by Design C Copyright 2012 Lemon Lush Parfaits Lemon Lush Parfaits From Sunny’s Kitchen 1 3/4 cup milk 1/3 cup powdered sugar 8 oz cream cheese soſtened 1 cup whipped cream 3.4 oz instant lemon pudding mix 10 Pecan Sandy cookies crushed makes 12 mini parfaits or 6 regular - Crush Pecan Sandy cookies in a plasc bag. - Whisk the cream cheese unl smooth then sr in the powdered sugar. - In a medium bowl mix the pudding and milk together for about 2 minutes, unl the pudding sets and thickens. -Place 2Tbs (or enough to cover the boom) cookie crumbs into the boom of each parfait glass. -Using a disposable piping bag or a spoon cover the cookie crumbs with some of the cream cheese mixture. Next spoon or pipe a layer of lemon pudding over the cream cheese mixture. Last but not least pipe a generous dollop of whipped cream on top. Store these in the refrigerator unl ready to serve. They can be made up to two days in advance. I actually recommend making them the day before so the cookie crumbs have a chance to soſten a bit. Enjoy!

- Crush Pecan Sandy cookies in a plastic bag. - Whisk the cream cheese until smooth then stir in the powdered sugar.- In a medium bowl mix the pudding and milk together for about 2 minutes, until the pudding sets and thickens. -Place 2Tbs (or enough to cover the bottom) cookie crumbs into the bottom of each parfait glass.

-Using a disposable piping bag or a spoon cover the cookie crumbs with some of the cream cheese mixture. Next spoon or pipe a layer of lemon pudding over the cream cheese mixture.
