Wednesday night our neighbourhood in Ballito was rocked by what sounded like military grade fireworks being deployed in rapid succession.

A quick check revealed that the commotion was coming from a handful of homes celebrating Diwali and that many people in the neighbourhood were up in arms at the noise and the trauma it was causing to pets and wildlife in the area.

The SAPS response was predictable – despite a general moratorium on the use of fireworks in the suburbs, exceptions are made for special occasions like New Year’s Eve, Guy Fawkes Night and Diwali also known as Deepawali - the "festival of lights", so they were powerless to respond.

Diwali is an ancient Hindu festival celebrated globally around this time of year and according to Wikipedia, that popular electronic fountain of shared information, the festival spiritually signifies the victory of light over darkness, knowledge over ignorance, good over evil, and hope over despair.

Subamony Das, a Hindu scholar explains how the illumination of homes with lights, and the skies with firecrackers, is an expression of obeisance to the heavens for the attainment of health, wealth, knowledge, peace and prosperity.

“In each legend, myth and story of Deepawali lies the significance of the victory of good over evil; and it is with each Deepawali and the lights that illuminate our homes and hearts, that this simple truth finds new reason and hope. From darkness unto light — the

light that empowers us to commit ourselves to good deeds, that which brings us closer to divinity.”

I for one am completely in favour of the attainment of health, wealth, knowledge, peace and prosperity and as far as people committing themselves to good deeds and getting closer to divinity goes, I am all for it. But couldn’t we do it a little more peacefully?

We live in a multi-cultural society and as such we need to make allowances for beliefs and practices that may be at odds with our own. But it would be wonderful if we were all sensitive enough to consider how our cultural practices might cause distress to those who don’t understand them, and find ways to lessen potential fallout.

Animal welfare organisations are inundated with injured and traumatised animals when the uncontrolled use of fireworks has taken place to mark an occasion and no matter how one chooses to justify the use of fireworks, this simply amounts to cruelty and no one condones cruelty. It goes against “…the light that empowers us to commit ourselves to good deeds, that which brings us closer to divinity.”

I wish all of our readers who celebrated Diwali, health, wealth, knowledge, peace and prosperity for the year ahead and I hope it proves to be a brilliant one for all of us. I also hope that going forward, we can find a

way to celebrate in a manner that everyone can enjoy.

Guy Fawkes Night and New Year’s Eve are the next two explosive events coming at you shortly. If you have pets that are prone to panic, it’s a good idea to chat to your local vet about sedative options for them. Sadly the only way to protect the wild creatures from the chaos is to educate those around you about the negative effects of uncontrolled fireworks and hope they choose to celebrate in a way that does a little less harm to the planet that we share.

It seems when you are selling land you are no longer just

selling land. As from 1 October 2014 a seller of land is also taking responsibility for alien or invasive fauna and flora to be found on the land being sold.

In a spasm of regulatory zeal which reads like a passage from a Douglas Adams novel, Sub-regulation 3 of Regulation 29 of the Alien and Invasive Species regulations issued under the NATIONAL ENVIRONMENTAL MANAGEMENT: BIODIVERSITY ACT 2004 (ACT NO. 10 OF 2004) provides that:-(3) The seller of any immovable property must, prior to the conclusion of the relevant sale agreement, notify the purchaser of that property in writing of the presence of listed invasive species on that property.The list of Alien Invasive Species has been published at following address:-http://www.invasives.org.za/legislation.html.

A total of 559 alien species are listed as invasive in four different categories, and a further 560 species listed as prohibited and may not be introduced into the country. The species mentioned include both fauna and flora.

The purpose behind the regulations is to ensure that coherent control programmes are run and maintained to protect our indigenous fauna and flora from more virulent or competitive foreigners.

Let’s face it, not many of us know our Agrostis casellana (bent grass) from Agrostis gigantean (black bent grass) or Agrostis stolonifera (creeping bent grass). When saying this, allowance must obviously be made for those in the building trades who by now know Cannabis sativa by sight as it seems to sprout up on most building sites whenever a spell of wet weather is followed by a dose of healthy sunshine.

The point is that not everyone is an ecstatic dendrologist and most sellers will be blissfully unaware of the presence of a listed invasive species on their land. For this reason it would be unjust for a purchaser who subsequently becomes aware of the invasive alien to hold the seller responsible for its eradication or removal after sale of the property.

It is suggested that estate agents request sellers to confirm in writing whether they are aware of, or hold any permits in respect of any alien invasive species to be found on the property. If the Seller advises that he or she is aware of any alien species, or confirms that he holds a permit for same, the estate agent can pass on this confirmation to a prospective purchaser who will then purchase the property subject to the obligations occasioned by the presence of alien invasive species (for example, he may need to apply for a permit).

Similarly, to protect the seller the offer to purchase should include an acknowledgment by the purchaser that he has been advised of the invasive

species' presence on the property and that he assumes responsibility therefor. It would also be prudent for the agreement to contain, as part of the usual voetstoots clause, a general confirmation by the purchaser that he has inspected the property and generally assumes responsibility for the presence of any alien flora and/or fauna.

here is a brief summary of a property owner’s obligations after 1 October 2014 with respect to the less desirable species?Category 1a species must be eradicated and the land owner is to allow an authorised official from the Department to enter onto the land to monitor, assist or implement the combating or eradication of the species.Category 1b species must be controlled and the land owner must allow an authorised official from the Department to enter onto the land, to assist with or implement the control of the listed invasive species.Category 2 species require the person in control of the specie to be in possession of a permit to allow him to carry out a restrictive activity within an area specified in the notice, or the area specified in the permit. No person may carry out a restrictive activity of a Category 2 invasive species without a permit. A land owner on whose land an invasive species Category 2 occurs must ensure that the specimens of the species do not spread outside of the land or the area specified in the notice or permit. A species listed as Category 2 that occurs outside of the specified area stated in a permit, is to be considered as being in Category 1b

Astonishingly, the fines and penalties for non-compliance with the regulations can attract a fine not exceeding R10 million or imprisonment not exceeding 10 years. It does, however, appear that the thrust of this legislation is to obtain co-operation and the fines and penalties will only become applicable if the landowner refuses an authorised official from the Department to enter onto the land to monitor, assist or implement the combating; control or eradication of the species, or flatly refuses to comply with the regulations after due notice.

The responsible official, Dr Guy Preston has alluded to the possibility of an invasive species clearance certificate being required before any property may be transferred in future. This would be an interesting development and a real opportunity for those qualified to carry out the inspections.

I personally welcome any move from the Department of Water and Environmental Affairs to preserve our natural heritage. When I see all the litter on the margins of our highways and byways, wherever users of public transport congregate and where rivers wash out I cannot help but wish that the same department would bring its resources to bear on our festering litter problem with similar zeal.

LOyAlty amongst people can be a wonderful thing – loyal employees who

are committed to their leader, loyal friends or family who are trusted with information, a devoted partner in marriage

or loyal customers who are supportive of a business. When it is meaningful, loyalty can build the relationships that form the foundations of our lives.

However, loyalty is easily undermined when people or businesses go back on what

they said they would do. Here are some things that

affect a customer’s loyalty towards a business:

•Bad service delivery

•Poor communication

•A broken expectancy or promise

•Poor ethics

•lack of integrity

•even dishonestyWhen trust is

broken loyalty is lost and it is very difficult to get it back. It is at this point that clients want to be heard, either by you or by others. If others hear about it, not only will your reputation gets damaged, but you will lose customer loyalty and even brand reputation amongst prospects. It goes without saying that this could be catastrophic for business, so benchmarks have to be set in place to protect the trust and loyalty of clients.

Start with the end in mind. I encourage you to look at your service levels from the viewpoint of the customer. Evaluate your own levels of service and ask yourself if you would be satisfied if you were the customer. Here are some questions you might ask yourself:

1. how can we offer greater

value?

2. When we close a deal, how can we conclude business with more elegance and polish?

3. have we stretched ourselves to “hold nothing back” in terms of providing real solutions?

4. When we keep-in-touch, how can we do so with sizzle and style?

5. Before clients come into our business how can we be better prepared, informed and educated?

The goal is to enhance the client experience so that the business gets “talked about” more often. If you build trust through client relationships, when a mistake happens (as they sometimes do), your client will be more inclined to overlook the issue as long as it is rectified. And so the cycle never ends… constantly finding ways to raise the game, whilst achieving a balance between long term strategic growth and short-term cash flow.

Take time to evaluate if your business is getting caught up in any of these traps that undermine the trust and ultimate loyalty of clients. Then go out and earn it! A

itAliAn Cuisine has a great variety of different ingredients which are commonly used, ranging from fruits, vegetables,

sauces, meats, etc. in the north of italy, fish (such as cod, or baccalà), potatoes, rice, corn (maize), sausages, pork, and different types of cheeses are the most common ingredients. Pasta dishes with use of tomato are spread in all Italy.

In northern italy though there are many kinds of stuffed pasta, polenta and risotto are equally popular if not

more so. Ligurian ingredients include several types of fish and seafood dishes; basil (found in pesto), nuts and olive oil are very common. In Emilia-Romagna, common ingredients include ham (prosciutto), sausage (cotechino), different sorts of salami, truffles, grana, Parmigiano-Reggiano, and tomatoes (Bolognese sauce or ragù).

Traditional Central italian cuisine uses ingredients such as tomatoes, all kinds of meat, fish, and pecorino cheese. In Tuscany and Umbria pasta is usually served alla carrettiera (a tomato sauce spiked with peperoncini hot peppers). Finally, in Southern Italy, tomatoes – fresh or cooked into tomato sauce – peppers, olives and olive oil, garlic, artichokes, oranges, ricotta cheese, eggplants, zucchini, certain types of fish (anchovies, sardines and tuna), and capers are important components to the local cuisine.

Italian cuisine is also well known (and well regarded) for its use of a diverse variety of pasta. Pasta include noodles in various lengths, widths and shapes. Distinguished on shapes they are named — penne, maccheroni, spaghetti, linguine, fusilli, lasagne and many more varieties that are filled with other ingredients like ravioli and tortellini.

The word pasta is also used to refer

to dishes in which pasta products are a primary ingredient. It is usually served with sauce. There are hundreds of different shapes of pasta with at least locally recognized names.

Examples include spaghetti (thin rods), rigatoni (tubes or cylinders), fusilli (swirls), and lasagne (sheets). Dumplings, like gnocchi (made with potatoes) and noodles like spätzle, are sometimes considered pasta. They are both traditional in parts of Italy.

I have always loved cooking and baking and if I am truly honest, being in the kitchen really relaxes me, and that is where I become really creative.What makes it special / unique?

My Customers certainly think so and that is extremely important to me.What setbacks / difficulties have you had to overcome to get to where you are now?

I wouldn’t call them Setbacks or difficulties, more like challenges.

Being a single parent and only bread winner, comes with its own set of challenges, and believing in myself

that I am capable to take BizziB to the next level, was extremely daunting and downright scary, it still is. Having to balance and weigh up everything with the utmost reserve and caution…..my son, my work commitments together with Bizzib & BizziBanting has been a learning curve, that no-one can teach you or prepare you for. What lessons have you learned from this?

To step back and breath…..and realize that I am actually not alone and I do need to reach out for help, as I cannot be Butcher, Baker, Candle Stick maker forever! Delegation has never been my strong point, and it is something that I am constantly learning.What are your plans for building the brand?

To be consistent and build my Brand slowly, as I have been doing up until now. I have participated in both the Durban Taste Festival and The Good Food and Wine Show, which were both fabulous opportunities for me and my Brands. The response and feedback I have received in terms of both BizziB and BizziBanting through this exposure has been amazing.

Participation in the weekend Markets, such as Burnedale, Litchi Orchard, Foodies Market Ballito and Hillcrest Farmer’s Market and supplying the likes of Home-Grown, Say Cheese and Bucks Farm Stall on the South Coast, are all part of my brands growth and success.

Ultimately to keep enjoying what I do, giving it my all with all the passion and love I can muster.

TOO many ‘do this, do thats’ bouncing around in your head? Well, the best thing to do as a beginner is to just get out

and ride. Keep your thoughts simple and relax. Don’t concern yourself with trying to do everything right all at once.

Just pedal around and have the best fun that you can. Too much worrying and thinking will actually restrict your thoughts on the bike and kill your chances of improvement.

Follow these six simple beginner mountain biking tips to get better at mountain biking:1. good Company

Good camaraderie raises your confidence and that helps you advance your beginner mountain biking skills. So ride with fellow riders who encourage you to do better and who don’t mind waiting while you have second or third attempts at tricky parts of the trail.

2. The Right TiresChoose mountain bike tires suited

to your level of skill and the terrain you ride. They might only be hoops of rubber, but the right mountain bike tires can make a huge difference.

Race tires are built for speed and they generally offer less grip for the beginner style of riding. And, as a beginner, you’ll probably need all the grip you can get, so purchase some tires that have good all-round grip suited for the type of terrain and conditions you’ll be riding. Sure, grippy tires don’t roll as quickly as race and low profile tires. But, as a beginner, your focus should be on grip and control first and speed second. You need as much grip and control as possible to boost your confidence in the rough and enhance what bike skills you do have. 3. Pressure Play

Lower tire pressures offer higher levels of grip. Thirty p.s.i. will give you more grip than fifty p.s.i. And

that extra grip you gain from lower pressures can help you climb a little further up the hill.

Anything that helps you walk less is good! Just don’t set your pressures too low for your weight and risk punctures or wheel damage!

Besides helping you climb further, lower pressures can teach you what better traction feels like, and what grippy ground looks like and this will increase your knowledge of the different types of terrain and how to ride them. And as always, experiment with what works best for you and your trails. Just remember, higher pressures don’t necessary mean you will ride better or faster.

Loosen your pedals. If you ride clipless pedals, adjust them so that you can release your shoes quickly and easily. Yes, it’s another confidence booster. And it works because you’ll be able to concentrate more on the trail and less on getting stuck in your pedals half-way up a hill and falling over as a result. Just remember to firm up the pedal clamping tension as your skill improves.6. Home Maintenance

Fix it before your next ride. Perform any necessary mountain bike maintenance, repairs or adjustments before your next ride. Leave it for the trail and you will risk your popularity.

PeDAling in a simple circle is a complex thing, but mastering it can save energy, says todd Carver, biomechanist at

Colorado's Boulder Center for sports medicine. He says that with proper ankling (shown here; not the injury-causing technique of the past), riders can churn out the same amount of power at a heart rate as many as five beats per minute lower. This stroke is for flat terrain at threshold, or time trial, intensity.

Hip-Knee-Ankle Alignment Viewed from the front, your hip, knee and ankle should line up throughout the pedal stroke. "You don't want knee wobble," says Carver. "Just think pistons, straight up and down." If you can't correct this,

or if you experience knee pain when you try to restrict lateral movement, you may need orthotics or another type of biomechanical adjustment.

Zone 1 Known as the power phase, the portion of the pedal stroke from 12 o'clock to about 5 o'clock is the period of greatest muscle activity. "A lot of people think hamstrings are used only on the upstroke," says Carver, "but a good cyclist uses a lot of hamstring in the downstroke, because it extends the hip." The key to accessing the large muscles in the back of your leg is dropping your heel as you come over the top of the stroke, says Carver. "At 12 o'clock, your toes should be pointed down about 20 degrees, but as you come over the top, start dropping that heel so that it's parallel to the ground or even 10 degrees past parallel by the time you get to 3 o'clock." The biggest mistake Carver sees in novice riders: not dropping the heel enough in Zone 1.

Zone 2 Using the same muscles as in the power phase, but to a lesser degree, this phase acts as a transition to the backstroke. "As you enter Zone 2, think about firing the calf muscles to point your toe," Carver says. As you come through the bottom of the stroke, the toe should be pointed down 20 degrees. "This ankling technique transfers some of the energy developed in Zone 1 by the bigger muscles to the crank," Carver says. He uses the advice popularized by Greg LeMond: "Act like you're scraping mud off the bottom of your shoe."

Zone 3 Even though you feel like you're pulling your foot through the

back of the stroke, you're not. "When you look at even the best cyclists, they're losing power on the upstroke," says Carver. "The pedal is actually pushing your leg up, so the goal is to lose as little power as possible and get that foot out of the way." One fun way to improve the efficiency of your upstroke: mountain biking. "The terrain keeps you honest," Carver says. "If you're focusing only on the downstroke, you'll lose traction and fall off your bike in steep sections." As for other exercises, Carver advises against single-leg pedal drills--"for recreation-level riders, they injure more people than they help"--but recommends hamstring and glute-strengthening lifts, as well as squats, "done correctly, in a squat rack with someone showing you how."

Saddle Position Proper bike fit, especially saddle height and fore-aft adjustment, is a prerequisite for a smooth pedal stroke. Without it, says Carver, you won't be even remotely as efficient as you could be. "If your saddle is too high, you're not going to be able

to drive your heel effectively," he says. "If it's too low, you'll have knee pain." In the right position (knee over the ball of your foot with the pedal at 3 o'clock; knee slightly bent with the pedal at 6 o'clock), you'll maximize your energy output and also be able to adapt your ankling technique to different terrain, cadence and effort levels.

Zone 4 As you enter the second half of the upstroke phase, think about initiating your downstroke. "Many riders don't initiate early enough," says Carver, who often sees riders wait until 3 o'clock--but they should be starting before 12 o'clock. A tip: As you begin to come across the top of the stroke, think about pushing your knee forward, toward the bar. But only your knee, says Carver: "Your pelvis should remain a stable platform, not sinking down and not moving forward."

Sugar Rush has adopted the slogan “Pedalling to Protect”. This is an initiative with the Wildlands Trust, which is aimed at rehabilitating areas surrounding the trails by clearing alien

vegetation, planting indigenous trees and restoring the surrounding wetland areas.

Major MTB and trail running events recently held at Sugar Rush include the annual Sugar Rush Classic, the Ballito Expedition, the Natalie Bergstrom fundraiser and the Rhino Run. The second Ballito Expedition will be held on 8 November and promises new and never-before-ridden trails.

Other exciting additions to Sugar Rush Park which are currently under way are rugby fields for the Ballito Dolphins Rugby club, an upgrade to the coffee shop to turn it into a fully-fledged restaurant, and an outdoor kids play area and skate park.

Never before have our

immune systems been under such attack as now. The prevalence of modern day disease is rampant and seems to be spreading at an alarming rate. The good news is that natural options are available to help strengthen our immunity. When the body's natural defence system is functioning at it's peak, super-bugs, viruses and bacteria are quickly eradicated and the threat of infection is eliminated.

How tragic that Oscar managed to do so well with his handicap but never came to terms with fear and anger. It came up repeatedly – he was afraid and reacted before he had time to think. We’ve` all heard dolus directus and dolus eventualus ad nauseum – what about dolus interuptus – surely that is the essence of maturity, understanding the import of your actions and being able to stop yourself. All beings are responsible for their own actions and for the consequences of their actions.

May we not get caught up in reactivity. Judge Masipa threw out the witnesses statements because they just didn’t tie up – what a lesson! Know that what you believe to be absolute may just not be so. cURRO mOUNT RIchmORE – gROwINg FAST

CURRO MOUNT RICHMORE was officially opened in Salt Rock recently by Dr Chris van der Merwe, founder of

the Curro Education group that he started with his wife in Cape Town in 1998. This is the nineteenth school in the Curro Holdings portfolio which is valued at over R8billion. GERMANY’S LOTUS MOTORCYCLES has teamed up with the german conceptual-vehicle designer Daniel simon to create the C-01 motorcycle.

While Simon’s best-known work includes the light cycles seen in the 2010 film Tron: Legacy and the bubble copter in the 2013 film Oblivion, he is regarded in the automotive world for his work at Bugatti. The C-01 motorcycle features a 200 hp, four-stroke, 2-cylinder V-twin engine (a modified version of KTM’s 1,195 cc engine), which is draped underneath a carbon-fiber shell and sits neatly in a frame of an aerospace steel, titanium, and carbon fiber. The C-01, which indeed looks like it belongs in a science-fiction movie, is more than a mere two-wheel fantasy.

Lotus Motorcycles (whose name was licensed from the British carmaker) has confirmed that it plans to put the C-01 motorcycle into production starting next month. The company says that production versions of the bike should emerge from the factory in August.

TO mark his graduation in 1955, tom Wellmer's parents bought him a mercedes-Benz 300sl gullwing. As one of

the finest sports cars in the world at that time this was a lovely present to receive; yet the valuable classic and inspiration for the SLS AMG was left to rot in a garage for 40 years before Rudi Koniczek of Rudi & Company, a premier 300SL restorer, took it under his wing. "This is the ultimate garage find and may be one of the greatest finds ever in the collector car world," Koniczek says.

It's amazing to know that the car had been there all those years without anyone knowing about it." During the fifties, the Stuttgart-based factory turned out 29 lightweight alloy body gullwing coupes fitted with Plexiglas

windows. These represent some of the most valuable cars in the world today, and are valued at $2.5 million apiece. Having heard a whisper of a rumour that the last of these rare specimens was stored in a garage in Santa Monica twenty years ago, it was with an overwhelming sense of pleasure that Koniczek tracked the car down this year.

Now in his late eighties, the owner agreed to the sale of his not-so-treasured treasure, which he abandoned in the seventies after a failed transmission, on the condition it would be fully restored and the award-winning restorer is on the case. The buyer has wished to remain anonymous and the restoration of the alloy-bodied 300SL is set to commence next year.

lexuS is one to Watch Says car Magazine

LexUS was selected as the “The Company to Watch” in CAR Magazine’s pres-tigious 2014 annual car

awards, a celebration of automotive excellence, which was held at the Campus in Fourways recently.

According to CAR’s Editor, Steve Smith, “there’s a revolution happening at Lexus. It started with the GS, gained momentum with the IS and continues with the gorgeous RC F Coupe. We’re excited to see the next step in the Lexus reinvention.”

Justin Ryan, General Manager of Lexus South Africa, is justifi-ably proud of this accolade: “To be acknowledged in this way is a great reward for Lexus. It reaffirms the qualities that have always been at the heart of our brand – luxury, refine-ment and technical innovation – but, more importantly, it shows just how successfully we’re evolving Lexus dynamically with each new model we introduce.”

While there’s an obvious buzz around forthcoming models like

the RC and RC F Coupe (due in SA towards the end of the year), Lexus has not been resting on its laurels. The stalwart of the Lexus range the sporty-yet-practical RX has come in for a spot 2014 rejuvenation.

Rx 350 ex In 2012, the popular RX range

received the new Lexus corporate identity and signature spindle grille. For 2014, the RX has been refreshed even further with a new Appearance Pack that is now standard on the RX 350 EX model. This pack comprises a re-designed bumper with larger air intakes to boost the muscularity of the front view.

Other changes include new 19-inch alloys (as opposed to the 18-inch units on the outgoing model), as well as LED-type front fog lamps. For the RX 450h SE, the latest upgrade includes the LED interior lighting package as well as the adoption of the Integrated Sport Driving system which enables the driver to tune the Drive Mode Select to Eco, Normal or Sport settings.
