Our MissionEnhancing and supporting
the lives of seniors.
What a roller-coaster the past month has been. I have been amazed at the flexibility & innovation of the Senior Center staff as we adjust to the ever-changing conditions due to COVID-19. Even more impressive has been the resilience of the senior community to take these changes into stride.
People have remained positive, reached out to others, sewn masks, crocheted chicks & eggs, danced on their balconies and kept smiling though it all. Thank you to all who have helped to keep our spirits up by kind words, donations, cards and, I’m
sure, smiles behind those masks!
Please remember to reach out to your senior friends and neighbors with a phone call, e-mail or shout. We all need a little extra support and sense of community in these trying times – hang in there! This too will end and I look forward to seeing you all in the near future. Stay safe and keep in touch.Becky [email protected]

ADVICE FROM THE SENIOR CENTER HOME CARE STAFF ON ACTIVITIES TO DO TO GET YOUR MIND OFF THINGS DURING THIS DIFFICULT TIME Go outside for a walk even if it’s just around the block, being outside can be so nourishing for the mind and the body. Think about how lucky we are to live in such a beautiful environment. Most important of all is to remember that you are not alone, we are all in this together. –Kristine DykeFind an old funny show to watch. Laughter lightens fears! Stay positive, know you aren’t alone. –Dori CoteTurn on some music, sing along if you wish! A melody brings back a memory :) -Becca Jewison Finally we can get around to do that spring cleaning! Also to finish ready those 3 books you’d started over the last 5 years. And now there’s time to write those long overdue letters, or simply encouragement cards. Or get to the neglected basket of mending. – Judy Johnson Go through photo albums and jog good old memories. Go through your pantry and reorganize and check dates on food. –Laurie Watsabaugh Do word games. Like words that have more than one meaning. Pool. See/Sea. Pear/Pare. Lie/Lye. We continue to serve lunch curbside and home delivered. We are now offering breakfast too. You can see the menu on our website: seniorcenterjh.org. Breakfast can be picked up after 9:30 am or with your lunch. Please call curbside meal orders in by 3:00 pm the day before.

Lemon Meringue Pie for One
Preheat oven to 350°. Make a graham cracker crust by crushing two full graham crackers. Put them in a small bowl. Stir in a touch of sugar and 1tbsp melted butter and press the graham cracker mixture into a small oven-safe ramekin or baking dish. Bake the crust for 10 minutes.
Make the lemon filling by whisking together 3 tbsp of sugar, 1 tbsp of cornstarch and 1/3 cup of water in a small saucepan. Bring this mixture to a boil whisking
constantly. Let it simmer until it thickens. Beat an egg yolk. Add a spoonful of the mixture in the saucepan to the egg yolk (keep egg white for meringue) and whisk well, add another two spoonfuls whisking constantly.
Add the egg yolk mixture back to the saucepan and bring to a boil again, whisking constantly. Remove the pot from the stove and stir in ½ tbsp of butter, 2 tbsp of lemon juice and ½ tsp of lemon zest. Pour this over the crust.
Make the meringue using 1 egg white, 1/8 tsp of cream of tartar, 1 1/2 tbsp of sugar and 1/8 tsp of vanilla. Mix the ingredients together, whisking until stiff peaks form. Spoon the meringue onto the top of the lemon pie. Make sure the meringue is completely covering the filling and that there are no gaps, this will prevent the meringue from “shrinking”.
Bake the pie in a 400° oven for 10-12 minutes, until the meringue is golden brown. Cool & Enjoy!Recipe by One Dish Kitchen
