Principle
TheRheofermentometerF3enablesanin-depthstudyoftheproofingbehaviorofflourbymeasuringproductionofCO2, volume, porosityandthetoleranceofdoughduringtheproofingprocess.
2typesofcurvesareobtained:
1.Acurveshowingthedevelopmentofthedough:- themaximum development (Hm) achieved by the dough, in relationtothebreadvolume,-thetimerequiredtoobtainthismaximumdevelopment(T1),incloserelationwithyeastactivity,- the maximum relative stabilisation time (T2-T’2), in relation to thedoughtoleranceandtheoptimumtimetostartcooking.
2.Adoublegasreleasecurveindicating:-thetotalquantityofgasproduced(linkedtotheyeastactivityandthequantityofsubstratumavailable),- the quantity of CO2 lost by the dough when proofing. It is directlylinked to the porous nature of the dough,which appearsmore or lessprematurely (Tx) and is closely linked with the quality of the proteinnetwork.
