On behalf of the membership of the Mississippi Valley Angus Association I welcome you to join us for our 21st anniversary sale. This year the breeders you have come to know have dug deep into their operations to offer the cattle you will find within this catalog. I’m excited to be able to include many new members to the organization with some past customers returning as consigning members. Throughout this catalog you are going to find a representative spread of cattle from all walks of the pasture. There are some strong yearling heifers, bred females and pairs, experienced productive females, as well as, several powerful bulls to start off the sale. All of the cattle in the sale are brought together through AI and home raised genetics blended by hardworking folks like you who want quality cattle in their pastures. As you review our offerings, please note the many advertisers that continue to support our organization as well as supplying those goods and services we need in our area.

Steak and Spinach Pinwheels 8 slices bacon 1 - 1 to 1 1/2-pound beef flank steak or beef top round steak 1 - 10-ounce package frozen chopped spinach, thawed and well drained 1/3 cup grated Parmesan cheese

Cook bacon till just done but not crisp. Drain on paper towels. Score steak by mak ing shallow cuts at l-inch intervals diagonally across steak in a diamond pattern. Repeat on second side. With a meat mallet, pound steak into a 12x8-inch rectangle, working from center to edges. Sprinkle with salt and pepper. Arrange bacon lengthwise on steak. Spread spinach over bacon. Sprinkle with Par mesan cheese. Roll up from a short side. Secure with wooden picks at l-inch intervals,starting 1/2 inch from one end. Cut between picks into eight l-inch slices. Place, cut side down, on the unheated rack of a broiler pan. Broil 3 inches from the heat for 6 minutes. Turn broil for 6 to 8 minutes more for medium doneness. Remove picks. May also be grilled to desired doneness.
