When we renovated the winery, our premise was to maintain the structure and functionality of the

original cellar complementing them with new technology and processing techniques.

Fincas Don Martino achieved an excellent balance between craftsmanship and technological advances, taking maximun care of our grapes, making excellent wines, which is reflected in the glass.

The winery is located in Lujan de Cuyo, in the northern province oasis, watered by the river Mendoza. The “First Zone” or High Zone of Mendoza River is the oldest area of the province’s wine development is known worldwide as the land of Malbec. It builds on one of the oldest streets linking the departments of Maipú and Luján: Terrada.2012: Renovation and modernization of the wine cellar.

The original building was ideally suited to today´s winemaking process. The building is one of the few adobe constructions remainding at Mendoza. Renovation consisted in renovating the original structure and introducing the lastest winemaking techniques with the incorportion of stainless steel tanks, fermentation vessels, cooling equipment, flexible impeller pump, among others.

We develop and operate more than 100 hectares on the best soils of Mendoza, called “First areas”.

Vineyards

The company has 60 hectares planted in two own estates: Viña Violeta and Altos de Barrancas, and rents other estates.

Viña Violeta is a of 8 hectares vineyard located in Agrelo, Luján de Cuyo, one of the best wines regions of Argentina for the development of premium vines.At this vineyard, we pay special attention to the quality of the grape, working with an intense schedule of activities, which involves separating parcels of the grape and carrying out different cultivations according to the climaticcharacteristics of each year.Since 1926 this vineyard produces only Malbec, having created some of the best wines of the area, recognized worldwide.

Altos de Barrancas is a 47 hectares vineyard located in Barrancas, Maipu. This area is characterized by the presence of stones on the surface, due to itproximity to the Mendoza river. We use a traditional method at this vineyard, namely surface irrigation with water coming from the Mendoza river and two existing wells on the property.

Gastronomic Combination

Grilled meats, roasts, pasta with red sauces, Patagonian lamb.Hand-picked in boxes of 18 kg. Selection clusters and grains. Alcoholic fermentation with indigenous yeasts in cement coated with epoxy, for 20 days at 27/30°C, with 3 to 4 daily remounting as Winemaker tasting and dellestage during the first days of maceration (these movements differ depending on the variety). Post fermentation maceration for 20 days. Malolactic fermentation in barrels: 100% spontaneous nose to increase complexity and smoothness on the palate. Breeding: mature separately (Malbec, Cabernet Sauvignon and Cabernet Franc) for 24 months in French oak barrels of first use. Battonage 4 times per month to increase the volume of mouth. Thenhe proceeds to make the blend, seeking a balance between the three varieties. Park is left in the tank for about a month and then fractionated. Before leaving the market is left in the bottle for 6 months to end of amalgamating the three varieties of blend and gain complexity.

The Blend has a deep ruby red with violet tones and deep blacks.The nose is very elegant and aristocratic appear aromas of plum jam, cassis, raspberry, red fruit and black fruits, spice and eucalyptus regalis, complexed with notes of chocolate, snuff, smoke and clove. In mouth is very powerful and refined at a time, long, smooth, sweet tannins with great structure and complexity. The personality of this blend is given by the excellent combination of the most remarkable characteristics of Malbec, Cabernet Sauvignon and Cabernet Franc, a different wine making and leading exponent of the philosophy of Fincas Don Martino.

BALDOMIRGran Blend

This wine was not subjected to any physical and chemical treatment. The stabilization is natural to preserve all the natural characteristics of the grape. Has not been subjected to filtering.

BALDOMIRGran Malbec

Hand-picked in boxes of 18 kg. Selection of clusters and grains. Alcoholic fermentation with indigenous yeasts in cement tanks coated with epoxy for 20 days at 28-30ºC, pumped 3 to 4 times per day defined by the winemaker´s tasting and delestage during the first days of maceration. Prolonged maceration post fermentation during 20 days (end is determined by tasting). Malolactic fermentation in barrels: 100% spontaneous in order to increase complexity of the nose and smoothness on the palate.Ageing: During 24 months in French oak barrels of first use. Battonage takes place 6 times a month in order to increase the volume on the palate. The wine is kept during approximately one month in the tank before being bottled. Before going on the market, the wine is conserved in the bottle during eight months in order to amalgamate and gain complexity. This wine has not undergone and physical or chemical treatment. The stabilization is natural in order to preserve all the natural characteristics of the grape. The wine has not been filtered.

Alcohol: 14.5%

This Gran Malbec presents an intense ruby red color with profound purple notes. The nose excels plums, ripe black fruits, accompanied with notes of tobacco, smoke, chocolate because of its contact with oak. The palate is very pleasant, complete, creamy with rounded, balanced tannins. The wine is very complex and refined, structured and refined. This wine is the maximum exponent of the philosophy of Fincas Don Martino.

Purple red color with black tones. The nose presents aromas of mermelade of plums, cassis, raspberry. Very complex due to its aging in wood, highlighting notes such as cloves, vanilla, leather and tobacco. The palate is structured, with sweet and balanced tannins.The aging in oak barrels gives personality, aromatic complexity and elegance to this wine which is a great example of an Argentine Malbec.

Hand-picked in 18kg boxes. In the winery, grapes and grains are selected. Cold maceration at 6º C for 5 days defined by the winemaker´s tasting and a classic fermentation with indigenous yeasts at a temperature of 26 to 28º C during 15 days. Then the wine is left in contact with the skin to give more expression in the mouth. The free-run wine is separated and the skins are pressed. The wine undergoes malolactic fermentation with indigenous bacterias. It is aged in French and American oak for 12 months.

Alcohol: 14%.

The color is deep purplish red. The nose excels red fruits such as plums, black berries, hints of vanilla, coffee and chocolate. The palate is intense, with good volume and prolonged persistence. The excellent balance of oak and the characteristics of this variety, make this wine powerful, complex and meaty.

The color looks attractive, with yellow with reflections of gold. Its aroma is reminiscent of honey, pears, figs and some citrus notes. The palate is silky, smooth and the right acidity makes it a fresh and high volume wine.

Manual harvest in boxes of 18 kg. Selection of clusters. Cold maceration at 6ºC for 6 hours. Pneumatic pressing. selection of yeasts, fermentation at temperatures of 14 and 15º C in stainless steel tanks. Malolactic fermentation: only for 25% of the volume, looking for aromatic complexity.Aging: battonage 15% of the volume in French oak roasted gently for 2-3 months.

Manual harvest in boxes of 18 kg. Selection of clusters and tire whole cluster pressed to improve drainage of the must and avoid undesirable polyphenols. Decantation/cleaning of the wort prior to fermentation at 5°C for 72 hours, moving the lees two times per day planting selected yeasts. Malolactic fermentation: only for 25% of the volume, looking for complex aroma and smoothness on the palate. Aging: 100% battonage volume of soft toasted French oak for two months.

Its color is yellow with steely tones and some green hues. In the nose it is very aromatic, floral character, white flowers stand out and appear behind tropical and citrus notes. In mouth it is powerful, fresh, balanced acidity and a great finish.

Manual harvest in boxes of 18 kg. Selection of clusters. Cold maceration at 42°F for 2 hours. Neumatic pressing. Decanting/ Cleaning wort prior to fermentation at 5 ° C for 48 h. During this period the sediments move to give a pleacent mouthfeel.Selected yeasts, fermentation at temperatures of 13 and 15 º C in stainless steel tanks. 1 month maturation on lees.

Manual harvest in bins of 300 kg. In the winery, the clusters arepre-selected. The fermentation is realized with indigenous yeasts,and pumped over three times a day until 2ºBe and are then pumpedover two times a day until 0ºBe. The devatting and pressing aredefined by tasting. When conserved, 30% of the wine is in contactwith French oak.

The deep-purple red color looks attractive. The nose excells red fruitsthat remind of plums, with notes of coffee, chocolate and vanilla because of the contact with wood. A gentle entrance in the mouth, with presence of sweet tannins and a pleasant after-taste.

Harvested in bins of 300kg during the last two weeks of February. In the winery, the clusters are pre-selected and the grapes are pressed in the pneumatic press. The first must is separated from the press by tasting and the musts are fermented separated. Thefermentation happens at a temperature between 16 and 18ºC. Once the fermentation is finish, the wine will remain in contact with the fine lees.
