Mill’s digest
Wood –The character of the mill is determined by the individuality of the wood used an makes the mill uniqueWe use local wood of fruit trees (walnut, cherry, apple, pear, plum), other European wood (maple, birch, oak, olive). Exotic wood like mopane, bocote, macassar, cocobolo, African blackwood, different types of the palisander family
Systems –For pepper and salt we use the systems of PSP-Peugeot to ensure the quality of the grinding gearPSP-Peugeot offers a warranty of 25 years for the systeThe grinders come in different names followed by a number which represents the lenghts of the systemin cm. The grinders frequently used are:Nancy (12, 18, 22, 30), Vittel (16, 23, 30), Clermont (13, 24), Toul (11), Metz (10, Bistro (10)There is also a special grinder for humid salt: Nancy 18FSEven if the systems for pepper and salt look differently, both can be used for a given housing, i.e.,slat can be changed to pepper and vice versa.
The mill’s housing –always consist of three parts in the case of pepper and salt mills: • The body, containing the grinder and the material to be ground. Th a body has an inner diameter of 35 mm (except very special cases), hence allows for plenty of space for the pepper or salt.• The head which operates the grinder • and the base that closes the bottom and avoids ground material to fall on the table cloth.
The surface’s finish is done exclusively with shellack and essential oils. This makes the mill’s elegant gloss and especially its matchless haptics.

The Nutmeg-Mill
Function –Taken precisely, the grinder is not a mill but a grater: to load the mill with a nutmeg you pull the crankagainst the spring, that makes the driving pin to give space to the nutmeg. Let the nutmeg roll into the center of the mill and release the the driving pin. Turn the crank and the pins rotate the nutmegatop the grater.
System –We use the grinder of a Swiss manufacturer called Sonderegger Mechanik. To date we see this grinder as being the best on the market.
The mill’s housing –All characteristics of the housing described for the pepper and salt mills hold true for the Nutmeg mill as well.
