I enjoy traveling, reading, cooking, doing puzzles and gardening with my grandmother. • 4 (3 to 4-ounce) hamburger patties, about 1/2-inch thick• Salt and pepper• Caramelized Onions (see below for recipie)• 8 ounces grated, smoked gouda cheese• Barbecue Sauce (see below for recipie)• 8 slices Texas toast or thick-cut white bread, toasted

Preheat the griddle. Preheat the fryer. Season the patties with salt and pepper. Place the patties on the hot griddle and cook for 3 to 4 minutes, flip the patties over and continue to cook. Add the onions to the griddle and saute for 2 to 3 minutes or until warmed through. Season the onions with salt and pepper.

During the last couple of minutes of cooking, place 2 ounces of cheese on each patty. After the cheese has melted remove the patties from the griddle and set aside. Top each patty with the sauteed onions. Oil both sides of the bread and place on the griddle. Cook the bread for 1 to 2 minutes on each side or until toasted. Remove the bread from the griddle and place the patties on one piece of the toast, add a little barbecue sauceto each and top with remaining piece of toast .

• 1 cup ketchup• 6 tablespoons apple cider vinegar• 1/4 cup cola beverage• 2 tablespoons Worcestershire sauce• 1 tablespoon cane syrup• 1 teaspoon chopped garlic• 1/2 teaspoon finely grated onion• 1/4 teaspoon ground ginger• 3 tablespoons dark brown sugar• 1/4 teaspoon salt

Place ketchup, vinegar, cola, Worcestershire, cane syrup, garlic, onion, ginger, dark brown sugar, and salt in a blender or food processor and blend on low until mixture is combined. Set aside to use with short ribs. Sauce may be made up to 1 week in advance and refrigerated in an airtight, non-reactive container.

Barbecue Sauce

• 4 tablespoons unsalted butter• 1 pound yellow onions, peeled and

very thinly sliced (4 cups)

Melt the butter in a large saute pan over medium-high heat. Add the onions and lower the heat to medium-low. Cook slowly, stirring occasionally, until golden brown and caramelized, 45 minutes to 1 hour.
