Souliotis family were the first in Greece to create a business of ready meals, canning the family’s specialty ‘Dolmadakia’ (Stuffed Vine leaves). The unique recipe laid the cornerstone of what later became a leading company and the number one producer and exporter of ‘Dolma’ worldwide. Palirria’s affiliate, Heze Palexpo Food Company Ltd., produces quality food for the local and the global markets in a modern facility of 12.000 m2 on 45.000m2 of land under the strictest quality and hygiene standards -certified with ISO 9001:2008, ISO 22000:2005- HACCP: CAC/RCP1-1969, REV.4-2003. The factory’s management and well trained personnel of up to 350 people respect Palirria’s credo for quality food that preserves the authentic greek and mediterranean recipes. Making the best of our 55 year experience in using technology and the finest ingredients to ensure the originality of taste for traditional food products such as “dolma”, the company cultivates, collects and processes organically grown Sultanina Variety Vine Leaves in the Xinjiang province of China. In a modern and well equipped 10.000m2 facility the unique «hot brine» process method is used to produce fresh, tender and tasty Organic Vine Leaves. In the same fashion other Mediterranean varieties of herbs needed for our recipes are also cultivated on company’s land in the area.

Hector Botrini, 44, was born in the island of Corfu, Greece, to a family of cooks. His Italian father, a chef himself, became his tutor for years in various MED clubs around the globe. They also worked together in the «Etrusco», a multi-awarded and widely acclaimed restaurant they own in Corfu. Hector studied in Switzerland, in Monaco (Louis XV-Alain Ducasse), in Spain (Sole graels seminars) and was affiliated with the 3-star chef, Martin Berasategui -a friend and a great source of inspiration.

Chef Hector Botrini is a radiant, open-hearted individual, he speaks five languages and loves to try new things. Besides orchestrating the kitchen of «Etrusco» at Corfu, he made a career helping with the menus and consulting many restaurants in Greece. He also stars in the humorous TV series «Kitchen Nightmares» (Alpha broadcasting channel) and works with Lays.

After a short period of familiarizing himself with the R&D and Quality Control procedures at Palirria, chef Botrini started recently working with our people on some new ideas for tasty meals. He is also very much interested in reviving traditional recipes and adjusting them to suit the needs of a younger audience worldwide. As a Greek-Italian, the chef can really appreciate our mediterranean attitude -pure and healthy natural ingredients, tradition-proved recipes and the joy of the simple things in life.

This attitude paired with the long experience of Palirria in producing on industrial scale, forms the foundation for really appetizing results. We are more than confident that chef Botrini will add new flavours to Palirria’s tradition of turning the best of the Mediterranean food values into quality food products.

Palirria’s presence in the International Food Exhibitions has been always a strongtool for presenting new product lines and industrial capabilities. Anuga & Gulfood 2011 & Sial 2012 gave us the opportunity to meet important distributors who eventually turned their positive impressions into solid business. In Paris, both of our 2 stands had numbers of visitors who enjoyed the taste of our ready meals and appreciated their potential as profitable products.

From an idea to Halal CertificationIn Dubai 2012 the participation has been equally rewarding and gave us new leads for exports and the development of new products. Especially interesting was the challenge for Halal certified food products. We familiarized our production team with the spirit and specifications of Halal and made the necessary preparations to acquire the certifications needed. In this way our Ready to Eat meals, like the world famous Moussakas, will soon be cherished by customers in Gulf countries and the authentic Taste of Mediterranean will appeal to more people around the globe.

Bringing top quality food to the world Relying on strong collaborations with respectable distributors, Palirria is today the key representative of Traditional Greek Ready Meals in more than 40 countries in all 5 continents. Recently we launched our traditional products in the Brazilian and Mexican S/M market with really encouraging results. Other new markets like the Czech Republic, Albania, Serbia or Jordan are also very promising. In the last two countries our Export Director and our Area Export Manager had fruitful negotiations and the first shipments are under way.

Ethnic Food the name of the game!Everyone in Palirria aspires to and strives for a wider international presence. Even in these times of unstable economic circumstances worldwide, we keep implementing our strategies to se-cure profitability while keeping the higher pos-sible standards of quality. In their core lies the strength of fine Mediterranean food.

Ethnic food becomes more and more popular as consumers in different countries appreciate the diversity and qualities of foreign food cultures. The reputation of greek tasty and healthy cuisine as typically Mediterranean appeals to foodies everywhere. It is a trend that Palirria is perfectly able to cater for. Hence the positive outcome of programs like the following:

> In the USA and Canada we present our brands to selected retailers and food service operators. Palirria’s tasty products are no strangers to the North America’s customers. With better market-ing we hope that they will soon enjoy the full range of them. The feedback we get feeds our optimism for further increasing exports to these countries.

> UK’s market is already familiar with some of our traditional products. With our new local partner we opt for a leap forward. We recently signed a deal with the country’s leading import-er and distributor of ambient food, R.H. Amar & Co. Ltd. as our sole distributor in the U.K. The company handles more than 40 brands of qual-ity food across a dozen ambient categories in major supermarkets, cash and carry, wholesale groups, independent retailers, delicatessen, food halls and farm shops.

> China, one of the world’s largest food markets, emerges as a natural target for Palirria. We op-erate a factory there [see article on the left page] and we now prepare our participation in two big international exhibitions, the 16th FHC China and the Sial China 2013, to promote our brands and our industrial capabilities. During 2013, a team of marketing experts will be sent to moni-tor national trends and prospect clients for our products.

Our headquarters in Greece In 1957, in a small village of Evia island called Politika, a privately owned business under the personal guidance of Antonis Souliotis was founded. It is a primary purpose was the production and distribution of traditional ready meals, initially in the Greek market and later on internationally. The company was named PALIRRIA, by the Greek word ‘Palirria’ meaning the phenomenon of flood and tide, and remained a personal business until 1982, when it took a corporate form with the participation of Antonis Souliotis’ sons Konstantinos and Vasilios, giving Palirria a new dynamic that helped the companygrow to a leading position in Greek and international markets.From 2000 to 2008, Palirria expanded beyond the borders ofGreece and established two advanced, fully operational factoryunits, one in Bulgaria and one in China.Today, after more than half a century of dynamic presence, thecompany is the leading producer of Greek Ready Meals, exportingits products in more than 40 countries worldwide and keeps being committed to quality with the same perseverance and loyalty.

Perseverance to qualityIn Palirria’s Quality Assurance Departmentthere is a strong credo for safeguarding the hygiene and safety standards of our products through every stage of their production and distribution.

For many years now we strictly conform to International FoodIndustry Standards ISO 9001, ISO 22000, IFS- Higher level & BRCGrade A. We monitor the flow of new trends and regulations and respond with new techniques and procedures of quality control at every stage of the production cycle. The Department performs tests on a daily basis to ensure full conformity to clients’ specifications and to the national regulations of each country our products are exported to.In 2011, due to our exports to USA, we were successfully auditedby the U.S. Food and Drug Administration (FDA) in the category ofAcidified /Low Acid Food. Distinction on Palirria Bulgaria S.A.Sliven County governor acknowledged the companies with the highest contri-bution to the economical development of the region. The selection has been made on the basis of the financial re-sults of the companies for the year

2011. The major parameters were net profit, number of workers, production capacity, volume of exported production and amount of investment. According to the selection, Palirria Bulgaria S.A. has tak-en the fifth place out of the whole region and the first place amongst the Food and Beverage Production companies.
