My menus and dishes are a l l c reated f rom local ly sourced produce, and most ly f rom The E lephant ’s dedicated farm. We grow al l our own vegetables and f ru i t s and have our own l ives tock of pigs, tu rkeys, sheep, bantams and lambs. This means that our ingredients are ent i re ly seasonal.

I work my dishes around what i s in season. To complement the natura l presenta t ion I love to use s ty l i sh pot ter y shapes and ar t i sanal colours, par t icu lar ly the Craf t range in a lus t rous brown glaze, to complement my natura l p la t ing s ty le.

Cus tomers want an exper ience they can’t create themselves and I a lways enjoy leaving them wi th a las t ing impress ion.

tableware is an ingrained par t of the din ing exper ienceChoosing the r igh t tableware is crucia l , as i t i s the f i r s t th ing that diners not ice. I t can ins tant ly l i f t a table and se t the tone for the res t of the meal. I t should also be hardwear ing and wel l balanced, so wai t ing s taf f can manage dish t rans fers to the table.

The ru les are more re laxed on tableware t rends - in fac t there are no ru les. I am al l for mix ing i t up wi th di f fe ren t shapes and colours to create a natura l and ear thy fee l , l ike my dishes.

I was born and bred in S toke -on -Tren t and I am ver y proud of my fami ly ’s ‘Pot ter ies ’ or ig ins. My fa ther, Roger, was a chef there and that was how my pass ion for food s tar ted.

I began enter ing compet i t ions at the age of 16. Winning the Roux Scholarsh ip was great for my career and indus t r y recogni t ion and I a lso won Wor ld Junior Chef and was

the UK’s Bocuse d’Or candidate. Get t ing a Michel in s tar for The E lephant Res taurant in 2006, which we s t i l l have, was the ic ing on the cake.

I am del ighted to be work ing wi th S tee l i te and use a range of thei r products in both my res taurant and brasser ie. The tableware is of the highes t qual i ty and does not lose i t s appearance.

Each piece of Craft White is individually hand decorated, so no two pieces will be the same. Further magic happens in the kiln as the glaze reacts to produce beautiful and random textured effects.
