bitter preparations, which are really the beginning

of the evening meal as they support digestion and

can help prevent indigestion and heartburn. After

dinner, many finish with a short glass of amaro, a

stronger preparation that also features bitter roots

and leaves. These formulas immediately relieve

This basic formula of aperitifs and digestifs -

How Much?...

When it comes to entertaining, how much food and drink you should have can be a maddening thing to �gure out. The Farmers’ Almanac has a great guide for how much food to serve at a party; there are also many online calculators to help you estimate. Here are some basic guidelines caterers use to �gure out “how much” for a classic cocktail party.

Cheese: 2-3 oz. per person if cheese is not your only item or 6-8 oz. per person for a wine and cheese party. Most cheeses last a couple of months in the fridge if you have leftovers.

Hors d’oeuvres: 8-10 pieces per guest

Drinks: In general guests consume two drinks the �rst hour and one drink each following hour. When serving wine, beer and spirits, the general rule of thumb is:•50% Wine•30% Beer•20% Mixed Drinks

If not serving mixed drinks, plan on 60% wine and 40% beer. Also have plenty of non-alcoholic beverages available including water.

Makes 4 6oz ramekins

DirectionsStep 1:1. Preheat oven to 350°2. Place chocolate in an oven-safe bowl3. Heat cream and sugar on low in a medium saucepan until sugar is dissolved4. Pour the hot mixture over the chocolate and whisk until smooth5. Whisk egg yolk in a small bowl and slowly add the warm chocolate mixture,continue whisking until thoroughly mixedStep 2:1. Place ramekins in a baking dish2. Divide the chocolate mixture into the ramekins3. Fill the outer pan with hot water until it reaches halfway up the sides of the ramekins4. Put pan in oven until custards are set but still jiggle slightly in the center5. Remove from oven and carefully remove the custards6. Cool to room temperature and refrigerate the custards at least 2 hours or overnightStep 3:1. Place 1/3 cup cherry juice into small pan2. Cook over medium heat until reduced by half3. When it comes to entertaining, how much food and drink you should have can be a maddening thing to �gure out. The Farmers’ Almanac has a great guide for how much food to serve at a party; there are also many online calculators to help you estimate. Here are some basic guidelines caterers use to �gure out “how much” for a classic cocktail party.

Cheese: 2-3 oz. per person if cheese is not your only item or 6-8 oz. per person for a wine and cheese party. Most cheeses last a couple of months in the fridge if you have leftovers.

Hors d’oeuvres: 8-10 pieces per guest

Drinks: In general guests consume two drinks the �rst hour and one drink each following hour. When serving wine, beer and spirits, the general rule of thumb is:•50% Wine•30% Beer•20% Mixed Drinks

If not serving mixed drinks, plan on 60% wine and 40% beer. Also have plenty of non-alcoholic beverages available including water.

Access to wholesome and nutritious feed and fresh, clean water, appropriate shelter and considerate handling: this is what we at KWF wish for all the earth’s creatures, including animals raised for food. We support organizations such as the Animal Welfare Association and Humane Care for Farm Animals, not-for-profits that administer certifications, because their initiatives to improve the lives of farm animals by setting rigorous standards, conducting annual inspections, and certifying their humane treatment reflects our values.

Additionally, we visit our producers—much of our meat, poultry, eggs and dairy is local, which by our standards means it comes from within 150 miles of one of our stores. We work with small farms that practice responsible husbandry and let the animals do what comes naturally to them—cows graze when they want to graze, pigs root around, chickens scratch and peck.

We have recently begun our own Farm Inspection project, and are working to ensure that 100% of our producers are certified by a third

party or verified against our own standards no later than March 1st, 2014.

Aside from being raised as food, animals have a role in large, corporate natural food markets in their health and beauty aisles, where many products are tested on animals to determine their effectiveness. Not at KWF—we don’t think that animals should suffer to bring us a better eye cream. All of our health and beauty products are not tested on animals, and we encourage all of them to get the international “leaping bunny” certification from Cruelty Free International.

We prefer to offer you only those products raised on farms that operate according to humane standards. We

choose to bring you health and beauty products that have been made without cruelty or animal testing. We encourage you to explore these standards with us this month and all year long.
