A well-balanced diet is an essential component of maintaining a healthy weight. Obesity is linked to higher rates of complications for both mother and baby.

Extra vitamins, minerals and nutrients are needed during pregnancy to help babies develop healthily. For some women, the extra nutritional demands of pregnancy and breastfeeding may make supplementation advisable.

This issue, we explore healthy eating for women who are pregnant, breastfeeding or considering pregnancy to help their body perform the miracle of growing a baby.

Be sure to maintain a healthy and balanced diet, which includes these important vitamins and minerals:

FOLATE/FOLIC ACID A B group vitamin, particularly important for women planning a pregnancy. Folic acid, taken at least one month before conception and for the first trimester of pregnancy, substantially reduces the risk of birth abnormalities called neural tube defects (NTD) in babies, the most common of which is spina bifida. Women with increased risk of NTD may require a higher amount than usual. The best way to ensure an adequate amount of folic acid is to take a supplement as well as eating foods with added folic acid or naturally rich in folate.

VITAMIN D Produced by the human body from exposure to sunlight. It can also be found in foods such as fatty fish, fish-liver oils, liver, eggs and mushrooms. Vitamin D has many functions, including maintaining healthy bones. Pregnant women at risk of vitamin D deficiency should consider testing and supplementation. There is, however, limited evidence available on the usefulness and safety of routine vitamin D supplementation.

VITAMIN B12 Essential for infant neurological development. In particular, vegetarians and vegans should supplement with B12 during pregnancy and breastfeeding.

IRON Requirements are increased in pregnancy. Iron supplementation may be required for women at particular risk of iron deficiency e.g. vegetarians and women with multiple pregnancy.

IODINE An essential nutrient, vital for normal development of the brain and nervous system before birth, in babies and young children. It is extremely important that pregnant and breastfeeding women get enough iodine - supplementation is recommended. Women with pre-existing thyroid conditions should seek advice from their doctor prior to taking iodine supplements.

CALCIUM SUPPLEMENTATION Recommended for women who avoid calcium (e.g. lactose intolerant) and do not consume alternative foods rich in calcium. Safe during pregnancy and shown to reduce the risk of high blood pressure in pregnancy and preeclampsia (potentially serious condition for mother and baby).

OTHER VITAMINS AND MINERALS There is little evidence to support ‘routine’ supplementation of other vitamins (such as A, C & E) or minerals (magnesium, fluoride, zinc or rare minerals) in pregnancy.

It is important to talk to your doctor if you think you are not getting enough vitamins or nutrients. It is also important to seek medical advice if you are uncertain whether you should be taking a supplement.

LIVING LOCALwhat’s onPLAY: THE PASSION

TURRAMURRA UNITING CHURCH 23 March - 4 April, 2012

The Turramurra Passion returns again for the fourteenth year. The play is a character-driven drama, portraying the events surrounding the death of Jesus and tells the Easter story in a contemporary and engaging way and like the best things in life, tickets are still free.

“Creating a community event has always been part of our long term vision for the play,” says Writer/Director Dave Cornford.

For most of the play, the action takes place amongst the audience, rather than in front of it. The cast mingles with the audience through six different settings, in and around the grounds of the historic Turramurra Uniting Church building,Turramurra Ave.

The form of the play is based on that of the traditional Medieval Cycle Play, and later Passion

Plays such as Oberammergau. This traditional form has been transformed into a modern setting, with minimalistic sets, simple costumes and multi-media elements, to present a more universal and timeless context.

Mal Day, of Turramurra, will be showing his versatility, having played the lead role for five years and Caiaphas for two years. He will take on the role of Pilate in 2012. Duncan McLean, of Manly, will be playing the lead for the fifth year.

This Australian musical presented against the backdrop of Easter, revolves around the inner turmoil that besets Nicodemus, the Chief Teacher of Israel, when he is confronted with the teachings and miracles of Jesus. Nicodemus is torn between a life of luxury, privilege and entitlement and the devastating loss of everything he has achieved and worked for. ‘Nicodemus’ contains all the elements of public and private betrayal, intrigue, personal anguish and political expediency, intermingled with eye-popping, big-sounding and entertaining music and dance.

WHAT’Son

KARRI IS TWELVE-YEARS-OLD, ALTHOUGH THE WAY SHE SWIMS, YOU’D THINK SHE WAS THREE. SHE HAD A TEN-YEAR CAREER IN PROTECTING THE AUSTRALIAN COMMUNITY. KARRI, WAS A “SNIFFER” DOG.

While contemplating what to write, I felt a gentle nudge on my knee. My girl, my mate, my German shorthaired pointer, Karri. Karri’s story is not as sad as some of my rescued pets, from my experience as a vet nurse and with RSPCA and WWF, but a very noble one.

I think it is important to see animals for all the things they are. I have had to face the harsh reality of the cruelty that some animals experience, but sometimes we forget what they actually are to us; not just as pets but how they contribute to our society.

Each day, Karri was picked up at 6am to be driven to the mail centre where, with her handler, she would sniff mail for up to 8 hours a day. She was known as one of the best and was put to retirement late, due to her dedication to the job. Her role was to have her nose to the ground and at full-speed, run through and around thousand of letters and packages a day. It was only when an illegal or questionable scent hit her sensitive nostrils that she came to a crashing holt.

All this for one simple reward: a tennis ball.

After working all day, Karri returned to the kennels where she was placed in a run with other working dogs until her next shift. And ten years passed her by.

You may think that’s they end of her story, but no. Upon retirement, many working dogs don’t cope well with the change in lifestyle, have behavioural issues and a hard time settling. In Karri’s case, her obsession with her ‘reward tool’ would cause her to run (without concern for traffic, other dogs, or people) if she saw a tennis ball being thrown around. She had only ever been exposed to a van, mail centre and a run. No concept of cats, fish tanks, slippers, lounge cushions or glassware; all of which suffered some sort of disturbance with her arrival. Each morning, she circled frantically waiting for the van to arrive to take her to work. She jumped on the kitchen table every time I brought the post in. It was hard for her to understand that we weren’t just another handler, but her family. She never had one before.

It took two years of retraining for her to understand that she no longer has to work so hard, and although times have been very frustrating, she has become more accustomed to lying on her lounge, playing with toys that are not a ball, and believe it or not, sleeping in when I leave for work. There were fears that we wouldn’t be able to help her adjust to a pet’s life but she is now a very happy girl.

It makes me laugh out loud when we go walking and she signals that she has ‘picked up on something’. She stops and looks directly at the questionable person having a coffee. I just say ‘good girl’ and keep moving on.

I VIVIDLY REMEMBER ONE HOT SUMMER AFTERNOON THAT I SPENT TEACHING YEAR 9 MATHS. THE CLASS WAS ONE OF THE MOST CHALLENGING I HAD TAUGHT. WE TALKED THROUGH THE BASICS OF SHAPES THAT ARE FOUND IN EVERY-DAY BUILDINGS. IT WAS QUITE PAINFUL, ALMOST EXCRUCIATING. THERE WAS VERY LITTLE THE STUDENTS UNDERSTOOD OR WERE WILLING TO ENGAGE WITH.

Judging by the confused expression people show when maths is discussed, this scenario is not too dissimilar from the average person’s experience of mathematics. Most people, adults and children, have the same view. They remember the red pen all over their exam pages. Mistakes. Sure, there are a select few with access to the world of answers. For most, the sacred path of the mathematician seems far from sight.

On that long afternoon, there was a young red-haired boy with a moment of revelation. If you look around, you will notice something: walls are built at right angles to the ground. This was an obvious fact that sparked a question in an otherwise disinterested mind. “Why?” he said, “What is so important about that?”

I responded slightly flippantly, “Imagine. Imagine a world where every wall is on a steep angle

instead.” With head tilted and gaze afar, he pondered for some minutes the possibility of this different world. It could not be any other way, he concluded. Right angles were the way to go.

The thought-life of a young man on a summer’s day gives me hope. Not knowing, he asked and sought. Far from the understanding he choose to grasp and dream after it. His imagination crafted a path to understanding, through his reasoning and visualisation.

Could it be that the old assumption is not true? Creativity and mathematics do dwell in the same realm.

Mathematics is that incredible and inexhaustible task of fashioning some logic in a chaotic world through strings of letters and numbers. Like the young boy, legendary mathematician, Fibonacci also saw recurring patterns in natural and man-made structures alike. It takes a keen eye and a sharp mind to see it.

Perhaps we have all been doing maths correctly after all; and we just need to add a little more imagination. Maybe, we just needed the next step? Imagine.

HOW TO PLAY:

Find the 4-digit train carriage no.

Use all four numbers in any order and with any combination of addition, subtraction, multiplication, division and brackets (as many of each as you like) to get to 1.

For example, if the train carriage is 3144: 3 - 1 - 4/4 = 1 or 3/4 + 1/4 = 1

Public speaking is so much more than just standing in front of an auditorium full of people. There are many opportunities in every-day life, which are not just limited to the workplace. Each person’s audience is unique. Whether you are making a board meeting presentation, interviewing for a job, a waiter explaining specials to a table, giving your birthday speech, completing a school assessment task, or negotiating with family members; you need to captivate your audience.

Most people simply do not enjoy speaking in front of an audi-ence. Whoever your audience, your anxieties can be lessened and message made clear if you remember these simple strategies:

THE AUDIENCE IS RARELY THE ENEMYWhen asked why people fear pub-lic speaking, a common response is, “because the audience is just waiting for me to make a mistake.” No one comes to a presentation saying, “I hope the speaker make mistakes.” Most people hope for a good (not perfect) speech. Also, most people are inherently on your side from the start.

SPEAK WITH YOUR AUDIENCE, NOT TO THEMA good speech is a good conver-sation. The best speakers speak conversationally while keeping it brief. Today’s audiences generally want short, practical presenta-tions that focus on “what’s in it for me?”

NOTHING CAN TOP A GOOD STORYTell a story, make a point. Tell an-other story, make another point. People don’t remember points, but they do remember stories. Use your own stories, no matter how simple, because personal stories will make you memorable. Use the two most important words in public speaking: “Imagine” and “Picture this”.

DO NOT HIDE BEHIND TECHNOLOGYA common and disastrous mistake is to say, “I’ll put my presentation on PowerPoint, then nobody will focus on me.” Wrong! PowerPoint is a great tool to help the audi-ence understand what you say, i.e. show a picture or chart, not your entire speech. People want to hear from you, not your slides.

WRITE IT OUTYes, write your speech word for word, but don’t ever stand there and read it. Reading a speech shows a lack of commitment and preparation. You can’t edit what you haven’t written. Rehearse your speech and pick one or two words that describe a paragraph and put that word on your note cards.

THERE IS NO SUBSTITUTE FOR PRACTICESpeaking is a skill that takes practice, like anything else in the world. Practice your speech out loud, until it flows smoothly and you are comfortable with the rhythm. Never rehearse in your head. Practice you hand gestures, facial animation and voice modulation.

AFTER WATCHING HI-5 ON TELEVISION WHILE GROWING UP IN NEW ZEALAND, TIM MADDREN’S DREAM CAME TRUE - AN OPPORTUNITY TO AUDITION! HE DESCRIBES IT AS "AN AWESOME EXPERIENCE” AND HIS CAREER TOOK OFF FROM THERE. WE TALK TO TIM ABOUT HOW TO KEEP KIDS ACTIVE AND ENTERTAINED, THE EFFECT OF TECHNOLOGY ON CHILDREN’S CREATIVITY, AND HIS CHARITY WORK WITH WORLD VISION.

1What does a typical day look like for you?

It’s so varied, we do albums, films, press and charity work. When in Sydney, our studio and film shoots are based on the North Shore. A typical day would be to get up around 7am, have breakfast, start our first show at 10am, meet with about 20 children, have lunch and then another show. When touring Asia, usually Singapore, we do a few shows a day then the crew pulls apart the set

while we wait. Around 5pm we drive to the next venue, then fall asleep. Not

as glamorous as it sounds; busy, but a lot of fun! It feels like you’re on a roller

coaster for those 2 weeks (laughs).

Tour, can you tell us more?

We will be touring around the whole of Australia. It’s so much fun. I often don’t know which town is next because we just hop on the bus and off we go. It’s really nice to be able to go out to the rural areas. It is amazing to be on stage and then meet the kids and I especially love to hear their individual stories. That’s what I really love about this job.

3How is Dayen Zheng fitting

in after replacing Fely Irvine?She is great! It’s really cool to have a new energy. She’s bright and bubbly and full of enthusiasm and we’re loving it! She’s a perfect fit. Kids seem to go by someone’s energy, rather than their image, voice or words. It is important for us to genuinely get along, otherwise kids sense that. For many kids that come to the show, a lot of the content goes over their head but they get the energy, vibe, fun and hilarity. That’s why it is so important that the energy of Hi-5 is genuine. Kids get bored easily!

We will miss Fely. We have been through so much together. It is very hard to say goodbye, especially without crying!

4 Favourite activity when

you were a child? Sailing. I loved it! I grew up in Marlborough, NZ and one day I was out on the water when a dolphin suddenly appeared under the boat with its little baby following behind. They stuck around for a couple of hours.

It’s harder [to sail] now because we tour so much, I have taken to surfing as it’s easier and I can still enjoy the water!

5You are a naturally

energetic person and a self confessed “child at heart,”do you have some ideas for keeping children entertained?Children will always be the same - they are always discovering and always up for fun! So how about these timeless activities?

The noisy way to have fun is to make cubby houses. Not just two chairs together and then a rug over the top. I’m talking, like, epic cubby houses! You get every cushion in the house and every blanket. Upturn your couches to make a tunnel, then you cover them with rugs, pillows and blankets, make it pitch black. Then you get a torch and crawl

through. You can make it a cave or whatever you want it to be. Cubby houses are the best!

I’m not too good with quiet activities but, from my experience, I have one thing that’s really good with kids and will appeal to grandparents. If you really listen to a kid, they really do have the most amazing imagination. Sit down quietly, when they’re nice and settled and ask them what they are thinking about. Whatever they suggest, say “yes” to. For example, they might say, “I’m thinking of going to the moon. Do you want to go to the moon?” If you let them lead the play time, you will be amazed at how imaginative they can be and what kind of whacky and weird world you can end up in!

I often take the time to do this with kids and all of a sudden they’re like, “I’m thinking about being an animal in the jungle. Can we be animals?” I respond with “Yeah!” and off we go to be so-and-so.

6What is your advice to

parents and grandparents when children want to spend a lot of time playing video games and watching TV?Our show is encouraging kids to watch TV but the goal is to make children interact and that’s what is especially great about Hi-5. There is interaction in the first minute, first line! Without interaction, kids’ shows aren’t good.

developed by someone else. The challenge is to work out some way of getting children to use their own imagination.

7Do you believe technology helps

or hinders children’s creativity today?I would be a fool to say that technology is wrong, because it’s not - it’s great. It definitely has its place and it’s not going away. Technology is an amazing tool to promote learning. It’s so easy and readily available, like on Youtube you can learn about a place, or watch surfing videos, for example. There is so much at their fingertips. It’s about how to best incorporate technology into our lives and how to use technology in a way that encourages imagination.

If a child is playing a horse-riding computer-game, then after the game, make a horse out of cardboard and encourage them to ride around the house with you. Otherwise, children aren’t using their imagination, which is one of the most important things when it comes to education and creativity.

With a computer game, someone else has created and imagined that game and there’s nothing really left for the child to imagine.

My primary school was in a rural area. The playground was conceived and designed by an architect, which was cool, but in this school there was a small forest, a whole lot of native trees plonked together. My mates and I would go in that forest more than going into the playground because we could use our imaginations. We could make a car out of a piece of wood. It was easier to use our imagination there than it was in a playground designed by someone else. Make the most of the beautiful bush surroundings in Ku-ring-gai. Explore and use your imagination!

We don’t know what the world will look like in 10 years but thanks to technology, the way we live has changed completely in the last 10 years. At a time like this, I think creativity is one of the most important skills to have. To be able to adapt in life, invention and creativity are so very important and highly, highly underrated!

8I hear you are a big

Paul Jennings fan. What’s your favourite book? Little Squirts for sure. Paul Jennings appeals to boys like no other writer. He is cheeky and funny. Paul Jennings really pushed my imagination. Read Little Squirts and you will see why. I can’t believe he got away with writing that for children, but he did, so I can say it (laughs).

WORLD VISION

9You and Hi-5 are ambassadors

for World Vision, can you share with us why it is so important to you? It is about making a change in the world. I think we have become complacent about what is happening in other parts of the world. Just being involved in an organisation, like World Vision, helps you become aware of what is happening; and that can never be a bad thing.

10 Can you share with us

an early experience doing the 40 hour famine? I started raising money for World Vision’s 40 Hour Famine in high school. Although, instead of going without food, we did a 40 hour running relay around our cricket ground, which also doubled as a round-a-bout. That was pretty cool. I organised the

relay fundraising event and got it all going. One of the sides of the cricket ground was an area linking the airport to the city and there’s an area where pedestrians can cross in three ways. I stood in the middle of the pedestrian island and kept pressing the pedestrian button. Of course, each time I pressed it, it slowed the traffic down, which caused a traffic jam about 1 km long. We took advantage of this opportunity and took buckets to all the cars to collect money. People were giving us buckets of cash! Then soon the police stopped us from doing it, however, the traffic jam had made it onto the traffic report and was aired all the radios. The radios started to say, “These guys are raising money for World Vision, get behind them and make a donation!” Money was getting thrown out of cars, so we were picking up coins from everywhere - an amazing experience!

It was a great thing. Instead of doing the 40 Hour Famine we got a bit creative, which proved very successful. These days, I wouldn’t encourage this idea but hey, we raised a lot of money: $50,000 for World Vision and from that a lot

of people were looked after. Since then, my school has continued with the 40 Hour Famine and has raised $600,000 for World Vision.

After that I got a scholarship for World Vision and things followed from there.

11Do you go to sleep with

Hi-5 songs running through your head?They keep me up! I had one the other night that would not go away. I don’t know why they stick in your head, I have had a go at the composer about it (laughs).

12Lastly, where will you be in

the future?Definitely performing and still just as childish! Also, I can’t wait to be a dad. I can’t wait to rediscover the world again!

IT IS A LITTLE KNOWN FACT THAT IN AUSTRALIA THERE ARE OVER 3.5 MILLION PEOPLE WHO LIVE WITH SOME FORM OF HEARING LOSS. FOR GRANDPARENTS OVER THE AGE OF 70, THE ODDS ARE ONE IN TWO. THESE STATISTICS TESTIFY TO THE FACT THAT HEARING LOSS IS A PERVASIVE CONDITION AND YET MANY PEOPLE SIMPLY CHOOSE TO IGNORE THE SIGNS OF HEARING LOSS.

We asked Melissa Franks from Pinnacle Hearing in Pymble why this happens. "Top of the list, would be a degree of denial about how hearing loss is affecting their life. A lot of people say it is simply a facet of getting older, or dismiss the extent of their loss and say their partner mutters too much. In all cases we encourage people to think about whether they have a mild hearing loss and if so get their hearing checked.”

Unfortunately, most forms of hearing loss deteriorate as we age. It is better to address the problem early and the reason for this is quite simple. If we wait too

long our minds lose some of their capacity to interpret the sounds which are no longer getting through.

When our ears lose some of their ability to receive sound effectively, our

mind has to work doubly hard to interpret what is coming in. Some words start to sound like others and people fill in the gaps by guessing, or they just nod to cover for the fact that they’ve lost the thread of the conversation. In these cases often it becomes tiring to keep up in social situations. And in turn this might lead to isolation.

The good news is that a modern, programmable, digital, hearing aid can manage a hearing problem by selectively amplifying the sounds which our ear has lost the capacity to recognise on its own.

Melissa Franks opened Pinnacle Hearing in April last year to meet the hearing needs of the community after the only publicly funded hearing clinic closed at Hornsby Hospital several years ago. As a local of Turramurra, Melissa provides the type of continuity of service which can be lacking in the hearing clinic chains. Her clinic is one of the only full-time independent hearing clinics situated on the upper North Shore.

“Many people are not aware that the large chains of hearing clinics are owned or strategically aligned with a foreign-owned hearing-aid-manufacturer and in certain cases, their audiologists are working to sales targets. We would question how anyone can be sure they are getting objective advice when this is the case.”

Pinnacle Hearing is independent. “We see ourselves as working for our patient’s interests, and not our hearing aid suppliers. Being a private, family-owned clinic, we don’t have internal sales targets and we don’t spruik the wonders of some ‘invisible’ hearing device to attract patients.”

Modern hearing aids are discreet and far more effective than they were a decade ago. “Over time, the people I see show very obvious improvements in how they perceive what someone is saying and in their quality of life. They seem happier in themselves and I believe this is because it is no longer such an effort to communicate effectively and appreciate what life has to offer. It is immensely rewarding to me to see the way restoring hearing function can lift a person’s spirits.”

SOUL IN THE BUSH

A group of fifty Ku-ring-gai youth is heading to rural NSW to undertake service projects in local communities in April this year.

For three afternoons, they will undertake service projects, organised by the local church, to affect the local community. Examples include kids camps, chatting youth at an Indigenous drop-in centre, or starting a community garden.

Rod Thearle, Youth Pastor at St Philips Turramurra, has a group heading over the mountains to Bathurst, and is excited to see the youth stepping out of their comfort zone and taking action. “Our young people are passionate about living-out their faith and impacting communities with their actions; not just participating in church on the weekend,” says Rod. “It’s a great opportunity for our youth to be part of something bigger themselves, on the streets of Bathurst.”

In total, local youth organization, Soul Survivor is taking 600 young people to serve local communities in rural NSW as part of this year’s ‘Soul in the Bush’. Matt Gelding, Director of Soul Survivor NSW, says this is more than just a one-off event. “We’re asking each group of 12 to make a three year commitment to the community they visit, and spend time in the community as ongoing support.”

CAROLINE PEMBERTON MEETS TIMOR LESTE DIGNITARIES IN GORDON

Sydney’s North Shore recently entertained the Prime Minister of Timor Leste, Xananna Gusmao and the Timorese Secretary of State, Mr Agio Perreria. Along with other dignitaries, Mr Gusmao was in Sydney for the launch of his book Strategies for the Future.

Local entrepreneur and successful businessman, Jerry DaSousa brought the entire Timorese Government delegation out to Australia on his new airline, Timor Air. Jerry grew up in poverty in the rural villages of Timor Leste and now resides on the North Shore. Having overcome great adversity, he has achieved incredible business success.

Prior to the launch of his book, local resident Caroline Pemberton, Ambassador for Timorese Tourism and former Miss Australia, had the honour of welcoming the Secretary of State to Sydney at Jerry’s stunning serviced offices on the Pacific Highway in Gordon.

Unique Nepal Experience January 2013

Allan Waldon has received strong interest in the planned trip in January 2013 to the villages and schools helped by the project in Nepal. It will be a unique experience trekking through a remote part of the Himalayan foothills, rarely visited by outsiders. The traditional culture and agricultural way of life continues largely as it has for centuries, in the shadow of the majestic Himalayan peaks is Manaslu, over 8,000 meters and the eighth highest mountain in the world, and Ganesh Himal.

MORE TEACHER TRAINING IN NEPAL

A second group of teacher trainers, organised by Rotary, visited Allan Waldon’s Nepal schools in January 2012. The group comprised six Australians, including four teachers. While it’s important to improve physical infrastructure, it is crucial that this is complemented by efforts to improve the quality of the teachers. Sadly, few teachers in state schools in Gorkha District have any tertiary education, and specialised teacher training is even rarer, so the teachers helped by the project are very keen to learn.

This year, 80 teachers from 34 schools attended. All teachers walked to and from their homes each day, up and down the steep Himalayan foothills for up to three hours each way.

The training group’s leader, Peter Kindred a local Chartered Accountant, was so impressed that he is now putting together a Rotary International Aid project to build new school toilet blocks. Some schools have no toilets and those that exist are often very poor. Peter is an experienced member of Rotary and aims to use Rotary’s global network to leverage funding.

ADVANCED MELANOMA

New treatment has the potential to double survival time. One of the first new melanoma treatments to be released in over a decade could double the average survival time for melanoma patients.

The drug, Vemurafenib, was approved by regulators in the United States and Australia last year after studies showed that in a significant number of patients with advanced melanoma, the cancers either stopped growing or shrank after receiving the treatment.

The latest research now shows that in many cases, treatment with Vemurafenib has doubled cancer patients’ survival period from 6-10 months to approximately 16 months.

Some of Australia’s leading cancer research institutes were involved in this study. These research facilities have been awarded significant funding from the Australian Cancer Research Foundation (ACRF), totalling over $10.5 million.

I discovered Tasmania on a ten-day driving adventure. Australia is renown for its diverse landscape; and despite its size, Tasmania is no exception. It uniquely combines the rolling hills and glacial carved mountain ranges (similar to that of New Zealand) in between and along side dry bushland and picturesque coastlines. Here are my 7 highlights:

1 The Bay of Fires in the North East is listed

by the Lonely Planet Guide as a must see destination. The colour contrasts were amazing: white sandy beaches, with sapphire pools faded into the green ocean and yellow sand, which touched grey rocks covered in bright orange moss. We stopped to swim in the crystal water surrounded by the sparse bush that had grown out over the rocks of the shore.

2 The Bicheno Fairy Penguin Night Tour. We were lucky

enough to get right up close to these tiny, cute, but deceptively armoured, birds as they waddled past us from the shore to their nests. Our knowledgeable tour

guides pointed out the Orion’s Belt and the Southern Cross that shone so brightly while we were away from the city. Bicheno is also known for its glass bottom boat tour.

3 The Freycinet National Park where I experienced the Frey-

cinet Paddle, a guided Kayaking tour of the Freycinet Peninsula.

Listed on Nine Network’s “Things to try before you die”, it truly met my expectations. The twilight paddle took a total of three hours with equipment and refreshments provided. The guides were quick to point out stingrays speeding past in the calm water and a large starfish.

4 Sheffield Mural Town in Northwest Tasmania

displays an artistic and colonial heritage. Worth a stop, even if you are just travelling through on the way to Cradle Mountain, the town boasts over 60 murals. Known as a thriving outdoor Art Gallery, large-scale artworks drape around the buildings in the towns centre and surrounds. The town was previously in economic decline, but has now transformed into a great tourist destination.

5 Lake St Claire situated below Cradle Mountain, is another

example of Tasmania’s beautiful landscape. Blue mixed with deep aqua green, stretched out until it touched the crisp crystal-clear

water right near the shore. Although we just stopped to see the lake, up to six-day treks are under-taken in Lake St Claire

National Park over Tasmania’s biggest mountain.

6 Mt Field National Park. Well known for its alpine land-

scape, Russel Falls is one of the most photographed areas in Tasmania. Only thirty minutes walk from the visitors centre, deep-green forest drapes around the white water waterfall. Watch in awe from the visitor’s platform and follow the creeks that wind amongst some of Australia’s tallest trees.

7 Hobart is a city that truly combines the colonial and

the new. The $75 million Museum of Old and New Art, is one of the most amazing in the world. Situ-ated within a vineyard and against the harbour, this new enterprise has gained international atten-tion. A private museum; there re-ally is no limit to the extravagance of David Walsh’s vision. Each patron is given their own i-phone that senses the artwork as you walk past; displaying information, interviews and reviews of indi-vidual art works. As you turn each corner, you can expect anything from the likes of Damien Hurst to coins from Ancient Rome that are reminiscent of a shimmering galaxy. On your i-phone, you can hit the like or dislike button for each artwork and have your tour emailed to you. Simply a must see!

AN EASY MEAL PERFECT FOR GOOD FRIDAY. ANY FRESHLY PICKED HERBS FROM THE GARDEN WILL TASTE GREAT.

INGREDIENTS

500g spaghetti

125 ml extra-virgin olive oil

3 large cloves of garlic, finely chopped

2 small birds eye chillies, finely chopped

2 tablespoons Italian parsley, finely chopped

2 tablespoons tarragon leaves, finely chopped

2 tablespoons chervil, finely chopped

2 tablespoons chives, snipped into 2cm lengths

sea salt, to taste

freshly ground black pepper, to taste

3 tablespoons finely grated parmesan

To serve parsley, tarragon and chervil leaves.

SIZZLING HERB AND garlic pasta

RECIPE

1 Bring a large saucepan of salted water to a rolling boil, add pasta and cook until al dente.

2 Heat oil in a pan and saute garlic and chilli until garlic is fragrant but not coloured. Add herbs and cook until they sizzle – about 1 minute. Remove from heat.

3 Drain pasta and toss through the sauce. Season with salt and pepper, sprinkle with parmesan and serve garnished with herb leaves.

The Commonwealth Bank of Australia (CBA) announced that its final dividend for the year was $1.88, which when added to CBA’s interim dividend, shareholders will have received $3.20 for the calendar year 2011. The $1.88 dividend was an 11% increase to the previous year’s final dividend. Over the year CBA increased its total dividend by 10.30%.

Despite what the media is reporting about the current state of our stock market and despite what the spokesman for CBA is saying about how hard it is to remain competitive, the fact is CBA is run by some of the best minds in Australia and it made a record profit of $6.8 billion (to 30 June 2011).

All true assets have two dimensions: price and income. Investors must monitor both of these in order to make the right financial decisions. Unfortunately, Australians are too pre-occupied with the price movements of their assets but the fact remains that if a retiree holds CBA in his/her retirement account and never sells the share, the price becomes irrelevant. On the other hand, income becomes the dominant criteria as to whether the asset is judged as a quality asset or not. Quite clearly all investors should admire the ever-increasing income stream paid by CBA since it was floated in 1991.

Speculators buy assets with a hope that the asset’s price increases and they can sell for a short-term gain. Investors buy assets for their long-term qualities and disregard short-term price movements as these usually are the result of market sentiment or investors emotions.

THE BEST KEPT secret?

Unlike a residential investment property, where the rent is collected by the owner and rarely gets re-invested back into the asset (apart from maintenance and repairs), blue chip Australian companies re-invest up to 60% of their profits. This allows the company to grow and make ever-increasing profits, thus allowing directors to keep increasing dividends. CBA is a great example of where retirees can purchase a share with the sole intention of collecting an ever-increasing income stream, without having to worry about price movements.

If diversification is about not holding all your eggs in one basket, then investors should purchase a portfolio of blue chip shares and/or a portfolio of rental properties. Buying one or two rental properties is not being diversified and hence it is far easier to diversify into a portfolio of a dozen shares earning an ever-increasing dividend stream.

In Australia, we get the extra benefit of using the imputation system, whereby not all of your dividend income is taxed at your marginal tax rate. Unless you are holding your rental property in a self-managed super fund, rent received by the owner will be taxed at his or her marginal tax rate.

There are numerous blue chip companies like CBA that continue to grow and pay out strong dividends. Why the financial media doesn’t report stories such CBA and others, I don’t know. What I do know though is how to help you find them.

ROSEVILLE: MR SHANE FITZSIMMONS, COMMISSIONER OF THE NSW RURAL FIRE SERVICE STRONGLY ADVISED THAT EVERYONE AT RISK IN KU-RING-GAI SHOULD PREPARE A BUSH FIRE SURVIVAL PLAN. EIGHTY GUESTS LISTENED TO HIS SPEECH AT THE RECENT KU-RING-GAI BUSINESS FORUM HELD AT ROSEVILLE GOLF CLUB ON 29TH FEBRUARY.

During his speech Commissioner Fitzsimmons outlined some of the risks posed by fires and discussed how being prepared is an important part of protecting families, homes and businesses from the impacts of bush fires. He said, “Community preparedness is key. When you have a well prepared community working side by side with a strong fire fighting effort you get good results”. He talked about the importance of having a bush fire survival plan in place as a key to being prepared is to understand the level of bush fire risk you and your property are exposed to.

Shane Fitzsimmons was appointed Commissioner of the NSW Rural Fire Service (RFS) in September 2007 and is responsible for over 70,000 volunteers. He is a dedicated fire fighter with

over 20 years of experience in emergency services management. As Assistant Commissioner for Operations, he was responsible for the co-ordination of all fire fighting arrangements during some of the largest bushfires in the State’s history, including the 2001-02 and 2002-03 fire seasons that had a dramatic impact upon the Ku-ring-gai area.

During the course of the evening, David Langdon, Chairman of Ku-ring-gai Financial Services Limited, took the opportunity to announce the launch of the “Hero HQ” initiative sponsored by the Turramurra and Lindfield Community Bank® branches.

The local facilities for both the Ku-ring-gai SES and Bush Fire Brigade are arguably sub-standard due to their age and the fact that part of their joint headquarters at East Wahroonga have had to be demolished due to building failings. Importantly, the SES facility is the local HQ and a back-up regional HQ if required.

The cost of rebuilding a modern facility for both organisations is in the order of $2 million. Much of this funding has been made available by the State Government, Ku-ring-gai Council, the SES and the NSW Rural Fire Service. However, there is presently a shortfall in the order of $200,000 to undertake the internal fit-out of these two new buildings. The locally-owned Turramurra and Lindfield Community Bank® branches of Bendigo Bank have committed to assist the Ku-ring-gai SES and Bush Fire Brigade to raise these funds from the

community. They plan to do this by directly engaging with the local Ku-ring-gai community and also by matching funds raised by the community on a dollar-for-dollar basis up to a total of $100,000.
