Lightly butter a large, shallow baking dish. In a small bowl, combine first 4 ingredients. With a paper towel, pat fish lightly to dry. Arrange fish fillets in prepared baking dish. Spread mustard mixture over each fillet. Sprinkle each fillet with chopped pecans; press down gently. Bake in a preheated 350° oven for 12 to 15 minutes, until fish flakes easily with a fork.

When selecting sweet potatoes, it is important that they are firm to the touch and no signs of decay. For even cooking, choose sweet potatoes that are uniform in shape. Avoid storing sweet potatoes in the refrigerator, which will produce a hard center and unpleasant taste. Instead, store your sweet potatoes in a cool, dry, well ventilated container, like a basket, for up to two weeks.

Sweet Potatoes

Ingredients: 1/2 cup packed brown sugar

1/3 cup broken cashews

1/2 tsp. salt, optional

1/2 tsp. ground cinnamon

1 - 8 oz. can peach slices, well drained

3 tbsp. butter or margarine

2 lbs. sweet potatoes (5 or 6 medium), cooked, peeled, and cut crosswise into thick pieces

*You can also use a large can of canned yams in place of the cooked sweet potatoes.

Directions: Combine brown sugar, cashews, salt, if including, and cinnamon.

In a 10"x6"x2" baking dish layer half the sweet potatoes, half the peach slices, and half the brown sugar mix-ture. Repeat the layers. Dot with butter or margarine. Bake covered at 350º for 30 minutes. Uncover and bake about 10 minutes longer. Spoon brown sugar syrup mixture over before serving.

Sweet Potato Cashew Bake

When eaten with the skin on, a medium sweet potato has four times the recommended daily intake for beta carotene! Beta carotene is a precursor to vitamin A, meaning the body coverts it to vitamin A and it plays a vital role in vision, bone development and immune function. Vitamin A is a fat soluble vitamin, so be sure to eat your sweet potato with a little bit of fat, like a pat of butter, for maximum vitamin absorp-tion. Like citrus, sweet potatoes are a good source of vitamin C, which helps fight infections, heal wounds and absorb iron. A medium sweet potato provides 35 percent of your daily recommended amount of vita-min C.

Sweet potatoes are a good source of manganese, which helps maintain normal blood sugar levels and opti-mal thyroid function.

Sweet potatoes are rich in fiber, a nutrient that bulks up food, keeping you full longer. Fiber also keeps your bowels healthy and lowers cholesterol. A medium sweet potato baked in its skin has 4 grams of fiber, more than a packet of instant oatmeal.

THIN SPAGHETTI WITH PORK CHOPS

16 oz. thin spaghetti

¼ cup olive oil

¼ cup red onion – chopped

2 cloves garlic – minced

1 tablespoon fresh parsley – chopped or 1 teaspoon dried

1 can (14 oz.) stewed tomatoes

4 pork loin chops

1 cup flour

½ cup white wine or water

1 jar (32 oz.) marinara sauce

salt & pepper to taste

½ cup freshly grated parmesan cheese

DIRECTIONS

Heat oil in frying pan over medium heat. Cook onions, garlic and parsley 5 minutes. Break up tomatoes and add to pan. Coat pork chips with flour and cook 5 minutes on each side. Pour in wine or water let evaporate. Add marinara sauce, season with salt and pepper, and cook covered for 30 minutes. Meanwhile, cook pasta according to package instruc-tions; drain, and portion into individual bowls. Placed one pork chop on top of pasta mound, and ladle sauce over it. Top with parmesan and serve.

Directions

Preheat oven to 350°F and transfer stuffing into a small baking dish. Place dish in oven and reheat 12 to 15 minutes, until warmed through.

Heat a pot over moderate heat and add extra-virgin olive oil. Work close to the stove and add vegetables as you chop. If you are using fresh carrots, cut them into a small dice or slice thin. If you are using leftover baby carrots, cut carrots into bite-size pieces. Add celery and onion and lightly season vegetables with salt and pepper. Add bay leaf and stock and bring liquid to a boil by raising heat. Add turkey and reduce heat to simmer. Simmer until any raw vegetables are cooked until tender, about 10 minutes. Stir in the parsley, and peas, if using.

Remove stuffing from oven. Using an ice cream scoop, place a healthy scoop of stuffing in the center of a soup bowl. La-dle soup around stuffing ball. Your soup will look like a chunky matzo ball soup. Pull spoonfuls of stuffing away as you eat through your bowl of soup.
