A Higher State of EatingBY AMELIA wADE

The word “zen” is from the Japanese pronunciation of the Chinese word “Chan,” and means meditation, or medita-tive state. Zen is a distinct school of Buddhism, and puts experiences and enlightenment at its core foundations. The idea and nature of Zen philosophy puts emphasis on the simpler ways of living, and of finding the balance in your life.

At Zen Fusion Sushi & Bistro, you will find yourself taken to a small slice of Japan when you open the menu. When you look around, you’ll notice the beautiful and simple décor, in keeping with the idea of creating a meditative state. Here, you’ll want to relax and enjoy the experience before you. When your sushi arrives, you’ll wonder if you have reached a new state of being, bringing you that much closer to Nirvana. The food is the centerpiece, and the centerpiece is breathtaking.

And yet the food stays true to its name: Zen. The Japa-nese cuisine is simple, but fresh, beautiful, and best of all, delicious. Zen Fusion Sushi & Bistro isn’t about mass-producing dishes. It’s about creating an experience, and enlightening your sense of taste to the delights of simple food made extraordinary. Put a little zen in your day, at Zen Fusion Sushi & Bistro.

Just Like Mama Made ItBY GISELA SChMIDT

Remember when you were younger, and your mom made pizza at home? Pizza was a sit-down family dinner like anything else: pizza dough and sauce made from scratch, elbows off the table, no talk-ing while chewing. It was more of an experience and less shoveling food into your mouth.

A staple of the Colorado Springs dining scene since 1978, Bam-bino’s Italian Eatery is just like that family dinner, except they won’t make you use the fork and knife or yell at you for having your el-bows on the table. It’s a mom-and-pop eatery, where every custom-er becomes part of the family. And because they’re serving friends and family, Suzette and Kevin haven’t raised their prices in an effort to keep up with inflation, which has made their already reasonable prices even more attractive.

But more than just a nice establishment, the food is really, really good. Everything is fresh and homemade from recipes that have been handed down for generations: doughs, sauces, stromboli, and pasta dishes. And if that doesn’t make your mouth water, there is also an all-you-can-eat Italian buffet with the rest of your favorite dishes.

So if great service, delicious food, and a family atmosphere aren’t your thing, then maybe you should avoid this place. But for every-one else, I suggest you hurry down to Bambino’s Italian Eatery and save a table. With a menu like theirs, you may be sticking around for a while. Don’t forget to come watch your favorite games in the Sports Bar on one of their 8 big-screen televisions!

Congratulations to our young authors!Steve Erwin as a Child (fiction)By evan Knoth, age 7 2nd grader at pinon valley elementary School

When Steve Erwin was a child in second grade he was no or-denary kid. He had pet boa constrictors and pet rattlesnakes, he had a pet alagator named Gator. He had a colection of lizird skeletons, and old snakes that were dead and old snake skins. He always asked his parents in the sumer to go on a vacation to Afraca or India and go and visit the cobras, he always got a no. His parents said it was too dangoros, but finaily he got his dad (who also loved reptiles) to say yes, so young Steve packed up his snake poles, and all his antie venom, and new snake suits. In a few weeks his parents had booked a trip/conecter flight to the Afracan plains. It was so hot when they go there that Steve started to have second thoughts about coming.

Then Steve learned a good trick, if you go out early it is not so hot then you have a better chance of seeing animals then when it gets hotter. You can watch animals from the window of a car or a house because they are air conditioned. Every once in a while Steve would go outside and catch red spitting cobras, but he always needded sun glasses, not because of the sun but because of the spitting cobras always aim for your eyes and if they hit your eyes they can give you serious eye damige but he did come home the next day to his house with a pet cobra and a smile. The End.

The Lost Key (fiction)By elle natio, age 10 5th grader at remington elementary School

I woke up in a trance, the dream was mystifiying, the note. Where was it? As she looked around her room she thought of her desk she looked back at her desk and saw a blue piece of paper, just like the one in her dream. She picked it up and read it. The same exact words,” Find the key Cece, Find the key.” she looked everywhere and she couldnt find it, she asked and prayed for help. An hour later she was looking through papers and found a piece of paper with a rock trail drawn on it, and there in the corner was a key just like the one in her dream. She went outside and looked just in case the drawing was a clue. There it was, a rock trail lined with beautiful, green jade stones. At the end of the path was a field of flowers, white flowers, to the left she saw one beauti-ful ruby red rose.the flower was her dads favorite color. She ran to it and examined it, and right there in the field of flow-ers was another green rock just like the ones on the path to the field , as cece lifted it up she found the blue crystal key that her dad made special just for Cece. The key was hers forever. The only memory of her dad. She wiped the tears from her face, looked up to the sky and said, “Thank You.”

Stories appear unedited.

Dancing with Fireflies (non-fiction)By Hillary victoria Schiff, age 12 6th grader at eagleview Middle School

The sweet summer air envelopes me. An owl’s eyes pierce through the darkness. Fireflies dance to the cricket’s soothing song. I am tempted to dance with them, but my nerves drag me back indoors. It seems like only yesterday I was screaming, “School is out!” I was jumping in pools, running, and basking in the summer sun. Now summer is over and Middle school starts tomorrow. It will be a bigger school with new teachers and new kids. I had been in the same small school my entire life. It was always the same routine. Always so sheltered and so forgiving. Nothing ever changed. But tomorrow everything would change. My new school is a bit of a mystery. A sigh escapes my mouth and drifts into the night.

Memories of my first school experiences come rushing back. It seems like just last week when I was crying to my mother about leaving for Kindergarten. Tears streaming down my face, I went on a school bus for the first time. Everything was new. I was afraid, nervous, and excited all at once. And that’s how I felt right now.

The cricket beckons for me to come outside once more, and this time I agree. The owl’s coo calms me, reminding me that today should not be squandered worrying about tomorrow. The cricket’s music assures me that no matter what happens, music will always be with me. The fireflies dance whispers to me that I am not alone. Calmed by the thoughts provoked by the night, I dance amongst the fireflies. Then, I go inside, knowing they are right. I thank the night as I bade summer farewell.

The Roping (non-fiction)By Gianna Bartalo, age 11 5th grader at CA north

My eyes closed and then opened. Then, wa la! We were at the location of the U.S.T.R.C. roping in Loveland, Colorado. Now, roping is the sport where cowboys in groups of two swing a lasso around their heads and catch cows running across the arena as fast as they possibly can. It’s much harder than it looks! After parking our horse trailer/ camper three times, we finally found the place where we were going to camp and unloaded my Papa’s quarter horse, Pokey. The next day I roped but it was just a kid roping and it was on the ground. I got my booty kicked by some of the other boys that were there. Later, all of us kids roped for 4 whole hours, while our family members roped. I made a lot of friends roping that night, may-be more than I have this year in elementary school! My Papa won some money the next day, about $700 in cash, with a buddy that he has known since college. That’s a really long time! Considering they are now in their 70’s! That’s a lot of money, but just enough to pay for all of the gas from Durango to Loveland and back, and maybe another roping’s fees. We loaded up everything, made sure that nothing would break on the way home, un- hooked the electricity, and started home. I slept the whole way home from the grounds and again, wa la, we were home.

Living with 3 GsBY KAThY ALLEN

A few years ago a friend of mine and I were hav-ing a philosophical discussion on aging with a good attitude. At Silver Key Senior Services, hundreds of customers walk through the door each week – some with a delightful approach to life, others with an angry sense of entitlement. Why one differs from the other is most likely a culmination of how they have lived their lives. As most senior citizens will confirm, aging can be challenging, bringing financial changes, health decline, and loss of lifelong partners and peers. Individually, these events can lead us to loneli-ness; together, they can impact our entire approach to life.

Three principles come to mind as the basic patterns for happiness – Gratitude, Generosity and Grace. Being intentional in incorporating all three into each day of life will lighten the burden of aging. The best part of living with 3 Gs is the contagious spread of happiness that sprinkles others’ attitudes as well!

Gratitude: n. A feeling of thank-fulness or appreciation. By expressing gratitude, we add a touch of pride and happiness to another’s day. Small things appreci-ated are the easiest to overlook but can produce the biggest smile. As we age, time seems to ramp up to warp speed, while our minds and bodies begin to slow down. Giving the gift of time to customers, co-workers, friends, and family is inexpensive yet powerful.

Generosity: n. Willingness in giving away one’s money, time; freedom from pettiness in charac-ter and mind; abundance; plenty. Society bombards us with requests to give -- to support political candidates, help those less fortu-nate, and provide for our churches. Great joy comes from being willing and able to be generous with our incomes. Ironically, it is the non-monetary gift that impacts both the giver and recipient immediately.

Decades ago I attended a workshop where I learned many valuable life tools. The most memorable takeaway for me was not something from an over-head projector presentation. After class, I admired the instructor’s beaded, colorful earrings. Without hesitation, she removed them and put them in my palm saying, “Please, I would like you to have these.” Generous? Definitely! Was I grateful? Absolutely! Best of all, I have modeled her behavior many times by passing along clothing, jewelry, even furniture that someone expressed appreciation for. Each time I give away a belonging, my heart is happier and my step is lighter.

Grace: n. A characteristic or quality pleasing for its charm or refinement; a favor rendered by one who need not do so. Other definitions include religious and musical infer-ences. Being in the “bad graces” of someone means out of favor; being in the “good graces” means in fa-vor with. Living with “bad grace” can imply you live in a grudging manner; while living with “good grace” suggests you live in a willing manner.

Choosing a life open to gratitude, generosity and grace is not always a conscious decision when we are young. We are the recipients (and often victims) of the examples of our predecessors. My hope is that we use our 3 Gs to pay it forward. To assure future generations will become productive, caring human beings, we must each model the way. Will you?

Kathy Allen is the Resource Development Manager at Silver Key Senior Services.

Ms. Allen has a BA in Communication from the University of Colorado. Happily married for 41 years, her lifelong learning goal is to age with grace. You can reach her by email at [email protected].

Ask Dr. HallQ: I am missing several teeth and would like to get them replaced. I’ve heard about dental implants but want to know more. Are they safe? Are they painful? A: Dental implants are a great way to go. They’re a common solution for problems such as yours, and they have a 95% suc-cess rate! Because the jawbone doesn’t have as many nerves as your teeth, the procedure is significantly less painful than even a routine cavity filling. Moreover, we now have the technology to create a computer model and do a virtual simulation of the procedure first, so you know what to expect.

Q: What causes dry mouth? A: Dry mouth occurs when your mouth doesn’t produce enough saliva to wash away food debris and reduce acidic plaque. This can lead to tooth loss and gum disease.

Though common, dry mouth can be a symptom of a larger problem or a side effect of some medications, including antihis-tamines, decongestants, antidepressants, and muscle relaxers, among others. It is important to consult a physician if you are concerned with the severity or the duration of your dry mouth.

Q: At what age should I start taking my child to the dentist? A: Many first-time parents ask this question, and while there is no right answer, the American Academy of Pediatric Dentistry recommends the first appointment should come with the first tooth or before your child’s first birthday. In any case, it’s good to have a happy first visit to set the groundwork for a lifetime of good dental habits (and of not being scared of the dentist!).

Hippotherapy has nothing to do with hippos. (I know, I’m disappointed, too.) It’s actually better though. Hippothera-py is the use of horses as a treatment alternative or addition to traditional therapy for those with physical, emotional, and cognitive challenges. At the Reyner Stables, the Colorado Springs Therapeutic Riding Center (CSTRC) offers hip-potherapy and equine-assisted therapies by certified and experienced riders.

Why is it called “hippotherapy” if it doesn’t involve hippos? That’s an easy one: hippos is the Greek word for horse.

What sort of disabilities could this help?Hippotherapy and equine-assisted therapy is offered for many people and many different handicaps. It has been shown to help those with physical, cognitive, emotional, behavioral, and learning challenges related to various forms of trauma, developmental delays, autism, cerebral palsy, blindness, deafness, Down syndrome, muscular dystrophy, multiple sclerosis, Batten disease, and cancer.

Both Hippotherapy and equine-assisted therapy can help the parents and caretakers of those with special needs, too. The benefits extend to a strengthened bond of shared experiences and confidence for the caretaker, by seeing their child or friend overcome obstacles and gain a sense of independence.

What is the difference between Hippo-therapy and equine-assisted therapy?Hippotherapy takes advantage of the similar hip structure between humans and horses. When you sit on a horse, you can feel the movement of its haunches, and this can help an individual to gain balance, flexibility, and muscle strength. By gradually increasing the gait, often over a period of weeks or months, the rider can experience walking to trot-ting to cantering.

Equine-assisted therapy refers to the practice of teaching riders specific skills. These can range from simple interac-tions with the horses to more independent riding. This can help them to gain confidence, patience, and self-esteem. Horses are sensitive to human emotions; they can under-stand fear and anger in their riders. Additionally, horses are individuals, with specific likes and dislikes.

Is this some newfangled thing? Because I’ve never heard of it.First, congratulations on using “newfangled” in a sentence. And to answer your question, no, it’s not. Hippotherapy traces its roots as far back as Hippocrates. In this essay “Natural Exercise”, written around 400 B.C., he mentions riding. The next recorded mention is in the 16th century, and since then the idea has appeared numerous times in writings from Europe and North America.

Hippotherapy gained real attention in the 1950s when Lis Hartel, a Danish equestrian, won a gold medal in dres-sage at the Helsinki Olympcs. This was despite the fact that she was paralyzed below the knees and had to be helped on and off the horse.

Europe was the first to catch on, but since then, America has caught up. Now there are official certifications for therapists.

Mark Reyner Stables has been in constant operation since 1954. Located at the southern end of Palmer Park, they have access to numerous trails in addition to having their own riding rings. And for the last 36 years, they have been providing therapy services to the Colorado Springs community. In 2008, CSTRC was officially founded as an extension of Mark Reyner Stables, and it has grown to include three certified therapists.

What does it mean to be certified? There are many national and international associations. PATH, the most common in America, stands for the Professional Associan of Therapeutic Horsemanship. At CSRTC, there are three instructors: Amanda, an occupa-tional therapist, certified in Hippotherapy Level II; Jamie, certified in PATH Level 1; and Jennifer, also certified in PATH Level I.

I’m not certified. Can I still help? For the safety and support of the horses and patients, two and sometimes three people are needed. CSTRC is always looking for interested volunteers to act as side-walkers and horse leaders.

Sidewalkers are responsible for helping the rider. They assist with putting on the helmets and other safety gear. They also help the rider to get on the horse. And as the name suggests, they walk beside the horse and rider to prevent the rider from falling. They don’t hold the rider on the horse, but they keep contact with the rider, to help him/her in maintaining balance and control. This includes preventing the rider from falling off, but it does not mean holding the rider on the horse.

Horse leaders are responsible for the horse’s safety and control. This includes reinforcing the rider’s signals to the horse as well as keeping the horse a certain distance from other horses in the ring while walking, changing direc-tions, and passing. Horse leaders are people who are familiar with controlling horses. This does not necessarily

exclude those without experience, but if you are new to horses, CSTRC will start you as a sidewalker. If you are interested, they will also train you as a horse leader.

If you are less comfortable with horses, CSTRC wlecomes contributions in other ways. There are openings to help in the office and publicity by doing tasks such as writing arti-cles, contacting organizations, and producing videos. CSTRC does work with fund raising and special events where volunteers can con-tribute. And there are plenty of ways to help in the stables and around the facilities.

CSTRC offers training for all their volunteer positions; they only ask that interested indi-viduals commit to at least eight weeks.

Where can I find more information? The Mark Reyner Stables are located at 3254 Paseo Road in Palmer Park. For more information, go to markreyner-stables.com/therapeutic or call (719) 634-4173.

CSTRC is a not-for-profit 501(c)3 organization. All contri-butions and donations are tax-deductible and are used strictly for program operations, program development, horse care, and student lessons.

Trick or Treat! (But treats are better.)BY GISELA SChMIDT

Trick or treat. / Smell my feet. / Give me something good to eat. / If you don’t, I don’t care. / I’ll pull down your underwear.

Children across America have rhymes like this, and you probably did, too, when you were growing up. For most of us, it’s a hollow chant, more fun than truly threatening. But Halloween as we know it is a recent phenomenon. Back in the day—somewhere between the Druids and the zombie masks—the warning of a trick was more than a thinly veiled threat. In our parents’ and our parents’ parents’ time, Hal-loween was a time for pranks. Dangerous pranks.

In the 1920s and 1930s, some individuals and organizations used Halloween as an excuse to damage property, attack people, and generally cause mayhem. “Trick or treat” was actually an idea to curb such activities. Schools, communi-ties, and youth-focused organizations promoted the phrase and organized safe events for their neighborhoods, such as carnivals and parades. Some people, however, thought the phrase was a little too reminiscent of extortion, and they were probably right.

By the late 1930s and into the 1940s, vandalism was de-creasing and “guising”, as the practice of dressing in cos-tume was originally known, was on the rise. “Trick or treat” was something of a success, making it the household phrase that we don’t often think about these days.

Building Kitchens, Rebuilding Lives BY ALEx RIEGELMANN

Like many construction/design businesses in the Springs, JK Cabinets & Design has a showroom and provides consultations. However, JK stands apart. It’s owned, operated and staffed entirely by women.

Entering an industry traditionally dominated by men, Jackie Battles-Martin started her business 15 years ago in Phoenix, Arizona. She quickly proved herself a formidable competitor to her male peers. 5 years ago, she risked it all to relocate to beautiful Colorado Springs, where her success has continued. Today, Jackie remains busy designing kitchens throughout the Colorado Springs area and along the Front Range.

A fusion of artistic aesthetics and technical considerations, the designs by JK range from modern simplicity to elegant opu-lence. Just one visit to JK’s showroom (located at 4465 Barnes Road) is enough to inspire ideas of the perfect kitchen or a dream master closet.

Jackie and her associates are in it for more than profit. The dev-astation following the Waldo Canyon Fire mobilized JK to col-laborate with some of their manufacturers and suppliers to offer combined discounts of around 20-25% to victims of the tragedy. By helping rebuild homes, Jackie hopes to help rebuild lives.

“A lot of people found out they were under-insured following the fire, so we’re doing our best to bring costs down as much as possible to help those people rebuild,” says Michelle Whitt, associate designer.

Whether it’s about dressing up, eating prodigious amounts of candy, or watching scary movies, Halloween is now widely celebrated in America, and for most of us, it’s a relatively safe celebration. However, there are still those who enjoy a good prank or have more malicious intent, so it’s a good idea to practice a little caution. Below are some tips on how to keep you and your children safe.

1. Carry a phone. Even if you plan on staying in the neigh-borhood, it’s never a bad idea to have someone waiting for you at home.

2. Make sure you can see drivers and they can see you. Wear reflective tape on costumes and props and stick to sidewalks, crosswalks, and other established zones.

3. Don’t go alone. Group costumes can be a lot of fun, so it’s not a bad idea to plan ahead to go with friends or a trusted adult. And check your route ahead of time.

4. Wear a smart costume. This includes staying warm, wearing comfortable fabrics, and making sure you are vis-ible to others. And stay away from flames.

5. Check your candy. Anything that is opened or appears to be tampered with should be discarded. This includes homemade treats.

If you follow these tips—and your own common sense—you will be in for a great time, with memories to share for years to come. So dress up like a monster, take your little princess and Raggedy Andy with you, and have a great time. Trick or Treat!

What is Your Car Trying to Tell You?BY ELIzABETh BEhNKE

Car repairs are expensive. So it is understandable to ignore those dashboard warning lights in hopes that they go away. Unfortunately, your car is not going to be fixed by a magical auto repair fairy, no matter how hard you clap your hands. So what are some signs you should never ignore? We’re here to give you the scoop…

1. Check Engine Light/Service Engine Soon – This is possibly the #1 most overlooked warning sign your car gives you. Because this light could mean hundreds of things, it is easy to say that one of them is not a serious issue. However, ignoring the check engine light could be a costly mistake. Yes, most of the time it indicates a simple problem, but you should have a professional make sure your car is still road-worthy.

2. Oil Pressure Light – If you see this light turn on, you are probably running low on oil, which is crucial for your car’s engine. Ignoring this light though could lead to severe engine trouble.

3. Brake Warning – It could just mean your handbrake is engaged or it could be that your brake pads are wearing out and need replacing. DO NOT ignore issues with your brakes. If this light comes on, see your mechanic as soon as possible.

4. Battery System Warning Light – The charging system involves more than just the battery alone. This light can also indicate broken wires or problems with your alternator. Broken alternator = Engine no go.

5. Engine Temperature – If this light comes on, you are having problems with cooling. If it flashes, find a safe place to pull off the road and get mechanical assistance. Your cooling fan may not be working, which can cause serious engine trouble.

6. ABS Light – The ABS system is usually integrated with traction control and stability systems. These are in place to keep you safe during panic stops, wheel slippage, and handling. Drive at your own risk when this light comes on; it is something you will want to have checked out.

Other things like vibration, steering difficulty, and noises will only get worse with time, and it up to you whether you would rather pay a small fee to get it fixed now, or thousands of dollars later when something falls out of your car. Refer to your vehicle owner’s manual to help you understand what exactly your car is trying to tell you.
