be considered satisfactory, all elements of it must be complete. On completion of the 4

McDonalds has long been seen as an innovator of technological advancements in their efforts

to dominate the fast-food burger market. As such they have established extensive supply

partnerships, integrated supply chains and utilised technology to drive their growth.

Today with over 37,855 restaurants operating in more than 100 countries and over 210,000

employees worldwide, McDonald’s is able to serve 52 million customers per day, undoubtedly

laying claim to the leading global foodservice retailer.1

PART A: Research report and Strategy

1. Prepare a written Supply Chain Strategy for McDonalds. For tips on writing your report

click here. You must provide a reference page at the back of the report listing all the

research you have conducted e.g. weblinks etc. Your report must include:

a. Identify and outline the company’s (McDonald’s) overall core/key business

objectives along with the strategies the company has in place for achieving them.

It is important that you clearly articulate four organisational strategies as you will

be asked to refer to them throughout this assessment pack.

b. Using the research which you have conducted from the enormous amount of

information available about McDonald’s and its operations, develop a global

organisation chart and a chart showing the division of the business into four

different geographical regions.

c. Describe the company’s supply chain management strategy.

d. Is this a global or local strategy? Explain.

e. Many commentators believe that McDonald/s success is to do with their systems

philosophy which is often described as a three-legged stool. The company

approaches its supply chain in the same way. What does this phrase mean?

f. What position or role in the company is responsible for supply chain

management and why?

g. Explain how this SCM strategy delivers against the company’s organisational

strategies.

h. Does responsibility for SCM fit well with the strategy i.e. Is the right

person/position responsible for implementing the SCM strategy? Explain why

or why not.

i. Compile a detailed diagram of the McDonalds supply chain in Australia a

whole of products view (Burger, wrap, sundae – all ingredients used etc.). Your

diagram must clearly show all the links in the supply chain including the

product flow from the beginning of its journey to the final customer and, where

possible, indicate the supplier companies.

Include a list of roles and responsibilities to relevant staff to ensure that the

supply chain strategy is being monitored.

j. From what you know about the company and its current supply chain in

Australia (or your local area), what other opportunities do you think have

potential to add value to the company?

k. Select three of the opportunities you have suggested and assess them in

m. Undertake a situational analysis for the company. To do this you will need to:

i. Conduct an environmental scan,

iii. Complete a brief competitor analysis using Porter’s Five Forces Model,

2. To ensure that the strategy will be continually monitored, draft an email to the personnel

you identified in Question 1i, and notify them of the responsibilities you established.

McDonald’s Case Study Scenario

In response to consumer feedback and its goal to continually improve its product offerings,

McDonald’s has decided to provide fresh buns to as many locations as is feasible

throughout Australia. Previously, these buns were provided as frozen product by Aryzta, a

large bakery that supplies fresh bakery produce to the east coast of Australia and frozen

produce to WA, SA and the NT.

You have been recently appointed to role of operations manager for ‘Bake-off’ a medium-

sized company that has just won the contract to supply freshly baked buns for the

McDonald’s stores located in the southern region of WA (including Perth, Fremantle and

surrounding suburbs). Unfortunately, the company has never had a major supplier

contract like this before and, although they are very good at what they do, they are not

sure about how a large global conglomerate like McDonalds operates, nor are they

familiar with the terminology it uses with its suppliers, especially its demand-driven supply

management strategy.

The CEO has asked you to prepare a report for the Bake-off management team to

introduce them to the concepts and terminology used by McDonald’s and to explain how

the central ordering system works and what the supplier expectations are.

PART B: Implementing the Supply Chain Strategy

1. Using the information which you have gathered in Part A, Question 1, and following your

research on McDonalds, (in your role as Operations Manager) develop a report titled,

Supply Chain Management Report. Your report must include:

a. Introduces and reviews a demand-driven supply management strategy (using

McDonalds as the example).

b. The underpinning philosophy of the company (McDonald’s).

c. The company’s approach to supplier management.

d. Clarifies the aims and objectives of this supplier contract against the policies and

procedures of the organisation.

e. Highlight relevant policies and procedures that apply

f. Briefly outlines the processes involved in contracting and tendering

g. The aim/s of negotiating with suppliers for a win/win and how to go about it.

Develop a set of guidelines to assist the management team in these negotiations.

h. Flowchart the supply chain so that the management team can see at a glance how

it will work.

i. Allocate responsibilities for managing the various roles within the supply chain for

the Bake-Off organisation.

j. Explain the stock (inventory) management and control processes including how

the goods will be ordered and managed through the system (from the initial

schedule for production, the actual production, packaging and delivery) in order to

ensure all restaurants in your nominated area (as detailed in the supplier contract)

receive fresh produce on a daily basis.

k. Introduce the person who will be responsible for managing/coordinating the

logistics of the contract and why they have been chosen for this role.

l. How the contract will be monitored i.e. how you will monitor and control the

achievement of the supply chain objectives against cost and timescales and what

you would do in the case of an unforeseen event (i.e. contingency planning).

m. Develop the framework which will be used to promote a collaborative

partnership with supplies to ensure that the organisation maintains a

competitive advantage.

n. McDonalds is focused on excellence in four key characteristics. What are they

and how can Bake Off deliver on these quality metrics?

o. One of the rules guiding McDonalds in its supply chain operation is to focus on

outcomes, not on transactions. What does this mean for Bake Off and what

sort of relationship does this require from all parties?

p. Explain the techniques applied by McDonalds and discuss your findings

regarding the success of these techniques to encourage innovation amongst its

suppliers or simply compliance to the rules set out by them.

q. Explain the detailed specifications which McDonalds have for the Bake Off

products.

2. Prepare a Supply Chain Strategy for Bake Off that will increase effectiveness and

achieve organisational objectives. For tips on writing your strategy as a formal business

document click here. Your strategy document must include:

a. Identify the organisational objectives for Bake Off

b. Outline the strategies required to deliver on these objectives

c. Provide an organisational chart for all the parties who hold responsibilities at

Bake Off that are related to the supply chain strategy and that clearly show their

relationship links and accountabilities

d. Identify the key stakeholders for the supply chain strategy

e. Conduct a stakeholder analysis to determine who has the power and influence

in decision-making

f. Describe the process you would use to gain the commitment of the

stakeholders to the supply chain strategy.

g. Who makes the purchasing decisions for the company and how does it occur?

Explain using a flowchart.

h. Make a list of the organisational policies and procedures you would expect to

be in place to support the supply chain management.

i. Outline the processes you would use to implement the supply chain strategy in

the company and briefly explain why you would use them. Make sure you

include examples of any tools you would use in the implementation.

j. Identify how communications, business data, and information would be

exchanged at each identified point (refer to your reports) in the supply chain.

(minimum of 3 critical points). Include the methods /means that can be used to

exchange identified communications and business data.

k. McDonald’s has a number of core suppliers that can be categorised into two

major types: Tier 1 suppliers, and Tier 2 suppliers.

i. Outline the difference between these two-tiers,

ii. Provide general examples of both types,

iii. Why are suppliers categorised into tiers?

iv. Which tier is more important to McDonald’s and why?

for Bake Off

n. Outline the business terms and conditions which the organisation should adopt

for purchasing, tendering and contracting

o. Outline the relevant legislation, codes of practice and national and international

standards applicable to the supply chain strategy

NOTE: You must submit the reports for Question 1 and Question 2 to your assessor as a

pre-assessment submission at least three days prior to your simulation call (Question 5).

On the Assessments tab of this unit attach your documents in the Pre-Assessment

Submission portal.

3. Draft an email to accompany your strategy to the management team seeking their

support and input.

4. Develop an Implementation/Action Plan/ Workplace Difficulties Action Plan Template

for the supply chain strategy using the template provided here.

NOTE: You must submit the action plan for Question 4 to your assessor as a pre-

assessment submission at least three days prior to your simulation call (Question 5). On

the Assessments tab of this unit attach your documents in the Pre-Assessment

Submission portal.

5. Book an appointment with your Assessor to undertake a meeting with the

management team to implement the supply chain strategy. The Assessor will play the

role of the team during the role play.

To prepare for the role play:

You must review the case study documentation and the supply chain strategy you have

developed and ensure you understand and can explain each section if required during

the meeting. This will form the basis of the consultation.

Your assessor will complete the Observation Report during the role play.

Ensure the meeting with the assessor is 30 minutes in duration.

During the role play you will need to demonstrate that you have:

a. Explain the purpose of the meeting

b. Discuss at least four key points from the strategy developed for Bake Off

c. Explain the support you will provide to all personnel to ensure that they are able

to complete the tasks, KPIs and milestones which have been established

d. Engage with the team to seek their support in the implementation of the strategy

e. Apply effective oral communication skills to convey and clarify information using

appropriate language and terminology.

6. Develop a Communication Plan for the implementation of the strategy, a template is

provided here and draft the communications required to support the plan. Ensure that

your plan involves all affected stakeholders.

7. The senior management team wants to ensure that staff, customers and the supply

chain partners are supported during the implementation and ongoing operation of the

supply chain strategy.

Develop a Strategy Support Document which outlines your plan for supporting

stakeholders, ensure that your document includes action plans for the strategies you

are recommending.

Case Study Scenario McDonald’s Supplier

As the newly appointed operations manager for ‘Bake-off’ a medium-sized company that

has just won the contract to supply freshly baked buns for the McDonald’s stores located

in the southern region of WA (including Perth, Fremantle and surrounding suburbs), the

CEO has asked you to research the technology and/or software the company will need in

order to be able to communicate quickly and efficiently with McDonald’s and their

nominated distributor/s to receive and despatch orders as required.

The company sees the relationship with McDonald’s as a long-term one and so the CEO

is keen to do all she can to ensure the company has the technology needed to achieve the

contract KPIs. To this end, the CEO has approved a working budget of up to $820k to

purchase and implement necessary technology.

Your first job is to research McDonald’s procurement model and how the system works.

From there, you will need to meet with your distributors to discuss streamlining the

purchasing processes then make recommendations to the CEO and management team

on necessary technology purchases, the implementation strategies as well as how they

will be monitored and improved (as needed).

Bake-off Distributors

As the company must supply freshly baked buns on a daily basis, they must utilise their

own distribution fleet and/or other distributors. Bake-off maintains a small, local fleet of 15

trucks that delivers to outlets in an around its central Perth bakery location. The company

also works with a number of distributors (who may also distribute for other McDonald’s

suppliers) in order to manage the large geographical area in Southern WA (stipulated in

the McDonald’s contract they recently won).

These include:

• PFD,

• Bidfood Perth,

• Westoz Food Distributors,

• Southcoast Food Services.

As you have only been in your role as operations manager for a short time, you have not

yet had an opportunity to speak to these external distribution companies although you

have spent quite a bit of time with Bake-off’s fleet manager and despatch coordinator. As

a result, you know that the system is still pretty much paper-based. Even though the

company implemented a new stock management system 12 months ago it seems there

has been a fair bit of push-back from the ageing team who find it easier to follow paper-

based orders and, rather than rock the boat, the despatch coordinator has let them be with

the idea that, as they retire he will implement the online system.

The problem with this approach is that it makes it hard to address McDonald’s KPIs. The

system will either need to change or, be totally outsourced to Bake-off’s distribution

network.

1. Based on the research you have undertaken and the scenario above, prepare a report

for the senior management team of Bake Off, titled, Technology Review Report, to

discuss the technology requirements of the partnership with McDonalds.

Your report must include:

a. An overview and explanation of how upgrading technology will contribute to the

organisation’s strategy and objectives

b. McDonald’s manages its supply chain through a specific procurement model.

From the research you have undertaken:

i. Note the name of the system and who owns it,

ii. Explain what it does,

iii. Include a diagram of the McDonalds E-Procurement Model and outline

how it operates.

c. The e-procurement system effectively allows all of McDonald’s franchises

across the globe to buy everything they need to run their restaurants and to

communicate the supplies they need from suppliers through the network.

i. What implications does this have for the cost of labour and supply prices?

ii. What other lessons does this model give us?

d. Outline the business data and reports would you need to gather in order to

compare outcomes, budgets, timelines and forecasts to actual performance.

e. Outline the distribution mode/s you recommend utilising to ensure the Bake-off

buns were delivered daily and in accordance with McDonald’s performance

measures. Explain why you have selected this or these modes.

f. Identify and recommend the technologies and software that could be used by

Bake-off to integrate with the McDonald’s e-procurement system,

and its network of distributors

j. Develop an approximate budget for the CEO that covers the initial Bake-off spend

to upgrade their technology for the new McDonald’s contract. Your budget must

cover the:

i. Cost of purchase/ongoing cost (i.e. of leasing/ monthly payments etc.),

ii. An estimate of implementation costs including internal/external

consultants/trainers, time off the job for key employees and so on.

Scenario Case Study – McDonald’s Supplier (Bake-off)

Now that you have had time (in your new role as Operations Manager at Bake Off) to meet

the distributors used by the company and to study the stock management and control

processes implemented internally with the Bake-off transportation fleet, you realise that

there has been very little (if any) collaboration within Bake-off’s supply chain.

You know that, in order to succeed as a McDonald’s supplier, you will need to collaborate

more closely with your network of distributors as well as the restaurant managers. Ideally

you would look to integrate the network more closely as well. You also realise that

efficiencies could probably be found in analysing the company’s primary or raw product

supplier. The main supplier here is Millers Foods (http://www.byfordflour.com.au/) that

supplies all the ingredients Bake-off’ uses in the making of its products (including the buns

it provides to McDonald’s).

Your next task is to encourage and promote the benefits of collaboration for the supply

chain members. To do this you will need to gain the support and trust of all suppliers in the

Bake-off - McDonald’s chain.

NOTE: There are TWO parts to this assessment task.

Part A: Supporting supplier collaboration

1. The senior management team have asked you to use the portfolio analysis techniques to

assess the potential relationships in the Bake-off – McDonald’s supply chain in line with

the McDonald’s supply chain strategy. Complete the following:

a. Prepare a one-page analysis titled Bake-Off Supply Chain Analysis

b. Draft an email to the team with the overview attached. Explain the contents of the

report and how it will support the team to meet the supply chain milestones.

3. Draft an email to all relevant personnel and attach the presentation. Outline the purpose

You have been asked by the CEO of McDonalds Australia to undertake a desk audit to

evaluate and improve McDonald’s Australian supply chain. You will need to access the

annual reports from the organisation to assist you to compile a report for the senior

management team.

Part B: Written report

1. Prepare a written report for the senior management team. Create a Word document

titled Supply Chain Audit Report. Your written report must include:

a. Briefly review and summarise the McDonald’s Australia supply chain management

strategy.

b. Plot the total revenues for the previous five years i.e. from 2014 – 2019 in a simple

graph using Excel and forecast the total revenue for the next year (e.g.2020 or

2021 or 2022).

c. Identify where there are any concerns or issues in the revenue projects vs. actual.

d. What external factors (i.e. economic, social, community etc.) may have impacted

on these spikes (i.e. sudden increases/decreases in revenue growth)?

e. What internal factors may have impacted on these spikes (i.e. sudden

increases/decreases in revenue growth)?

f. What happened to revenue in 2009 compared to 2008 and 2010. Make

suggestions around what you believe the probable cause(s) were.

g. Over the last decade or so, how would you say the business is performing overall?

(i.e. is it generating profits and/or growing and is this overall or in particular

restaurants and/or geographical areas?

Case Study Scenario

You have been in your role as Operations Manager for Bake-off for two years and the

contract to supply McDonald’s with buns for restaurants in WA is going well. You have

regular meetings with the McDonald’s Purchasing team where you review and update

KPIs.

Over the past two years, the contract has run smoothly although there have been five

occasions where the Bake-off supply chain failed to deliver to the required standard:

• Delivery to McDonald’s Northbridge Restaurant (24-hour restaurant) was late (60-90

mins) on three occasions in one month,

• McDonald’s Beeliar Village rejected two crates of buns from the one delivery in

December (unsatisfactory texture of buns),

• The wrapping of five crates delivered to McDonald’s Mirrabooka II was tampered

with and all five crates were rejected for return,

• The loading bay at McDonald’s Hay Street East was damaged by a truck that failed

to apply brakes in time (internal investigation showed heavy traffic congestion and

difficult conditions for manoeuvring the truck to the loading bay),

• Two McDonald’s stores on same delivery run (Bicton and O’Connor) failed to

receive the full order (internal investigation showed problem with the order at the

Bakery).

• Staff are still having issues with the new e-procurement system.

While each of these incidents is relatively small, you are aware that the cause may be

more systemic, and you need to evaluate and improve the effectiveness of the entire

supply chain.

1. Prepare a written Supply Chain Strategy Evaluation Report for the management team.

Your report must include:

a. Outline the ways in which you would monitor demand and supply chain

management in accordance with the supply chain management strategy you

developed for Bake-off.

b. How would you review the effectiveness of the current relationships (including

staff and customers, and any areas identified for improvement) within the supply

chain?

c. Compare at least two supply chain management models and determine the one

that has the most appropriate infrastructure that will support the organisation’s

objectives.

d. What sort of cost reduction activities could you employ to ensure the supply

chain achieves all organisational objectives?

e. What business data/reports would you use to compare outcomes, budgets,

timelines and forecasts to actual performance?

f. A plan for how you will more effectively liaise with, and engage suppliers to,

improve their performance and that of the supply chain.

g. Formulate a minimum of five recommendations that could be implemented to

improve the effectiveness of the supply chain and use of technology.

h. Develop a checklist that you could use to review technology performance

(hardware and software). Attach this as an appendix to your report.

i. Outline the changing needs of Bake Offs customers, suppliers and stakeholders.

j. Outline the plans, policies and procedures which should be reviewed based on

these changing needs.

NOTE: You must submit the evaluation report to your assessor as a pre-assessment

submission at least three days prior to your simulation call. On the Assessments tab of this

2. Book an appointment with your Assessor to undertake a meeting with the management

team. With your report completed you must now meet with management to discuss the

findings of your report. The Assessor will play the role of the management team during

the role play.

During the role play you will need to demonstrate that you have:

a. Presented your report on the outcomes of the supply chain strategy which has

been implemented and briefly discussed each point.

b. Provided your recommendations for future supply chain strategies which are

developed.

c. Applied appropriate skills to engage with the management team and ensure all

information is understood.
