Date: 8/8/17 Agenda Topic: Community Supported Agriculture Agenda Item 6.1 Information The Community Supported Agriculture program (CSA) has an average of 20 participants per week. A majority of our participants have been CSUN staff and faculty. We market our CSA program via our website, Facebook, Instagram, and bulletin board as well as during our on and off campus tabling events. Interns have developed nutrition education handouts and interactive games that are implemented each week during CSA pick-up hours that involve a produce item of the week selected from the items “in the box”. Unfortunately, Spring 2017 was the last semester for this internship. Underwood Farms has decided to cut the CSA program. The collaboration with Underwood Family Farm since 2008 has come to an end, but we look forward to working with them in the future. Advisory Board Action n/a

Date: 8/8/17 Agenda Topic: Diet & Recipe Analysis Agenda Item 6.1 Information MMC Interns utilize the Genesis Food Processor software to conduct nutrient analysis of food records for diet analysis, and they also utilize the software to conduct nutrient analysis of recipes that includes a nutrition facts label, ingredient list, nutrient analysis, and food safety guidelines. Analyses may also be completed for recipes provided by outside food manufactures. All interns have taken or currently taking FCS 321, which introduces them to the Food Processor software. Annual maintenance fee was paid for ESHA Food Processor software. We are in discussion with the California Avocado Commission, and will be conducting recipe analysis for them. Date: 8/8/17 Agenda Topic: Cooking Matters® - Grocery Tour

Grant Agenda Item 6.1

Information The Marilyn Magaram Center received a grant from Cooking Matters® to help support coordinating and implementing grocery store tour for low income communities. Dietetic Interns and MMC Interns are trained in the Cooking Matters® curriculum and prepare to conduct the tours. We are working with local grocery stores with whom we have already developed relationships through past grocery store tour programs. All tours follow the Cooking Matters curriculum (i.e. reading food labels, comparing unit prices, finding whole grain foods, and identifying three ways to purchase produce), followed with a short cooking demo where participants can take samples as a snack. In addition, we collaborate with other departments on campus, to coordinate pop-up grocery store tours. This collaboration draws awareness to the importance of purchasing fresh vegetables and fruit and a greater understanding of healthier food items by the low-income families with children ages 0-5 within local communities. Date: 8/8/17 Agenda Topic: Glendale Adventist Medical Center Agenda Item 6.1 Information In this MMC Internship, MMC Student Interns volunteer at Glendale Adventist Medical Center (GAMC) in the Clinical Nutrition Department. Under the supervision of the Clinical Nutrition Manager, volunteers work with GAMC staff to collect diet orders according to the information obtained through patient visitation and screening, taking into account allergies and functional needs. Additional tasks are assigned as needed by the Clinical Nutrition Manager.

We typically coordinate for 1-2 MMC interns to volunteer through Glendale Adventist. We had one intern for Summer 2017.

Date: 8/8/17 Agenda Topic: Calahan Elementary Agenda Item 6.1 Information This internship was developed in honor of Dr. Christine Smith, who worked closely with Calahan to provide a bountiful garden program. MMC Interns provide nutrition and garden education to students and parents at Calahan, as well as maintain and improve the existing chicken coup.

From August 2016 to June 2017, our student leader who is also a Master Gardener, Frida Endinjok, and our Let’s Grow Healthy Interns have been reviving the garden and coordinating the gardening classes. From August 2016 to December 2016, we were building a relationship with the school, Principal and Teacher who currently oversees the garden and chicken coup. The revival of the garden and coordination of the garden classes was implemented from February 2017-June 2017.

Date: 8/8/17 Agenda Topic: Compusense/ Sensory Lab Agenda Item 6.1 Information Compusense is a sensory analysis software program that enables us to provide research data in the field of food science. Students assist and coordinate with the Marilyn Magaram Center Food Science Coordinator to create Compusense learning opportunities for food science and nutrition students as well as be able to provide contracts to local businesses in the future. Interns are currently helping finalize procedures and guidelines for our Compusense/sensory lab. In addition, we have be collaborating with Local Roots Farm, conducting sensory analysis for their hydroponically grown lettuce.

Matador Marmalade is a student based project utilizing our on campus orange groves to create a delicious marmalade product to be produced and sold on campus. This project includes but is not limited to recipe development, sensory analysis, product labeling, UPC coding and marketing. Our interns are currently working on a low sugar and high protein version of our matador marmalade. We have also received approval to sale the matador marmalade on campus, and collaborating with LACI to help expand this project.

Date: 8/8/17 Agenda Topic: Spicy Matador Agenda Item 6.1 Information MMC Student Interns assist and coordinate with the Marilyn Magaram Center Food Science Coordinator with the development of Spicy Matador, a spice blend created with herbs grown from the CSUN Sequoia Hall garden. This project includes but is not limited to recipe development, sensory analysis, product labeling, UPC coding and marketing. Our interns are currently working on a low sodium version of our Spicy Matador. We have visited Pacific Spice Company, and are in process of a collaborating for them to mass produce our Spicy Matador blend.

Information WIC is a Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) that provides Federal grants to States for supplemental foods, health care referrals, and nutrition education for low-income pregnant, breastfeeding, and non-breastfeeding postpartum women, and to infants and children up to age five who are found to be at nutritional risk. Marilyn Magaram Center has been awarded a grant from Northeast Valley Health Corporation (NEVHC) to open a WIC Satellite Clinic on CSUN campus. The clinic is located in Santa Susanna Hall Room 104. Erin Manlulu, NEVHC Clinic Supervisor, oversees the clinic on Thursdays. The Clinic is open to all CSUN students who are low-income, expecting a child and/or have children ages 0-5. The CSUN WIC is a pilot, with a few challenges during the year. The satellite was not able to schedule appointments for the CSUN WIC office since it was not a full service (approved) WIC site at this time - there were no dedicated appointment templates. This will be discussed and based on the number of participants we are able to reach in the upcoming year. The next phase of the CSUN WIC has started in which the participant can now satisfy the education requirement with a group class worksheet or single contact counseling (when feasible). The participants will then be able to receive their food instruments (checks) via mail. Different weighing scales for the participants (infants, children, and adults) are now available in the office. Lactating moms have access to personal manual pumps provided by NEVHC WIC Program. With these changes, we hope to see an increase in participation. In Fall 2016 there was a time change from morning to afternoon to accommodate participant needs, and there have been several outreach efforts discussed to help with participation rates. In Spring 2017 the hours of the satellite changed back from 9am-1pm, and this date and time will continue to Fall 2017 semester. We had a meeting with WIC and the Institute of Health and Wellbeing during Spring 2017 semester to discuss the WIC satellite on campus, and how we can overcome some of the challenges. We discussed several outreach plans and will have our Dietetic Interns participant in our outreach efforts. Advisory Board Action n/a

Date: 8/8/17 Agenda Topic: Let’s Cook and Grow in Schools Agenda Item 6.4 Information Let’s Cook and Grow in Schools is a program developed to increase physical activity and healthy eating behaviors among elementary school students and their families in low income, predominantly Latino serving schools in Los Angeles. Thank you to our funder: Kaiser Permanente Panorama City Community Benefit Grant Program, UCLA KP, and Clinton Foundation. Within the past year, we contracted with 4 LAUSD elementary schools, Anatola, Gault, Napa Street Elementary, and New Academy and implemented Let’s Cook, Move and Grow in Schools. Each school received Parent Education Class, My Plate: The New Food Guide Musical, garden/nutrition education and creating a parent/staff/teacher committee to help make policy change. We have gone back the schools and implemented the MyPlate Musical for the parents in addition to the train the trainer model. We also went to Anatola elementary to help guide and follow-up on the train the trainer model. In Spring 2017, we went into the schools and focused on creating a committee to help make policy change within the school community. We just received a generous grant from Kaiser Permanente Panorama City and Kaiser Permanente Woodland Hills to continue this project. Date: 8/8/17 Agenda Topic: Champions for Change Agenda Item 6.5 Information The Marilyn Magaram Center (MMC), in collaboration with CSUN's Institute for Community Health and Wellbeing, is excited to start implementing the Champions for Change-Healthy Communities Initiative! A grant for $880,000 through the Los Angeles County Department of Public Health. Champions for Change is a statewide initiative that focuses on utilizing nutrition education, physical activity engagement, advancement of policy, systems, and environmental changes. The overall goal is to apply comprehensive evidence-based obesity prevention strategies to achieve specific behavioral outcomes. These outcomes include increased consumption of healthy foods, reduced consumption of sweet beverages, and increased levels of physical activity. The planning phase for the Champions for Change Program begun in February 2017. Class implementation and garden revitalization/building officially began on April 19, 2017. Since its launch, the Champions for Change program has successfully implemented 135 nutrition and gardening education classes at 12 sites (CDI, Guadalupe Center , Canoga Park Elementary, Hart Street Elementary, Columbus Middle School, Canoga Park High, Salvation Army, West Valley Boys & Girl Club, N.E.W Academy, NEW Economics for Women, Coutin School, Alliance for Community Empowerment (ACE)). As part of our policy, systems, and environment collective impact effort, we have revitalized three gardens and built seven. We have established one Wellness Committee at each site and we have created a Health Task Force to support and move forward our efforts to reduce the prevalence of obesity and increase fruit and vegetable consumption in the city of Canoga Park. At Canoga Park high school, we have establish a garden club. This club is composed of all ninth grade students. The purpose for this club is to engage these students in a seedling program and to grow the idea of a farmers’ market day at the high school. Furthermore, we have begun our coalition building efforts that will lead to a change in the community as a whole and begin the discussion of urban agriculture in Canoga Park. We have establish one garden club at Canoga High. Over the course of six months, we have held 24 planning/outreach/recruitment meetings, 11 Wellness Committee meetings, 2 Health Task Force meetings, and 1 Coalition meeting. In addition we have participated in 4 community events and community events and hosted 2 site. Our direct education program (classroom delivered classes) has reached three hundred and seventy participants and we estimate that our indirect education (community events, site events, and sent-home educational materials) have reached two thousand people. In addition, we believe that indirect education has reached many other students/persons within the school/community center sites because of indirect exposure to the garden. However, at this time, we are not able to provide an estimate on the number reached for this population. In addition to having an impact in the community of Canoga Park with our nutrition/gardening education, institutional, and environmental change efforts, the Champions for Change program offers internship opportunities to CSUN undergraduate nutrition students, CSUN/MMC dietetic graduate students, and will provide community service opportunities for CSUN’s Bridge to the Future in-coming freshmen in Year 2. Year 2 planning phase has begun. We intend to implement 280 direct education classes. This will be in addition to hosting and participating in many more community events. They specialize in menu, recipe and product development. They are a full service food consulting and marketing agency that provides food styling, consulting and specialized programming to corporate clients throughout the world. Their customized programming for our food clients includes recipe development, menu concepts and planning, feature writing, food styling, promotional products, new restaurant concepts, catering, wine and food special events and promotions, merchandising materials, on-line training, product prototype development and evaluation of nutritional requirements and ancillary educational materials. They work from coast to coast, and internationally in Mexico, Canada, Australia, United Kingdom and Brazil. Some companies and restaurants they have worked with are Shakey’s Incorporated, Rose City Diner (Pasadena, California and Honolulu), Penguins (Santa Monica, California) and Market City Cafe (Pasadena, Burbank, Beverly Center in West Hollywood), Gelson’s Markets, Safeway, Inc., IHOP and Quizno’s Classic Subs among many others. The MMC is collaborating with Rochelle Levy & Associates, Inc. to complete recipe analysis. Total number of recipe analyses from July 2016 to June 2017: 68 We are in current discussion with the California Avocado Commission, and will be conducting recipe analysis for them.

The MMC awarded two students the Dr. Chen and Dr. Smith scholarship for Spring 2017. In addition, we were able to sponsor 3 Dietetic Interns to attend the California WIC Association Conference, 12 Dietetic Interns to attend the California Academy of Nutrition and Dietetics Annual Conference, and collaborate with Pacific Spice Company to send one of our students to the Institute of Food Technology Conference in Spring 2017.

Information The MMC is in the process of setting-up a contract with Local Roots Farms. Local Roots is a company that has essentially designed an indoor farm. In Spring 2017, MMC was able to complete antioxidant level testing and sensory analysis for Local Roots Farm’s hydroponically grown lettuce. We are continuing to work with Local Roots, and will be testing their Mars Mix (Spring Mix), Butterhead lettuce, Kale Trio and Gems Mix (Baby Romaine). Date: 8/8/17 Agenda Topic: Feeding Therapy Clinic Agenda Item 6.12 Information The Speech, Language, and Hearing Center at California State University, Northridge works to provide the San Fernando Valley community with access to early intervention for children with diagnoses that interfere with their speech, language, and hearing. The health care professionals at the Speech, Language, and Hearing Center have expressed a need for Registered Dietitians to work with their patients in order to address selective eating. Selective eating is defined as selectivity of food that severely limits dietary intake, resulting in compromised nutrition status. The Feeding Therapy Clinic will be designed to address selective eating by providing patients with nutrition assessment and intervention plan. In addition, the clinic will provide education and tools for families, so that they may be able to provide their children with support needed in the home to increase nutritional intake. Musical Agenda Item 6.13

Information The MMC and the CSUN Theater Department have joined forces and have begun collaborating on a theater project. Programs utilizing theater, such as the Kaiser Permanente Educational Theater Program, have shown to be beneficial for education and we hope to provide the same to our community. The goal of this project, as well as future projects is to enhance and promote health and wellbeing through the medium of theater. The focus of their first collaboration is to assist in the prevention of eating disorders in adolescence. The first workshop was held in January 2017 at Canoga Park High School. There were 25 high school students who attended and participated in the workshop. Our very own Dietetic Interns, Dannielle Trafficanda and Paige Handler, lead a few activities. We have submitted a grant application to the National Endowment for Arts, to get funding to continue our educational theater projects, which includes our MyPlate: The New Food Guide Musical. SAEP Agenda Item 6.14

Information The Marilyn Magaram Center partnered with the Michael D. Eisner College of Education’s Summer Academic Enrichment Program (SAEP) for an exciting week of Culinary Camp for kids June 2017. The middle-school age children were taught basic culinary skills and engaged with hands-on cooking in the MMC Wellness Kitchen. Their experience in the kitchen was coupled with nutrition and food safety lessons that gave students the guidance necessary to choose and prepare healthier snacks. Each day focused on a specific food group depicted on the USDA’s MyPlate diagram and corresponded with the recipes used during cooking time! After each class, the children participated in daily garden activities in the MMC Wellness Garden that helped them learn about plant anatomy, gardening techniques, and sustainable growing practices like composting. By the end of the week, the students put together the knowledge they acquired from the first four days and ingredients from the MMC Wellness Garden to prepare a healthy meal containing each of the food groups. First Annual Summer Culinary Camp for kids was a great success! We were able to sign-up 20 middle school aged children. Advisory Board Action n/a
