and communal level. I also love travelling and becoming familiar with different cultures and customs. Apart from these, I do all the non-exciting things in my free time, like watching movies, listening to music and hanging out with friends -especially in coffee-shops, which are the number one Greek spare-time activity-.

Where are you from and what makes your country and city worth visiting?

I’m from Greece. I was born and raised in Athens, but I come from Mykonos, a small beautiful island in the Aegean sea. Greece is known for its long and interesting history, which dates back from the 2nd millennium BC, between 1900 and 1600 BC. My country is also popular for its exciting night-life, since bars and clubs stay open until the early morning, and of course for the warm climate and the sunny days. My first home, Athens, is one of the oldest capitals and only Acropolis and the old city (Plaka) are enough to make the city worth-visiting. As regards my second home, Mykonos....hmmm...one page is not enough to describe why it is worth visiting :P ...I think you should come and check by yourselves! It is said to be the place with the strongest sunlight and that’s way there is always positive energy there. Maybe this is the reason why the tiny island next to Mykonos (Delos), currently being open to public only as a museum, was chosen to be the island devoted to Apollo, the ancient Greek god of light. Of course, the life in Mykonos helps the positive energy to become even more positive with the beautiful beaches, the wind that prevents you from feeling too hot during the warm summer months, the crazy beach bars, the world-famous clubs and of course the always smiley Greek people!

What are you studying and what are your future plans?

I’m studying Marketing and Communication in Athens University of Economics and Business. I don’t have any specific future plans... Most students nowadays do Master Studies, so maybe I am supposed to search something to study for a Master’s degree...but actually I’m rather satisfied with my Bachelor degree, because I cannot think of something that I like to do for a living more than Marketing and Communication. So, for the time being, I think that I will start searching for a permanent job on marketing.

Tell me something we did not know about you?

Despite the fact that I study in an Economic University, calculations are a big pain for me. It’s not maths that give me a hard time...just the “counting” part...:P...One more big secret is that I was writing poems when I was a child and my teacher asked me to write some for the school festival. I also had a “hit” in my poetry-past when I wrote a poem together with my best friends, satirizing a

famous Greek one that we were studying at school. This satirical poem was even given to students of some private schools in my neighbourhood by their teachers many years later, but unfortunately under “unknown author”. This is when I lost my chance of entering the hall of fame...and I’m still trying since then... :P

Which qualities are you looking for in people around you?

I try not to offend or hurt the others and I always respect them even if I don’t agree with what they say or do, so I expect the same behaviour. I like people that are “open-books”, as we say in Greece, so that I know that I can be myself without being judged and I appreciate modesty and warm smiles. However, I am not that selective with people. I can hang out with almost everyone because anyway no one is perfect and anyone deserves a chance. As far as there is a topic to talk about, I can drink a coffee and have (at least :P) one drink with anyone. These qualities are just standards to help me know which people worth for me and which don’t.

What did this internship bring to you?

This internship helped me realise that totally different people with diverse backgrounds can find things in common and feel like family. Good-will and positive attitude are actually what makes us have a good time. When I first entered Foreshore and people told me that this is the party-house, I could not realise how is it possible to have a party in a living room in New Romney and now I think that these parties were some of the best I had so far. As for the work-part of the internship, I learned how to work and co-operate with people from different countries, which can be really helpful in the future. It was also my first time to work in a marketing department and it felt like a small step forward for my future career!

This certainly explains why this unexpected arrival drove all of us crazy, turning the kitchen into a betting centre: boy or girl? French, German, Spanish? Well the answer arrived one day after...

NR Got Talent!!

A major competition occurred on the 24th of November in our beloved party place, Foreshore, staring without any doubt the most talented people around Kent. “NR got talent” unfortunately gathered only four teams, but quality matters most than quantity, and we indeed were offered humour, technique and lot of fun!

The atmosphere was already electric when I entered the living-room. Anxiety, stress and excitement saturated the air at the edge of the competition. No more time to train, performances were about to start. After a couple of drinks, the jury, composed of Roberta, Julien and my humble person, were ready to admire, hate, criticize, in a word, to judge.

The “Girls” opened the contest to find Foreshore’s new talent, on the famous song Wannabe, with a deeply worked choreography, full of dynamism and joy, and liven things up in the place, despite a slight lack of synchronisation according to Julien (yes, I’m squealing on you...). Iida, Marghe, Kerstin,Villy and Thérèse make the Spice girls come back to life and this legendary band rise from ashes with success!

The second performance involved a very sweet and passionate couple, singing Heartbeat with conviction, Spiros portraying Enrique Iglesias and Benita being a really convincing Nicole Scherzinger... Even though they were not naked, this parody of the video clip was very sexy and sensual. Everybody could feel this little sparkle between them, it was adorable to see.

The third team was not exactly a team, by Matthieu showed us his incredible ability to embody several persons at once. Schizophrenic? Maybe, but that was not his talent of the day, as he offered us a one-man show, playing legends of the Seventieth Art from De Niro to Spiderman, with Gollum or 007 in the middle... Great acting performance, interesting concept.

The fourth team had a real special talent, as Roberta and Raquel gave us a burp demonstration, properly disgusting in my opinion...

Well, in front of so much talent, the jury was fighting rather than deliberate, and decided to impose a new improvisation proof to the teams. The burping team was of course eliminated, but only because Roberta could not be part and judge as the same time, nothing to do with their non-performance. The three teams had respectively to sing Poker Face by Lady Gaga, We Will Rock You by Queen and Rock DJ by Robbie William. Only great performances, but the show done by Matthieu, strip-tease included, beat them all and overcame the whole jury.

So, congrats to Mattyou!

Health tips 11

7 tips to digest well during the festive season

This time of the year, framed by Christmas and New Year’s Eve, is always hard to take for your stomach. But there are many naturals ways to help it go well. Read and learn...

Tip n°1: Get your stomach ready before starting the festive season.

Before eating a rich and heavy meal you can just take 1 table spoon of olive oil. It will help to avoid all the inconveniences related to the excess of good food and alcohol. It could seem to be really basic but you will see, it’s really efficient.

Tip n°2: You didn’t know the tip above and you didn’t take the lifesaving spoon of olive oil before your Christmas dinner... I guess that you don’t feel really good right now but don’t worry, there’s a solution!

Wash 2 or 3 untreated lemons ( you can find it in any organic food stores). Then, cut them in pieces without peeling them and put them to boil in water during 10 minutes. Let cool and drink this mixture . You will really feel better.

Tip n°3: To avoid indigestion, infuse branches of thyme during a few minutes in simmering water. You will get a tisane really efficient to fight indigestion and rumbling of your stomach but also to avoid to feel sick or nauseous.

You can also prepare a tisane with anise and you will see that this meal that you’ve just eaten will be digested in the wink of an eye.

Tip n°4: If you have problems of aerophagia, there is a natural and efficient cure for it... Indeed, mint is really adapted for this kind of problems. You can prepare a mixture in taking 15g of mint leaves and in infusing it in 1 liter of water.

Then, take one cup of this preparation in the morning and one in the evening. Depending on your taste, you can drink it either cold or hot.

Tip n°5: You had a really good moment but your stomach remembers it as a bad memory...

Mix 1 tea spoon of Maizena in a glass of cold water and drink it. It should stop your heartburn quite quickly.

Tip n°6: If despite all this tips above your digestion is still disturbed, then put a hot-water bottle on your liver for 15 to 20 minutes. Do it during the evening before going to bed.

Tip n°7: And if you feel headache in the morning in waking up, put a bag of ice on your nape.

With all these tips, you’re well equipped to face the festive season.

“Tapis rouge!”

On the 27th of November took place Benni and Khaled’s Thank You Party, dedicated to the Seventh Art. Foreshore turned into a new Cannes Festival, welcoming the greatest and brightest stars of Hollywood, with their aura of glamour and sparkles...

Cinema icons and legendary roles met in Foreshore for an unforgettable evening... Audrey Hepburn, the Kill Bill team, Hancock, Sweeney Todd and James Bond were found playing drinking games in the kitchen, forgetting their concurrence in the box-office and their differences of salary to enjoy a sparkling and of course glamorous party all together. And not only the did have a great party, but they did not even talk about their future film projects or the psychotic condition of some directors.

Instead of what, Ennis del Mar apparently did not need to be lost in the wildness of the Brokeback mountains to find Jack Twist, and Bellatrix Lestrange danced without transforming Lara Croft in festering and slimy frog...

Alcohol was flowing, music was electrifying bodies, but it was already time for our two beloved Frenchies to say goodbye and to give their last speech. Sweeney Todd had to return to Fleet Street (so many people waiting to be shaved by him, so many meat pies to be cooked...), and Hancock steped onto stage to announce that he had to leave us for some rescue mission to fulfil in London...

In the early morning, all the V.I.P. Guests left the disco lights and alcohol profusion of Foreshore to find outside a white and cold snow cover, wrapping the beach like a soft blanket... Hopefully, they all had their limousine waiting outside to bring them back to their natural Hollywood environment, the warm and sunny Beverly Hill...

The story does not tell if Zorro arrived soon enough to save Jane from the claws of the most dangerous animals of her jungle, or if Fiona finally found her Prince Charming... But at least neither Gogo or Elle Driver scalped O-Ren.

And nobody killed Bill...

ExtravagantRidiculousDumbSuperheros!!!

December had a great start with Julien’s Thank You Party on the 4th, dedicated to the virtual and fascinating universe of Geeks, in clear a Nerds Party! I have to say I doubt there are any authentic parties in Nerdsland, but whatever, we all dressed up our stripped shirts and glasses and became Nerds for one night... in Julien’s honour!

Nerd: 1. A foolish, inept, or unattractive person.2. A person who is single-minded or accomplished in scientific or technical pursuits but is felt to be socially inept.

The Foreshore population magically turned into foolish and unattractive person, single-minded in scientific pursuits, a prodigy not that difficult to accomplish for some of us... Huge glasses, spots, braces, the all anti-social panoply was out this night, to make us feel as nerdy as possible. Feeling so ridiculous probably explains why most people drunk a lot, to forget their exuberant accoutrements (this is indeed pointed to you Rapha, but not only...).

We were offered a nice but already quite wasted Thank You Speech, beginning with our traditional Alcoholics Anonymous song “Ami Julien lève ton verre...” and ending with a big collective hug, from which Iida still keeps some painful rests...

Well, what else to say? Another crazy party soaked with alcohol... Ah yes, one major event by the way... Two lonely hearts found each other this night, fulfilling Foreshore with love and tenderness... A bit too much tenderness though, Matthieu. Your love bites on every neck were not a true evidence of your fidelity towards Julien...

Anyway, the star of the party was far too drunk to walk, so he did not realize your treason... and slept on the floor, under the nice protection of our beloved Rubbish. Hope Sophie won’t be jealous, or Paris will also be synonymous of some trouble for you mate!

Nerd did not actually meant socially inept @ this particular party, but actually it did meant unattractive and alcoholic!

and an unforgettable evening... Great job dears!

The night falls on New Romney... But killers and whore were expected later this night, time was first for collective remembrances... Tears, tissues, emotion and laugh, that was indeed the programme of the night.

Everything began with a lot of parties, a lot of pictures taken, a computer and an idea. Or I should say that it began with a long time packed in the couches watching the Idiots Awards on TV while waiting for Benoit and Rapha to honour us with their presence...

It was then time for a thirty minutes emotional sequence, with some memorable soundtrack putting rhythm into the video, such as Baby by Justin Bieber, and pictures of so many parties, of so many good moments shared together, of beloved people who already left us... But also some compromising photos nobody should have seen and that popped up on the big screen with an surprisingly unpleasant manner... I am thinking about some end-of-drunk-party photos, with some people (unfortunately including myself) sleeping on the sofas in Foreshore, and so on.

Well, definitely a masterpiece, unanimously acclaimed which summed up marvellously all these magical and unforgettable moments together! Even in a god-forsaken place like New Romney, true friendships and unbelievable experiences are possible...

Time to say goodbye has come for most of us, and we will all return home, nostalgic of the people met there. By the way, just a suggestion, but... Why not meeting us somehow, somewhere in our old and beloved Europe and recreate this unique ambiance?

Yihaa!!! for the Glorious 10!

The last Thank You Party of the year

2010 had to be terrific. And it was

indeed. Some more memorable

moments spent together, some more

moving speeches, some more alcohol,

so much fun. Viva the Glorious Ten,

namely Raphaël, Kerstin, Iida,

Thérèse, Matthieu, Vanessa, Marghe,

Mari, Villy and Spiros...

Ten persons, ten speeches, ten times more fun... A party dedicated to the American Western, walking in the paces of John Wayne, Clint Eastwood or Sitting Bull (sorry, I meant Laughing Monkey and Save the Last Shot...) but even more special due to the departure of ten members of our great New Romney community.

That also means moving thank you speech, some tears from our unique Finnish girl, a lot of “I love you”, “I’ll miss you”, “I’ll always keep some space in my heart for all of you” and so on... Emotional sequence indeed, but not only. We were offered some very nice surprises, beginning with another strip-tease made in Mattyou’s land... Again?!? Yes again, but this time we had a kind of elephant surprise... I thought of putting a photo as an evidence, but I did not dare doing, and everybody know what I am talking about, aren’t you?

Other surprises, unexpected speeches, as if ten thank you speeches were not enough... Edita first provided us with a welcome speech, immediately followed by... Steven’s Thank you Speech! Our phlegmatic British HR Manager just popped up unexpectedly in the living-room, to finally tell us how much weed he was smoking while being student, and how much wasted he actually was of drinking since 8 A.M.

Apart from that, a normal crazy party in Foreshore, with alcohol flooding the place, cowboys hunting good-looking American Indians, cowgirls dancing with their lasso and cardboard horses chasing invisible beefs in the wild wild West...

Nothing else to say, except from a big Thank You, in everybody’s name but more especially in mine... My Thank You speech was quite short, but basically fitted my thoughts... So Thank You to all of you, I loved you all as you are and will never forget you.

Filipa’s Lemon pie

Bottom:● 300gr flour● 130 gr butter● 70 gr water● a little spoon of salt● a little spoon sugar#

Cream:● 4 yellow parts of eggs● 200 gr water● 50 gr flour● 130 gr sugar● 100 gr lemon juice and skin●

● 40 gr butter

Merengue (top):● 4 white parts of eggs● 50 gr sugar● lemon drops● salt● sugar

1. Put all of ingredients of the bottom in a pot and mix them and then put in the owen at 180° for 15/20 min. The bottom has to be very thin.

2. Put all the ingredients of the cream in a pot, and put in the heat and mix everything until become cream.

3. Put the cream in the bottom.4. Mix the white part of eggs with sugar and salt and lemon drops until become a cream

and put on top. Then spread some sugar on top and put in the owen to become gold.

Suspiros

Ingredients: ● 3 white parts of eggs● salt● 220gr sugar

1. Mix the white parts of eggs with some salt2. When it star to become spume put the sugar and mix until become a cream

Bolo de cenouras

Ingredients (10 serves):

● 3/4 carrots● 2 cups of sugar● 2 cups of wheat flour● 1 cup of oil● 4 ovos● 1 tablespoon of baking powder

1. Grate the carrots, then add the eggs, sugar and oil and mix it.2. Add the baking powder and flour little by little and mix until obtaining a

homogenuous dought.3. Cook in the oven 160/180 degrees for 40 minutes.

Empadão

Ingredients (10 serves):

Fill-in:● 1 chicken already cooked (or chicken breasts)● 2.5 kg of shrimps● 1kg of frozen mixed seafood● 400g of double cream● ½ kg of tomatoes● 2 red peppers● 2 or 3 white onions● 2 or 3 limes● ½ head of garlic● 2 cubes of chicken broth● 1 bunch of fresh coriander● 3 tablespoons of oil (type rapeseed oil)● 3 tablespoons of flour● a pinch of fresh parsley, chilli pepper● black pepper and salt

Dough:● 1 egg yolk ● 1kg of wheat flour● 1kg of butter

1. Prepare the fill-in as following. In three tablespoons of oil, lightly brown the onions and the garlic thinly snipped. Add the peppers, the tomatoes and the cubes of chicken broth previously melted in a bit of hot water. If your chicken is already cooked, cut it into small pieces and add it into the sauce, otherwise grill it on a pan and then add it to the sauce.

2. Defrost the shrimps and seafood and remove all the water from it. Add the juice of the limes, a pinch of chilli pepper (or Tabasco), black pepper and the fresh parsley and coriander thinly snipped.

3. Add the seafood blend to the chicken sauce. Then add the double cream and the tablespoons of flour. Mix the sauce, salt and pepper as taste and let it cool down.

4. Prepare the dough as following. Put the flour in a container, add the egg yolk and the softened butter and knead until obtaining a smooth dough.

5. Cut the in two pieces, approximately 1/3 and 2/3. Butter a dish and spread the 2/3 of the dough on the bottom and edges. Fulfil with the sauce and recover the pie with the rest of the dough cautionsely.

6. Put in the oven at 180° for about 30 min.

Brigadeiros

Ingredients:● 1 cand of condensed milk● 20g of chocolate in powder● 40g of butter● chocolate vermicelli

1. Put all of ingredients in a pot, then put in the heat and mix everything until become like cream.

2. Put in a plate and leave there to cold a bit.3. put some oil in the same plate, around the chocolate, then rub the oil in yours hands

and star to role de balls and role them again in little pieces of chocolate.

Tzatziki (dip sauce)

Ingredients (serves 6-8):

● 2 large cucumbers, peeled● 600ml Greek yogurt● 5 garlic cloves, crushed● 1 tbsp fresh dill, finely chopped● 1 tbsp extra-virgin olive oil

1. Grate the cucumbers using a coarse grater into a colander. Place a bowl underneath the colander and leave overnight to drain. It is essential to remove all the juices or the dip will be watery and separate. If you are in a hurry then place grated mixture in a kitchen cloth, pulling up the corners to make a tight bundle. Squeeze the bundle very hard to extract all the moisture.2. Put grated cucumber in a mixing bowl and stir in yogurt, crushed garlic, dill, olive oil and salt and pepper. Cover bowl with cling film and chill for 3 hours for the flavours to blend.

Pork souvlaki

Ingredients:

For the sticks:● Pork meat in dices● Olive oil● Oregano● Lemon● Salt and pepper

For the souvlaki:● Greek pita● Tzatziki● Tomato● Onion● Fried potatoes (optional)

1. Put 6-8 pieces (depending on the size) of meat on a wooden or iron stick. Mix the olive oil with the lemon and oregano and then add the salt and the pepper. Take a “brush” and put the mix on the sticks. Put them in the grill and let them cooked.

2. To make the souvlaki, you just need to remove the meat from the stick and put the rest of the ingredients inside the pita.

Chicken souvlaki

Make the sticks the same way as with the pork. Chicken usually needs to be cooked longer than pork.

For the souvlaki, put inside the Greek pita: mustard, lettuce, tomato and optionally French fries.

Loukoumades

Ingredients:● 1 tablespoon yeast● 1 cup lukewarm water (for yeast)● 5 cups and a half cups flour● 1 teaspoon salt● warm water● 2 cups sugar● 1 cup honey● 1 cup water● cinnamon● oil for frying

1. Dissolve yeast in water and let set for 10 to 15 minutes. Sift flour and salt together. Make a hole in flour and pour in yeast mixture. Mix gently while continuously adding warm water until a soft, sticky dough is formed. Cover dough with clean, damp dishtowel. Let dough double in size.

2. Bring sugar, honey and water to a boil. Boil for 6 minutes. Remove from high heat, but keep warm.

3. Heat oil in deep fryer. Use a tablespoon to drop batter into hot oil. When batter floats and is golden and puffy, remove to drain on paper towel.

4. Pour syrup over hot doughnuts and sprinkle with cinnamon.

Tartiflette

Ingredients (6/8 serves):● 2 kg of potatoes● 50ml of double cream● 1 reblochon (French cheese from Savoie)● 200g of smoked bacon cubes● 2 white onions● 20cl of dry white wine (Apremont)

1. Bring a large pan of water to the boil and cook the potatoes whole, in their skins, for 15 minutes. When cooked, remove them from the water and let them cool down.

2. Cut the onions, cook the onion and bacon with a little bit of oil in a heavy frying pan over a medium heat; they should sweat but not brown.

3. Drain the potatoes and as soon as they are cool enough to handle peel them - the quicker the better. Slice thickly across.

4. Butter a gratin dish. Cut half the potatoes in thick slices and cover the bottom of the dish with it. Add half the onion and bacon.

5. Add the remaining sliced potatoes and the remmaining onion and bacon. Spread the cream on top. Halve lengthwise the Reblochon and put on the potatoes (optional: add a glass of dry white wine).

6. Bake in a really warm oven (220-250°C or 428-482°F)... Until the cheese melts and browns on the surface. Enjoy while it is warm!

Crêpes

Ingredients (8 serves):● 250g of wheat flour● 4 eggs● ½ litre of milk● a pinch of salt● 50g of melted butter● 1 tablespoon of vanilla sugar● 5cl of rhum (optionnal)

1. Sift the flour and eggs. Do not mix them together at first, but add progressively the milk and mix, avoiding lumps.

2. Add the vanilla sugar and salt.3. Mix well until smooth and leave to stand at least 2 hours. The batter should be as thin

as cream.4. Grease pan with butter lightly. Spoon 2 table spoons of batter in a heated pan for each

crepe swirl the pan so that the batter covers the entire base of the pan. Cook for about 1 min each side until golden.

Pasta alla Carbonara

Ingredients (4 serves):● 2 spoons of Oil (extra virgin olive oil)● 150 gr of bacon● 100 gr of pecorino or parmesan● 400 gr spaghetti (● 4 eggs or 4 yellow parts and 1 whole egg● ½ onion ● salt and pepper

1. Put the oil and the onion in a pan. When the onion is cooked brown put the bacon, cut in cubes or in slices, in the pan and continue to cook until the bacon will be a bit crisp.

2. Whisk the eggs in a bowl with the cheese, pepper and salt.3. When the pasta is cooked (put a pen of water and when it boils put salt and pasta), put

it in the pan with the bacon and fry a bit. Switch off the fire and put the eggs in the pan. If you can add more pecorino.

Prawns and courgettes Risotto

Ingredients (4 serves):● 1 onion● around 200 gr prawns● 2/3 courgettes ● olive oil● butter● 300 gr rice

1. First of all, put some water to boil. Then, add a vegetable cube and salt. 2. In a separate pan, put some spoons of oil (I personally also add some butter) and one

onion: let it cook for 2 or 3 minutes. 3. In the meanwhile, cut the courgettes and then add those in the pan. Let them cook for

around 5 minutes with big flame and then add the prawns. If you can, after some more minutes add a bit of white wine.

4. After that, put the rice in the pan and let it toast for few minutes. Do not stop stiring because when there is no water it get stuck really quickly.

5. Now cook the rice, adding the water from the other pan little by little. In this way, the water will be absorbed: this procedure takes around 20 minutes.

6. When the rice will be soft, so ready to be served, you can add a bit of olive oil. 7. The whole procedure takes more or less 30 minutes.

Tips: At the end, you can add as much cheese as you like and keep on stiring for few more seconds. Other suggestions are mushrooms or mushrooms and crème, carrots and onions, vegetables mix (tomatoes, carrots, aubergines, courgettes,peppers,onions). The procedure is the same.

Spitzbuebe

Ingredients (55 cookies):● 250 grammes of butter or margarine● 125 grammes of powdered sugar or normal sugar● 2 teaspoons of vanilla sugar ● pinch salt ● 1 white of egg, lightly smashed ● 350 grammes of flour ● 200 grammes of jam

1. Stir the butter (alternatively margarine) in a bowl till it’s soft.2. Add sugar (alternatively powdered sugar), the vanilla sugar and the salt. Carry on

mixing till the dough becomes light coloured. 3. Add the white of the egg. 4. Add the flour, knead until you have “one piece”. Afterwards put the bowl with the

dough in it in the fridge and wait for an hour.

5. Take the dough out of the fridge 30 minutes before you start rolling. After you have rolled the whole dough start engraving out the circles. Take care, you always need two circles (top and back side) for one cookie. Decorate the front circle as ever you feel like. Put all the cookies on a drawer with backing powder and keep them in a cool place for about 15 minutes. Later on bake the cookies for 6-8 minutes in a preheated oven with 200 degrees.

6. Afterwards smear the backside cookies with the jam and the front side cookies with powdered sugar and put both halves together.

One Christmas, Santa was having a really bad day. The local elves union was up in arms over their contract and were threatening a walk-out.
