Resisting this wedding cake will be futile. BY PAUL BLAIR
Amanda Adams, owner of The Sugarplum Cake Shoppe, is known for her stellar baking skills. Cnet.com recently reported on her masterpiece “Star Trek” wedding cake. Instead of just slapping some plastic decorations on a cake, she went to a new level of originality, faithfully recreating an authentic Borg cube spaceship. With the Starship Enterprise flying low over the black and green icing and the addition of working LED lights, this wed-ding cake is truly out of this world. Check out the cube cake online at news.cnet.com, or use this URL to go directly to the article: http://tinyurl.com/8g4e4ah

The World War II Memorial in Washington, D.C., unveiled in May 2004, was constructed to honor the sacrifices that so many brave men and women made for our country. This war lives in recent memory as one of the most personally frightening, hitting close to home and threatening our society and our culture.
For many people, a trip to Washing-ton would be a vacation, something to be undertaken in free time and for pleasure. WWII veterans are of an age where travel has become increasingly difficult, and many may never have the opportu-nity to visit this memorial that means so much, that was built in recognition of them and their work. Honor Flight Net-work is working to ensure that all veterans have the chance to visit their memorials, and they’re starting with World War II survivors.
History
As an idea, the Honor Flight Network began in late 2004 in rural Ohio, when Earl Morse, a physician assistant and private pilot, asked some of his WWII veteran patients whether they would visit “their” memorial. For many, it was an unlikely dream. When he asked one veteran after another whether each would like to go with Morse, the response was overwhelmingly positive. Morse brought the idea to his aero club, with the caveat that each pilot must pay for his own plane rental, which would cost between $600 and $1200 for the day. Eleven pilots volunteered, none of whom had ever met the patients.
The first flight took off in May 2005, with six small planes and 12 ecstatic veterans. The experience meant as much to the pilots as to the veterans, and Honor Flight was born. Subsequently, commercial aircraft were used to accommodate the hundreds of veterans
on the waiting lists and to better deal with medical requirements, such as wheelchairs, and weather that might ground a smaller plane.
Since 2005, Honor Flight has partnered with airlines and commu-
nity leaders throughout the United States. The non-profit organization has expanded to 121 chapters, or “hubs,” in 41 states. Colorado proudly hosts three: Northern Colo-rado, based in Ault; Rocky Mountain, based in Denver; and our very own Honor Flight of Southern Colo-rado, based here in Colorado Springs.
Statistically, around 800 WWII veterans die every day, and while more than 99,000 have benefited from Honor Flight’s work, there are many more who have not had an
opportunity to see their memorial firsthand. The focus right now is to help those veterans, as well as terminally ill veterans of other wars, travel to Washington and receive the recognition that is their due.
The goal is simple: to help “every single veteran in America, willing and able of getting on a plane or a bus, visit THEIR memorial.” Looking to the future, Honor Flight Network hopes to serve more veterans, including those of the Korean, Vietnam, and more

recent wars. These heroes have given so much and have asked for so little, and now it is our turn to take care of them as they have taken care of us.
Honor Flight of So. Colorado
In February 2011, a meeting was held at Peak Grill to discuss the possibility of opening a hub in Southern Colorado. In attendance was Lana Fore-Warkocz, who went at the urging of her father, and Sal Ingraldi, President of Honor Flight.
First Lieutenant James Fore proudly served in the Army Air Corps during World War II, even surviving time as a prisoner of war in a German concentration camp. He was enthusiastic about the project, and he supported his daughter as she went on to become the Vice President of the chapter’s executive board. Yet just days after that inaugural meeting, Fore was diagnosed with stage-four lung cancer, and he died a few short weeks later. For his funeral, he asked that donations be made to the organiza-tion in lieu of flowers.
In June 2012, just one year after the first conversations had begun, the Honor Flight of Southern Colorado made

“If you follow your bliss, you put yourself on a kind of track that has been there all the while, waiting for you, and the life that you ought to be living is the one you are living. Wherever you are—if you are following your bliss, you are enjoying that refreshment, that life within you, all the time.” –Joseph Campbell
Excitement was in the air as my husband and I boarded the plane to Florida – a week on Sanibel Island! It had been two years since we had an actual vacation. Yes, we made trips together to graduations and family gatherings; but an actual cottage by the sea? It brought joy to our hearts.
Sanibel Island is called the “shell capital of the world.” Because the island is a North/South Barrier Reef, the Gulf of Mexico washes shells onto the beach daily. We arrived after dark, happily paying the $6 toll to cross a bridge over waters we couldn’t see. With perfect directions from our hosts, we checked in, unpacked, and went to sleep.
The following morning, we awoke to a vision of incomparable beauty: a calm, smooth bay of water out one side of our cottage, the roaring Gulf of Mexico out the other side! Putting on our shorts and beach shoes, grabbing a cup of coffee, off to the shore we went. A few other “shellers” were already stooped over pick-ing through the day’s offerings. We encountered a couple who were spending their last morning on the beach. They spoke of their week on the island and their reluctance to head home.
Bliss: An emotional state that is characterized by perfect happiness – feelings of enjoyment, pleasure, and satisfaction.
Filling our pockets with shells (and a bit of sand), we headed back for breakfast and a walk around. Our week developed a pattern of coffee, walks on the beach collecting shells, followed by exploration of shops, an art show, and wine on the beach at sunset. Was I fol-lowing my bliss? Indeed I was!
I have always been drawn to water whether it is the ocean, a lake, a river, or a swimming pool. My personal bliss seems to surface with the presence of water. For the first third of my life, I needed to be in the water – swimming, water skiing, boating, snorkeling. The middle third of my life, I enjoyed being on the water more than in it – boating, cruising, sailing. As I conclude the final third of my life, I appreciate sitting by the water. Pleasure is mine by the sea.
As we packed up on our final day and headed to the airport, we agreed that we had the perfect vacation together. We held hands and smiled. Our contentment in a week well spent, the joy of returning to family and friends, and the excitement of planning our next adventure kept our sandaled toes warm when we stepped off the plane into a blizzard.
Kathy Allen continues to live, work, love and follow her bliss in Colorado Springs. She welcomes your emails at [email protected].

Ask Dr. HallBY DR. ANDREW HALL
Q: What is Periodontal Disease and how can I prevent it?
A: Periodontal (gum) disease is an infection of the tissues surrounding and supporting the teeth. It is a major cause of tooth loss in adults, especially since it is usually pain-less–you may not even know you have it! Gum disease is caused by plaque. The early stage of periodontal disease, gingivitis, can cause gums to become red, swollen and may bleed easily. At this stage, the disease is still revers-ible, usually just with brushing and flossing daily. Peri-odontitis, a more advanced form of gum disease, causes serious damage to the gums and bone supporting your teeth. The best way to prevent gum disease is daily care at home and regular dental checkups.
Q: The last time I had a crown, it took several visits to the dentist. However, your office offers single-visit dental crowns (caps)! How is that possible?
A: In my office, I utilize computer-aided design and manu-facturing CEREC technology to deliver crowns in a single visit. The procedure starts with a digital image of your tooth, then the technology builds your natural-looking, biocompatible ceramic crown in about 90 minutes. The best advantage is there is no need for temporary crowns or return visits, and most dental insurance plans cover the procedure just like it does for any other crown procedure.

Are you covered?BY ANDREA JONES
Basement window wells aren’t just for letting in light. They are required by building codes to serve as emer-gency exits in case of fire and other disasters in any basement below grade. Some homeowners may fail to realize that while window wells are a safety feature from inside the home, they can pose safety risks outside the home if not properly covered.
Open window wells tend to fill up with dead leaves, dirt and debris. Creatures and kiddies alike can fall into open window wells, risking injury or getting trapped. Unsecured windows are an easy access point for bur-glars. And of course, there’s that whole “well” character-istic of collecting water and snow, which may leak into the basement and cause water damage.
So what is a homeowner to do? Colorado’s Finest Win-dow Well Covers are an ideal solution for safety and security. They fit precisely to your window wells, with no gaps or overlaps. They close securely, seal out water, and allow maximum daylight into your basement.
The solution is crystal clear: Call Colorado’s Finest Window Well Covers today!

its first trip to Washington, with 12 veterans and four staff members.
Every trip is memorable for all involved. They begin with departure rallies, and arrangements are made beforehand so the veterans may travel unimpeded through the airport, often amid the cheers of fellow travelers. Schoolchildren write letters that are read during the flight, and when they land in Washing-ton, they are met at the airport by Congressmen. Each trip lasts about three days and includes visits to each memorial on the National Mall as well as a visit to Arlington National Cemetery. The average cost of the trip is $1000 per veteran, but the cost is entirely assumed by the organization.
FutureThe waiting list for the Southern Colorado hub alone gets longer each day that passes, and the third flight will be at the end of this May, while the next flight is tentatively planned for September. Ideally, there would be four full flights per year, but due to the nature of the charity and the availability of funds and volunteers, this remains a goal for the future.
In advance of the third trip, Honor Flight of South-ern Colorado has several activities planned:
May 14, 7:30 p.m.: The Southern Colorado chapter will be showing the film Honor Flight at the Cinemark Tinseltown theater in Colorado Springs.May 19, 12 p.m.: Song Spinners will host lunch and a show at the VFW at 430 East Pikes Peak Avenue in Colorado Springs. Lunch begins at noon, and the Spinners will present at 1 p.m. Tickets are just $10 at the door.
Honor Flight is a federal, nonprofit, 501(c)3 organi-zation. All donations are tax-deductible, and contrib-utors are encouraged to speak with their tax advisors concerning the financial benefits of donating. For more information about your local chapter, see their website at www.HonorFlightSOCO.org or their Facebook page at www.Facebook.com/Hon-orFlightSOCO. ACI Counseling Services first opened their doors in Colorado Springs in 2009 and in Denver in 2010, offering both state licensed and court approved counseling classes, when founder Keith Courlas witnessed families struggling to get assistance from food pantries due to restrictions. He started ACI Counseling to help fulfill the needs of the community, using proceeds from the counseling services to fund American Charities. The mission of American Charities is to assist local families by providing for their immediate need for food and clothing at no charge with-out any questions asked.

The Future of Food, Courtesy of Earthwize BY SCOTT MOORE
We are very excited to offer people the opportunity to take responsibility for their health and food security, by providing turn-key aquaponics solutions. Because food and water are quickly becoming our most precious resources, we believe aquaponics will become of the most transfor-mational and multiple impact businesses, in Colorado and around the world, over the next few decades. We actually are able to not only help change people’s lives by allow-ing access to completely natural and fresh foods, but we also assist in conserving and utilizing 90% less water in the process. We focus on people in Colorado who desire to be more proactive in what they eat, but we also are able to build systems to address the growing hunger issue all over the world. So far, we have built systems in Thailand and Tanzania, and within months we will be building systems in Guatemala and Kenya. We currently field inquiries from all over the globe.
Aquaponics is a truly “disruptive technology” because it conserves so much water and is the most effective way there is to grow food in an urban setting. As we become more urbanized, with population centers growing rapidly in Colorado and around the world, these city centers espe-cially will continue to need more and more food and water. The population of Colorado is projected to grow by some 5 million people over the next 50 years, 4 million of those people in the Front Range cities. With our soil being less than productive and water shortages already a big con-cern, food and water problems are not going to go away.
Aquaponics addresses those needs in that it is decentral-ized, self-replicating, peer-to-peer food production system that vastly out-performs conventional agriculture, and unlike hydroponics, requires no chemical inputs. Aquapon-ics allows people to grow their own food and medicine, creating more self-reliance and reducing the need to go to the grocery store. A person can grow thousands of dol-lars’ worth of fresh vegetables, herbs and fruits in a small amount of space because the grow beds are 200-300% more space-efficient than conventional farming methods. On top of that, there is no tilling, weeding or watering. I refer to it as the future of farming, or “farming for dum-mies” (mainly because I was thrown out of a co-op veg-etable garden a few years back for not going every day to weed and water, but even I can handle aquaponics).
On top of all that, aquaponics produces healthy, edible fish (usually Tilapia) without the heavy metal contamination often found in ocean fish or farmed fish. We have devel-oped an inside system that can feed a few small families, but most of our systems are in greenhouses. Our smaller unit around 100 square feet is able to feed a large family, or a co-op of several smaller families. It is truly the future of renewable agriculture and food technology. As we say in our website, “Natural and organic for better nutrition, improved health and less disease...and lasting wellness.”
We hope people will want to learn more about aquaponics. Join us for a tour of our commercial facility (call for details). We offer free quotes for building systems also.

Tips for Vegetable Gardening from Phelan GardensBY ELIZABETH BEHNKE
A vegetable garden brings so many things to the table—literally! What is better than having a beautiful vegetable garden and being able to actually taste your own success? First of all, if you are determined to start growing your own vegetables, start out with something easy. Carrots, lettuce, squash, tomatoes, cucumbers and even beans are all really great choices for beginner gardeners. April is the perfect month to start planting carrots, lettuce, or even cabbage here in Colorado, but if you haven’t yet, don’t worry! The late winter has bought you a bit more time on April plantings. May is the perfect time to plant tomatoes, cucumbers and squash.
So now that you know what you want to plant, where are you going to plant it? Vegetable gardens can take up a lot of room, so before you begin, make sure you have the space. If you do not have a big enough area in your back-yard, try growing your vegetables in a planter box instead. Using planter boxes for gardening is especially helpful in Colorado. You don’t have to worry about whether or not your plants will make it. With a planter, you can control everything, starting with the soil. For more expert advice, stop by Phelan Gardens today!
Revamp Your Old LawnBY PAUL BLAIR
Are you ready to have the yard that looks great year-round using hardly any water at all? It’s time for Xeri-scaping from “R” Rockyard!
Xeriscaping, or water-wise landscaping, uses low-water and desert plants to create a landscape that’s sustain-able in Colorado’s semi-arid climate. It can be far more visually impactful than just your grass alone and it uses a fraction of the water needed by grass and shrubs.
Xeriscape is a combination of the word “landscape” and the Greek word “xeros,” which means dry. If designed properly, Xeriscapes can be lush, colorful and easy to care for. The Xeriscape concept is based on seven principles: planning and designing, limiting turf areas, selecting and zoning plants appropriately, improving soil, using mulch, irrigating efficiently and maintaining the landscape.
With over 25 years of service “R” Rock Yard, Inc. is your one-stop-shop for all your garden and landscaping sup-plies to Xeriscape your lawn. We offer everything from expert advice to delivery of all your supply needs. Our goal is to provide excellent customer service along with the best quality products.
