For most Marylanders, picking crabs is an essential summer ritual. This deep-rooted Chesapeake traditionstarts when they are young. It’s common to see toddlers

with a bib and wooden mallet squeal with delight when theirparents cover the backyard picnic table with steamed crabs. Maryland wedding couples often design special nuptial crabmallets embossed with the bride and groom’s names. And in 1989, the Maryland crab was designated the official state crustacean.

Fortunately for the rest of us, everyone is welcome to sharethe Maryland crab feast experience. To help newcomers navigatetheir first dozen steamed crabs, locals offer the followingpearls of wisdom to get your crabitude going amid themounds of shells.

What you are eating?Chesapeake Bay crabs belong to the species Callinectes sapidus,which is Latin for “beautiful swimmer that is savory.” They cangrow to about 9 inches, but waterman must toss them back ifthey’re less than 5 inches across their shells. If you see TrueBlue on the menu, then the Maryland Department of NaturalResources has certified that you’re getting the real deal and therestaurant is only serving local crabs, instead of imports fromother regions or countries.

Where do they come from?This species originated in the Caribbean, swims in waters fromArgentina to Nova Scotia and is fond of moderate climates in

the mid-Atlantic and Gulf of Mexico. Good news from Virginia’s Marine Resources Commission: Its latest survey of the Chesapeake crab population reports that their headcount is up from a dangerously low 68.5 million in 2014 to 101 million Bay crabs this year.

How can you tell them apart?It’s actually pretty easy. The males are called Jimmies, and whenyou flip them on their backs, you see an apron shaped like theWashington monument. Females, named Sooks, have a widerapron that looks like the U.S. Capitol Dome. Lady Sooks claws have a red tip as if she just painted her nails. Jimmies are more likely to appear at your table, because the Bay needsSooks to reproduce.

How are they cooked?Blue crabs are placed pinching and kicking into steamer potsfor about 25 minutes and emerge with a glowing red-orangecolor. Heavy doses of Old Bay, J.O. or special house seasoningsare poured on top. Purists keep it simple, cooking just the crabsand the spices. Others cover their crustaceans with corn on thecob, potatoes or even sausage. No matter how they’re prepared,you can’t wait to dig into a dozen of Maryland crabs. Cold beerand Orange Crushes are highly recommended. ml

2. Participants can visit one some or all the crab decks to snap their shots.

At the end of the summer, Marinalife will announce the Crab Deck Crawl winners, post the best and

Why bring tiki to the pressed-shirtworld of Washington? “People work sohard that they need to decompress andforget about a long day at the office. They meet friends at bars to unwind andescape the daily grind. Tiki is fanciful,with a sense of the exotic. I bring thebeach to them, and they get a brief vacation from the mundane,” says Tom.

Since the 1940s, when Don the Beachcomber and Trader Vic spread Polynesian Pop across the country, Tahitian cocktails have represented a release from everyday routines andhelped Americans experience a smallslice of the South Pacific. Today’s tiki

drinks are less sweet than the previousgeneration’s, but they continue the tradition of serving cool beverages todispel the heat.

It’s hard to go wrong when you mixgood rum with island ingredients such as pineapples, limes, coconuts, oranges— even nutmeg and vanilla. “The flavors are refreshing and unexpected. At Hogo,we even garnished one rum drink withflaming pirate ships made of orangepeels,” says Tom. Once it left the bartender’s hand, everyone in the place wanted one.

Advice from our tiki connoisseur:Advance planning before boarding yourboat is key. Choose your tiki cocktailrecipes, mix them at home and pourthem into a thermos, either with orwithout ice. Imagine cruising through unfamiliar waters without yourGPS sonar, nautical navigationcharts or even electricity.That’s what Colonial-era ship captainsfaced while sailing through the Chesapeake Bay. Its jagged coastlines,treacherous shoals and unpredictableforces of nature created a harrowing experience for sailors who only hadbuoys in the water and signal fires on

land to keep them out ofharm’s way.

As Bay shipping trafficswelled in the 1700s, GeorgeWashington understood that safelytransporting people and goods was paramount to the fledgling nation’sgrowth and commerce. Making sure vessels could come and go out of essentialports such as Baltimore, Annapolis,Alexandria and Norfolk became a pressingissue, so in 1789 the U.S. government

took charge of the American lighthousesystem. In 1792, the 90-foot tall CapeHenry Lighthouse at the mouth of theBay in Virginia became the first to shineits light on Chesapeake waters.

By the early 1800s, these beacons of safe passage sprang up all along theMaryland and Virginia shores, thanks

to master builders like John Donahoo ofHavre de Grace. He is credited withconstructing dozens of lighthouses from1823 to 1853 and guiding millions oftravelers through perilous channels.

MAN VERSUS THE BEASTLYFORCES OF NATURE

By 1900, most of the Bay’s danger zoneswere marked with warning beacons. Atthe peak of construction, 70 lighthousesdotted the coastline, each with distincthistories and designs.

The early ones were lofty towersmade of brick or stone and were erectedon land. Modest homes for lighthouse

keepers stood nearby. Examples includeOld Point Comfort, Cape Charles, PointLookout and Cove Point lighthouses. It was a good start, but soil erosion underthe towers posed a problem and causedsome to collapse or be moved. Plus, theselighthouses were located above the waterwhere dangers awaited cautious shipcaptains.

To address those logistical problems,screwpile lighthouses were developed.From 1854 to 1900, 42 of this designwere erected – more than anywhere elsein the world – and they became a symbolof Chesapeake maritime ingenuity.Screwpile lighthouses were two-story

buildings with seven or eight sides, thebeacon on top and iron piling legs thatwere screwed into the Bay’s softmuddy floor. Lighthouse keepers andtheir families lived on the second story. Examples: Thomas Point Shoal, DrumPoint and Hooper Strait lighthouses.They were positioned in the water tobetter aid passing ships, and massiverocks were piled around the base to secure their spidery legs. However, this type of lighthouse struggled tohold up against the Bay’s poundingwaves, ice chunks and high winds. One screwpile structure was blown offits platform during a ferocious stormwith the keeper inside and floated forfive miles before he could escape.

Undaunted by Mother Nature’s powerful forces, determined maritime architects came up with a new solution — the caisson lighthouse. From 1873 to 1914, they designed lighthouse foundations with cast iron cylindersfilled with stones or concrete anddrilled them deep into the Bay’s bottom. With a top tower built of brickthe caisson style evolved into sturdystructures that could withstand ruggedChesapeake conditions. They might nothave as much curb appeal, but most of them have survived since the 1890s.Examples: Wolf Trap, Sandy PointShoal, and Smith Point lighthouses.

Last but not least was another resourceful means to beat the precarious elements and offer travelers safe passage around the Bay — lightships. The first of thesewarning vessels was built in 1820 inVirginia. They could move into deepwaters and withstand harsh conditionsthat land-bound lighthouses could notendure. Plus, they could scurry away if situations became to rough. TheLightship Chesapeake is retired fromher call of duty and now entertainsguests in Baltimore’s Inner Harbor. ml
