From the General Manager... May is an exciting time of year as we open the pool for the summer and our calendar fills with activities for all ages. I am pleased to announce that we are opening the Pool, Snack Bar, and Tiki Bar the weekend before Memorial Day (Saturday, May 18) and will extend the hours of operation for the Snack and Tiki Barsthroughout year. These changes in operating hours are a direct result of your inputfrom last season as we look to build value in your membership.

Extended hours of operation are not the only changes you see around the pool and tennis area this summer. I am glad to also inform you that we will complete $100,000 in upgrades to the pool and tennis areas before Memorial Day. These upgrades include new awnings for the Snack and Tiki Bars, new equipment that will allow us to improve your food and beverage experience, new furniture, the construction of an additional shade arbor, repair of the old shade arbor, new accessto restrooms for tennis players at night, as well as new paint throughout the interior and exterior of the buildings.

In addition to the pool and tennis areas receiving an upgrade, we have completed recent improvements to the West Golf Shop that include paint, carpet, and fixtures. With the recent completion of these upgrades, we have transitioned to traditional summer hours at both the East and West Clubhouses; please see the details of these hours elsewhere in the newsletter. mind is restored to peaceful wholeness. Representatives from the Golden Flower Center in Winston-Salem will be here to offer a tea tasting while explaining the benefits of drinking tea. Following the tasting, Bob Young, along with an assistant, will be conducting a free Tai Chi demonstration.

Instructions:Heat the broth in a medium sized pot. To make the risotto: Bring a small pan of salted water to a boil. Trim off the bottom inch of the asparagus and discard. Cut off the first 3 inches of the tips; slice the remaining stalks into 1-inch lengths. Drop the tips into the water and cook 1 minute; remove with a slotted spoon to a bowl filled with ice water. Drop the chopped stalks into the boiling water and cook exactly 3 minutes. Immediately remove the stalks with a slotted spoon and put in a blender along with the parsley or spinach. Add a pinch of salt and ½ cup of the cooking water and puree until very smooth. Heat 1 tablespoon butter and the oil in a heavy pot over medium-high heat until the butter melts and sizzles (but doesn’t turn brown); add the shallot and 1 teaspoon salt and cook until softened, 1 minute or so. Add the rice and stir to coat with the fat, cook until the rice begins to crackle, 1 minute. Pour in the wine, stir and let boil until it’s evaporated. Pour in 2 cups of the broth; bring to a steady bubble (not a violent boil) and cook until absorbed, stirring frequently for 7 – 10 minutes. Add another cup of broth, another ½ teaspoon salt and continue cooking until almost absorbed. Watch carefully at this point – the rice will be nearly ready when the grains have swelled in volume and the liquid becomes thickened. Taste the rice – it should be tender all around, and very slightly al dente at the core. Add more liquid if needed, ¼ cup at a time until you feel it’s done. There should be some thick, starchy liquid still left in the pot. You might not use all the broth. Remove the pan from heat and stir in the reserved asparagus puree, remaining butter and half the cheese. Stir in the lemon juice and taste the risotto for seasoning, adding more salt to taste if needed. Gently stir in the asparagus tips. Serve in bowls, topping each one with pieces of radish, watercress and fennel fronds with additional cheese on the side.

Spring Asparagus Risotto Verde Yield: 4 servings

1 pound asparagus

Handful parsley tops or spinach leaves

Salt

2 tablespoons butter

1 tablespoon extra virgin olive oil

½ cup finely chopped shallot or onion

½ cup pinot gringo (or other dry, white wine)

1 cup Arborio

1/3 cup freshly grated Parmigiano Reggiano

4 cups chicken broth

I would like to start off by thanking everyone for the warm welcome that I received since arriving here at Bermuda Run Country Club. The entire golf operations staff is looking forward to the warmer temperatures and we hope to see everyone on the course this spring.

The month of May will kick off with Twilight Golf on Thursday, May 2 at 5:30 p.m. The Men’s One Day Member-Guest is scheduled for Friday, May 10 on the West Course and then on Saturday, May 11 there will be a Couples Twilight Golf event at 5:00 p.m.

One of the highlights of the month is the Men’s Member-Member on the weekend of May 17 through May 19. Tournament format and schedule of events can be found on the member website.

As a reminder to everyone, please call the Golf Shop to schedule a starting time. Starting times may be scheduled up to one week in advance. We would also like to ask members who need assistance with their clubs to please drive up to the bag drop when arriving at the club. Using the bag drop will allow the staff to assist more members on a consistent basis.

Lastly, please be sure to check the weekly e-blasts for more information regarding upcoming events, the junior golf program, and major tournaments. I am in the process of working on the full schedule of events, formats, and minor details.

With the spring season in full swing, much of our attention in now focused on course maintenance. We are now actively mowing all aspects of the golf courses. All of our winter projects are now complete. The long awaited bunker renovation was completed a few weeks ago. Kris Spence of Spence Golf, Inc. did a fantastic job. All back nine bunkers of the West Course are now “brand new.” Kris Spence’s crew worked tirelessly through the cold and rain of March and early April. We could not have been more pleased with how the bunkers turned out. Also, on the front nine of West, maintenance staff completed repairs to all of the bunkers. Drains were checked and new sand was added where needed. The West Course is certainly ready for a busy summer. On the East Course, our mulching project is complete. The staff spread eighteen tractor trailer loads throughout the course. We would like to thank the membership for their support and patience for the past few months during these projects. We hope everyone is as pleased with the results as we are. If we can be of any assistance, please do not hesitate to ask.

call the Tennis Shop at 998-8279. You may call the Tennis Shop up to one week in advance to reserve a court. If you need to cancel your court, please call the

Tennis Shop at your earliest convenience. We do not take court reservations by email.

Registering for a Tennis CourtIt is required that during Tennis

Shop hours, all players must sign in for their court in the Tennis Shop.

You must register PRIOR to entering the court area. Please sign in on the court register by name and member number and please register all guests before play starts. If you have a guest

playing with you during non Tennis Shop hours, we ask that you please call the Tennis Shop the next day to

report your tennis guest(s).

Guest FeesGuest fees are $5.00 per person per day and guests are limited to

TWO visits per month.

Tennis Night PlayPlayers, remember that 5 of our 6tennis courts have lights and are

What is Aqua Zumba®?Aqua Zumba is a fitness routine thatis meant to improve your body and

health in general. It is great for people who have difficulty moving due tojoint or back problems because of

the helpful buoyant comfort the water provides. It is also a great cardio

workout when you give it your all and keep those arms, legs and most of

your core engaged as you are working out. Aqua Zumba is a spicy Latin

version of Aqua Fitness with great Latin music and great instructor

taking the lead. Take an Aqua Zumba class today, give it your all and burn

up to 400 calories in one class!

Classes will be held Mondays andWednesdays from 10:30 – 11:15 a.m.

It is required for each member and each of their guests to sign

in and register prior to entering the pool area.

Absolutely NO outside food or drinks may be brought

into the pool area.

Parents, please remind your children to obey the lifeguards and

all of the pool rules at all times.
