Spring 2016 Neighborhood Spotlight Leia opened her second King Gyro's on Goshen in July of 1994. Originally from Chicago, she had started out as a hairdresser but soon her family dream turned into a great business. She had never intended to "set the world on fire" with King Gyros but just wanted to do something she enjoyed while being able to spend more time with her family. Now the business will be passed on to her children after her. She recalls living paycheck to paycheck for a period and explains "I don't look at my glass as half empty or half full but I'm just glad to have a glass in the first place since at one time I did not." Her goal is never to overprice her food but to remain pocketbook friendly so that she can rise again alongside the community. Leia and her children treat their patrons as family, especially when they are in need. She recounts welcoming neighborhood children in for a meal and a place to study after school when their parents were down on their luck. Another time she ran across a man who was staying in his station wagon with his two kids because he had no money. He had come in an asked if his kids could simply sit In the air conditioning but Leia welcomed them in warmly saying "You bring those babies in here. Whether you're inside or out there I'm paying for the cool air." The man explained that he had no money and humbly asked if she could feed his children but 1 Next Meeting Be sure to attend our next neighborhood meeting at 7pm on March 9th in the Queen of Angels basement. It's great to see a local business that cares so much for the local community. Be sure to go visit Leia and try her signature gyros; a Chicago flavor brought to Fort Wayne by a family that cares about the community. And don't forget to say hi to Mom! As Leia says, "I love to talk to everyone and I always have room for more family; I'm Greek." !! ! ! - article by Chad Rice!

What's New in the Fort: Seed Library at Little Turtle Branch

Our very own Little Turtle Branch of the Allen County Public library at 2201 Sherman now has a free seed catalog available for the community. The seeds are free but the library does ask that gardeners allow some of the plants to go to

seed to return seeds to the library for the following year. The seed library was designed in order to promote more organic gardening and better health in the city. Be sure to go get some seeds this spring!!

5 Steps to Creating Perfect Crepes 1. Mix 1 and one-fourth cups flour, 1 tablespoon sugar and 1 teaspoon salt in a mixing bowl. In a separate bowl, beat three eggs, than mix in 2 and one-half cups of half-and-half, 1 tablespoon canola oil and 1 tablespoon vanilla extract. Slowly pour wet ingredients into dry, beating vigorously with a wire whisk.!2. Clumps of flour will result in rubbery crepes, so after beating the mixture well, strain out lumps with a metal mesh strainer or cheesecloth. Cover and chill for about 30 minutes to allow the batter to thicken slightly.!3. The right pan matters. Use a crepe or quality 10-inch non-stick pan. Heat to medium high. Then, using a 2-inch ladle, pour batter in the middle of the pan and gently roll to allow the batter to flow to the edge.!4. Once bubbles cover he surface of the crepe, use a rubber spatula to flip. Or use a spatula

Spring Planting Tips

As spring comes, bulbs are the first to appear in the garden. Move any mulch away from the bulbs, but leave it nearby so that if a frosty night might threaten, the mulch can be placed over the bulbs for protection.!

It is important to leave mulch on perennials as long as possible. Once the temperatures are above the freezing point and the perennials are actively growing, the mulch can be removed.!

Throughout the winter, ornamental grasses add much texture to the winter garden. In the spring it is essential to cut down the ornamental grass to about 6 inches or just above the green growth that starts to grow in the early spring. !

Be sure not to prune any spring blooming shrubs such as azaleas, spirea or lilacs. If you are really anxious for spring, force a few branches of forsythia or pussy willow for a fresh look indoors!!

Don’t till the ground when it’s wet. Article from myhoa.com!

to life one end and use both hands to grab and flip the crepe. Continue cooking for about one minute. A crepe should be slightly brown. Remove from pan and repeat. This batter makes about 20 crepes.!5. Crepes can be filled with everything from jam to meats and cheeses. Crepes are delicate, so fill them on

the serving plate. Place the filling in the center and roll crepe. Dessert crepes usually are topped with sprinkles of powdered sugar.
