100% Verdejo grapes from bush vines over 40 years old, from the highest terraces of the district of La Seca and ungrafted vines from the area of Segovia.. 50% of the vines are already being grown organically. The high adaptability and excellent acidity of this grape allows for ideal fermentation and ageing on lees in French oak barrels. Harvesting is performed manually into 15 kilo crates for the subsequent pressing of the whole grape, without crushing, after passing through a two-stage sorting table for the selection of bunches and of whole grape berries. In this way oxidation of the must is reduced to a minimum and all the aromas, colour and freshness, typical of this variety, are preserved. After light fining of the must, fermentation takes place in 600 litre vats made of French oak from 3 sources: Allier, Nevers and Vosges, followed by a period of ageing on lees which can last around 6 months. Weekly bâtonnage or lees stirring during the first 3 months and then depending on the evolution of the ageing process. MARQUÉS DE RISCAL LIMOUSIN 2019 D.O. BOTTLED June 2020. FOOD PAIRING This wine goes well with fish in sauce, white meat, even with sauces which are not too strongly-flavoured, roast lamb, chargrilled vegetables and pulse dishes. BEST SERVED AT Between 9º and 12ºC. TASTING NOTES Wine with a pale golden colour, complex and elegant. On the palate it is smooth with a good base of fine lees, dried fruit and hints of toasted wood. FEATURES 2019 VINTAGE The 2019 vintage was marked by moderate precipitation of 220 litres/m 2 between October and April followed by virtually no rainfall from mid May until the end of August. On the days leading up to the harvest and during picking 44 litres/m 2 fell, so that a total of 290 litres/m 2 was recorded for the whole year. The severe drought during flowering and véraison and, to a lesser extent, the low temperatures during fruit set, led to a reduction in berry size and a lower yield. The average temperature over the whole growth cycle is comparable to that of recent years, with July proving slightly hotter than usual, so that the date of the harvest was a few days earlier. During ripening, in August temperatures were around the norm and September was a little cooler than usual due to lower maximum temperatures, which led to slower ripening which was positive for the aromatic intensity of the musts. The rainfall during ripening and during the harvest was compensated by cool temperatures at night which removed the threat of the appearance of diseases and ensured that the grapes were in a perfect state of health. The white wines are fresh, with a lower pH than usual and good aromatic intensity.
