A Fort Lauderdale entrepreneur has patented a baitbridling kit he claims makes it possible for novice anglers torig up live bait faster than the professionals can, and withless damage to the bait.

Howard Rosenberg has been selling the baitbridling kit for a year now, and received the patentfor it in early 2009. A former ladies handbag man-ufacturer, he retired several years ago but had troublestaying retired.

His love of fishing got him working on ways to make iteasier, and to take the hassle out of the fun.

“What you used to do is take floss in a needle and put itthrough the eye socket of most live baits,” Rosenbergexplained. “The fish is not happy about the whole idea, youhave him out of the water for too long and you’re damaginghis skin by holding him in a towel or between your legs orwhat have you.”

Rosenberg’s system allows the hook to be placed any-where on the fish without damaging it, so it can swim natural-ly in the water.

“That’s what you want him to do,” he said. But is the Quick Rig bait bridling system the proverbial

better mousetrap that all inventors are looking for? Moreimportantly, will it deliver on Rosenberg’s promise to make

rigging up live bait a breeze?Capt. Paul Roydhouse took a look at a video of the tool

in action and thought it would be pretty helpful to novices.“It looks good. It looks clean. It looks fast,”said Roydhouse, who runs charters out of Fort

Lauderdale. “For the novice fisherman,it’s going to be an excellent tool.

Guys that do it every day arefaster at it, they won’t need

this. For the average fisherman, thatwould save them a good amount of moneyjust not having to buy rigged baits.”

Roydhouse said he didn’t think the system wouldbe cost effective for his operation, however.

And there’s the rub. The Quick Rig tool, which looks likea pair of modified needle-nosed pliers, costs between $59 and$99, with bait clips included.

“That’s an expensive pair of pliers,” said Capt. AlanSherman, who fishes out of Miami.

But he agreed with Roydhouse, the system does make iteasier to rig live bait well.

“In the past, if you just used a circle hook, the fish wouldhave a tendency to turn and the hook might not set right,” heexplained.

Rosenberg’s system puts the hook in the bait in such away that makes it nearly impossible for the fish to twist itwrong, Sherman said. But he also said another system that hascome out recently is getting rave reviews from captains heknows. The Gerry Rig is similar to the Quick Rig system, butthe clip can be tightened down on the fish by hand, with nospecial pliers necessary.

Sherman said he hasn’t used either the Quick Rig orGerry Rig, but knows a lot of other captains who are using theGerry Rig.

“It makes for a quicker cleaner connection from hook tolive bait fish, without really hurting the bait fish and it makesthe hook set in the fish’s mouth easier,” he said.

“Everybody is always looking for something easierand quicker that works,” he added. “This is one of thenewer things on the market. The clip itself is very use-ful, regardless of whose it is.”

Rosenberg said he has sold about 2,000 kits, and is hoping that an improved economy will bring in

more buyers.“The sales, as with the economy now, are very slow. We

looked forward to this season, this season never really came.Sales were great last year,” he said, noting he’s shipped thekits to Dubai, Scotland and South Africa and several onlineand traditional stores are carrying them.

“People who have used it, love it. They come back andorder more of them.”

Florida to lower boaters’ legal blood-alcohol thresholdskills — lookout duties, seamanship, approaching and over-taking other boats, chart reading, ship avoidance, docking, anchoring and on and on.

Along the way the courses present quizzes and reviewsto keep you paying attention. In the end there are final exams.

Most are equivalent to reading a book. BoaterExam.comcalls its course an animated study guide. It looks a lot like aPower Point presentation, with a pleasant female voice recit-ing the material as you read along.

You can scroll through the entire contents of that one, theBoat Smart course and BoaterExam without having to regis-ter or pay for anything until the final exam when you get thatfar. The others require upfront registration. The highest fees, just under $30, are charged once you pass the final.

We spent enough time on the courses and quizzes to feelthe need for brushups of both skills and knowledge. Anyonewho’s between boats and doesn’t get out much would bene-fit by reading all the way through any of them.

Casual boaters and fishermen who think they knowenough about boating and safety also should take a carefullook. Even if you’re not required to pass the course, it’sliable to contain a lot of information you’ve forgotten ornever knew.

Drink this inThere’s another new Florida law that sober boaters can

drink to.Next year, it says, drinkers can qualify for enhanced

drunk boating penalties without being quite as drunk as theyhave to be this year.

The new threshold for boating is a blood-alcohol meas-urement of 0.15. Before, a more lenient standard of 0.20 wasconsidered three sheets in the wind.

That doesn’t mean you can get as drunk as 0.15 and getaway with it. You’re still bustable at 0.08, the same as fordrunk driving in a car.

The difference is that up to now they couldn’t throw therest of the book at you on your boat unless the drunkome-ter gave you 20 points. At 15 points, you’re more likely tounderstand why you’re in so much trouble.

In 2008, says the Fish andWildlife Conservation Commission, the Legislature made the enhancedpenalty level 0.15 for drunk driving, but not for drunk boating. Nowthey’re the same.

Who will enforce that law? JimBrown, the FWC’s new enforcementchief. Brown boasts a background asa fellow who knows his business.

He grew up in Homestead, nearthe edge of the Everglades, and

hunted and fished from the Keys to Lake Okeechobee. Brownstudied criminology at Miami-Dade College and sociology atthe University of Miami and began his conservation career inthe Keys in 1981.

The new post opened when FWC enforcement directorJulie Jones was appointed head of the state department ofHighway Safety and Motor Vehicles.

Brown, now a colonel, was appointed FWC’s chiefenforcer by Ken Haddad, the agency’s executive director.

It is an office job, but if FWC field men ever have to movea small ship from one place to another they can invite Brownto take the assignment. He holds a 100-ton captain’s license.

BOATER’S LAW FROM P. 1.

Col. Jim Brown

Independence Day celebration and attended an Easter sunrisecelebration at the stadium as a child, said that even though thestructure is relatively new, it needs to be saved because of it’simportance in the modern architecture milieu.

“We’re just starting to understand the importance of pre-serving our recent modern past,” he said.

It has also been the site of history: in 1972, SammyDavis Jr. hugged president Richard Nixon, during a youthrally held at the stadium during the Republican NationalConvention — surprising folks who didn’t know the actorwas a Republican and Nixon supporter.

But restoring the building isn’t easy. Engineering reportsafter Hurricane Andrew said the structure was sound. But itwill take millions to restore the structure — because no engi-neering studies have been undertaken recently, it’s unclearexactly how much restoration will cost — and the City ofMiami is especially cash strapped during the recession.

In 2002, Mayor Manny Diaz expressed interest in restor-ing the stadium; his term ends this November without anysignificant progress for the stadium.

“Anything can be preserved, with enough money andinspiration,” said Ellen Uguccioni, the city of Miami’sHistoric Preservation officer. She added that no one in citygovernment wants the stadium to be torn down — but com-

ing up with the money needed to restore it will be difficult. Ithas been included in a master plan for the area, which is actu-ally an island just east of Miami’s downtown. Uguccioni saysthe city would like to see it eventually return as a venue forconcerts and events.

The city has awarded a historic designation for the stadi-um, and earlier this year, the National Trust for HistoricPreservation also put it on “most endangered” list. On Oct. 1,it received its biggest endorsement yet: singer Jimmy Buffettcut a public service announcement on behalf of the stadium, urging his multitude of fans to support the restoration effort.

“It’s a symbol of everything that’s great about Florida— boats, music, water and great Florida fun,” Buffettsays in the video, against a backdrop of images of himsinging “Margaritaville” at the stadium, during the 1985concert. Tens of thousands of people packed the stadiumand the water, and it was also the first concert video thesinger ever released.

Says Candela, the architect: “My dream is to get the sta-dium back to the role it had in the community, to be a realpart of the community again. That’s how you create greatcities, they have things you can’t find anywhere else.”

Economic news was so good inmid-October that the naively opti-mistic were carried away by exces-sive enthusiasm. As usual, that ledfishing-doers into rash decisions.

They invested unwise portionsof their shriveled assets in bait andengine fuel, then rushed to thedocks and ramps without skunkrepellent. Those of us who enjoy

learning from other folks’ mistakes shook their empty, fish-less hands and smiled knowingly.

“Nice sunburn,” we said.“Shut up,” they replied.Their excitement was caused by news that the Dow

Jones Average broke 10 thousand and the S&P Index broke10 hundred. Even we dour skeptics who write about fishinggot worked up about it.

Not that many of us really understood it. Our kind sup-poses the Dow Jones Average is a minor football statistic, cre-ated to keep television announcers yapping between downs.

If any of us know the initials S&P stand for Standard& Poor, we guess it’s a way to measure our poor standardof living.

Still, the good news so buoyed my mood that I wasgulled by the announcement that nominations are open forthe 2010 Seafood Champion Awards.

Oh boy, I thought, an eating contest. Shrimp! Lobster!Stone crabs! So what if I don’t win? I can’t lose. I hoped theentry fee wouldn’t be too high, and in fact there isn’t a fee,but other than that my investigation led to a letdown.

I wanted seafood sustainability to mean how long I cankeep eating stone crabs without bursting, or without havingto pay for them.

It turned out that the championship is sponsored by theSeafood Choices Alliance, and the prize’s purpose is to rec-ognize seafood industry stakeholders, not gluttonous free-loaders. Nominees have to be people or organizations that“have made an exceptional contribution to improvingseafood sustainability,” the contest criteria say.

“Sustainable” is a popular word in the conservation

vocabulary. It sounds righteous and looks good in print butI’m not sure any more what it really means or whether any-one is using it correctly.

Six seafood champions, who presumably understandit, were crowned this year at the International SeafoodShow in Boston. Just getting into that is a very alluringaward all by itself.

It’s too bad that none of the champions were seafoodconsumers, like you and me. They were all stakeholders inthe trade — for example Caroline Bennett, proprietress ofMoshi Moshi, which was cited as the only sustainable sushirestaurant in London.

Why the only one? Don’t the English like to eatresponsibly?

As for our kind of stakeholders, in this case we might aswell be steak holders.

Personal disappointment aside, it’s good that there arerewards for the best efforts on behalf of seafood sustainabil-ity, other than spelling it right.

Anyone who knows what it actually means should writeup a nomination for a qualified sustainable seafood hero. Thedeadline is Nov. 10.

Look for the rules online at www.seafoodchoices.com.Click on the “what we do” link near the top of the page andthen the “Seafood Champions” link on the left.

Let’s say there’s a hypothetical islandinhabited by penguins whose population isgradually being diminished by a hungryorca. Once the last penguin is consumed, astatistician could point out that the monthlymortality rate for the island’s penguins hasgone down to zero, and now things willonly get better for them.

Similarly, television’s talking headsare calling the present recession almostover since statistics show that fewer peo-ple are getting laid off. Are they right?I’m not sure...

Historically, recessions — just likehungry orcas — tend to have rest cycles.Let’s hope the economy is not comingdown to its “last penguins.”

Obviously recessions result in a highernumber of layoffs and fewer jobs. In themarine industry, fewer businesses are get-ting paid for work they’ve already per-formed — a particularly troubling situationduring a bad economy.

In healthy economic times, many com-panies can — and often do — allow someunpaid debt to “ride.” But as moneybecomes tight, collection on unpaid billstends to become more aggressive.

Ironically, this also is when debts areleast collectable. Even if a company shouldtake the debtor to court and win, collectingon the judgment could prove impossible.

Loyal readers of this column know thatI am a big advocate of taking preemptivemeasures to help keep unfortunate situa-tions from occurring. This includes havingprofessional, well-written contracts and therequest of reasonable, but sizable, up-frontdown payments before work begins onprojects and deliveries. But let’s say theworst happens: no further compensation isforthcoming from a client, and usingextraordinary collection methods is either

too expensive or futile. This is usually when a marine compa-

ny will inquire about the concept of mar-itime liens for the providing of necessaries.Basically, this is a federally recognized lienfor costs, which attaches directly to a ves-sel pursuant to work and/or provisionsalready provided to that vessel.

Technically, the lien attaches immedi-ately upon work provided, or a provisionbeing given to the vessel, and doesn’t actu-ally require the official recording of a lien. However, enforcement requires the arrestof the vessel by the U.S marshal — anexpensive proposition unless the lien inquestion is in the mid-five figures.

So, is there an alternate route for mar-itime companies that don’t want to spendfinite resources on a federal arrest?Possibly.

Under certain circumstances, somemaritime liens can actually be recordedwith the U.S. Coast Guard. This option isless expensive than going to federal courtand having a boat arrested, but it has limit-ed application. The following criteria andsteps must be met:

•First, to record a lien against a boat, the vessel in question must presently be aU.S.-documented vessel registered with theU.S. Coast Guard.

•The vessel’s documentation numbersubmitted for recording must be correct.

•Before submitting any papers to theCoast Guard, the lienholder should ask andpay for an Abstract of Title for the vessel toreview all other present lienholders, andconfirm the actual owner of the vessel.

•Notice of the lien being recordedmust be sent to all other present lienholdersas well as to the vessel’s present owner ofrecord.

•To record the lien, the lienholder must

Recession and collection

BY BOB E. SHERMANWaterfront News Columnist

Every time I’m on the water, I amamazed at how little nautical knowledgemost boaters possess. When I got mycaptain’s license, a fellow captain told methat I now have a license to learn. I’ll bethe first to admit that I’m still learning.

While passing the Dragon BoatFestival that took place in early Octobernear Haulover Marina, I got mixed sig-nals from the Miami-Dade Marine Patroland the U.S. Coast Guard Auxiliary.Judging from all the boats crisscrossingevery which way, it was clear that I wasnot the only one unfamiliar with theapplicable navigation rules.

Upon returning home that evening, Ichecked the “USCG Navigation Rules”and “Chapman’s Nautical Guides” whereI could not find any reference on who hasthe right of way when meeting up with adragon boat.

Several months earlier I had encoun-tered a similar situation at Haulover dur-ing an offshore powerboat race. Theboats were being launched from a bargenear shore. Several boats from variousmarine units were there with their lightsflashing — indicating that we shouldslow down.

When I was in earshot of the Miami-Dade marine boat, I suggested that theybroadcast a securité announcement. Theylooked at me like I was an alien. But Iwas pleasantly surprised when I heardjust such an announcement during thedragon boat races. I’d like to think thatwhen the officers got home they said,“Maybe Capt. Bob is on to something.”

Heading south on the Intracoastalapproaching mile marker R “4a,” I wasat the far west side of the channel. Alarge sportfish was heading north and wewere on a collision course. I could not

move to starboard or I would have beenout of the channel.

The sportfish could not changecourse to her starboard as the Miami-Dade Marine Patrol was forcing her over.I had no choice but to stop and let herpass through the now single lane.

Why wasn’t the race course set upwest of the ICW closer to Oleta RiverState Park? This area is nearly threetimes larger and would not have restrict-ed the ICW channel, other than requiringthe boats to go at idle speed.

Returning north several hours laterafter dropping a lunch hook at FloridaInternational University, I was approach-ing marker R “4a” again and the sameMiami-Dade Marine Patrol boat wasdrifting aimlessly right in the middle ofthe channel.

I assumed that he wanted me to passclose to R “4a” as if it was the EnglishChannel. As I got closer he kept driftingin front of me so I passed astern.

A few hundred yards further north,as I hugged the west side of the ICW, aCoast Guard Auxiliary boat was signal-ing for me to slow down and move fur-ther west, which would have been out ofthe channel.

By the way, not only was there norace in progress, there was also no drag-on boat in sight. I yelled to the Auxiliarythat I was at idle speed and that I was notgoing out of the channel unless they werewilling to pay my tow bill.

Luckily they did not fire a shotacross my bow, so I continued home.

It’s hard to keep a sharp eye with allthe distractions. After yelling to theAuxiliary, I looked up just in time to seea small boat come out of the Haulover

submit a sworn and notarized affidavit attesting to the lienagainst the vessel and will be charged by the page for the sub-mission.

If the affidavit fails to accurately include specific infor-mation required by the Coast Guard, the affidavit will be sentback for re-filing and further payment with all previous feesretained by the Coast Guard. Note: The Coast Guard does notoffer a template for this affidavit, but does offer some guide-lines on its website.

•Finally, if the filed affidavit proves to be fraudulent, orthe underlying lien improper, the submitting lienholder maybe subject to some severe federal penalties.

Remember, the recording of a maritime lien is not aguarantee of future payment. But it does put the owner andother recorded lienholders (such as a bank) on notice that

Marina canal and cut right in front of me.I gave one short blast, indicating that I was leaving

them to port. In some navigational guides this apparentlymeans “hello,” as all the passengers waved to me.

The following morning, thinking that I may havemissed something in “Chapman’s,” I called the U.S. CoastGuard Sector Miami. I spoke with Lt. Paul Steiner, whoproved receptive to my comments and concerns. He didconfirm that I am not expected to travel outside themarked channel or run on one engine.

I told Lt. Steiner I would include any words of nauti-cal wisdom he may have in my article. However, I did notreceive any comments before going to press.

other liens now exist on the vessel and are subject to pay-ment. It is most effective as a tool when the owners are con-sidering putting the vessel up for sale.

Many lienholders find the affidavit preparation processtime consuming and a bit daunting, and are prepared to paya maritime legal professional to carry through with the work.

Those who want to save money on the process by doing it themselves can refer to the Coast Guard’s National Vessel Documentation website at:www.uscg.mil/hq/g-m/vdoc/nvdc.htm for guidance.

Hopefully, such tools may help some maritime business-es in wading through the present recession.

In the meantime, keep an eye out for hungry orcas. Mark Ercolin is a maritime attorney based in Fort

Lauderdale. The information offered in this column issummary in nature and should not applied to specificcases or situations.

hauled up a giant squid, 19.5 feet long, from 1,500 feet down? The ship cruises the Gulf of Mexico for the Southeast

Fisheries Science Center, from its homeport at (speaking ofspelling) Pascagoula, Miss. It was on a summer voyage, seeking info about what whales eat.

That required a trawling rig, dragged at depths too greatfor rod and reel fishing.

Scientists already knew that whales eat giant squid, because they’ve found pieces of the species in the gullets ofsperm whales from the Gulf. Enough was known about thegiants to satisfy a layman’s curiosity but not a scientist’s.

Just about all they knew was reported in Richard Ellis’322-page book, “The Search for the Giant Squid,” publishedin 1998. If you know scientists, you can guess that theyguess there must be at least another 322 pages worth of info, not yet discovered.

Even though the scientists on the Gordon Gunter sort ofknew they’d have to trawl at 1,500 feet to net a giant squid, that’s not exactly what they were after, according to theNational Marine Fisheries Service.

They wanted to know whatever whale prey could befound way down there. The elusive giant squid was ahappy surprise.

Here’s Anthony Martinez, the chief scientist on the voy-age: “As the trawl net rose out of the water, I could see that wehad something big in there…really big. We knew there was aremote possibility of encountering a giant squid on this cruisebut it was not something we were realistically expecting.”

If you do much bottom fishing on deep reefs, you knowthat anything hauled up in a hurry is going to be gas-inflatedand suffering something like the bends. Although technicallya live catch, our giant squid was as good as dead by the timeit came aboard.

The scientists stretched it out on deck, measured it at 19and-a-half feet and piled it on a scale: 103 pounds.

As a sporting tackle angler, you’re probably thinkingthat’s an awful lot of bait. As a seafood consumer, you’reprobably thinking it’s an awful lot of calamari.

Theoretically true, but people who’ve tasted giant squidfound it awful, with a strong smell and taste of ammonia.Scientific investigators determined that’s because giant squidcontains — uh-oh — a lot of ammonium chloride.

Nevertheless, the catch was something to celebratebecause the only other whole giant squid found in the Gulf,in 1954, was floating dead on the surface.

Elsewhere, squid grow even bigger than the Gulf giant. One kind is called colossal, like a half-ton 33-footer caughtin 2007 by an Australian longline fishing boat on the RossSea off the coast of Antarctica.

Ours has been shipped to the Smithsonian NationalMuseum for Natural History, where it’s being examined.Maybe some day they’ll hang it from a low ceiling whereeveryone can see it up close.

It was caught in July, but its capture was not made pub-lic until September. The scientists were still so excited aboutit that they forgot to mention what other whale bait, if any, they found in the depths.

• • • • •We’re a little afraid of this story because it’s about You

Know What, but here goes.

It concerns the feminization of male fish, especially thelargemouth bass, Florida’s signature freshwater gamefish.

Government scientists (them again!) report that 60 percentof male bass they examined from the Apalachicola River atBlountstown, Fla., were intersex fish, meaning their male youknow whats contained some female you know whats, or YKW.

The scientists also found male YKW in female fish, although that was less prevalent.

According to researchers of the U.S. Geological Survey, the largemouth bass intersex phenomenon is most prevalentin the southeastern states. It reaches cross-country andincludes the smallmouth bass.

The greatest concentration of feminized male large-mouth was found in the Pee Dee River basin in SouthCarolina — as high as 91 percent of the fish examined atBucksport, S.C.

The Apalachicola’s 60 percent is second highest.Concentrations from 30 to 50 percent were found inGeorgia’s Savannah, Chattahoochee and Flint rivers.

To lesser extents, the same thing is going on in theColorado, Rio Grande, Mississippi and Mobile River basins, plus other locations in Texas and Colorado.

Intersex smallmouth bass were found in the rivers ofMinnesota, Idaho, Colorado and Oregon.

Scientific publications asked other scientists what thecause could be.

You know what they suspect? Endocrine-disrupterchemicals from human sources. You know what those are?Birth control pills.

Will somebody please tell the rustics, especially inBlountstown and Bucksport, about stuff they mustn’t toss inthe creek?

“It's definitely for someone who lives in an areawhere they take a lot of short trips; they want to haul somestuff, but someone who has excess cash,” said Mooney.“This is a style statement.”

Fitness bikes: An evolution from the hybrid bike —a cross between a road bike and a mountain bike, whichwas “too cumbersome for true fitness riding,” saidMooney. (Fitness bikes are sometimes referred to as flat-bar road bikes.)

Mooney said hybrids were too slow and too uprightfor riding on roads and recreational paths, and were notrugged enough for riding on dirt trails.

“It's much faster than a mountain bike, so you still geta little bit of a speed thrill, but it's not like driving aFerrari,” she said.

A fitness bike is for someone who is getting intocycling to lose weight or get in shape but doesn't want tobe Lance Armstrong, she said. Maybe someone whowants to take her spinning class outside.

Popular models include the Jamis AllegroSeries and the Specialized Sirrus.

Pedal-assist electric bikes: A bikewith a boost. Pedal-assist bikes combinebattery power with pedaling so you can ride

farther and faster without getting as tired. It's an ideal bike for someone who rides

for transportation, as opposed to fitness, andwhen the distance is far, the ter-

rain difficult or the ridershort on endurance.

to charge. You plug itinto a regular wall outlet. The harder you pedal

the more the motor kicks in, as ifsensing you are in a rush, said Andrew Juskaitis of manu-facturer Giant Bicycle, Inc., in Newbury Park, Calif.

Eco design bikes: Bike manufacturers are comingout with eco-friendly bikes. For example, Trek's Bellevilleand Atwood models have grips on the handlebars, a sad-dle and a steel frame that all can be recycled. The bikes

Bicycle technology doesn't stand still.Bike makers keep tinkering to give us a smoother,

more convenient, more stylish ride: bikes long enough tocarry another passenger and groceries. Bikes with batter-ies so you don't have to break a sweat. Aerodynamic bikeswith little wind resistance.

“In the bike world, there have alwaysbeen a bunch of trends going on atonce,” said Loren Mooney, editor-in-chief of Bicycling magazine.“It's because a bikeis such a multipur-pose tool. It's a toy. It's a piece of exer-cise equipment. It's a mode oftransportation. And so really it'svery common tohave many trendsat once.”

Some bike trends on the horizon:

Stylish utility bike: The biggest trend is casual cityriding, said Mooney, “where the person doesn't look like aspandex-clad cyclist, but rather like a normal person. Andhis or her bike looks like a cool, often retro object ofdesign and casual fun — maybe it even has a basket.”

Take the Globe Live, a lightweight utility bike thathas “a lot of sophisticated technology” in a retro package, she said. Hence the $1,550 price tag. It has multiplespeeds, a belt drive instead of a chain drive (which meansno grease on your legs), and disc brakes. The retro fea-tures are the thin tubes, old European-style handlebars andthe basket on the front.

Finally, the pumpkin cake can be sim-ply decorated with a dusting of powderedsugar or a light frosting that does not addadditional fat and calories.

For a fancier finish, you can make a glazeby whisking together 2 tablespoons of orangejuice, 1/2 teaspoon of orange zest and 1-1/4 to1-1/2 cups of powdered sugar. Drizzle theglaze over the cake just before serving.

BY JIM ROMANOFFFor The Associated Press

A slice of cake is always a pleasure, but it doesn't have to be a guilty one.

When baking cakes, there are a fewthings you can do to give most recipes ahealthy makeover. This pumpkin-cranber-ry spice cake, for instance, is an indulgentbut healthy treat that uses tricks easilyapplied to other recipes.

First, half of the all-purpose flour isreplaced with white whole-wheat flour, which significantly increases the cake'swhole grain count without adding theastringent flavors some people associatewith more conventional whole wheat.

White whole-wheat flour has the samenutrition as standard whole-wheat flour, but with a lighter color and milder flavor. It's milled from a hard white winter wheatberry, rather than the hard red spring wheatberry of traditional whole-wheat flours.

Like standard whole-wheat flour, white whole wheat requires additionalmoisture and some recipes intended forall-purpose flour will require some adjust-ments if making a substitution.

Second, canned pumpkin puree doesdouble duty by providing a classic flavorand replacing all but 1/3 cup of the oil. This combination keeps the cake moist andtender, while keeping down the fat.

For many cake and quick breadrecipes, especially richly flavored onessuch as chocolate and gingerbread, youalso can use fruit purees to replace up tothree-quarters of the fat.

Apple butter or prune puree (which isavailable commercially in cans as prune orplum pie filling) work best because theyadd plenty of moisture and contain pectin, which like fat coats the starchy flour parti-

Heat the oven to 350˚ F. Coat a largeBundt pan with cooking spray or brushwith oil. Add a small amount of granulatedsugar and turn the pan to coat the inside, discarding any excess.

In a medium bowl, stir together bothflours, the cinnamon, ginger, allspice, nutmeg, baking powder, baking sodaand salt.

In a large bowl, combine the sugar, oil, eggs and vanilla. Beat with an electricmixer on high until the mixture is thickand pale, about 3 minutes. Add the pump-kin, orange zest and juice, and water. Beaton low until smooth.

Sift the dry ingredients on top of thepumpkin mixture and stir just until com-bined. Stir in the cranberries.

Using a rubber spatula, scrape the bat-ter into the prepared pan, smoothing thetop. Bake for 40 to 50 minutes, or until askewer inserted at the center comes outclean. Turn the cake out onto a wire rack tocool completely.

Bikes offer styles for use in everyday life

also come with front and rear lights that are generated bypedaling, not batteries, said Trek spokesman Sam Foos.

“It's a more upright style with a wider saddle, so it'smore comfortable, to encourage people to use their bikemore often,” he said.

Folding bikes: These have been around for years butthe technology is getting better. Traditional folding bikes, which have small wheels, were better for folding than rid-ing, said David Montague, owner of Montague Bicycles inCambridge, Mass. The company introduced SwissBikeTX earlier this year, a full-size bike that folds in half.

“It really rides very nicely and you can throw it on a

bus, or in the trunk of a cab,” said Montague. “When youget to your office, it fits underneath your desk. ... Thewhole folding system takes about 10 seconds.”

Xtracycle: a kit that makes a bike 15 inches longer soyou can carry a passenger, groceries, books. Some peopleuse it to carry camping gear, said Nate Byerley, president ofXtracycle, in Oakland, Calif. He said he knows a homeinspector who uses his Xtracycle to carry equipment includ-ing a 10-foot ladder.

“Competitive cycling has been traditionally dominat-ed by men,” he said. “And what we're finding is when youstart offering a product that's about day-to-day living andcarrying groceries, you're offering a product that speaks tomoms and dads.”

Xtracycle also has complete bike models.

Aerodynamic road bikes: (High-End): Bikes arealready very light, but they can be made faster with aero-dynamics, said Mooney. On these road bikes, the downtube and seat tube are shaped to reduce drag. Examplesinclude Ridley Noah, which the company claims is thefastest bike on the planet, Cervelo S3 and Felt A2.

The speed comes at a price. A complete Ridley Noahstarts at around $5,000. (The frame is $3,450.)

“This is for someone who has a lot of money to spend, someone who is very serious about cycling who maybe wantsto race, and is looking for every advantage,” said Mooney.

BIKES FROM P. 13.

A fitness bike is for someone who is getting into cycling to loseweight or get in shape but doesn't

want to be Lance Armstrong.
